D.O. Cava
History
The word cava means cave, cellar in both Catalan and Spanish. Caves were used in the early days of cava production for the preservation or aging of wine.Catalan winemakers officially adopted the term in 1970 to distinguish their product from French champagne. To make ros cava, small quantities of still red wines from cabernet, garnacha or monastrell are added to the wine. Besides macabeu, parellada, and xarello, cava may also contain chardonnay, pinot noir and subirat grapes. The first cava to use chardonnay was produced in 1981. Like champagne, cava is also produced in varying levels of dryness, namely: brut nature, brut, brut reserve, sec (seco), semisec (semiseco), and dolsec (dulce).

TORELL
History
Torell wines and cavas are made with one principal objective: caring for the vines with rigour and passion, guarantee of future quality. For this reason the production of vines via winter pruning and the green harvest in the summer is limited. The green pruning is done in spring, achieving the concentration of the grapes properties, better aeration and isolation as well as the regulation of the growth. Manual harvesting of the grapes at the optimum moment of maturity to achieve a perfect balance between their sugar and their acidity. Training of the grape-pickers so that they reject those grapes or bunches that may not be in good condition. The grapes are transported from the vines to the presses in less than 15 minutes thus avoiding oxidation and/or spontaneous fermentation. All of the grapes are passed across the selection table, bunch by bunch. We have incorporated Inertys technology into our presses, a system that protects the grapejuice from oxidation during the pressing phase and gives the future wine an indisputable qualitative improvement to its colour and bouquet. This system also allows reducing the addition of SO2 before fermentation, reducing the concentration of sulphates in the wine. Stainless steel has been incorporated into all of the installations in contact with the grapes: from the trailers/dumper, the hopper that receives the grapes, the tubes where the paste, grapejiuce and wine circulate, the presses and pumps, and the fermentation equipment to the cooling machinery, because of its asepsis and ease of cleaning.

AppeArAnce Light cherry pink. nose Intense nose, vinous with notes of wild forest fruit and something lactic about it. pAlAte The palate explodes with cherry pie, cream and a fresh fruit feel. It is bright with elegant bubbles but yet. Luscious.
