Maltese Bread Pudding


Ingredients


2 big loaves of Maltese Bread
120g coco powder
400g sugar
30ml Vanilla
4 Eggs
200g Candid citrus peel
100g coconut
400g Mixed dried fruit
200g chopped chocolate

2 tangerines peel
200g chopped mixed nuts
250ml Milk
150 ml whisky/ Rum / Brandy
2 lemon zest
tablespoon ground aniseed
tablespoon cinnamon
tablespoon mixed spice
teaspoon ground cloves.

Method

1. Preheat the oven 170C.


2. In a big pot, put the 2 loaves of bread and soak them in water until
the bread is soft.
3. Squeeze the bread in cheesecloth and let the excess water out.
4. Put everything in a bowl and mix all together.
5. Then put the pudding in a greased baking disk.
6. Bake until the middle of the pudding has a bouncy texture.
