Are We Really Vegetarians???

When we say or hear slogans like "Ahinsa Parmo Dharm ki Jai" or Jiyo aur "Jeene Do," it seems as if the concept of 'Vasudhaiv Kutumbakam" is being awakened in each one of us and everyone subscribes to the philosophy of non-violence. But does just shouting slogans qualify us as non-violent? Are we really non-violent? Our claims of subscribing to the concepts of "Vasudhaiv Kutumbakam" and non-violence are proven wrong even as we start the day with our breakfast. The reason for this is the consumption of packed/tinned items such as biscuits, bread, pastry, wafers, namkeens(salted products), burger etc. We eat all these under the impression that these are all vegetarian items, but we need to know whether they really are so? The Government of India has classified all food products into two categories - vegetarian and non-vegetarian. All packaged non-vegetarian food products in India are labelled with a brown dot while all packaged vegetarian food products are identified by a green dot. Taking advantage of the ambiguous definition of the concept of "Vegetarianism" under law and the corrupt system in India, most Companies, in the lure of more profit, mix impure/unholy things under the garb of Additives. If these companies claim that they are producing vegetarian products, then why do they have to obtain import license for non-vegetarian products? This proves that these companies mix non-vegetarian items in vegetarian food products. The law provides that it is mandatory for companies to specify the ingredients of all food products. To monitor the use of Food Additives, a Unique Code Number system, known as E-numbering system(ENS),has been implemented. But, do we know the E Number of each of the ingredients? Do we know their source? The common man doesn't know neither the E-Number of the ingredients nor their source. The details of the E-No. are available on websites such as food-info.net, veggiglobal.com, wikipedia.com, truthinlabeling.org etc. Most companies prefer to mention the names of the Additives rather than their E Nos. This creates confusion in the minds of the people about the ingredients of these products. It is difficult to identify whether these products are made of vegetarian or nonvegetarian ingredients. The truth about these products is that they are made up of a mix of vegetarian as well as non-vegetarian ingredients. We consume these products under the impression that they are vegetarian, completely oblivious of the fact that they contain non-vegetarian additives. Let us all resolve to forsake such products so that we may conserve our culture and keep our body, mind and wealth pure. - PAVAN JAIN

OUR CULTURE AND LIFESTYLE FAST-FOOD CULTURE AND THE SPREAD OF FATAL DISEASES
-Dr. Neeraj Jain Modern lifestyle today has become synonymous with fast food. Because of its attractiveness and easy-to-prepare methods, the consumption of fast-food has increased rapidly. It is on account of the wide-spread consumption of fast-food products that cases of acidity, ulcer, heart-ailments, blood-pressure, eye-disorders, deafness, diabetes and cancer are on the rise. The multi-national companies are using all means possible to push their sub-standard products in order to capture a larger market share. Fast-food : A Threat to our Health: Usually, most of the foodproducts with a long shelf-life that are available in the market are harmful for our health. The chemicals that are used to preserve Biscuits, Pastry, Salted Products (Namkeen), pickles, sweets etc for a long period damage the critical parts of our body. Poison in the garb of Taste : The consumption of packed/tinned food-products is on the rise. Now-a-days ready-to-eat spicy and delicious food-products are available in the market which can be served anywhere any time. As these food products are convenient to use and packaged in western style, they are being preferred to the traditional Indian delicacies. By consuming these expensive fast-foods, people think they are being perceived as modern but they are in reality only ruining their health. Gradually, over a period of time, they start experiencing its adverse impact. They are then forced to lead a miserable life with complete dependence on medicines. Use Chemical Additives, Invite Ailments: Noodles taste good because the chemicals used in it deceive our taste buds. These tasteless chemicals keep the noodles fresh for a long time. Eating noodles with these chemicals over a long period of time results in the erosion of natural abilities of these taste buds. This, in turn, results in the loss of appetite. All taste enhancers and preservatives are harmful for our health. One such taste enhancer - AJINOMOTO - is freely available in the market. It makes stale food seem fresh. But this can prove fateful for our health. All vegetarians should avoid using Ajinomoto at all costs as it is made of organic
2

fat. Taste enhancers such as Saccharine, cyclamate, Emasulph are reportedly carcinogenic. Fast Foot: An Invitation to Obesity : Fast-food mainly consists of fats and carbohydrates. The amount of protein in it is almost negligible. It is made tasty and appetizing so that people are tempted to eat it. But eating it results in obesity, especially in children. Children who eat fast-food suffer from deficiency of a special type of enzyme which, in turn, stunts their mental and physical development. It takes its toll on the liver of such children and they are required to make frequent trips to the loo. Obesity among children has become a big problem in many western countries. I came across an article published in a journal about a survey conducted by AIIMS in 2003 on the reasons for obesity in teenagers hailing from rich families. The survey found that 23.1% of the teenage girls in Delhi were obese. Their weight was more than the standard weight for their age. The survey also reported that 64.2% of the teenagers ate fast-food 3 to 7 times a week. Fast-food turned out to be the favourite in-between-meals snacks for them. The growing consumption of the fast-food among children has led to the rise in a number of ailments. While speaking on the occasion of the World Diabates Day, Dr N.Koch Millai, HeadDepartment of Endocrinology of AIIMS, blamed the fast-food eating habits for the rise in diabetic cases. Most of the fast-food items sold by McDonalds are non-vegetarian in one way or the other. Quoting from a scientific journal, Dr Vandana Shiva informs that Hamburger is one of the main sources of epidemics and diseases. Consumption of fast-food items has led to a 70% increase in diseases in India. Tinned Food: An Invitation to Death : There is a long list of harmful chemicals that are added to Tinned/canned food. These chemicals are used to lend flavour and sustenance to the products. They also make these products look appetizing. Mono Sodium Glutamate is a white substance, easily soluble in water. A study conducted in 1969 in Washington University by Dr Jeol found that, when Mono Sodium Glutamate was injected into rats, their brain cells started dying and they started showing signs of cancer. When the same test was carried out on monkeys and Guinea pigs, they also developed symptoms of cancer. Mono Sodium Glutamate(MSG) is widely used as a 'flavouring agent' in most of
3

the fast-food. Dr Lukman Ahmed Khan, a microbiologist, has proved through his research that consumption of Mono Sodium Glutamate can lead to heart-beat disorders, asthma or chronic headache. Excessive intake of MSG can damage brain cells, which can have its adverse impact on the memory of the child. Finally, the child may end up being irritable or short tempered. What do Researches tell us? : A research conducted by Food Technology Research Institute, Mysore, tells us that most of the fast-food sold in India contains pesticides such as D.D.A, BHC and Melathione much above the tolerance limits of human beings. Fast-food and tinned food are a big threat to our health. The World Health Organisation has warned that if we don't change our food-habits then there would be an alarming rise in the number of people affected by cancer and other fatal diseases in all the countries of the world. Children all over the world are getting hooked on to fast-food. The cases of diabetes among children in India are on the rise. Diabetes can cripple children for the rest of their lives. There is a competition of sorts among children to eat burgers, French-fries, chow mein and potato-chips. There is a misconception among the people that eating fast-food is a sign of affluence in the society. But the fact is that these food items are deficient in Vitamin C, Iron Foliate, and Riboflavin. The cream that is used brings about an increase in our calorie intake. They also contain fats and sodium in excess quantity. They do not contain the vital nutrients which are so essential for the digestive system. As a result the digestive system is weakened over a period of time. There is no wisdom in eating fast-food at the cost of one's body. The elders in the family should see to it that children don't get addicted to fast-food, otherwise their health would be ruined. Indian Food-habits and Fast-food: Fast-foods are not suited to Indian weather conditions and culture. Most of the regions in India have a hot and humid weather. In view of this, we should eat only those items that are naturally tasty and are locally available. But I feel sad to see undernourished children on the one hand and fast-food addicted children on the other. We should be worried about the future citizens of the country. Let us all put on our thinking caps for the 'healthy' future of the country. The Jain Way of Life: According to me, the founders of Jain
4

philosophy had anticipated the modern day situation centuries ago. The Bhagwati Aradhana Granth says: UU U UU U UU U UU S It means that when a man loses control over his diet, he also loses his control over his senses, penance, and austerity. He even loses his character. Such a person loses the sense of pride for his race. Probably, we Indians, in a bid to ape the foreign culture, are forgetting our traditional food-habits and eating all those things that are prohibited by our holy texts. In the process we are proving to be a blot on our rich culture and heritage. It's time we resolved to save ourselves and our future generations from straying onto the path of ruin. Jai Jinendra! VEGETARIAN FOOD : BEST FOOD ! The word 'shaak 'is derived from the Sanskrit word 'shak', which means "competent", "one who has ability", "one who can facilitate things". The word 'shaak' means "strength", "heroism", "power". 'Shakt' means "able", "competent", "powerful". Thus the word 'shakahar' means a diet that develops man's natural abilities and imparts him with strength and courage. The word 'vegetarian' comes from the Latin word 'vegetus', which means "healthy", "wholesome", "trustworthy", "lively" and "fresh". The French word 'vegetable' means 'life-giving', 'full of life'. The great scientist Albert Einstein was a confirmed vegetarian. He firmly believed that 'vegetarian' diet has a great influence on our nature and temperament. Dr. Artturi Virtanen (Director of the Bio-Chemical Research Institute at Helsinki, Finland) who was awarded the Noble Prize for Chemistry in 1945 was of the opinion that milk, fruits, green-leafy vegetables, cereals, butter, condensed milk can provide us with all the vital nutrients that are needed for the body. The National Research Council of America's Food and Nutrition Board has made it clear that most nutritionists agreed that a properly assorted vegetarian diet is a wholesome diet by all means. Vegetarians, all over the world, have managed to
5

keep themselves in fine fettle. ! A scientific study has discovered that, "Vegetarian food contains 5 times more energy than Meat food" - Oriental Watchman, Pune, p 35 In the United States of America, by 1999, the number of vegetarians had gone up to 1.5 crores. According to a gallop poll, every week 3,000 people switch to vegetarian food. The number of vegetarians in U.K. is more than a crore now. According to a research conducted by Berlin Vegetarian Study, it was found that vegetarians enjoy good health on account of their food habits. The Research was started in 1985 by the Social Medicine and Epidemic Research Institute of the German Health Department. According to the findings of the research, the good health of the vegetarians is on account of the fact that they don't eat fish or meat. Their diet mainly consists of high fibre content and low cholesterol grain products. Slakes Burke, the editor of Cruelty Free Guide To London, defines the life-style of the Vegans in a sentence: " A Vegetarian neither eats the internal parts of an animal nor does he use the external parts to cover his body".

GLORIOUS INDIA OF 1835 (Text of a speech given by Lord Macaulay in The House of Commons, British Parliament on February 1835) "I have travelled across the length and breadth of India and I have not seen a person who is a beggar who is a thief. Such wealth I have seen in this country, such high moral values, people of such high caliber, that I do not think that we would ever conquer this country, unless we break the very backbone of this nation, which is her spiritual and cultural heritage, and therefore I propose that we replace her old and ancient education system, her culture, for if the Indians think that all that is foreign and English is good and greater than their own, they will lose their self-esteem, their native self culture and they will become what we want them, a truly dominated nation." (*A copy of this historical document was arranged for His Holiness Jain Muni Acharya Shri Vidyasagarji Maharaj by a Supreme Court Judge.) FOR THE KIND ATTENTION OF BELIEVERS IN 'AHINSA' Many food items that are made up of vegetarian ingredients,
6

use many types of Additives to impart it with the desired taste, shape, flavour and durability. But the fact of the matter is that the source of most of them can be traced to animal fats. The European Law provides for a number system to identify each and every Additive. These numbers are preceded by the letter 'E'. This system is therefore known as E-Numbering System(ENS). The E-Numbers are classified as follows: 100 200 300 400 500 600 700 Colouring Agents Conservation Agents Anti-Oxidents Emulsifiers, Stabilisers and Thickeners Anti-Coagulants Taste Enhancers Modified Starches

As a result of globalization and taking a leaf out of the European Union, the ENS came to be implemented in India also. This has proved to be a great boon for all vegetarians in India. There are many Additives which can be derived from plants as well as animals. But there are certain Additives which we can get only from animals. It is difficult and expensive to derive and process Additives from chemicals and plants whereas it is easier and cheaper to derive these Additives from egg, meat, and organs of animals. Because of low investment and high profits, most of the manufacturers prefer animal derivatives. Moreover it is easily available in huge quantity. As these derivatives have to pass through different chemical processes, it is easy to identify the names of the Additives in the laboratory but difficult to trace out their source. Even most of state-of-the- art laboratories with all their modern equipments and processes cannot trace out the source of the Additives. But the irony is that it is on the basis of the reports of these Laboratories that the government acts against the manufacturers of food products for violating the different provisions of the law. Greedy manufacturers in collusion with the corrupt system are using non-vegetarian additives and selling food products as vegetarian to crores of innocent people. The provisions of law seem to be ineffective in stopping this murky business. At times, one suspects that the government is deliberately not equipping these laboratories lest they detect the real source of these Additives. A fresh attempt has been made using the Right to Information Act to solicit information from the Union Ministry for Health and Family Welfare and the laboratories at Hyderabad and Mysore about the detailed researches being conducted. But this is a time consuming
7

process. Therefore, till we achieve our ultimate aim, we are providing all the vegetarian lovers with the E-Numbers of the different Additives. These E-numbers are printed in very small font sizes. Therefore one should reas the contents mentioned on the packet carefully before using any product. All believers are humbly requested to sitck the copies of this information in Digamber/ Shwetamber Jain temples and public places efforts should also be made to get if published in Newspaper /Magazines so that the message reaches every household.

KNOW THE TRUTH BEHIND THESE PRODUCTS Watch out before you use them. 1. Ice-cream: When we buy an ice-cream we actually pay for 55% air and 35% dirty water. The upper layer of the icecream is made of derivatives obtained from animal organs such as nose, ears, and anus. These organs lie stinking on the dirty floors of the abattoirs. These derivatives are used as they allow the ice-cream to stabilize and not melt. Moreover, sugar, eggs and essence of milk fats are added to it. 2. Geletine: Geletine is extracted by boiling bones, skin and tissues of animals. Geletine is widely used in preparing curd, ice-cream, jam, jelly, cake, shampoo, cosmetics, medicines etc. 3. Little Known Truths about

Potato-chips and wafers: Wafers contain a huge amount of eggs. These Wafers are light in weight, soft, crispy, and of golden yellow colour because of the egg content in them. If we compare them with the home-made potato-chips, these wafers look and taste different because of the egg content. Ideally it would always be better if fresh eggs are used, but their cost and availability is a big issue. Hence most manufacturers tend to use egg powder(dissolved in water) instead. (Information compiled from 'Complete Small-scale Industries Book' written by Krishna Kumar Agrawal, p.347) Noodles: As compared to the conventional vermicelli (sevai), Noodles are smoother and shiny. If 10 to 20 millilitres of egg white are added to 1 kilogram Maida(fine-flour) and kneaded properly the noodles we get would be soft and fluffy. (Information compiled from 'Complete Small-scale Industries Book' written by Krishna Kumar Agrawal, p.355) Ice-cream : To make ice-creams smooth, creamy and of the desired texture, the white of egg is used. Gelatin is used as a stabilizer. Gelatine is a tasteless substance. Only 7 to 8 grams of gelatine are enough to stabilize a kilogram of ice-cream. These days instead of egg white, egg powder is used. Egg powder is dissolved in cold water in the ratio of 1:8 and kept for a period of four hours before being used. (Information compiled from 'Complete Small-scale Industries Book' written by Krishna Kumar Agrawal, p.402) Biscuit: The basic ingredient that goes into the making of biscuits is Maida(refined flour). In addition to this, salt and sugar are also added. Baking powder, ammonia, and eggs are used to ferment this mixture. Instead of fresh eggs, the powder of egg white dissolved in water is used. In Glucose biscuits the starch extracted from maize is used as a supplement for Glucose. (Information compiled from 'Complete Small-scale Industries Book' written by Krishna Kumar Agrawal, p.388)
