Green Jackfruit dry subji (1) Ingredients: * * * * * * * * * * 500 grams green jackfruit coconut 6 dry red chillies 1 tbsp

p Coriander seeds 1 tsp Fenugreek seeds (methi) Marble sized tamarind 1 tsp Mustard seeds Curry leaves oil Salt to taste

Method: After removing the outer rind of the jackfruit, cut it to bite size pieces and place them in the pressure cooker container. Add sufficient water and cook for 10 minutes. In the mean time in a small frying pan add little oil and fry coriander, methi s eeds along with red chillies. Grind all of them with the coconut, tamarind and s alt. Take the jackfruit pieces out of the cooker, place them in a mortar and mash the m with a pestle! Transfer the mashed pieces to a larger frying pan; add the masa la and the water used for collecting adhering masala from the blender. Cook for few minutes or until all the water has evaporated. To a small frying pa n add little oil and heat. Now add mustard seeds and as they begin to splutter a dd curry leaves and season the Chakko. Jackfruit (Kathal) Curry(2) Ingredients * Peeled and Chopped Green Jackfruit Pieces - 2 cups ( I use the canned gre en jackfruit available at our Indian grocery store - so convenient) * Tomato - 4 medium * Onion - 3 medium * Ginger Garlic Paste * Turmeric Powder - 1 level tea spoon * Corriander powder - 1 table spoon * Garam Masala powder - 1 table spoon * Green Chillies - 1-2 * Whole spices o Peppercorn - 8-10 o Black cardemom - 3-4 o Cloves 5-6 o Cinnamon - 2 sticks o Cumin seeds - 1 tea spoon * Salt and Pepper to taste * Oil to cook * Fresh corriander or your favorite herb to season- chopped fine. Method * In a blender or processor make a puree of onion, tomato, ginger garlic pas te and green chillies. * Heat the oil in a deep frying pan or wok .

* Fry the jack fruit pieces or 3-4 minutes and set aside on a paper towel * In the oil put all the whole spices, give them several seconds to sizzle t hen add the puree (Caution : it might splatter and burn you so do it carefully a nd cover the pan as soon as you have done it) * Cook on medium heat for 10 minutes * Stir and add all the powdered spices * Cook for another 20 minutes * Add 2 cups of water. Bring it to a boil * Lower the heat to medium and add the jackfruit * cook another 15 minutes * Garnish with your favorite herb. * Serve Hot Ingredients: (3) 1 Jackfruit- small 2 Onion-finely chopped 1 Tomato-large, finely chopped 4 dry Red chillies 3 slited Green chillies 1 tsp Ginger paste 1 tsp Garlic paste 3 Bay leaves 1 tsp Garam masala 1 tsp Coriander powder tsp Turmeric powder 1 tsp Cumin powder tsp Mint leaves Salt to taste 2 tbsp Mustard oil Method: 1.Remove the skin of the jackfruit and cut into small pieces. 2.In a vessel boil the jackfruit pieces for 20 minutes and drain water, keep asi de. 3.In pan heat oil, add the bay leaves, green chillies, red chillies, saute for o ne minute. Add the onion, tomato, ginger -garlic paste, saute until tomato and o nion becomes soft. 4.Once the tomato and onion is done, add the boiled jackfruit along with coriand er powder, cumin powder, garam masala, half cup of water and cook for 5 minutes. 5.Garnish with mint leaves and serve with rice.
