CHOCOLATE WEET-BIX SLICE

Everyone needs a quick, one-bowl, go-to slice that can be thrown together heres mine.

MAKES 16 PIECES 125g butter, chopped 3 tablespoons cocoa powder 1 cup brown sugar 1 egg, lightly beaten teaspoon vanilla extract 1 cup self-raising f lour cup desiccated coconut 4 Weet-Bix cereal biscuits, crushed CHOCOLATE ICING 200g quality dark or milk chocolate, chopped (Plaistowe brand) cup sour cream, at room temperature

Preheat the oven to 170C fan-forced/180C no fan. Grease and line the base and sides of a 20cm (base) square cake pan with baking paper.

2 Place the butter in a large heat-proof, microwave-safe (such as Pyrex)


bowl and microwave, uncovered, for 12 minutes on Medium/50% until melted and warm. Add the cocoa powder and stir until dissolved. Stir in the remaining ingredients and mix well.

3 Using a large metal spoon, press the mixture into the base of the cake pan.
Bake for 1820 minutes or until a skewer inserted into the centre comes out clean. Set aside to cool.

4 For the chocolate icing, microwave the chocolate in a medium heat-proof,


microwave-safe bowl, uncovered, for 23 minutes on Medium/50%, stirring every minute with a metal spoon until melted. Stir in the sour cream, then spread over the cool slice. Allow to set before cutting into pieces.

Four crushed Weet-Bix will give you 1 cup crushed


cereal. (We often have crushed Weet-Bix in the bottom of the box, so this recipe is a perfect way to use them up.)
