An investigation was carried out to study the effect of fresh and boiled fruit juices on gelatin, which is made up of protein. Six test tubes were set up, each containing a gelatin cube and one type of fruit juice. The size of the gelatin cube and the volume of juice used in all test tubes were the same. All six tubes were allowed to stand at 30oC without shaking. The table below shows the time taken for the gelatin cubes to disappear completely in different test tubes:
