Soups:
Curry Shrimp Soup: $
Main ingredients: Rice, shrimp, aromatics, red
curry paste, coconut milk, cream and cilantro
Garnish: 1/8 oz. Cilantro, chopped
Service: place 1 oz. of rice at bottom of
container; ladle 6 oz. of the broth/vegetable
mixture over noodles.
Special instructions: Rice will be kept in the
steam table during service and scooped into
container.
Opening shift: chop cilantro
Closing shift: replenish cilantro
Salad
Chinese Chow Mein Salad: $$
Dessert
Mango Rice Krispy Treat: $$
Main ingredients: Rice krispies,
marshmallows, mango, coconut, coating
chocolate
Garnish: none
Service: RTE item
Special instructions: Keep away from
heat, moist and humid conditions.
Desserts should be portioned (2 portions of
2 x 4) and packaged at commissary.
