Method: Place egg yolks and mascarpone in Robot Coupe. Sear foie gras over high heat then add to machine and blend until emulsified. Place in refrigerator. Once cool, bring egg whites and sugar to stiff peaks. Fold egg whites into foie gras mixture, add spices. Dip lady fingers into coffee/madeira mixture. Place lady fingers in desired mold and top with foie gras mix. Sprinkle with porcini powder, cocoa powder, and black sugar.
