husband Gary Greksouk to Ashland in 2004, where she began
a second career as a writer. Daspits published works include
the pictorial history ROGUE VALLEY WINE, co-authored with
winemaker Eric Weisinger (Arcadia Publishing, 2011) and a
historical novel, LUCY LIED (Fireship Press, 2014).

Food and lifestyle writer Sarah Lemon gathers inspiration

Dish. She has represented Southern Oregon as an ambassador
for Travel Oregon, and often serves as a judge for the regions
various culinary competitions and festivals.

Nancy Rodriguez began her career in the wine business after


graduating from culinary school in Portland and working for
Erath Winery. Today, the self-described chef-in-wine-country,
writes a blog of the same name and contributes to several wine
publications. She is the event coordinator and tasting room
manager for Triple Oak Wine Vault in Oakland, Oregon.

genteel gardens and stately trees. Or a rustic refuge
of sun-dappled fields fronting country roads.

that invite visitors to break bread. Picnics fulfill the
bill of fare.
I think that visual appeal is almost as fun as that
eating and drinking part, says Ashley Cates, marketing
and sales manager for Agate Ridge Vineyard.
Any appealing blanket or tablecloth supplies the
canvas for spreads as straightforward as bread, cheese
and fruit or as thoughtful as composed salads and
cold soups. In either, Southern Oregon wines are the
essential element.
The more people have sustenance, the longer theyre
going to stay, says Cates.
Cold antipasti platters composed at Agate Ridge
fortify visitors for afternoons and evenings spent
picnicking at the Eagle Point property, which produces
14 varietals. New this summer, Agate Ridge staff will
assemble bento boxes of Rogue Creamery cheeses,
Harry & David fruits and Coquette Bakery breads, says
Cates. The array, she adds, can be personalized with
Happy Habanero jams and Shibui balsamic reduction,
crafted locally and paired perfectly with 2012 Viognier
and 2013 Semillon Sauvignon Blanc.
We offer a lot of locally-sourced foods and snacks in
the tasting room.
Offering something for everyone, Agate Ridge also
sells craft beers and engages local food trucks that lend
their brands of cuisine to Rockin at the Ridge, the
winerys summertime concert series, every other Friday
evening June through September. Admission is $8.
The customers like to see a different (truck) every
time, says Cates.
Crowds clamoring for Karen Lovely, Fret Drifters
and other local bands playing at Agate Ridge can sup
on street food inspired by Asia, Peru and flavors of the
Rogue Valley, says Cates. And picnickers receive an
equally warm welcome.
We encourage picnics almost more than we do
to buy our own food, says Cates. Do whatever you
want to do; come whenever you want to come; bring
whatever you want to bring.
This laissez-faire mentality also prevails at Schmidt
Family Vineyards. The Applegate Valley estate boasts
a wood-fired oven that furnishes a daily menu of
handmade breads, pizzas and calzones highlighting
Schmidts own fresh produce. But Schmidt sanctions any
and all interpretations of wine-country cuisine, says Rene
Brons, tasting-room director and assistant winemaker.
Someone brought in Subway sandwiches one time,
says Brons. Sometimes, people will bring a little cake
and have a birthday party.
Special events are a Schmidt specialty, owing to its
87 acres of picturesque landscape. Thirty acres are

planted in grapes, and several more are maintained


with walking trails, water features, manicured meadows
and herb, flower and vegetable gardens. The property is
open daily, year-round, even during weddings and other
private celebrations.
We have several gazebos, says Brons. We have tons
of heaters outside, and we have a lovely fire ring.
Lounging on patio chairs is just as permissible as on
the grass, says Brons. Guests can rearrange the outdoor
furniture and move meals ordered from the kitchen to
spots more secluded than the well-appointed terrace,
she says.
An undiscovered, little gem, the lath house in the
winerys upper garden is an ideal locale to linger over
Caesar salads paired with 2013 Chardonnay and pizza
Margherita with 2014 Mystery Rose. Schmidts zoning
allows for wine consumption anywhere on the property,
she adds.
People just come and fill up the grounds.
If the several dozen tables are full, or the weather
inclement, visitors can picnic right in the tasting room,
says Brons. No alcohol obtained off site is the only
restriction, which holds true at other local wineries.
Yet every other aspect of picnicking provides for an
individualized epicurean experience, says Cates. She
likes to recast her side-dish leftoverspotato, fruit or
Greek saladsin starring roles, supported with a lineup
of bread, cold cuts, nuts and fruit from Agate Ridges
trees. A special picnic basket heightens the sense of
nostalgia, says Cates.
When I picnic, I prefer to do it my own way.
Following a few rules of proper food handling,
however, ensures enjoyable picnicking. Keep cold
foods cold40 degrees or belowto ward off bacterial
growth between the home kitchen and picnic site. While
the traditional wicker basket makes a stylish picnic
statement, an ice chest or insulated bag are better bets in
Southern Oregons sweltering summer.
Chill foods thoroughly in the fridge before packing
with ice. And leave cold dishes in the cooler until its
time to eat. Once served, perishable provisions should
sit out no longer than two hours, or one hour if the
mercury tops 90 degrees.
Favoring foods that hold up to hot weather is another
strategy. Instead of mayonnaise-laden dressings, choose
vinaigrettes or sauces strong on acid, such as lemon
juice. Salsas, jams and honey can stand in for dairybased dips and spreads.
Dont forget enough ice to keep bottles of Southern
Oregon white and rose at their ideal temperatures. Then
sit back, sip and sniff the fragrant vineyard air, perhaps
infused with the strains of live music.
That, says Cates, is Southern Oregon.

Women in Wine

outhern Oregon defies the notion that the wine industry is a male-dominated
realm. Ever since Sarah Powell started making wine at Foris Winery in 1990,
women have been putting Southern Oregon on the map for wine aficionados
world-wide. The nine women profiled below came to the Southern Oregon wine
industry via widely divergent pathways but they share one key thing: passion for
what they do.

Anne Root

ANNE ROOT, EDENVALE WINERY. Annes interest in wine began in Australia


where she completed post-graduate work for a Masters Degree in Commerce at
the University of Wollongong in 1991. She loved touring Australian wineries and
even wrote a paper about English wines, but never dreamt shed own and operate a
winery herself. That changed with conversion of some of the familys pear orchards
to vineyards, a move that eventually led to the establishment of EdenVale Winery.
Anne has spent nearly twenty years promoting the industry, initially working with
county planners on regulations allowing tasting room activities and special events
on exclusive farm-use land. This winery business is really hard work and complex,
but very rewarding when you get a win, she says. A win can be a wine award or a
guest visiting the tasting room and having a fantastic time.

Nora Lancaster

NORA LANCASTER, KRISELLE CELLARS. Nora started a life-long affair with wine
when her family lived in the south of France. I was enraptured by the beautiful
vineyards and cellars of Provence, she recalls. As a young adult, she worked in
service and management of fine dining houses, honing her palate and knowledge
of wines and furthering the journey towards wine as a career. After a fruitful stint at
Weisinger Family Winery in Ashland, Nora is now Kriselle Cellars' General Manager
and Marketing Director, overseeing the many aspects of a producing winery, very
active tasting room, robust wholesale market, and a community-minded and
industry-involved business. Whats the secret of success? Passion. Tenacity. Genuine
love for Southern Oregon. And a strong affinity for gathering folks.
SUE BRANDBORG, BRANDBORG WINERY. The first red wine Sue ever tasted
was a 1992 Brandborg Pinot Noir. Two years later she met the man who made it at
a wine event in Jackson Hole, Wyoming. Soon the two were making wine together
in rented warehouse space in Richmond, California. Even after they established
their winery in Elkton, Sue and Terry produced their first 6,000 cases entirely by
themselves. Now with production of over 8,000 cases, they have hired help, but
Sue says shes still involved in every phase from crush pad to bottling, marketing
and distribution in eighteen states. What advice would Sue give women thinking
of wine careers? Dont be afraid to jump in and do things. It's grueling, but I love
every step because there's always something to learn.

NAOMI FUERTE, GRIZZLY PEAK WINERY. With a UC Berkeley degree in mass


communications, Naomi came to her familys estate winery to help out with
advertising, social media and the tasting room. At first the tasting room was a
challenge, she says, Because Ive always been shy. But the wine business is a very
public job. It can be unsettling, but people are so interested it becomes more joyful
than fearful. The key is to relax and remain calm even when a busload of tasters
shows up. Take things as they comeprovide a comfortable, enjoyable atmosphere
and people will come back.
LIZ WAN, SERRA VINEYARDS. Liz fell in love with learning about wine at a private
club in Orange County while managing their thousand-label wine list with library
wines from all over the world. With this sommelier experience under her belt and
a stint as Bonny Doon Vineyards' Key Accounts Representative, she moved to
Southern Oregon. So how does our region compare in terms of opportunities for
women in the wine industry? Think about what Ive been able to do here in the
Rogue Valley in less than a decade and the opportunities that have been available
to meyou want to talk about unicorns, I am a nearly 40-year-old Asian female
Assistant Winemaker. I have a seat at the table and I have a chance to be part of the
discussion on every vintage, every lot, every adjustment for every wine that comes
out of this building. This level of inclusion would be difficult if not impossible to
achieve if I were in Napa or Sonoma.

KIM KINDERMAN, AGATE RIDGE VINEYARD. Growing up, Kim watched her
father install reinforcing steel to many wineries in Sonoma County, allowing her
to witness fruition of dreams come true. Vines and wines have always been a part
of her life. She also spent time in Europe where she raised her daughters and fully
embraced the culture and history of wine. Fifteen years ago Kim and her father
started Agate Ridge. The enterprise incorporates three separate businesses, the
vineyard, the winery and the tasting room, distinct challenges for an entirely
family-owned and operated enterprise. Your business is only as good as the
people you hire and surround yourself with. Having a work ethic that matches my
incredible employees helps get the job done day by day. I also think my love of the
land and driving a tractor helps!

Kim Kinderman

LIZA JUSSIAUME, JACKSONVILLE INN. As a student working her way through


college in Charlottesville, Virginia, Liza took a job at Jefferson Vineyards, just
a stones throw from Monticello, home of our third president, a serious wine
aficionado. Pouring at Jefferson, Liza developed a palate, that invaluable asset that
over her seventeen years in the business, has given her the confidence to make the
call: is a wine good or bad. Working with the public has given her the ability to
understand what consumers want. I match my customers with wine. I build their
trust and hope to expand their palates and help them discover what it is they like
so when they go to a wine shop they will be able to pick wines on their own. As a
wine buyer for the Jacksonville Inn Restaurant and Wine Shop, Liza has this advice
for women eyeing a career in wine: Have confidence. Find your voice and own it.
TERRI DELFINO, DELFINO VINEYARDS. Terri says it was divine intervention
that made her leave the Bay Area and relocate to Roseburg with her husband Jim
to plant eighteen acres of vines. Even with her background in marketing, business
management and event planning, she admits there was an element of the romance
of the vineyard that went into the decision. The romance has been tempered by
plenty of agricultural realities such as a freeze that cost 1,200 plants one year. Terris
advice for women considering a wine career: Make sure you have the strength,
both physical and emotional, and a good relationship with your partner. Be willing
to work hard and be good at multi-tasking.

RENE BRONS, SCHMIDT FAMILY WINERY. Rene was a medical professional,


a phlebotomist, before becoming part of her fathers vineyard and winery. She
recalls, He said I have a full-time job for you. It isnt blood, but its red. With her
son, Rene attended courses in the viticulture and enology program at Umpqua
Community College. Both joined the winemaking team at Schmidt, with Rene
working chiefly in the lab doing chemical analysis of the wines but ultimately
involved in all phases of production. Dad says I have the best nose. And I adore
science, so I love to figure out whats going on if we have a problem. For Rene, one
of the challenges of cellar work is physical. Im a small person, so I cant always do
everything. Good point. Its not all sip and swirl.

These nine are only a few of the women working in wine


throughout our region, all of whom have contributed to the
success it is today. Here at Southern Oregon Wine Scene,
our hats are off to every one of them!

GEOLOGY, SOIL AND THE GRAPES IN YOUR GLASS

hen it comes to distinctive regional wine characteristics


and quality, (what we often refer to as terroir) its hard
to overestimate the influence of soil on grapes grown around
the globe.
Were all familiar with soil, but probably dont give much
thought to where it comes from or how one soil is different
from another. Consider this: if comedy is tragedy plus time, a
formula often repeated since Steve Allen said it in 1957, then
soils are rocks plus time. Soils result from rocks subjected to
interactions of climate, relief, and living organisms over time,
to quote the USDA Natural Resources Conservation Service.
Given all those interactions, soils come in a dizzying array of
colors, textures and agricultural potential.
Every soil tells a story and the best way to understand it is
to take in a talk by Dr. Scott Burns, Portland State University
Professor Emeritus of Geology. Dr. Burns visits Southern
Oregon periodically to speak to wine industry professionals
about the vineyard soils in this area. Below are some key points.
Southern Oregon has some of the oldest rocks in the
stateOur oldest rock mass, the Klamath Range, formed at
the bottom of the ocean about 300 million years ago. Some
165-130 million years ago, this submarine rock mass was
thrust up and joined to the stable North American plate. As a
distinctly-different formation fused to the continental plate,
the Klamath Range is known as a geological terrane. 60-48
million years ago, another terrane was uplifted and fused
to the Oregon coast, creating the Coast Range. Prior to the
accretion of these terranes, lands end was close to the present
Oregon-Idaho border.
Concurrently, (50-6 million years ago) hundreds of volcanoes
of the Cascade Mountains to the east were in a state of
continuous eruption, creating large tracts of volcanic rock such
as basalt formed from iron-rich lava and tuff formed from ash.
Volcanic rocks developed into many types of soil including
sandy loams and clays.
48-34 million years ago, rivers flowing through Southwestern
Oregon eroded much of the volcanic rock as they cut river
beds and dropped sediments that developed into the soils
characteristic of alluvial fans and stream beds. See Oregon: A

The influence of these parent rocks is evident in our
vineyard soilsLow vigor, well-drained red earth derived
from iron-rich volcanic rocks is so prized by winegrowers that
the Douglas County AVA incorporated Red Hills into its
appellation name. Similarly, HillCrest Vineyard in Southern
Oregons Umpqua Valley, the first Oregon estate winery of
the modern era, established by Richard Sommer in 1961, is
planted on soils that resemble Goldridge Sandy Loam in the
famed Russian River wine growing area of California. Current
owner Dyson DeMara recalls it was this soil that drew him
to HillCrest. Its very deep and the primary horizons are
extremely thick. The color is a deep red. Its the soil that brought
me specifically to this bench top.
And why is low vigor soil good for vineyards? Vines planted
on very fertile soils produce lots of leaves. A dense canopy is
often prone to mildew and pests and needs hands-on labor
(hedging and leaf stripping) or chemical intervention to
produce healthy fruit. Low vigor, relatively infertile soils tend
to support sparser canopies that allow light penetration and
ventilation, inhibiting mildew and other problems.

Abacelas Fault Line Vineyards, also in the Umpqua Valley,
are sited at the junction of the two geological terranes
mentioned above. See www.abacela.com for a detailed
discussion. Soils of the Coxs Rock Vineyard developed
from rocks as much as 225 million years old, associated
with the Klamath Range. Soils of the immediately-adjacent
Cobblestone Vineyard derive from Coastal Range rock only
about 25 million years old. Because of differences in the
parent rock, there are five distinct soils among Abecelas
vineyard blocks, mostly loams with varying clay, sand or silt
composition, each requiring a different approach to irrigation
and fertility management.
A number of Southern Oregon vineyards are established
on clays derived from volcanic rock. These clays are often
fairly fertile and may expand with water absorption and then
contract and open surface cracks as they dry out. Such sites are
capable of excellent wine grape production, but require more
grower expertise to manage irrigation and vine canopy.
Many vineyards in the Rogue Valley including Del Rio,
Kriselle, Trium, Pebblestone, StoneRiver, and Upper Five
occupy alluvial fans and stream terraces. These sites benefit
from the well-drained sandy loams that developed on old
stream and river beds. River stones known as cobbles retain
heat and hasten the development of new growth in the spring.
Similar alluvial soils are also found on Applegate and Illinois
Valley vineyard sites.
The influence of soil is evident in the taste of wine in the
glassWhile we dont understand the chemistry behind the
effect of soil on the taste of grapes, a terroir tasting comparing
wines of the same year and varietal grown on different soils
clearly demonstrates the defining difference soil can make. Soil
is, after all, the terre in terroir.
The full list of terroir elements impacting wine, according
to Dr. Burns, not only includes geology/soils, but grape stock/
clone, climate, soil hydrology, physiography, winemaking
practices and vineyard management.
So the next time youre pouring a glass of Southern Oregon
wine, remember its not just quality grapes that make it taste
great, but a variety of factors including the very soil in your glass!

A Grape's Journey
BARREL-AGING

he difference in the way white and red grapes are handled in the winery
is probably most dramatically illustrated by the time between harvesting
the fruit and bottling the finished wine. For a white wine like Sauvignon
Blanc or Pinot Gris, the whole process may take only ninety days. A white
varietal that spends time in barrel, such as Chardonnay, may take six months,
still a short time from crush pad to glass as compared to reds.
Red wines typically spend one to two years in barrel, sometimes longer.
After the wine goes through malolactic fermentation*, (the secondary
bacterial fermentation that converts malic acid to lactic acid) the winemaker
will keep it in barrel so the wine will take on the flavor of the wood, typically
a variety of oak. Most barrels, or cooperage, used in winemaking are either
French, American or Hungarian oak. Besides the choice of wood, the
winemaker also has a choice in terms of how deeply the interior of the
barrel is toasted; light, medium or dark. In toasting, the inside of the staves
are exposed to a flame to brown them before barrel assembly is completed.
Generally speaking, light toast imparts mild wood notes with a vanilla
component. Medium toast inflects the wine with heavier wood notes, vanilla
and caramel flavors. Dark toast is suitable for the more robust wines that are
enhanced by smoky and roasted coffee flavors.
Sediments may precipitate out of barreled wines over time. Sometimes,
as with a Chardonnay fermented sur lie, or on the lees, the sediment (grape
particles and dead yeast cells) is stirred back into the wine through a process
known as btonnage. Eventually wines in barrel are drawn off sediments and
transferred to clean cooperage through a process known as racking. Any loss of
wine from the barrel through evaporation or racking is made up by topping off
to minimize air space known as ullage that may result in harmful oxidation.
Most wineries have what is called a barrel program. Because barrels lose
flavor over time, they have a useful life of only five to seven years. As they are
one of the most expensive components of a winery, (a new 59 gallon French
oak barrel costs about $1,000) only a percentage of the winerys cooperage is
replaced in any one year. This means the winemaker must select which wines
to put into new barrels having the strongest flavor and which to put into the
older, neutral ones. Winemakers may elect to use only a percentage of new
oak for a single vintage of a varietal. In this case, the wine aged in new oak
would be blended with that aged in neutral oak before bottling.
So lets talk about blending. Blends may combine different varietals or
different years of a single varietal. The latter is known as a non-vintage blend.
The winemaker blends to create a composite wine that has better balance
than any one of its component wines alone. Blends may be denoted by
generic names such as Claret or they may be labeled with proprietary names
that denote a certain winerys product such as Kriselle Cellars Dtani, a
Bordeaux blend.
Under Oregon Liquor Control Commission rules, a wine is a blend if it
contains less than 75% of a single varietal. A wine that is 75% Viognier and
25% Marsanne can be labeled Viognier, but a wine that is 60% Viognier, 25%
Marsanne and 15% Rousanne would be labeled as a blend. Oregon Pinot
Noir carries more stringent label requirements than other varietals. It must
be 90% Pinot Noir to bear the varietal designation and 95% from a single
Oregon American Viticultural Area (AVA) to carry that area designation.
Thus, a label that reads Southern Oregon Pinot Noir must be 95% Pinot Noir
grown in Southern Oregon.
Before bottling, some wines may undergo additional processes such as
filtering, fining and cold stabilization to enhance clarity.
Filtered wines are pumped through fine gauge mesh to mechanically
remove particles of sediment. Filtering can strip wines and for this reason
is often not a method of choice for varietals like Pinot Noir that need gentle
handling to preserve delicate flavors and viscosity.
In fining, an organic compound such as egg white is added to the wine to cause
sedimentary particles to cling together and fall out of suspension in the wine.
With cold stabilization, wine temperature is held at about 30 degrees for
several days, causing particles of sediment, typically crystals of tannic acid, to
fall out of solution.
The grape, at this point, has finished its metamorphosis into wine, but the
journey isnt quite complete. The next step involves bottling, labeling, storage
and release. Stay tuned.

ine is every bit as important as the food were doing, says executive chef
Damon Jones.
Serving as a narrative of the seasons, Larks menus extol Southern Oregons
agricultural bounty and artisan foods. From citrusy sauvignon blanc to spicy
tempranillo, the regions wines co-author the culinary tale.
We are constantly pairing stuff with wine, says Jones, whose staff devises dishes
for more than 50 events annually that celebrate wine. Winemaker dinners also
enhance the experience at Larks, which opened a decade ago at Ashland Springs
Hotel and expanded to Medford with the Red Lion Hotels 2013 reinvention by
Neuman Hotel Group as Inn at the Commons.
They werent carbon copies, says Jones of the two restaurants, where diners can
taste distinctly-different recipes while relishing a few mainstays, such as roasted
beet salad and fried chicken breast. The Larks wine lists arent mirror images, either,
although Oregon labels dominate both.
I think its incredible the number of wineries that have come about, says Jones.
Weve always made a really giant effort to promote Oregon and local wines.

Prominently promoted on Larks lists are Daisy Creek Vineyard, Folin Cellars,
Kriselle Cellars, Ledger David Cellars and Upper Five Vineyardall, of the Rogue
Valley. The Applegates Slagle Creek Vineyards and Valley View Winery supply
syrah for the Ashland restaurant, and the Umpquas Brandborg and Abacela
wineries contribute lighter pinot noir and tempranillo.
These and other wineries complement dozens of local farms, ranches and
purveyors who figure into Larks farm-to-table philosophy.
I think of those wineries as farms, as well, says Ava DeRosier, Director of Food
and Beverage for Neuman Hotel Group.
Our whole concept is about sustainability, says Jones. Its really beyond organic.
A celebration of traditional, hand-crafted food, Larks farm plate comprises
house-made charcuterie and condiments, along with cheeses from Jacksonvilles
By George Farm. As a starter or light meal, the platter suits the full spectrum of
Southern Oregon varietals, says Jones.
It works for people who are drinking different types of wine.

Summer is when Chef Jones, an Alabama native, personally passes-up Bourbon


for white wines, which pair well with fried green tomatoes battered in corn flour
from Medfords Dunbar Farms. Among Jones other comfort-food classics, hearty
meatloaf and silken mashed potatoes is a natural with Daisy Creeks Lyon Red.

The syrah-merlot blend also echoes richly-flavored lamb shanks. Demi-glace


drizzled on this dish occasionally incorporates local wines, as do Larks desserts.
Adapting a recipe to a specific vintage, then serving it alongside the wine, says
Jones, can play-up the nuances of each.
Its those nuances of Southern Oregon viticulture and terroir that speak volumes
of Larks wine service, boasting bottles from 20 of the regions wineries in just as
many grape varieties.
People are definitely becoming more aware of the quality of local wine, says Jones.

Carien Jordaan. Brian, a one-time commercial
grower of roses, adapted his soft-handed
horticultural technique to production of the
wine grapes that go into Eliana vintages. Since
2008, Brian and his family have tended Belle
Vista Vineyard, a stunning hillside site in the
Pompadour Bluff area east of Ashland planted to
Merlot, Cabernet Franc and Cabernet Sauvignon.
The vines, now nearly twenty years-old, have
yielded exquisite fruit under Jordaans care.
Made in very limited lots by winemaker Steve
Anderson, Eliana vintages reflect a unique
terroir and Jordaans exacting specifications.
Since 2011, Jordaan has added Tempranillo
to his wine list of exquisite Bordeaux varietals
and blends. From Thistlecroft Vineyard, a close
neighbor to Belle Vista, the Tempranillo is a
lush mlange of aromas and flavors featuring
ripe strawberry and dark cherry notes.
The best way to try Eliana is to stop by the tasting
room. Brian and Carien love sharing their elegant

TRIUM is a Latin term meaning of the three,


an expression of the early collaboration of three
vineyard owners to produce classically-styled,
vineyard-focused wine. That label, with its
reproduction of a sixteenth-century woodcut
depicting a vineyard worker, also means
something very specific to the brand. For Laura,
Kurt and Dustin Lotspeich, founders and
current owners of TRIUM, it speaks to the fact
that hard work in the vineyard pays off in the
glass. The Lotspeichs have produced premium
Pinot Gris, Viognier, Merlot, Cabernet
Sauvignon, Cabernet Franc, Tempranillo,
Grenache and Zinfandel from their 17-acre
Pheasant Vineyard since 1990. Each year since
2003, they have selected part of their harvest
for TRIUM, a boutique label with no more than
one thousand cases per year. TRIUMs flagship
wine is Gowers Cuve, a proprietary Bordeaux
blend that has regularly garnered awards since
its first bottling won the platinum medal and
best of show at the 2005 Greatest of the Grape
competition. Its hardly surprising that Laura
Lotspeich is equally at home driving a tractor
to haul harvest bins or describing the palate
notes of a vintage to visitors in the estate tasting
room, a pleasant nook perched at the top of the
hill overlooking the vines.

FOLIN CELLARS is just a mile as the crow


flies from the Wild and Scenic Rogue River
and en route to Crater Lake, in Sams Valley.
Built in 2009, this off-the-beaten-path gem
is well worth the drive. Embracing Southern
Oregons natural beauty, the winery features
expansive views of the surrounding vineyards,
a newly-built bocce ball court, patio seating

DEL RIO VINEYARDS is both a place deeply


rooted in history and a winery reflecting the
latest in viticulture and enology. The tasting
room was built in 1864 and served for many
years as the Rock Point Stage Hotel. The parcel
of land that comprises one of the largest winegrowing operations in the Rogue Valley was a
payment to the original owner for his service
in the Rogue Indian Wars. The big red building

became home to Jim and Jeanne Davidian and
their alpacas in 2004 when they moved their
Riverside, California ranching operation to
a property outside Jacksonville that included
a 7-acre vineyard. The Davidians decided to
make wine and established the Caprice label
with a 2006 bottling of Cabernet Sauvignon.
Over the years, Caprice wines have expanded to
include Chardonnay, Viognier, Gewurztraminer
and Claret along with Cabernet Sauvignon, all
made in small quantities, with special attention
to the character of estate-fruit produced by
vines nearly thirty years-old.

Margaret Lyon came to Jacksonville in 1994
looking for a place similar to the Northern
Rhone Valleys famous Cte Rotie (roasted
slope), the perfect place to grow Syrah and
Viognier. On a 23-acre tract where fortuneseekers once panned Daisy Creek for gold, the
Lyons planted a couple of acres of vines. Due
in large part to the mineral-laden soils washed
down from the Siskiyou Mountains by the
creek, and in larger part to the hard work of the
couple tending the vines, the fruit they grew
turned out to be goodreally good.

Quady North is the name of Herb Quadys


Applegate Valley wine venture, a scion of his
parents Fresno area Quady Winery. While the
senior Quady is a producer of renowned sweet
and aperitif wines, Quady North is known for big,
bold Bordeaux and Rhone varietals. After working
as Assistant Winemaker at the California Central
Coast Bonny Doon Vineyard, Quady came to
Oregon to found his own brand, convinced that
the truly-compelling wines were being made from
grapes grown in cooler areas. In 2005 the family
selected 100 acres of south-facing hillside in the
Applegate Valley and planted their first 15 acres of
Syrah, Cabernet Franc and Viognier. Today there
are eight vineyards, with two in the Rogue Valley,
and the list of varietals has expanded to include
Grenache, Marsanne, Rousanne, and Merlot.
Quady North is committed to producing small lot,
minimally-handled wines sourced primarily from
the estate. The focus remains premium Viognier,

Quail Run Vineyards are among the pioneers

LONGSWORD VINEYARD

DEVITT WINERY began as the logical answer


to a sticky problem. In 2003, Jim Devitt had
harvested a bumper crop of grapes from his
vineyard; the only fly in the ointment was there
was no home for his grapes. Having owned and
operated Pope Valley Winery in the Napa Valley
during the 1970s and '80s, the solution was to go
back into the wine business. So Devitt Winery in
the Applegate Valley was born.

RED LILY VINEYARDS

VALLEY VIEW is an iconic name in the Rogue


Valley. Not only is it the name of Peter Britts
original Jacksonville winery, circa 1858, but it
also came to be the name of the first modern
winery in the Rogue Valley. Founded by Frank
and Ann Wisnovsky, Valley View was bonded in
1978. Using fruit from his Applegate Valley estate,
planted in 1972, Wisnovsky made Bordeaux
varietals up until his death in 1980 when Valley
View operations were passed on to Ann and sons.

RED LILY VINEYARDS is a boutique, familyowned winery in the beautiful Applegate Valley,
specializing in classic Spanish wines, including
Tempranillo and Verdejo. Red Lily is named for
Bolanders Lily, a rare species of red lily growing
in the nearby Siskiyou Mountains, and for the
owners daughter, Lily.
Red Lilys winery and tasting room are located

Applegate River with an amazing riverside

Red Lily features a rustic-chic tasting room, an


outdoor patio with gorgeous views of the valley,
a historic 80-year-old pole barn, expansive
grounds with lush grass areas (bring a blanket),

The vineyard has more than doubled in size

SCHULTZ WINES is the label associated


with Glory Oaks Vineyard and Farm, a new
venue in the Applegate Valley. Glory Oaks
is a long way from Baton Rouge, Louisiana
where owners Greg and Debbie Schultz took
their first steps toward becoming viticulturists.
Their journey began with a few classes on wine
at Louisiana State University that sparked a
tasting trip to Southern Oregon. It was love at
first sight. Greg and Debbie stayed in Ashland
for five months in 2010, volunteering as cellar
hands at Weisinger Family Winery. Once they
met Linda Donovan of Pallet Wine Company
and discovered the custom crush option for

The first bottling of Schultz Wine was a 2010


Chardonnay that won a gold medal at the 2011
World of Wine competition. 2011 was also the

waterfalls on the North Umpqua River, trips to the coast and Crater Lake
and local wineries. Inspired by European travels, the Courons decorated

is the first urban winery of its kind in the

SPANGLER VINEYARDS owner, grower and


winemaker for twenty-eight years, Pat Spangler
bought his Roseburg estate and winery in
2004. After spending three years in northern
California looking for vineyard property, he was
attracted by the Umpqua Valleys rural character.
He found a special site with some of the oldest
vines in the region and never looked back.

Tasting Terms
AVA: American Viticultural Area defines a
winegrowing region.
Acidity: In winemaking, sour or tart flavors,
in-balance or out of balance with sweet and
bitter components of a wine.
Aroma: The smells attributed to the grape
varietal such as blackberry, apricot, cherry,
strawberry, etc.
Astringent: The drying effect that tannins
give to the mouth, often described as a
puckering sensation.
Barrel Fermented: A process by which wine
(usually white) is fermented in oak barrels
rather than in stainless steel tanks for a
richer, creamier, oakier style of wine.
Blind Tasting: A tasting performed with the
taster unaware of what they are drinking in
order not to be influenced by the producer of
the wine.
Body: A term for the way wine feels in the
mouth, generally light or full bodied.
Bouquet: A set of smells given-off, such as
vanilla and honey in Chardonnay or anise in
Cabernet Sauvignon.
Brix: The Brix scale is used in the United States
to measure the sugar content of grapes
and wine. For an alcohol conversion level,
multiply the stated Brix by .55.
Canopy: The parts of the grapevine above
ground including shoots and leaves.
Clarity: Describes how clear wine iswhen
ready to drink, wine should be clear.
Corked: A corked wine is a flawed wine that
has taken on the smell of cork as a result of
an unclean or faulty cork that smells like wet
cardboard.

Fermentation: The process by which yeast


converts sugar into alcohol and carbon
dioxide and turns grape juice into wine.
Filtering: The process of removing particles
from wine after fermentation. Most wines
are filtered for both clarity and stability.
Finish: How a wine is perceived and the
sensations it delivers after swallowing.
Flight: A sampling of wines, usually from 3-8
smaller glasses.

Horizontal Flight Tasting: Tasting of several


wines from different wineries within the
same vintage, to see how each is expressed.
Lees: The accumulation of the dead yeasts
and other residual particles left-over at the
bottom after fermentation.

Legs: The droplets that drip down the side of a


wine glass when wine is swirled, often used
to judge the amount of alcohol. Slower
drips = higher alcohol content.
Malolactic Fermentation: A technique of
fermenting where the grapes malic acid
is converted into lactic acid, resulting in a
richer, fuller wine.
Nose: Aromas that a wine gives-off.
Racking: The practice of moving wine by
hose from one container to another, leaving
sediment behind for purposes of aeration or
clarification.
Reserve: A term for wines of higher-quality,
created by either selecting the best fruit or
aging it longer in-bottle before selling.
Sediment: A bi-product of yeast in wine that
eats-up sugars, leaving small, dark granules
that are completely harmless.
Smoky: Some wines, either because of the
soil or because of the barrels used to age the
wine, have a distinctive, smoky character.
Sulfite: A preservative used to prevent oxidation.
Swirl: The act of rapidly moving wine in a
glass in a circular motion to expose more of
the wine to oxygen to release more aromas
and flavors during sensory analysis.
Tannins: The mouth-puckering substance
found mostly in red wines derived from grape
skins, seeds and stems and from oak barrels.
Tannin acts as a natural preservative that
helps wine age and develop.
Terroir: French word for the sum of
environmental factors that influence a given
vineyard site including amount of sunshine,
soil type, altitude, rain, fog, and wind.
Varietal: The variety of a grape such as Pinot
Noir or Tempranillo.
Vertical Flight Tasting: A tasting of multiple
vintages of the same wine from the same
winery to show the variations in each
vintage.
Vintage: The year in-which the grapes were
grown and made into wine.
Viticultural Area: A legally-defined grapegrowing area distinguished by geographical
features, climate, soil, elevation, history and
other definable boundaries.
Yeast: Micro-organisms that produce the
enzymes which convert sugar to alcohol that
are necessary for the fermentation of grape
juice into wine.
