The emperor penguin is one of 17 different kinds of penguins. The largest of all the penguins, these flightless birds live in Antarctica. The responsibility of incubating, or developing and hatching, an emperor penguin chick is shared by a male and his female mate. During the incubation period, which can last up to two months, these mates seem to play a survival game of tag. During the months of January and Februarysummer in Antarcticathe penguins eat incredible amounts of fish and squid to prepare their bodies for the journey to the colony, or rookery, where they will mate and raise their chicks. In March and April, they make their way to the breeding sites. Emperor penguins do not build nests. Instead, they stand and huddle together to keep warm. With winter approaching, the female lays a single egg. After the egg is laid, the female passes it to her mate and goes off to the open sea for about two months to find food for herself. The male keeps the egg warm by balancing it on his feet and covering it with his feathered skin. If the chick hatches before the mother returns, the male feeds the chick a milky liquid produced by a gland in his mouth. When the mother returns, she will have eaten enough to feed herself and the chick. The male then goes off to eat. The mother brings up from her stomach some of the food she had stored to feed the chick from her mouth. After several weeks, the male returns to his post to help care for the chick. He feeds the chick the same way the female does. By December or January, the young penguin is old enough to take care of itself.

Letty and her cousin Mara were staying with their grandmother in Ponce for a week. One morning, she told them they were going to visit Hacienda Buena Vista. What is that, Abuelita? Letty questioned her. Oh, mija, its a wonderful old farm with a waterfall and many things for you girls to learn about, Abuela said. Like what? Mara asked. Well, for one thing, coffee beans are grown and roasted there, and Hacienda Buena Vista has been in existence since 1833, Abuela answered. Are you sure its still there, Abuela? Letty asked. Oh yes, and Ive made a reservation for us to take a tour today. Abuela hurried her nietas into the car. The girls talked the whole seven-mile journey. Abuela simply smiled and enjoyed the chatter. When they arrived, the girls rushed out of the car, followed by Abuela. Mmmm, Letty said, whats that wonderful smell? Its coffee, Mara told her. I love that smell!

Come on girls, Abuela Rosa said, hurrying ahead of them toward a two-story white wooden building. Were going to miss the tour. Letty and Mara followed her, taking in the sights of the running waterway in front of them and a wooden bridge crossing over it. Where does that lead? Mara asked. A young man, who seemed to be in charge of the tour, answered her. It leads to a waterfall, which transports the coffee beans toward the soaking area, he said. He pointed to a pool where the girls could see many red beans floating in water. Then, the man told them, the beans are moved on to the sun-drying area. The girls looked in the direction he was now pointing to and saw rows and rows of beans spread out on long wooden trays. Abuela watched, feeling glad she had brought the girls here today.
