RecipeAnalysisAssignment
TherecipeIdecidedtostudyandcompareisscrambledeggs.Itookfourdifferent
recipes,onefrom1910,onefrom1975,onefrom1987,andlastlyonefromarecipepostedon
theFoodNetworkwebsitefromabookpublishedin2009.
ThefirstrecipeIexaminedisfromacookbooktitledLightEntertainingandtherecipeis
titledEggDishes:ScrambledEggs(Plain).Thisparticularrecipewaspartofanentre,it
technicallyisscrambledeggsservedontopofpiecesofsquaretoast.Thiscookbookwas
publishedin1910,personallytheoldestcookbookIhaveeverseen.Itcalledforoneteaspoon
butter,threeeggs,onehalfcupofmilk,andonefourthsaltspoonfulofsalt.Themethodisto
beatthethreeeggswiththemilkandsaltuntilitislightandfluffy,thenmeltthebutterinthe
blazerandcooktheeggsuntiltheyarecreamyandserveonsquaresoftoast.Italsomentions
thatthisrecipemaybevariedinanalmostlimitlessway,addinganytypesofvegetablesor
meatorcheese.Itdidnotprovideanyhealthbenefitsofnutritionalclaims.Alsoitdidnot
includeanynutritionalinformation.Therecipedidnotusethestandardizedrecipeformat,the
narrativeprocedure,orthenumberedsequentialprocedure.Youcanclearlytellthedifference
betweenthisveryoldrecipeandmoremodernrecipes.
ThenextrecipeIexaminedisfromWaltDisneysMickeyMouseCookbookandthe
recipeisnamedSherwoodForestScrambledEggs.Thisrecipe,differingthanthefirstrecipe,

isanentre,meaningjusttheeggsarebeingservedandtalkedabout.Thiscookbookwas
publishedin1975,stillwayolderthanIamusedto.TheSherwoodForestScrambledEggs
mentionedtheservingsize,whichisone.Theingredientsincludetwoeggs,twotablespoonsof
milk,onetablespoonofbutterormargarine,andlastlysaltandpepper.Themethodforcooking
thesescrambledeggsisverysimilartothefirstone;beatingthemilkandeggstogether,then

ofanentrebecausetheeggsareonlypartoftheentirerecipe.Therecipealsospecifiesthe
servingsize(serveseight)andtheingredientsfortheentirerecipeincludeeightlargefresh
tomatoes,salt,blackpepper,onedozeneggs,onefourthteaspoonwhitepepper,twocupswarm
lightcreamsauce,threetablespoonsbutter,onefourthcupparmesancheese,andeightparsley
