Research Design A descriptive method of research was employed in this study.

Descriptive research allowed us to gather information which neabled us to define the data and characteristics of the variables being studied. This research method aimed to obtain important data and accurate results of the study.

Rationale A microorganism is minute organism causing diseases and can be found anywhere: in a crowd, at our own home,when we go to different places, the air we breathe, and even the food that we eat. Like all other fastfood restaurants or public dining areas specifically the school's canteen, is a place where food safety might be an issue since this establishment serves different type of foods at different conditions to students and these students may not have an idea as of how exactly these foods were prepared in the canteen. This has become one of the concerns because they do not know if the foods that they eat are clean and good for their health. Thus, this study would allow us to determine how well food handlers do proper food practices such as food storage, food and garbage disposal, food preparations, food handler's hygienic practices in handling foods and even the cleanliness of the establishment where foods are actually cooked. Having these food safety standards into practice may help in lessening the risk of food-borne illnesses and poisoning in school.

Theoritical Background This study is anchored on the "Germ Theory" from the renowned French scientist and biologist, Louis Pastuer which states that germs from the environment, rather than inside the body, are the cause of diseases (dicovery.com/curiosity) This theory is most often applied to recent studies in preventing infection through practicing proper hand washing technique, ensuring a clean and safe environment,and in administering medications to certain type of disease. This is also applicable in identifying and understanding the disease process to be helpful in managing its signs and symptoms. The theory initiates to look for the causative agents that might be present in an infection and knowing how it is transmitted to prevent or minimize the disease from occuring. Pastuer viewed that their is a specific organism that has the capability of causing a disease. The "Germ Theory of Disease" by Louis Pastuer has become one of the biggest medical discovery in history that is still widely bieng used by medical

practitioners in giving essential nursing and medical care. In relation to the food safety on food establishments in the canteen, this theory provides the baseline in emphasizing the importance of clean, safe, and free from any forms of microorganism causing diseases.

daisy SCOPE AND LIMITATIONS This study is limited to 100 students who enrolled at Holy Name University and 11 food handlers who are currently operating a food business at HNU foodcourt. This makes a total of 111 respondents. responses was gathered from the respondents who selected using convinience method. This study determines the conformity factor of sanintation and safety of food. this study is limited to the sanitary practices in which food preparation and preservation are involve. Also, the study is focused only to one University and food establishment. Hence,the result does not accordingly connote that it is true to other colleges or establishments as well.

RATIONALE

This study is formulated to learn more knowledge of food and sanitation and protect public health through propre waste disposal and cleanliness during food processing and preparation and to prevent food poisoning. The implementation of food sanitationand safety can assure the availability of highquality services. It can also promote demeanor that lead to good physical and mental health. this would also keep foods from cross-contamination. Poor sanitary practices can lead to the production of harmful bacteria in food preparation.

THEORITICAL BACKGROUND The study is anchored on Louis Pastures GErm THeory. He states that many diseases are caused by the presence and actionsof specific microorganism

within the body. His workson fermentation and spontaneous generation had considerable implications for medicine, because he believe that the origin and development of the disease are analogous to the origin and process of fermentation. This theory was strongly debated by physicians and scientist around the world. One of the main alteration against the theory was the contention that the role germs played during the course of disease was unimportant. The idea that organisms could kill vastly the larger ones seemed ridiculous to many people. Louis Pasteurs study convinced him that he was right, notwithstanding in the course of many diseases. Applying this theory would help hinder diseases or infection by way of keeping and storing goods in a clean and safe place and in preparing it, food handlers should have their proper sanitary practices.

Rationale Preventing illnesses and ensuring the safety of the food every individual consume plays an important role for a person to achieve optimum health and be able to function effectively. A person's health greatly affects his performance in every aspect, so, it is important to maintain a healthy body by ensuring the safety of the food taken in. Poor food preparation, handling, or storage can quickly result in food being contaminated with microorganism and may lead to ilnesses if the contaminated food is eaten. The causes of foodborne illnesses are multi-faceted. Some major risk factror of foodborne illnesses are related to employee's behavior and preparation practices in food service establishment. Some known risk factors include improper holding temperature, pest and rodent infestration, inadequate cooking, improper food storage, contaminated equipment, poor personal hygiene and food from unsafe sources. These factors give the researchers the motivation to conduct the study in order to seek and ensure the implementation of food safety and sanitation in the school canteen. Theoretical Background This study is anchored on the theory of Louis Pasteur. He discovered that most infectious disease are caused by germs, known as the germ theory of disease. The germ theory of disease is the single most important contribution by the science of microbiology to the general welfare of the world's people, and perhaps the single most important contribution of any modern scientific discipline. He further investigated the role of bacteria, and its tendency to create problems, eventually formulating the germ theory - that germs from the environment, rather

than inside the body , are the cause of disease- provides the basis of modern medicine still today. . Research Participants The subject of the study were 100 college students of Holy Name University and 11 food establishment who are operating food business at HNU Arnold Janssen foodcourt. Convenience method was used in selecting the aprticipant of this study.

Research Environment The locale of this study was in Holy Name University. This institution has various departments housed in different buildings. These departments include the College of Nursing, College of Arts and Sciences, College of Engineering, College of Business and Accountancy, College of Education, College of Computer Science and College of Law. The school became a university on November 19, 2001. This located in Janseen Heights, Dampas District, Tagbilaran City, Bohol. It is approximately 1.5 kilometers away from the City. Rationale Food safety is an increasingly important public health issue. Governments all over the world are intensifying their efforts to improve food sfety. These efforts are in response to an increasing number of food safety problems and rising consumer concerns. Foodborne illness are defined as disease, usually either infectious or toxic in nature, caused by agents that enter the body through the ingestion of food. Every person is at risk of foodborne illness. Food borne disease are widespread and growing public health problem, both in developed and develping countries. The global incidence of foodborne disease is difficult to estimate, but it has been reported that in 2005 alone 1.8 million people died from diarrhoeal disease. A great proportion of these cases can be attributed to contamination of food and drinking water. Additionally, diarrhoea is a major cause of malnutrition in infants and yound children. In industrialized countries, the percentage of the population suffering from foodborne disease each year has been reported to be up to 30%. Theoretical Background
