Huevos Fritos Con Patata Y Chorizo

Huevos Fritos Con Patata Y Chorizo (or Fried eggs with potato and chorizo) is a simple, fast and
delicious Spanish dish. It is excellent for using up the last couple of eggs or some left-over salami or
potato. Ensure you use good quality chorizo - it makes the dish!
This recipe feeds four people and takes around 30 minutes to prepare and cook.

Ingredients:

4 large potatoes
Eggs (1 or 2 per person)
Olive oil
1 Spanish onion, sliced
1 large capsicum (red or yellow), in strips
200g chorizo salami

Steam the potatoes until just cooked


Cut the potatoes into small chunks or slices (halve baby potatoes)
Heat olive oil in pan and fry the capsicum, onion, cooked potato and chorizo
In another frying pan, fry eggs as desired.
Plate the potato and chorizo mix and top with one or two eggs per person.
