1 Stort stykke tunfisk

grovhakket spk krydret med bl.a. hvidlg, hele peberkorn og salt samt sd
eller strk paprika, der giver plsen den karakteristiske rde farve. En chorizo
blev opr. lufttrret i op til 1 r; i moderne slagterier er dette bragt ned til 4-6
uger. Plsen spises i skiver som tapas og indgr i forskellige varme retter.
