Chocolate and Almond cake

For 04 Portions

Ingredients

Astra margarine 175 Gr


Sugar 175 Gr
Plain chocolate [ melted ] 100 Gr
Ground almonds or cashew nuts 50 Gr
Eggs [ separated ] 4 Nos
Flour 50 Gr
Baking powder ½ Tea spo
Baking soda ½ Tea spo
Corn flour 25 Gr
Almond essence 1 Tea spo
For icing and decoration
Astra margarine 100 Gr
Icing sugar 225 Gr
Milk 1 Tea spo
Melted chocolate 40 Gr
Chopped cashew nuts toasted 50 Gr

Method

Cream the margarine and sugar together until and fluffy. Beat in the egg yolks, melted
chocolate, ground almonds and essence. Fold in the corn flour, flour, baking powder and
baking soda.
Whisk the egg whites until stiff, then carefully fold into the cake mixture. Divide the
mixture between two round 20 cm baking trays. Bake at 160 C for 40 - 45 minutes. Turn out
and cool on a wire tray.
To make the icing, beat the margarine and icing sugar. Add milk and melted chocolate. Beat
well. Sandwich with chocolate butter cream and cover the sides with chopped cashew nuts.
Decorate with half dipped Almonds.
