Chicken Chapli Kabab ,so soft, fluffy & of-course Yummy Ingredients: Boneless chicken 500 gms Ginger

Garlic paste 1tsp Tomato Large 1 seeds out cut in small cubes Onion Large 1 finely chopped baking soda 1/4 tsp Egg 1 Crushed red chili 2tb Whole cumin 1tb roasted & crushed Whole coriander seeds 1tb roasted & crushed Coriander leaves 1/2 cup chopped Mint leaves chopped 5-6 leaves chopped very finely green chillies chopped 4-5 chopped Salt Little less then taste if using adding ready made masala Pomegranate seeds crushed 1 tb Yellow corn flour ( Makaai ka atta ) 4-5 tb Chappli Kabab masala ready made 2-3 tb (Optional ) 1 .Wash chicken pieces & pat dry with paper towel completely then make mince in food processor . 2.Now mix every thing mentioned together very well . 3 Keep in fridge for at-least 2-3 hours . 2. Divide the mixture into equal portions. Shape each portion into a ball and then press it in between your palms to give it a flat but thick shape . 3. Heat ghee or oil in a fry pan and fry two or three at a time till golden brown and remove.

Make shapes and fry on shallow Heat .... Enjoy with Naan ,Raita ,Salad .. Beef Shami kabab: 1/2 kg beef 1/3 cup chana dal 3-4 or as per taste green chilies. whole 1tbsp ginger-garlic paste 2 tsp or as per taste chili powder 4black cardamen 4 bay leaves 4 cinamen sticks 6 cloves salt to taste 3,tb thick yogurt 1-1/2 asp garam masala powder 2-3 green chillies- finely choped 1/3 cup fresh coriender leaves, finely choped 2 tablesp fresh mint leaves. finely choped 2 tablesp lime juice 1 egg lightly beaten oil or ghee to fry

Method . put the meat along with the spices, lentil covered with water, into a pot. Cook until the meat is tender and make sure that all the water has evaporated. Remove from the pot and discard the chilies and whole spices. Grind the meat into a fine paste without adding water.( i like to use moter pastel ) Add the yogurt ,garam masala powder, coriander leaves, mint leaves ,1 egg and lime juice to the ground meat and mix well.Divide the meat mixture into equal parts.make kabab shape Fry in hot ghee or oil until the color changes to a golden brown i didnt fry by dipping egg if its breaking out u can do

chicken seekh kabab verrry soft and yummm ingredients :chicken mince ------ 750 gram res chilli flakes------- 1 tea spoon salt -----------------1and half tea spoon or accaording to ur taste green chillies fine choped ----------------7-8 green coriandar------------------ hand full fine choped grinded garam masala------------- 1 tea spoon ginger paste ------------------ 1 tea spoon onion ----------------- 3 large finely chope and squeeze all the water to press with ur palms crushed dru coriandar------------ 1 tea spoon cumin seeds crushed-------------- 1 tea spoon bread slice-------------------- 2 soak in some water and squeeze preparation:mix all the ingredients in a bowl and mix well . now take a seekh ( an iron rod or skewer) if u have not take ur oven rod grease with some melted oil now take some mince in ur hand make a long shape roll insert this rod into it and shape them . now on ur stove with high flame and cook all ur kabab s on direct into this flame . PLZ cook hardly 30 -40 second each

kabab on dirct flame rotate ur rod right to left and left to right so that maeat coock from all sides equally. when its done take a non stick pan drizzle some oil preheat and cook kabab on medium heat untilldone .its ready to eat. ENJOYYYYYYYYYY

Qeema Cutlets (Bohri Cutlets OR Jaali waley cutlets) Ing: 1/2kg mince meat 2tsp ginger garlic paste 1tsp salt 1tsp red chilli powder 1tsp cumin(roasted & grind) 1tsp garam masala powder 1 onion(chopped) 2tbsp green corriander(chopped) 1tbsp green chilli(chopped) 3 bread slices(soak in lil bit of water ,when soft,squeeze water out) 2eggs+ 2tbsp water(or as much eggs needed for coating) bread crumbs (you will need lots of bread crumbs) oil (for frying) Method: 1. Mix mince meat,ginger garlic paste,salt,red chilli powder,garam masala powder,cumin powder,onion,green chilli,green corriander & soft bread, mix until combined. 2.Keep aside for 1/2 an hour. 3.Make small balls,then press it in bread crumbs,shape in to cutlets by pressing it in bread crumbs, then dip it in egg and fry in oil on medium heat, till golden brown. sharing, :-) Ing: 1 kg mince meat 1tbsp raw papaya paste OR 1tsp meat tenderizer 1tbsp garlic paste 1/2tbsp ginger paste 3/4 tbsp salt OR to tatse 1tbsp dry crushed red chillies 1tbsp Anaar daana, crushed 2tbsp corriander seeds, roasted & coarsely crushed 2tbsp cumin seeds, roasted & coarsely crushed 4tbsp yougart 1/2 cup green corriander, chopped 2 green cillies, chopped 2 medium onions, chopped 1pinch nutmeg powder 2pinch mace powder 1/2tsp garam masala powder 1tbsp corn flour 1tbsp ground almonds (optional) Garnish: Green corriander green chillies mint leaves onion rings lemon wedges Method: Mix the above ingredients well (except garnish) , merinate for 1 to 2 hours. Line oven tray or baking rectangle pan (2litre dish) with aluminium foil, brush it with butter. Spread merinated mince meat. And bake in preheated oven at 200 degree for 1 hour, if it has lots of water dry some not all. When kabab get brown glaze it with butter. Serve with green corriander, green chillies, mint leaves, anoin rings & lemon wedges. * Tip: Kabab will leave water, don't dry its all water or kabab will get dry when cooled. RECIPE: PREPARING THE MEAT: Soak 2cup of chana dal. ... Chop onions coarsely. In a pressure cooker, add 1/2kg mutton, chopped onions, soaked chana dal, some whole garam masala, 2tsp red chilli powder, 1tsp turmeric powder, salt, 4-6 garlic cloves, cilantro, mint leaves, green chillies and 1 cup water. Pressure cook for 5 whistles, simmer for 10 mins then again increase the flame and cook for another 5 mins or so. While the mutton is getting cooked, roast some poppy seeds(khus khus), cashew nuts and chironji, grind and keep aside. Open and check the cooker, if there is any water, again simmer and cook , it should become all dry. Once dry, let it cool. Now to the cooked mutton, add 1 and tsp garam masala powder, the ground paste, juice of 2 medium sized lemons and grind this. U can also use mortar and pestle to grind if you want!! Add finely chopped cilantro, green chillies. FOR THE FILLING: To 2tbsp of hung yogurt, add finely chopped onion, cilantro, mint leaves, green chillies and salt. FINAL STEP: Take handful of prepared meat, form a small ball, press in thumb to make some space for the filling, fill in with 1/2tsp of the filling and cover with the side edges and flatten a bit, shallow fry in a non-stick pan on both sides till done. Coriander chopped 1 Green chili, watch the red chili powder if using Salt to Taste Method: Fry the onion in some oil till it is light Golden, add the fresh washed completely strained mice and let it fry, add the garlic and keep on frying so the smell of the meat goes away, when the water dries out, start adding all spices one by one. Now mix it all together, let the spices mix properly and the smell goes away, close the lid and let it cook on low heat till completely done. When done, squeeze lemon on top if you want and mix coriander and green chili in the cooked mince. Now let it cool off for stuffing. Cutlets: This takes patience and just the adequate amount of stuffing, so do not over stuff so the cutlets don't tear up. So take a big amount of potato material in your hand and then make a circle in the middle of it with your thumb, fill the Qeema in and now gather the sides together to close it carefully, now push it a little to give it the Kebab shape. Now dip in egg, then bread crumbs and shallow fry. You can freeze it too. I did too, just fry them in the oil, when you take them out of the refrigerator, fry in low flame. Serve ho

Mince kg Water 1 cup Onion chopped 2 Eggs 2 Green chilies chopped 6 Coriander powder 1 tsp Chili powder 1 tsp Ginger garlic paste 1 tsp All spice tsp Coriander leaves chopped 2 tbsp Salt 1 tsp Bread crumbs as required Foil paper (cut into 6 x 6 inches square) as required Ingredients for Stuffing Onion (chopped) 1 Hard boiled eggs (chopped) 3 Mint leaves chopped 1 tbsp Coriander leaves chopped 1 tbsp Salt tsp Black pepper tsp Ingredients for Gravy Onion 1 grated Yogurt 1 cup Oil cup Ginger garlic 1 tsp Cumin crushed 1 tsp Green chilies ground 1 tsp Cashew nut ground 1 tbsp Sesame seeds ground 1 tbsp Chili powder tsp Salt tsp All spice tsp Method Boil kg mince with 1 cup of water, 1 tsp salt, 1 tsp ginger garlic paste, 1 tsp chili powder, 1 tsp coriander powder, 1 tsp all spice, 2 chopped onions, 1 tsp chopped green chilies, boil till mince is tender and dry, grind well in chopper, mix in 1 egg, make into balls, flatten on your palm, fill with stuffing mixture and form into oblong kababs, roll in bread crumbs, fry till golden brown. Method for Gravy Heat cup oil, add 1 grated onion, fry till light golden, add in 1 tbsp ground cashew nut and 1 tbsp sesame seeds paste, fry well till oil comes

on top, add 1 cup yogurt, fry well, add tsp all spice, 1 tsp roasted crushed cumin, 1 tsp ginger garlic paste, tsp salt1 1 tsp ground green chilies and tsp chili powder, fry well, add 1 cup of water, cook till gravy is thicken, now place kababs in foil, pour 1 serving spoon of gravy on top, seal kababs well.
