Equipment Capital Budget Justification

Reason of Request
Our facility is in need of a new combination oven since our facility's steamer needs to be
replaced. Our current steamer underwent great damage after a previous employee loaded the
oven with foods high in sodium, causing corrosions in the oven. Also, it is no longer able to
produce the quantity of food our foodservice requires during peak production periods. Steamed
potatoes is a popular side dish in our facility and we therefore need an efficient steamer to meet
the demands of our customers. A thorough analysis of six different combination ovens have been
done. Three of which are gas and three are of electric.

Selection of Combination Ovens


I have selected six different combination ovens, presented in the table above. An analysis was
done for each of these ovens. More detailed information of these ovens is attached to this
document.

Performance

Our food service facility has a high demand for steamed potatoes and requires a combination
oven that can meet these needs. Our facility typically needs to prepare 200 servings of 8ounces
of steamed potatoes per hour during meal times. After looking at the test reports for all six
combination ovens, they all exhibit the ability to meet the high demands of steamed potatoes
during our peak hour periods.
Each of the gas combination ovens contain 22 pans, while each of the electric combination ovens
contain 14 pans. They all vary in their potato production capacity and heavy-load cooking energy
efficiency for potatoes. Each of the combination ovens' performance results are presented above.
Base on the gas combination ovens and their performance results, Alto-Shaam CTP10-20G
appears to be the highest energy efficiency for both the steam and convection modes, 51% and
61% respectively, and has the highest potato production capacity for both steam and convection
modes, 261 pounds per hour and 225 pounds per hour respectively. The Base Efficiency
combination oven has the lowest potato energy efficiency of 20% for steam mode and 35% for
convection mode and lowest potato production capacity of 150 pounds per hour (steam mode)
and 100 pounds per hour (convection mode). Therefore, it is not desirable to use the base
efficiency combination oven. Based on these performance results, it is evident that the
Convotherm C4e* 6.20ES is the most desirable gas combination oven.

The performance results for three electric combination ovens are presented in the table above.
Each of the electric combination ovens have 14 pans. After analyzing the performance results for
the electric combination ovens, Convotherm C4e* 6.20ES has the highest heavy load potato
energy efficiency at 70% for steam mode and 81% for convection mode. The Convotherm C4e*
6.20ES also has the highest potato production capacity of 183 pounds per hour (steam mode) and
139 pounds per hour (convection mode). The base efficiency combination oven has the lowest
potato energy efficiency of 40% for steam mode and 65% for convection mode. Additionally, it
has the lowest potato production capacity of 100 pounds per hour and 80 pounds per hour for
steam and convection mode respectively. The energy star combination oven is at 50% and 70%
potato energy efficiency for steam and convection mode respectively. Based on these
performance results, Convotherm C4e* 6.20ES is the most desirable electric combination oven,
with the highest energy efficiency and production capacity to meet the high demands of our
facility.

An analysis of the best gas combination oven Alto-Shaam CTP10-20G, and the best electric
combination oven, Convotherm C4e* 6.20ES was completed. Alto-Shaam CTP10-20G has a
lower energy efficiency but has a higher production capacity compared to Convotherm C4e*
6.20ES. However, the Convotherm can still meet the peak demands of our facility. It is not
necessary to have a combination oven with such high production capacity. This will probably
means this is a bigger machine as well, especially with 22 pans compared to 14 pans for the
Alto-Shaam CTP10-20G.

Initial Cost
Looking at the difference in initial costs for the gas combination ovens, the base efficiency oven
is the least expensive option at $6679. However, its performance results show that it is not a
good option for our facility. The least costly electric combination oven is the base efficiency
oven, at $5225, but it is also not the more efficient one of the electric ovens. Therefore, the
Convotherm oven at $6575 is the most desirable option for our facility.

Lifetime Cost
Looking at the difference in lifetime costs for the gas combination ovens, Alto-Shaam CTP1020G is the least costly at $16681 compared to the base efficiency and energy efficient gas
combination oven. Looking at the electric combination ovens, Convotherm is the most
inexpensive, at $31283, compared to the base efficiency and energy efficient electric oven, at
$85937 and $56539, respectively. Although Alto- Shaam CTP10-20G is the least expensive
option out of all six ovens, natural gas prices are currently at an all-time low and are expected to
increase in the future. Therefore, the best option would be Convotherm.

Conclusion:
The Convotherm C4e* 6.20 ES is the most desirable option because it has a high production
capacity and energy efficiency that meets our facilitys demands. Although it is not the least
costly option ($6575), it is an electric oven versus a gas oven. This would be a better option since
gas prices will be increasing in the future and the lifetime energy costs will increase significantly.
The preheat energy for the Convotherm C4e* 6.20ES is also very low at 1.05, compared to all of
the other ovens, gas or electric. Also, both the convection and steam mode idle energy rate is the
lowest, at 1.36 kW and 1.44 kW respectively, compared to the other gas and electric ovens. In
conclusion, the Convotherm C4e* 6.20ES is the best choice for our facility.
