GOOD HOUSEKEEPING - Broccoli Mac n Cheese 2 slices whole wheat bread 8 ounces (2 1/4 cups) extra-sharp Cheddar cheese, shredded 2 tablespoons cornstarch 3 1/4 cups (1 percent) low-fat milk 6 ounces (2 cups) Gouda cheese, shredded 1 box (16 ounces) elbow macaroni 1/4 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 pound small broccoli florets 1/8 teaspoon freshly grated nutmeg 1. Heat covered 8-quart pot with 6 quarts water to boiling on high. 2. Arrange oven rack 6 inches from broiler heat source. Preheat broiler. Tear bread into large chunks. In food processor with knife blade, pulse bread until crumbs form. In small bowl, combine breadcrumbs and 1/2 c. shredded cheddar. 3. In 3 1/2- to 4-quart saucepot, whisk, combine cornstarch and 1/4 cup of the milk until smooth. Heat on medium-high, gradually adding remaining 3 cups milk in slow, steady stream, whisking constantly. Heat to boiling, whisking frequently, then cook 2 minutes longer, Remove from heat and immediately stir in Gouda and remaining Cheddar. Stir until cheeses are completely melted and sauce is smooth. 4. Add macaroni and 1 teaspoon salt to boiling water. Cook 1 minute, stirring occasionally, then add broccoli. Cook 4 to 5 minutes longer, drain , return to saucepot. Add sauce, nutmeg, salt and pepper, and stir over medium-low heat until well mixed. 5. Put in 3-quart shallow baking dish. Sprinkle breadcrumb mixture evenly over top. Broil 1 to 2 minutes or until topping is golden brown.

Red Cross preparing to respond across east coast if needed Two volunteers from the Western New York region deployed ahead of Hurricane Sandy to assist in response efforts throughout New York. Beth Shook of Cuba, NY left Saturday for White Plains, NY to provide Shelter Management, and Janice Davis from Friendship, NY also was deployed to White Plains, NY for Health Services. In addition, the Emergency Response Vehicle from the Southwestern NY Chapter is on alert to be sent to affected regions as needed, and it is expected that several additional volunteers from the Western New York Region will be deployed to assist in the response to Hurricane Sandy in the coming days. The American Red Cross encourages people in the possible path of Hurricane Sandy to keep informed about the storms progress and prepare now in case their community is affected. The American Red Cross Hurricane App puts lifesaving information right in the hands of people who live in or who visit hurricane prone areas. This free app - available in English or Spanish - is for use on both iPhone and Android platforms. It gives users instant access to local and real time information on what to do before, during and after hurricanes. The app also includes a number of features that allow people to monitor personalized weather alerts in locations where family and friends reside and share information with others in their social networks who might also need it. Army Pvt. TIMOTHY J. HOLLAND has graduated from basic infantry training at Fort Benning, Columbus, Ga. During the nine weeks of training, the soldier received training in drill and ceremonies, weapons, map reading, tactics, military courtesy, military justice, physical fitness, first aid, and Army history, core values and traditions. Additional training included development of basic combat skills and battlefield operations and tactics, and experiencing use of various weapons and weapons defenses available to the infantry crewman. Holland is the son of Kathleen Holland of Valley View Estates, Allegany, and brother of Jennifer Randolph of Prosser Road, Portville. The PORTVILLE COMMUNITY FOOD PANTRY, located at the First Presbyterian Church, 19 N. Main St., Portville, is a volunteer organization of the Portville Community. It is a supplemental and emergency food pantry seeking to serve the residents of the Portville School district. Anyone who receives assistance (food stamps, welfare, Social Security, etc.) and resides in the Portville School District is eligible to receive food from the Portville Community Food Pantry. GIFT OF MEMORY PROGRAM MARKS TWELFTH YEAR This year marks the twelfth year of Kevin Dusenburys Gift of Memory program, which benefits Potter Countys Christmas House. Through Dusenburys business, the Virgil L. Howard Funeral Home in Shinglehouse, local residents can contribute presents to the organization, which distributes gifts to nearly 1,200 Potter County children and elderly at holiday time. Last year well over 150 gifts were collected at the funeral home and presented to the Christmas House for distribution to needy families. LIZ SOBECK CROWNED 2012 JMH AUXILIARY QUEEN Wellsville, NY (November 6, 2012)- This years Jones Memorial Hospital Auxiliary Queen Candidates raised over $12,000 by selling tickets to the grand raffle. The drawing and the crowning of the young lady who sold the most tickets is one of the highlights of the Auxiliarys Gala & Silent Auction. This year, Liz Sobeck, the daughter of Dennis and Ann Sobeck of Wellsville, sold more tickets than any of the other queen candidates. The Queen candidates is a long-time tradition. Each of the Auxiliarys Twigs and several community organizations sponsor a candidate to sell tickets to the Grand Raffle. The young lady who sells the most tickets is crowned the Auxiliarys Queen during the annual Gala. The runners up to Liz, were second place winner Stephanie Moline of Andover and, coming in third, Rachel Ellison of Scio. The remaining candidates for the 2012 crown were Leah Farwell, Rachel Fahs, Hannah Graham, Daesha Plummer and Madilyn Williams. This was a wonderful group of young ladies, said Kathryn Gilbert, who co-chairs the grand raffle with Sylvia Masin. When you combine a generous and supportive community with a dedicated group like this, you have a very successful raffle fundraiser. The Auxiliary has the express purpose of raising money for the hospital. The Gala is one of the major events on the Auxiliary calendar.

COLLABORATIVE RECOVERY EFFORT RETURNS RARE GILT DARTER FISH TO THE ALLEGHENY RIVER Release of State Endangered Fish Aims to Boost Species Population in the Northeast In a collaborative effort to restore Gilt Darter populations in the Allegheny River Watershed, the New York State Department of Environmental Conservation (DEC) and partners released approximately 1,200 Gilt Darter (Percina evides) juveniles into the Allegheny River and Oswayo Creek in Cattaraugus County in western New York. Todays effort is a positive step forward in restoring this species to its historic range, as well as increasing the diversity of our aquatic ecosystems, said DEC Commissioner Joe Martens. This stocking event represents a milestone in the recovery of Gilt Darters in New York and culminates years of collaborative fishery restoration efforts. One of the Services goals is to work toward fully functional and sustainable landscapes, said David Stilwell of the U.S. Fish and Wildlife Service. This multi-agency effort to re-introduce gilt darters to the Allegheny River in New York brings us one step closer to restoring the natural heritage of this wonderful river. We look forward to working together in partnership on future projects in the Allegheny watershed. SUNY Cobleskill faculty, staff and students are all very proud of our contribution to this collaborative effort to conserve and restore the Allegheny River ecosystem, said Dr. John Foster, Professor and Chair of the Fisheries and Wildlife Department at SUNY Cobleskill. Classified by New York State as an endangered fish species, the Gilt Darter has been identified as a priority species for recovery efforts. Todays release marks the first time that Gilt Darters have been stocked in New York waters, and represents a five-year cooperative restoration effort between US Fish and Wildlife Service, Pennsylvania Fish and
Boat Commission, Conservation Fisheries Inc. and SUNY Cobleskill. The stocking sites are located near Olean and Portville, New York and near South Carrolton on the Seneca Nation of Indians Reservation. The species is found 20 miles south in Pennsylvania but has been absent from New York for the past 75 years. In addition to their history in the Allegheny watershed, Gilt Darters occur in parts of the Appalachians and in the Midwest. Fish surveys have shown them to exist in only 12 states. Averaging two to three inches in length and reaching 4 inches, the Gilt Darter is a small-sized fish. In early summer, Gilt Darter males undergo a brilliantly colorful phase and develop striking yellow black and green shades across their back, explaining why their latin name means attractive. Gilt darters are bottom feeders and eat a variety of invertebrates including aquatic insect larvae and crustaceans. In addition to stocking, restoration of this species in New York includes understanding and protecting their critical habitats. While the exact cause for the fishs decline is unknown, biologists attribute its decline in New York State to water quality deterioration and past siltation. Subsequent improvements in water quality and land use conservation practices bode well for the future survival of these fish. DEC will continue to monitor the status of Gilt Darters in the Allegheny River Watershed and is hopeful that this new population within the Allegheny watershed will become successfully established. Gardening outside in your exposed garden plots might not be possible; however, we can grow delicious foods indoors without much fuss and NO weeding! Here are two methods that will keep you eating fresh produce throughout the winter months: Microgreens are vegetables and some herbs that are grown to an incredible height of 1 to 2 inches tall. They are then harvested. The great thing about microgreens is that they are so easy and cheap to grow. These are so easy to grow you can raise a batch both at home and work for added nutrition throughout your day! The photo is of sunflower microgreens from sproutpeople.org. Fill a shallow container that has holes for drainage; perhaps recycle a restaurant takeout plastic container, with potting mix. Pre-moisten your potting mix, (adding water to it before it is added to the container); this keeps the seeds from all floating to one area as the water is being absorbed. Plant the seeds into the potting mix and press firmly into the soil or sprinkle a small amount of soil on top of your seed. No thinning is required as the seeds will be harvested before crowding is an issue. Keep the soil moist, but not saturated; dont let shallow containers become dry or your seedlings will wilt and die quickly. In a week you should see your seeds begin to sprout and within two-three weeks the second set of leaves will have developed and then it is harvest time! Trim off the plants with a pair of scissors at soil level, wash and eat! No weeding, hoeing, thinning or bending required! Consider trying leaf lettuces, arugula, beets, parsley, spinach, celery, kale, basil, mustard, radish, Swiss chard, amaranth, cabbage, kohlrabi, and cilantro. There are even sprout mixes for dogs, cats and birds. Growing sprouts is easy and provides you with a highly nutritious product. Sprouts are touted for their vitamins, minerals, proteins and enzymes and are a source of natural fiber. There are many different seeds that you can sprout, alfalfa, cabbage, mung bean, cauliflower, broccoli, radish, soy, sunflower and wheat to name a few. There are also warnings of the risk of sprouts developing food borne pathogens; included are researched tips on how to reduce or eliminate this risk
before starting. As a newbie, I bought a sprouting mix from NOW real foods that included clover, fenugreek and radish seeds and with the help of the The Jar Seed Sprouter, (which is three screen lids with varying size holes that screw on to a wide mouth mason jar) I jumped into production. Remember to purchase seeds that are certified pathogen free and that are meant for food as some seeds for your garden may be treated with fungicides! The University of California recommends that all home sprout growers treat seeds by heating on the stovetop for five minutes in a solution of 3% hydrogen peroxide (available at most drug stores) preheated to 140 F. For small home batches, seed volumes may be contained in a small mesh strainer and immersed directly into the heated peroxide solution. Always discard the solution after each seed batch as its effectiveness will rapidly decline. Rinse the seed afterwards in running tap water for 1 minute. Place the rinsed seed in water...and carefully skim off all floating seed, seed coat fragments, and other debris and dispose of them. Afterwards soak the seeds for 3-24 hours in filtered water; depending upon what seed(s) you are using; I soaked mine overnight. After soaking, the seeds are drained and rinsed with cold water; you leave the jar (with the screen lid on) at an angle so that air can circulate inside the jar after each rinse. Rinse the seeds twice a day with cold water for up to five days. As the seeds are germinating the smell is a wonderful earthy odor that reminds me of fresh sweet corn that hasnt been cooked yet. If the sprouts smell musty, look slimy or dark, they may have developed a pathogen that could make you sick, throw them away, sterilize everything and start over. Good sanitation before and during sprouting is essential in reducing the risk of food borne pathogens. After five days I had a jar filled with delicious sprouts that were crunchy and delicious. I made a delicious stir fry with my first batch, yummy! Store your sprouts in the refrigerator and use them in a few days. If you are still worried about the safety of your sprouts, cook them to kill any pathogens and then eat them. Try substituting sprouts for lettuce in your sandwiches. Add to stir-frys or steam them in butter. Are you open? I travel out-of-town to speak to companies, associations, and other groups which means I fly some. And, of course, whether I like it or not, I have to check bags occasionally. Not that I like checking my bags because Im afraid something is going to be lost one day, but sometimes I have no choice. I stood in the baggage claim area of an airport one day, waiting for my bag to appear on the carousel. I noticed what I thought was my bag coming down the chute and making the turn toward me. I grabbed it up when it came by and went on my way. As I carried the bag, it seemed heavier than I remembered it. At first, I just thought I was tired from the flight. But it really seemed way to heavy. I stopped and looked for my tag. There was no tag. I thought maybe it was torn off. So I opened the bag... and didnt recognize a thing in it.
