Eservice Learning For:

- SLCC Students research:
Debrief:
- How did the project go?
- Lin: I think we maybe rushed into our topic and didnt fully discuss everyones
roles right from the beginning. We had some confusion and miscommunications when
discussing the project via canvas, and maybe if we had more fully fleshed out our tactical
plan this couldve been avoided. Overall I feel it was a bit unorganized, a bit helterskelter, but we all brought something to the project; I really feel we all brought our own
voices/styles to this project and it was neat to see how such different people unified on
one idea and how to present it.
- Raheim: The project did not go as well as I imagined it to go but it was a work
in progress, If we met more in person as team I believe thing would have went more
smoothly. I could have put more work into communicating better but it was all over the
place and we all contributed it but just the communication was off.

HAPPY EATS.

- Megan: I would say the project didnt go as well as I would have liked it to go.
When we agreed on something, then someone would change it and not tell everyone else.
Some would add things to the papers that we send out to each other then add their own
information to it but not send it back to everyone so we could be one the same page.
- Lauren: The project has been more stressful and unorganized than I thought it
would be. It was hard to get the initial ideas going, and it made it hard when group
members were absent and missed important discussion days where we made decisions
about what to do next. I think meeting outside of class would have been easier for this
particular project, as it would have kept all of us on more of the same page.
- What went well?
- Lin: Once we all knew (or thought we knew, at times) what our assigned
roles/responsibilities were things seemed to flow more easily. When our group
communications were clear and concise, things went a lot better. The bulk of the website
came together nicely and quickly so we had more time to do aesthetic changes.
- Raheim: We all knew what we needed to get done and I Megan did a good job
making sure we knew where to go and what to do as individuals. Lauren did a great job
making sure we all communicated to the best of our abilities and Lin did a fantastic job
on the design of our poster and what we wanted to portray in our project.

HAPPY EATS.

- Megan: That we all got our own parts and worked on them, then we brought
them altogether. We have all finished in a decent matter time, that way we still had time
to work through the project to make sure it is just right and add or change things.
- Lauren: I think it was cool to see everyones different style and approaches on
their portions of the website. It all came together well. I also appreciated the initiative
that some members took to get something done instead of waiting for someone else to do
it.
- What did not go well?
- Lin: Definitely some miscommunication which led to everyone in the group
feeling frustrated. I feel like I personally wouldve liked the group to be more assertive as
I feel this wouldve made it easier to pinpoint what kinds of changes needed to be made
to make things work, particularly on the poster and cards for our group. It got frustrating
when it felt like we all agreed on something in person, but then couldnt communicate
disagreements or ideas via email or canvas, and so things seemingly got changed without
group input.
- Raheim: We had a lot of miscommunication and we did not know what was
going on half the time we werent in class, but it happens we all have jobs outside of
school and we all have different things we have to do as individuals.
- Megan: That we couldnt stay on the same page if someone changed or added
something. Some of us was lost and didnt know what was going on and when we asked
couldnt get an answer on what was going on. Also no one wanted to communicate like
we agreed on before this project.

HAPPY EATS.

- Lauren: It was hard to get our group motivated in the beginning of the project
for what we should do. It was also hard when at least one group member was absent
almost every time we met, because we then had to email that person and make sure they
knew what we did that day. It was frustrating trying to figure out why someone had
changed something or why we werent doing the same thing anymore, and I did not like
texting/emailing as our only way of communicating outside of class. This project would
have been easier if we all met and worked on things together.
- What were the lessons learned?
- Lin: Communicate better and more frequently, ask more distinct and definite
questions.
- Raheim: I learned that we are a team that works better in person than over social
media and we all have different strengths when it comes to being on team and we need to
use those strengths to the best of our abilities.
- Megan: I have learned to trust others to get their work done. I have learned that
there is a lot more to being vegan and learned about pescetarianism (I never have heard
about this until now).
- Lauren: I learned that every group member brings a different element to
projects, and I also learned that I need to let people know when I am stressed and feel like
we arent working together as much as we should be.
- Any plan changes?

HAPPY EATS.

- Lin: We adapted the title and text used on the posters; we had to redesign and
reduce the amount of handouts so we could distribute them to our classmates instead of
around campus. I had to adapt the poster from my initial design, but that was ok.
- Raheim: We changed the poster up and came up with a better design and we cut
out handing out the post cards and stuck to just handing them out to the class.
- Megan: There was some changes, we changed the title and the pictures a few
times. Changed that we will not doing hand out cards for the school, that we would just
hand them out to the class.
- Lauren: We changed designs for our posters and cards, and we also decided it
would be a lot easier (and cheaper) to just hand out the cards to our class. We also
changed some due dates for each member.
Additional Tactical Plan:
- Presentation Outline
Write 2 3 mins for each topic listed below: sent out a text when you have added to the
paper to make sure everyone has got it, so we all have a copy.
- Lauren - Opening take: We decided to do a service learning project about the
effects that different foods have on our bodies. We realized that a lot of SLCC students
(including ourselves) are busy and stressed, and sometimes go to the quickest food
possible, which is almost always unhealthy. Even though its quick and easier than
thinking about eating something more substantial, we do it anyway, and we dont realize
that most of the time we feel worse after eating it. So we wanted to create a project to

inform students about some different lifestyles out there, as well as a food illness that
many of us may have thought as just a diet trend.
- Raheim - Lifestyle affects: The power of food is amazing; it can bring you up or
down mentally and physically. The food we dump into our body improves our function
as humans. The healthier we eat the more energy we have to go out and do more whether
that is work, school and etc. Different foods have different effects on are body some
foods help improve brain function; some improve the function of are organs others help
control the appearance of are skin and the way we feel. Its up to you as individual to
learn and put it to use how certain foods can help improve your everyday life inside and
out. Fruits and vegetables ate on a daily bases are going to help reduce mood swing on a
daily bases. A balanced diet that consists on carbohydrates, essential fats, vegetables and
water are going to help maintain a well-functioning body and mind. The less greasy the
food is the better your organs are going to be functioning and this going to improve your
focus, sleep, and daily activities as an individual.
- Megan - Celica disease: I chose Celiac disease because I found out that I have it
and I needed to look up information about it. I needed to know what foods I could have
and what I needed to stay away from. I enjoy looking up information
about it and finding new things that I can have. Has anyone here heard of Celiac disease
before? Celiac disease is where someone cant have gluten because it makes you sick
where you feel like vomiting. Some people get skin rashes. The way to find out if
you have Celiac is to see a doctor and have tests done like an endoscope where they send
a camera tube through the mouth. If they see any damage, they take a piece of your
stomach and do a biopsy on it. Then they do blood work. A few signs to watch for as an

adult are: bloating, weight loss, nausea after eating, and sometimes becoming
lactose intolerant with some foods. Signs to look for in kids are: slow growth, vomiting,
and feeling weak or tired. I have been found a lot of gluten free foods out there now and
yes, you need to get use to the taste. Some of the food has a chalky taste. You need to
stay away from wheat, and rye. You can have whey after the first 6 months unless
your stomach still cant handle that after it heals. In time your stomach can heal if it is
not damaged too bad. The doctor will do another endoscope to check on how your
stomach is doing. You need to make sure you wash your hands before making your food
or, if you go out to a restaurant that they wash and change gloves before making your
food so your food isnt contaminated and you dont get sick. I wanted to share this with
everyone so I could help someone who has the symptoms so they know what to ask their
doctor about.
- Lauren - Pescetarianism: My portion of the website was about being a
pescetarian. You are probably thinking, a what? When I tell most people that I am they
always have the hardest time pronouncing it, and I have only met one other person that
knew what I was talking about. It is basically someone that lives the lifestyle of a
vegetarian, but still eats fish and seafood. There are lots of health benefits for choosing
this kind of diet, like its low fat but high protein content, its high omega-3 fatty acids,
and its aid in coronary heart disease. I personally chose to be pescetarian for a few
different reasons. I like that I can still have some readily available protein when I go out
to eat or at work when our office orders food. I also have noticed that is has been easier
for me to digest my foods, because fish usually pairs better with healthier sides like
veggies, quinoa, or brown rice. As a student, it has been easier and healthier for me to

12

live a pescetarian lifestyle, because I enjoy thinking about what I should have as my
protein each day, instead of automatically having a burger because it is the easiest thing
to get. It has actually opened my eyes a lot about the effects of food and what makes my
body function the best on. And with being so busy with work and school, it makes a huge
impact for me to have leaner proteins with healthier sides, because I feel more energized
and satisfied after eating. My web page lists a few more benefits to being a pescetarian,
as well as a more detailed description about why some people decide to become one.
- Lin - Veganism: My web page discussed Veganism and why people choose to
go vegan. For some, cutting meat, dairy, and eggs from their diet is a means to an end;
they use it in an attempt to lose weight. This is a common misconception, as vegans are
typically healthy but not necessarily thin.
Being vegan means you choose to get creative with your food options, and choose to
eat with more awareness of your food sourcing. My page sort of went over the most
common reasons people have chosen to become vegan, these being to get healthy, to
protest the meat industry and its abusive treatment of slaughter animals, for
environmental reasons, and to adapt a food way for diet restriction purposes. On my
page I discussed the benefits that I personally have experienced since cutting meat from
my diet, and the changes Ive noticed since taking out dairy and eggs. I also listed some
basic dessert recipes and local restaurants that over vegan fare, as many have the
impression that vegan food is not accessible.
- Megan - Channels: We chose to do the channels that people used the
most: Facebook. It has some information about pescetarianism, veganism, celiac disease,
and lifestyle effects. Also the Jimdo website had a lot of good information about the

13

topics and how to take care of yourself. The flyers for the school had a picture with a QR
Code to the website and the Facebook name so students can get the information right to
their phones.
- Raheim - What worked / how the project went: I believe are idea process went
well and the design we were going for but the communication process was off. We
needed to communicate better when we are not in class but I think we finished strong
and we still needed things to fix but everything turned well.
- Lin - What didnt / what lessons was learned:

(Main) The way we communicated needed to be refined.

We all needed to be more clear in our vision for the project.

We needed to include each individual in our process before making any

Changes that affected the project products (cards and posters) or website.

We really couldve communicated more frequently, meeting outside of

class may have remedied much of these issues.
