Jamn Ibrico or Pata Negra is the
worlds most highly regarded and prized
ham. It is made exclusively from the
indigenous race of free-range and
free-grazing Iberico pigs in the Spanish
dehesa, the last of their kind on the
European continent. The Ibrico variety
feeds on an all natural diet of grains,
plants and acorns whereas the bellota
variety is fattened exclusively on acorns.
These hams can be cured for longer
periods than the Serrano variety due

to their higher fat content and amazing
marbling. This curing process takes place
in the medieval village of la Alberca where
the cool, dry air filter through the Fermin
family bodega resulting in an exquisite
taste and exceptionally delicate texture.

ur company began in 1897 when a humble workshop is installed in the grocery store to start making exquisite pastries. In the same year (1897), when there is the birth of their
first fl agship product for Mata, the threads of Wine, in the bakery of Aunt Mariquita. As early as 1910 begins craft production that characterizes us in mantecados, polvorones
with natural flavorings, and most significant products such as Almond Alfajor or San Antonio yolks. In 1920, the registration occurs in the industrial property of Mantecados Mata,
and in 1932 see the light for the first time Habas Fritas de Mata, staying in the national and international market as the only course of its kind to be eighty. Already in 1949 he
launched the Hojaldrinas Mata and patented the name, almost ten years later, in 1958, Mata introduced on the market fried beans Baby (<12mm) treated with olive oil, which
continue today being the favorite of the best establishments; unique and unparalleled. In 1973 the company became a joint stock company, and was born Products Mata, SA
and during these years (1973-1996) produces the unstoppable off to The Future, featuring products for gourmets, always taking care with exaggerated care and the quality and
presentation of our products.
Made from skinless, seedless tomatos sauted in olive oil with NO thickeners,
