The winner of the H&M Design Award 2012 was announced today as Stine Riis, a 28 year old graduate from the London College of Fashion. She was revealed as the global winner at a special catwalk show at Stockholms Mercedes-Benz Fashion Week, where Stine presented her winning collection. Stine wins 50,000, and the chance to have around fifteen pieces from her collection sold in selected H&M stores in September. Stine was chosen by a grand jury which included fashion designer Christopher Kane, noted fashion journalists Hilary Alexander and Kristopher Arden Houser, and fashion blogger Susie Lau.

STELLA MCCARTnEY RETURnS To LonDon FASHIon WEEK

It will be a busy year for Sir Paul McCartneys designer daughter who is also Creative Director of the Adidas kit to be worn by Team gB during the 2012 olympics. In 2012 Ms McCartney will also be creating a World of Stella at Selfridges on oxford Street from 26th January until 14th February, launching a new fragrance, and opening a second London store in Brompton Cross. But the designer returns to Paris to show her Winter 2012 collection, which will be presented in the French capital on 5th March.

Creative director for Louis vuitton, Marc Jacobs is collaborating with Japanese polka dot painter Yayoi Kusama. They have collaborated before, working together creating leather goods, ready-to-wear, accessories, shoes, watches and jewellery so keep your eyes peeled for something which is going to be spectacular. The pieces are scheduled to launch in Louis vuitton stores in July 2012. This year is a big one for Kusama with some of her work appearing in The Tate Modern between 9th February until 5th June which will be a fine piece. One of Kasumas Infinity Net pieces briefly held the record for holding the highest price bid, with it being auctioned at a staggering $5.1 million in 2008! Like I said- expect something spectacular!

Zaras Spring 2012 collection look book has surfaced, bringing a fresh choice of the most popular trends this season. The collection sees mixed prints, pastels, high slits and meshing, using a clever mix of texture and tailoring that Zara is renowned for. Effortless, loose and low-waisted, the tailoring this season is more relaxed with softer silhouettes. There are a delicate array of floral prints and maxis to entice us in to warmer climates, and with their playful range of separates, you can breathe exciting new life in to a somewhat staid winter wardrobe. We are particulary in adoration of the soft cream trench and shimmering sequined mini, teamed with a soft viscose tee. Keep it simple with Zara and bound in to Spring with style.

David Beckham celebrated the global launch of David Beckham Bodywear for H&M with an in-store launch, followed by a cocktail party at a pop-up gentlemans club created especially for the occasion. At the in-store event at H&M on Regent Street, David showed the new television commercial, met with fans and signed the collection. Later, celebrities such as Bianca Jagger, Emma Bunton and Jessica Ennis joined David to toast his bodywear range. This debut collection is the first in a long-term partnership between David Beckham and H&M, and is available from today in 1,800 H&M stores worldwide, as well as online. The event marks the debut of David Beckham Bodywear for H&M, a new collection which focuses on fit, function, comfort and design. Designed by Davids in-house team and sold exclusively at H&M in around 40 countries worldwide, this first collection presents the nine key products which will go on to form the core of the range. The collection will develop seasonally with new styles, new fabrics and new patterns. I am very proud to launch my Bodywear collection for H&M in London. It was amazing to see the product at the in-store launch after so many months of development, and meet with fans. I loved the pop-up gentlemans club, which felt both traditional and brand new. Its the same mix I hope men will find in the Bodywear collection. It was an amazing evening to launch my new collection. David Beckham. At the cocktail party, guests were treated to a unique David Beckham for H&M experience, with decor, food and drink designed to reflect not only classic gentlemens clubs but also Davids British roots. Live music was provided by the James Pearson Trio, direct from the infamous Ronnie Scotts club, followed by a DJ set by Mani from The Stone Roses and DJ the Queens of noize.

Quakers Friars is a place synonymous with shopping, browsing high-end brands and the infamous Harvey nichols chain. I dont head down there, Its surely out of my price range. Some may say, favoring the under cover Cabot Circus shopping experience, or trusted Broadmead chains. Well, as a new year is now well underway and with it new beginnings, its our duty to refresh your thinking, with all that we consider to be Tres Chic. Shopping, after all, once December has passed is something we baulk at a little, having had our fill of the crowds, queues, and January credit card statements. (Unless your a Tres Chicer of course, and then your a die-hard shopper all year round!). But, instead of being blinkered by the Its January, thou must not spend fever that sweeps our sterling nation, it is important to get things right. Quakers Friars for example.... Holds a darling secret not to be surpassed. one of the most important things we can do as women, is invest in ourselves, not simply in exterior guises, in cloth and adornments, but, in spirit, in soul, and in our wellbeing. now, we do this with friends, with herbal tea, and with wine, we do this with gossip, and natter and cake, but, one of the most vital things we can do for ourselves, to enrich pretty much everything else.. Is give ourselves sanctuary. Time, space, calm, and relaxation, away from the world. As needed in January as with any other month in the year. We have spent the last month devoted, to all of the expectations our lives hold as women, the expectations placed on us as

(okay, the kippers wasnt an ideal supper to cite, but it felt right!) not, least to mention the demands of the working women who have the daily stresses of jobs, that equal our male counterparts, just not with dinner served for us at the end of the day. *All sweeping statements are provided for effect, and not intended to upset Men reading that cook.

So, how to we juggle all of this and stay sane? How do we master the many hats its takes to wear convincingly, and not crack like a sunday morning egg? We invest in ourselves, in a way that only a Woman can. Through the saviour I affectionally like to call... The Spa!

Our fashion-cat gets her claws into couture. This month is Bill Gaytten at Dior
Bill Gaytten took us through the history of Dior for the Spring 2012 couture show, by going back to what we essentially loved. The nipped in waists and full skirts were a theme we saw throughout the collection, Its meant to be x-ray Dior, All the structure of iconic Dior, thanks to lots of fittings, but all of it see through Gaytten explained Gayttens twist on this very Dior collection was his idea to implement a see through element, his playfulness with fabrics like sheer organza exposed the impeccable workmanship that went into the construction of each garment. But as a massive fan of Dior would you have been inspired by this collection? Ultimately the collection was all about the Dior silhouette, tiered dresses, jackets, coats all spoke Dior playing with different degrees of translucency. With critics unsure that Gaytten could live up to the flamboyancy of former Dior creative director John Galliano, Gaytten proved that he can produce the shapes and style that John Galliano created. But here lies the criticism, couture Dior is all about blowing you away and exciting you, did this collection live up to that, no? It felt a little safe, because we have seen this before. Thinking outside of the box and pushing the brand forward is essential to keep us on out toes with anticipation. At least this season was better than the last and hopefully Gaytten can do exactly this as it seems that hes not going anywhere anytime soon.

Foundation is one of the most important beauty essentials. It evens out skin tone and gives you the perfect texture to your skin whether its a slight shine or a completely matte surface. But its difficult to know where to start:

Visit lots of beauty counters and check out the products. Test them on the back of your hand for texture and consistency (although your hand will be different colour to your face so dont try to match it). Then ask to try it on, hopefully the assistant should match you correctly. Once its on dont feel any pressure to buy it there and then. Go outside to see it in a natural light because the lighting in the shop is often different. You should also wear it for a few hours to see how your skin reacts to it and to see if it stays on like its meant to. Some brands have many different types of foundation so tell the assistant what your skin type is so they can match you. The general rule is that if you have oily skin you will want a more mattifying foundation and if you have dry skin you will want a hydrating one. Foundations have different finishes and different levels of coverage. The perfect one will feel comfortable to wear and should match your skin tone and colour exactly. Prepping the Skin for Foundation

It is extremely important that before foundation your skin is hydrated and smooth. Make sure that your skin is exfoliated and well moisturized. Any unevenness in the texture of your skin will be emphasised by the foundation. If you have normal to oily skin you may consider using a primer. A primer is usually a cream product that you apply before foundation but after moisturiser. It helps the foundation to stay on the skin all day and to provide a smooth base.

4. By Terry Light Expert - from Space NK From the woman who invented the Touche Eclat this foundation smells gorgeously of roses (as does the whole range) and gives a medium coverage. It is more suited to older skin as it has anti-ageing properties and it has a convenient brush applicator. 5. Chanel Vitalumiere This is best for dry skin as it is very moisturizing and has a dewy finish. The bottles may look small but they usually last for about 9 months with everyday use.

Application

There are many different ways to apply foundation and the technique used will depend on the foundations consistency. You can use brushes but make sure you use synthetic brushes for liquid products (as liquids can damage real hair brushes). We recommend Real Techniques Foundation Brush or Sigma Foundation F60 or F80 You can use sponges which come in all shapes and sizes but the Beauty Blender seems to be the latest innovation. And of course fingers are great for applying lightly as you can really work the product into the skin.

There should be no stripes or uneven coverage on the skin and if there are some blemishes you can get concealer and cover specific parts of the skin. After you have applied foundation you should use powder to help it stay in place. You can buy coloured powders but also translucent ones which do not add any colour (although they look a scary white in the pot). Smokey eyes are the perfect look to continue through the cooler temperatures of early Spring. Playing with new tones can really freshen up your look whilst emphasising one of your best assets. Opt for a deep grey or soft or burgundy for blue eyes, and if your are eyes are green, deep plums work really well. Gently build up the colour with a small angled brush across the lower lids, working gradually in to the corner of the eye, and sweeping outwards. Dust an ample amount of loose face powder over the top of your cheekbones first to catch the dust, and sweep away at the end. Set in the historic Friary building on Quakers Friars Bristol, Raymond Blancs Brasserie Blanc is an imposing sight. It offers a beautifully restored piece of Bristol history and with it a delicious back story.
Dating back to the 13th century, these buildings provide a rich tapestry of Bristols heritage and the walls hold exceptional memories for many. A place where Monks kept warm by the fire, where Quakers would meet, where children of the 1800s would learn and play in Bristols first nursery school, and where many a happily ever after began, and still does today. Raymond recalls the time he first set eyes on the building and he was truly aghast. I have never been speechless, but when I first visited Quakers it was close. To have the honour of putting Brasserie Blanc in such buildings is quite unreal. If the georgian meeting house was not enough, the two medieval halls will just stagger you. I just cant do justice describing these buildings. Too big for just a Brasserie, I have turned the halls into banqueting halls. Having been built in the 13th and 14th century as a monastery and then used by Bristol guilds. After further research, I discovered that the guilds involved were the

Bakers and the Cutlers, what more could I want, I of course used the names, and we now have Bakers hall and Cutlers hall. The Brasserie is in the old Quaker meeting hall, the room is a marvel, simply built but of outstanding beauty. It is my favourite Brasserie of all! on arrival to the restaurant you cannot help but feel the energy of the building and I set off to wondering what the walls may say, if indeed they could talk. The main room has been restored with loving care, and is a pleasure to be in. The sweeping staircase and balcony is a beautiful and original feature to the captivating space, and you really do feel instantly relaxed and the trials of the day seem not quite so important. We are taken through to the bar area where we are served a charming glass of Domaine Begude Savignon Blanc and are taken by the French script that edges the balcony around the great room. It is a famous fable, by the Jean de la Fontaine. The bar manager tells us. Jean de la Fontaine is the equivalent to Shakespeare in France and in the fable The Raven and The Fox Jean de la Fontaine speaks of the Fox flattering the Raven to make the bird sing, and in doing so, releases the cheese its holding in its mouth. I suspect this reminds Raymond of home and his childhood, a theme that runs deep in the creation of The Brasserie Blanc chain. The menu itself is a blend of a la carte French classics & modern dishes made with fresh, seasonal ingredients. Around 40 of which introduced to Raymond by his Maman and all in homage to his home land. From Maman Blancs Miscellany of Salads to Toulouse Sausages with Smooth Mash and onion Sauce, all the dishes are prepared with respect to the cycle of gastronomy and produce that is free range, and of the season. The set menu delights with 2/3 dishes after 7pm, with more than five pounds change from a twenty pound note, and offering classics such as white

onion soup with truffle scented cream to pan fried pork cutlet with slow roast winter vegetables, it is an easy option for a brisk and lean February. I opt for the Smoked Lyburn Cheese Souffle with Apple Apricot and Walnut Salad, and CJ tempts me with her choice of Burgundian Snails in garlic and Herb Butter. I dearly wanted to be a cultured lover of Escargots, but, I am afraid, I could not be converted. CJ adored them however, and remarked that they were the best she had tasted. My souffle was divine, and thinking of it now, has made me recall its light and perfectly complimented flavours. A triumph in my opinion. For our main course CJ chose the olive Tapenade Stuffed Corn Fed Chicken, Winter Ratatouille, Garlic Confit. (A mouthful! But, a delicious one!) and I elected for the Free Range Cornish Rump Steak. Both dishes were extraordinary and as Raymonds French accent ran in my head from our interview that morning, I couldnt help but think that all of his sentiments were not only genuine, but they made me think of food in a whole new way. Raymond prides his Brasseries on being able to offer affordable cuisine that is using the best ingredients possible, and served in an environment that is fun, and where you feel extremely well looked after, that you wish to return time and time again. I felt all of these things, and his own words, I agree, the dishes are heavenly! A VIRTUOUS CYCLE OF GASTRONOmY


JB: Raymond you were born in Besancon, France. What do you remember of your childhood that inspired you to cook? In that part of the world you are sandwiched between the rugged part of the mountains and the beautiful valley of burgundy. Food from our region was pure and local, we never looked to further afield for our produce and everything came direct from our rich landscape.The Montbeliard region is known for being exceptional milk providers and dotted around the mountains you would find everything you needed for rich sustenance, from the 15 types of cheese to the quality of the cows meat itself. I remember great wheels of cheese, maybe 40kg. The food was pure and all around us. Maman would create beautiful dishes from nature. As a child I witnessed a virtuose cycle of gastronomy. I would hunt and sell on the market on the street, and be part of the rich tapestry of life. At my home, food was love, food earth, food laughter, food sex, food celebration. Food is a huge act of love and of giving. I witnessed this through Maman and Brasserie Blanc is built on all those virtues and values. JB: What smells evoke memories of those experiences? oh, the raspberries! We used to pick 20kg

of raspberries and bring that back in buckets through the Forrest. We would walk maybe five miles back to Maman. I remember the sausage, the chervil, garlic, mushrooms of all varieties, and the Comte cheese. I have just introduced a new dish at Le Manoir which is using the smoked sausage of the region with potatoes, cabbage, cooked slowly and authentically. Real French home cooking. When I tasted it, it was heavenly. Such memories! Every smell to me was, seasonal, you always knew which season you were in. JB: Do you teach Tata and Sebastian (Raymond and Natalias Children) the art of fine dining, or do you prefer to be cooked for at home? When you cook every day of your life there is nothing better than coming home, putting your feet up, having a lovely rest, with a glass of wine. Every now and then I will cook a feast of course, when we have a dinner party, but, otherwise I like to be looked after. Natalia adores cooking and is finishing her Masters in nutrition so she has a great understanding of food. It helps me keep slim and fit! (Raymond laughs, expressing the importance of being able to laugh at yourself in life... But not too much he explains!) JB: What makes Brasserie Blanc Bristol quite so special? The Bristol Brasserie Blanc is an historical landmark, the Quakers and Bakers Friars has such rich history. When I saw the site I was just ooh La La!. A site with the greatest beauty. The Bakers is a private dining hall which seats 80, and the Cutlers seats up to 200 people. In terms of its beauty it has very English architecture but with a very French feel about it. It was the place that people came to say I love you and marry! To me, it is our most beautiful brasserie.

JB : What are your favorite dishes at the Brasserie? oh, how can you ask this, of a man that loves food? Brasserie Blanc is about home to me. About my region. 60 of the dishes on the menu are my homes cuisine. Rustic, wholesome, beautiful. From the snails to the belly of pork, all of my menu is free range, as it should be. JB: Which Chefs inspire you? I am pleased to say that cookery is now part of the consciousness here in England. The consumer is more aware and expects more, the retailer knows they have to connect, and re-invent our landscape, connect with the soil, for gastronomy to me is the soil. The true value of gastronomy is to make sure we re-invent our landscape, sensitively. Chefs I regard highly are people like Michael Caines at Abode, Heston Blumenthals Fat Duck, and of course Jamie oliver, a wonderful man. The Michelin starred Rock restaurant, The Maison Arms in Devon is a fantastic pub. The purist Barry Haughton, from Bordeaux Quay. He is a Bristol boy, a purist and the very first chef to campaign for organic values. Simon Hulstone of The Elephant Torquay. His restaurant has fine dining at the top, and cafe bar at the bottom and is very clever indeed. Food is not so much simply a commodity any more, it is about re-inventing. JB : What do you think of Gordon Ramseys man management style? I disagree with it entirely! How would you expect to send your children into an environment where people are being abused? Anyone that loves their industry wants serenity and to have people taken by the hand and supported. We want our great young talents to stay in our industry, not leave it through ill treatment. our industry is one of the most captivating in the world, food touches art, touches architecture, farming, the earth we live on. We prove our values through our training programs at Brasserie Blanc, and if we didnt support our youth & our staff we wouldnt have so many wonderful people in our industry. JB: If I am a girl on the go, with so many places to be and so little time, and I have 10 minutes to create a dish, what would you suggest I make? oh, so many things!! Take a saucepan, boil some water with some salt, add some pasta, heat some garlic and tomatoes and fresh herbs for a simple pasta dish. Take 3 eggs, add some cheese, chopped sausage, some fresh herbs for a beautiful omelette. Cooking is not complicated, it is possible to eat well with little time, in fact my next series is entitled How To Eat Well! Full of recipes that are wonderfully nutritious and low in calories.

You know, how long does it take to pan fry a piece of mackerel? or take an avocado, some crab meat and lemon juice? or, crumble some goats cheese in to a salad? But, it does take effort, but the simplicity of cooking is very rewarding. JB : What final sentiment would you like to leave Tres Chic readers about Brasserie Blanc? My Brasseries are like a can can, where as Le Manoir is like a fine waltz, of course at Le Manoir you pay for the fine dining experience but, at our Brasseries it is a place that is not exclusive, but, inclusive. good solid food, with good ethics, and affordable.

Jamie oliver - an iconic chef, with a cheeky-chappy demeanour. Laying claim to a plethora of famous television shows, books, kitchen paraphernalia, and of course restaurants. It really leaves the bar set rather high, for the standard of cooking expected. But, Jamie olivers isnt all about the food (Dont be ridiculous I hear you cry?) But, the ethos in which the Jamie Empire is built is based on far more than simply good tucker. Jamie olivers strive to deliver wholesome, rustic Italian dishes that are made from simple ingredients, and in an environment that provides a neighbourhood feel. Yes, and all inspired by the Italian table where people relax, share, and enjoy each others company. But, thats not all. The staff are trained for 6 weeks in every aspect of the workings of the restaurant and this inspires a real sense of cohesion throughout the staff, from management to pot washer. They are encouraged to be relaxed, chatty in serving style and informative in their passion for the dishes. Their passion, may I say is evident at the door. When

Tres Chic looked at Jamies Italian as one of Love S/W restaurants we thought, hey hold on, too contrived? Too obvious? Too over-exposed? But look, whether an undiscovered gem in the back streets of the City or a Power-House of gastronomy, it really shouldnt be discounted for such base level judgement. Lets try it for ourselves we thought. And try we did. on arrival at the super-slick and cunningly restored listed building on Park Street, Bristol we could tell instantly that this was a happy place. The host beamed, and the lights twinkled in a way that made you feel as though this was your local and the staff knew you name. (Yes, I can hear the Cheers theme tune too!) But, this was genuine, and under-pinned with streamlined service and technological prowess. We were shown upstairs to the first floor with diner style booths and the hustle of the open kitchen, and were instantly hit with that closeness of the tables, the smells and steamy wafts, and the dim lighting that makes you feel relaxed on the spin of a dime, and all in true Italian style. The charming new Manager James took us down to the Antipasti Kitchen which

boasts a delicatessen feel with fresh fish, meats, fennel, salami, breads and vegetables all enticing you gently in to your evenings choice of fare. The restaurant boasts fresh, home made pasta in a variety of forms, shaped by its swanky in-house pasta making machine. (Which, lets face it, would all like to have as part of our normal kitchen kit, but at 1800 a unit, I think shop bought will suffice at home for me!) With 20 types of pasta on display from Squid Ink to Tagliatelle this certainly isnt your normal home kitchen. Jamie is involved in choosing every one of his 26 sites both here and abroad, (With new sites planned for St Albans and Manchester in Jan/Feb 2012) and from the rural, rustic backdrops to the general aesthetic, he takes as much care, as he does with his dishes. Bath for example, maintains the original drawing room of the stunning georgian House, keeping its 130 year old wallpaper in commitment to this rustic feel. Every floor has something going on and with Jamies touches dotted all around from cookery books to oven gloves, it is clear that learning to develop your skills at home is an integral part of the company. But, back to the restaurant dining You may be shocked to learn that you can now book for any size table at Jamies, (not just in 8s or above) and, although they are blessed with a great number of guests each evening, they never let the restaurant reach capacity, for those last minute diners that walk in off the street. (We cant be organised all the time!) It may also impress to know that on the very top floor there is a private dining room with views down to Park Street, providing a decadent and intimate space for your top 20. Either for work or pleasure, this is a true nugget of a place for that private need. After all that exploration, we really had worked up an appetite. Jamies is famous for its antipasti planks, and as we wanted to be shown the best of, we asked our fab and friendly waiter to choose for us. Starting with the wine. Torrione 2008 Pertolo, a stirring Sangiovese made in Tuscany by Jamies friend Luca. We were off to a good start. This followed with the fresh delectable antipasti, which was as joyous

in the mouth as it was to the eyes. From the cured meats of pistachio mortadella to the chilled olives, crunchy salad of beets, carrot and mint, and the curious looking mini boiled egg which was in fact, a slice of tangy percorino cheese and chilli Jam. Scrumptuous! For main we gorged on the black angel spaghetti with scallops and the Seaside Risotto. The squid ink pasta was rich and beautifully balanced with scallops, anchovies, wine and capers. Leaving the Seaside Risotto to dazzle with a healthy kick of chilli amongst the catch of the seaside, amongst the obvious clams, cockles, mussels and prawns nestle some gratifying gurnard, which was light and tender. This, I guess only leaves me to share what we felt to be the ace card at Jamie olivers that evening. The dessert. (or Dolci.) With a chocolate, raspberry and amaretto brownie, to make the mouth water and an amalfi lemon curd slice, I believe our socks actually popped off at the finale! Now, I dont know if that is a truly Italian saying, but it summed it up nicely for us! Tres Chic whole-heartedly recommends Jamie olivers, for its intimate atmosphere, authenticity, style and genuinely passionate staff. not forgetting its reasonably priced winning cuisine.

If your looking for a meal to wow your dinner party guests theres nothing quite like seafood sauce to knock their socks off, steering away from the staid marie-rose sauce this dish will prove a winner for even the most choosy of guests.
SERVES: 6 PREPARATION TIME: 15 mins COOKING TIME: 30 mins
2-3 tbls; corn or peanut oil 2-3 cloves garlic, roughly chopped 1 large onion, diced 4-5tbls blanched almonds or peanuts 1-2 fresh red peppers, seeded and diced 1tsp chilli flakes or dried chillis, seeded and crumbled 3-4 whole cloves 1tsp coriander seeds 1 short length cinnamon stick 1 glass red wine 1tsp grated orange zest 2tbls dark cocoa powder (preferably unsweetened) 1 tin plum tomatoes salt and a little vinegar To Finish 350 grm raw, peeled prawns, coriander leaves and lime quarters.

5. Transfer to the processor, add the cocoa and tomatoes and whizz till you have a smooth sauce. 6. Return the sauce to the pan, bubble up, turn down the heat and leave to simmer gently, stirring at intervals, until the sauce is lusciously thick and dark. Taste, add salt (maybe a little sugar) and a splash of vinegar to sharpen the flavours. 7. When you are ready to serve, reheat the sauce, stir in the prawns and bubble up till they turn opaque: no more than 2-3 minutes. Ladle into bowls and finish with a sprinkle of corriander leaves, lime quaters for squeezing and decent a chunk of crusty bread for scooping.

1. Heat a tbls;of oil in a heavy pan and fry the garlic and onion until they soften and caramelise a little, then drop them into a processor. 2. Toast the nuts briefly in a dry pan and then add them to to the processor. 3. Pour in the rest of the oil and fry the peppers, dried chillis and the spices for a moment.

Warm up your Spring with a super healthy, delicately spiced, and uber-quick meal to bring the family together. Whether on the run or dining in with you and yours, this meal is set to warm up the chilliest of early Spring nights.
SERVES: 6 PREPARATION TIME: 30 mins COOKING TIME: 3-5 mins
1tbls of ground nut oil, plus extra for deep frying 300g of skinless chicken breast(fillets) chopped into small pea sized pieces 5 dried chinese mushrooms, soaked in hot water for 20min, drained and finely chopped 1tbls of light soya sauce. 1 tbls of chinese 5 spiced powder. 1tbls of grated fresh root ginger 100g bean sprouts 3 spring onions finely sliced lengthways (use some of the good green tops) 2 small carrots (julienne) 1tbsp oyster sauce 1tbls light soy sauce sea salt and ground white pepper 2 pkts; large spring roll wraps,thawed if frozen (available from Asian supermarkets) 1 egg yolk beaten 1tbls cornflour 1tbls water

1. Heat a wok until smoking and add the ground nut oil, chicken and mushrooms and stir for 1-2 mins; season with soy sauce and 5 spice powder. Remove from wok and set aside to cool for 10mins. (Wipe the wok clean with kitchen paper). 2. Place the grated ginger, beansprouts, spring onions, carrots,

chicken and mushrooms into a bowl , season with the oyster sauce, soy sauce, sea salt and ground white pepper. Stir well to combine. 3. Lay 2 spring roll wrappers one on top of the other (the extra thickness will help the skin from breaking) and position so that the corners are pointed upwards, downwards and to the sides. 4. Spoon 2tbls of the filling into the center of the wrapper. 5. Brush each corner of the wrapper with the cornflour paste, then bring the two opposite corners on the sides together and, keeping your finger on the edges, bring the bottom corner towards the middle then roll the pastry up tightly towards the top corner. Tuck the top edge in and seal it with a little of the beaten egg yolk. Repeat with the remaining spring roll wrappers and filling. 6. Heat the wok over a high heat and fill the wok to a 1/4 of its depth with ground nut oil. (Heat until a cube of bread dropped in sizzles and turns golden-brown in 15sec) 7. Carefully lower the spring rolls in small batches into the oil and deep fry for 2-3mins, or until golden-brown. 8. Remove with a slotted spoon and drain on kitchen paper.

ing the pastry around the base and sides so that it comes about 5mm above the edge of the tin. 4. Then prick the base with a fork and brush it all over with lightly beaten egg white. Bake on the baking sheet on the middle shelf for 15 minutes then, as you remove it, turn the temperature down to 350f/180c/gas mark 4. (This can all be done in advance.) 5. To make the filling, grate the zest from 6 lemons and squeeze enough juice to give 275mls. 6. now break the eggs into a bowl, add the sugar and whisk to combine. Dont over do it or the eggs will thicken. 7. next, pour in the lemon juice and zest, followed by the cream, and whisk lightly. Pour it all into a 1.21 jug. 8. The easiest way to fill a tart is to place the pastry case on the baking sheet in the oven, and then pour the filling straight into the pastry (this avoids having to carry the tart to the oven and spilling it). 9. Bake for about 30 minutes or until the tart is set and feels springy in the centre. 10. Dust with icing sugar and serve with crme frache or whipped cream.

6 size-1 eggs 175g caster sugar Zest of 6 lemons and 275ml of the juice 7fl oz of whipping cream Icing sugar to dust

For the pastry


1 deep fluted quiche tin 23cm / 4cm deep, lightly oiled 175g plain flour 40g icing sugar 75g softened butter Pinch of salt 1 egg yolk 1tbs water

1. Place all the ingredients in the bowl of your processor and process until it forms firm dough. Then turn it out and knead lightly, pop it in cling film and leave in the fridge for 30 minutes to rest. 2. To cook the pastry base, pre-heat the oven to 400f/200c/gas mark 6, and place a solid baking sheet in the oven to pre-heat as well. 3. Roll out the pastry as thinly as possible, and line the flan tin, press-

Edinburgh is one of Europes most enticing destinations.
