Soups:
Curry Shrimp Soup: $
Main ingredients: Rice, shrimp, aromatics, red
curry paste, coconut milk, cream and cilantro
Garnish: 1/8 oz. Cilantro, chopped
Service: place 1 oz. of rice at bottom of
container; ladle 6 oz. of the broth/vegetable
mixture over noodles.
Special instructions: Rice will be kept in the
steam table during service and scooped into
container.
Opening shift: chop cilantro
Closing shift: replenish cilantro

Pork and Soba Noodle soup: $$


Main ingredients: Roasted pork, soba noodles,
mushrooms, carrots, garlic, ginger
Garnish: Scallions
Service: place 2 oz Soba noodles at bottom of
container - pour broth over noodles; add 1 oz. of
pork to top of soup; garnish with scallions
Special instructions: Pork will be pre-roasted,
sliced and portioned at the commissary, sliced
and portion. Noodles will be refrigerated.
Opening shift: Cut scallions on bias for the day
Closing shift: Replenish scallions, if necessary

Salad
Chinese Chow Mein Salad: $$

Main ingredients: Edamame, romaine lettuce,


chow mein noodles, carrots, red cabbage
Garnish: Scallions
Service: Salads are RTE
Special instructions: Vinaigrette will be in 2 oz
containers. Chow mein will be in 2 oz
containers; both 2oz. containers will be placed in
salad container at the commissary. Edamame
(1oz) will be placed in center. All ingredients
need to be place diagonally in container
Opening shift: Cut scallions on bias for the day
Closing shift: Replenish scallions, if necessary
Sandwich
Bahn Mi : $$
Main ingredients: Chicken thigh meat, pickled carrots and daikon,
cucumber, baguette, Bahn Mi sauce
Garnish: cilantro (6-8 leaves, enough to cover length of sandwiches)
Service: ACTION STATION- Slice baguette lengthwise upon order;
squeeze bah mi sauce (1/2 Tbsp) onto bottom half of bread (thin
ribbon); place 3 oz. chicken meat on bread; four slices of cucumber on
meat (diagonally to cover); place1 oz. of pickled vegetables on top of
cucumbers; squeeze another (1/2 Tbsp)bah mi sauce ribbon on top of
pickled vegetable; garnish with cilantro.
Special instructions: Cut baguettes into thirds. Sandwich comes
with chips.
OPENING DUTIES: cut cucumber into thin slices (2 x 1/2 )
Closing duties: refill and replenish cucumber
Entre
Pork Stir Fry: $$
Main ingredients: pork, carrots, broccoli, water chestnuts, bell
pepper, onion, soy, ginger, and garlic

Garnish: toasted sesame seeds


Service: MADE TO ORDER STATION Add
oz sesame oil to pan add portioned (3
oz.) raw pork to hot pan cook for 30 seconds
add portioned sauted vegetables to pan
cook until warm (approx. 30 sec.), add 1.5 oz
sauce, cook until thickened (approx. 15 sec.)
Plating: Place 3 oz rice on plate - place stir-fry
on top of portioned rice.
Special instructions: Pork should be preportioned to 3 oz; vegetables will be par
cooked and portioned to 5 oz at commissary

Dessert
Mango Rice Krispy Treat: $$
Main ingredients: Rice krispies,
marshmallows, mango, coconut, coating
chocolate
Garnish: none
Service: RTE item
Special instructions: Keep away from
heat, moist and humid conditions.
Desserts should be portioned (2 portions of
2 x 4) and packaged at commissary.
