Rhubarb Cake

Enough rhubarb to line a large baking pan (11 x 14)


4 cups sugar
8 tbsp butter (1 stick)
2 cups flour
2 tsp baking powder
(2) tsp salt
1 cup milk
2 tbsp corn starch
1 tsp cinnamon
6 drops of red food coloring
Grease bottom of large baking pan with butter. Cut rhubarb into inch pieces and layer bottom
of baking pan.
1. Cream together 2 cups of sugar and 8 tbsp of butter (1 stick).
2. Mix 2 cups of flour, 2 tsp baking powder and tsp salt. Add 1 cup of milk.
Mix numbers 1 and 2 together and pour over layer of rhubarb evenly.
Mix together 2 cups of sugar, 2 tbsp of corn starch, tsp salt, 1 tsp cinnamon and sprinkle on
top of cake mixture.
Mix 2 cups of boiling water and 6 drops of red food coloring together and pour over cake
mixture.
Bake @ 350F for 45 minutes.
Serve warm with ice cream.
