BULGUR STEW 1/8 cup dry bulgur 1/4 of a sweet potato, cubed 1 handful of fresh green beans, cut

in half 1/8 of an onion, rough chopped 1/4 of a yellow bell pepper, chopped 1/4 cup of diced tomatoes 1 can vegetable broth 1/2 serving beef style veggie strips, cut each piece in half 1 clove garlic 1 bay leaf Cook bulgur according to package instructions in a separate pot. Heat pan on stove. Spray with nonfat butter spray. Simmer fry onions, sweet potatoes, green beans, and garlic for 5-7 minutes. Add a little water when needed. Add yellow bell pepper, broth, tomatoes, and bay leaf and cook for 30-35 minutes on medium heat. Add strips and cook for an additional 1-2 minutes.
