‘Cobbler’ is the name given to a baked pudding tes a fruit
bollom covered with a layer of rich biscuit dough. % Similar
dessert made with cake baller instead of biscuit dough is called
2 "Collage Pudding,” Ori the iru (usually apples) is sweetened
wit molasses. the pudding may be called a "Pan Dowdy.” A
Cobbler that has the fruil on top instead of underneath becomes
a "Buckle." And just to confuse you more, @ cobbler that is
Steamed rather than baked becomes a "Grunt if you live in
the Maritimes ora “Slump” if you're a Northerner.
INGREDIENTS
500 ml. blueberries 2 cups
(Iresh or frozen)
425 mL white sugar cup
50 mL water cup
15 mL cornstarch 4 Tbsp
30 mL orange juice 2 Tbsp
45 mL bulter 4 Tbsp
500 mL all-purpose flour 2 cups
30 mL while sugar 2 Tbsp
20 mL baking powder 4 tsp
2 mt salt ‘4 Isp
75 mL shortening ‘4 cup
250 mL. mit 1 cup
HERE'S HOW
1. Combine the blueberries, 125 mL (jg cup) sugar, waler and
cornstarch in the pol and bring the mixture to a boil over
medium-high heal, stirring often, Cock and stir for 1 minule
unlil thickened. Remove from heat and add the orange
juice and buller. Pour the mixture into the cake pan.
2. Sel the oven al 200°C (40°F).
3. Combine the flour, 30 mL. (2 Tbsp) sugar, baking powder and
salt in the large bowl, Use the pastry blender or 2 knives to
cul the shortening into the flour until the mixture is,
crumbly
4, Stir the milk into the flour mixture with a fork, just enough
{o blend the ingredients. Spoon the dough evenly over the
blueberries and bake lor 20-minutes. Serve warm with
whipped cream or ice cream. Makes 6 (o 8 servings.
HINT II1: A glass baking dish is nice for this dessert because
iets you the coloured layers.
