The Merlot is a wine originated in the Bordeaux area, found in the south east of France. It is renowned for some of the most famous wines in the world. In Italy the Merlot has found ideal conditions in the central west parts of Veneto. With an intense fragrance plus a dry and robust avor that lls the mouth, it has enabled it to have a high place with those of a specic palate. The Merlot grapes couple well the Cabernet Sauvignon. You have the perfect synergy that blends the body of the rst with the aristocratic taste of the second. Our red goes well with meat and can be served with the main dishes that also accompany mushrooms.

CABERNET PIAVE

The Cabernet is a wine originated in the Medoc area, it is renowned for the production of wines of high quality and longevity. In its production one uses Cabernet Franc, Cabernet Sauvignon or Carmenere grapes alone or together. In Italy many versions, you have pure variants or in the pairing off of other red varieties. Its capacity to adapt give it an ability to resist and ourish in the most severe weather conditions. Its characteristics ore its ruby red color and intense fragrance. It has a dry and full body that palates nd in a complex and fascinating bouquet. The Cabernet goes well with all kinds of meat such as game or poultry.

VILLA GIUSTINIAN
description

The caliber obtained through wines from the grapes of the Medoc: Cabernet (Sauvignon e Franc) and the Merlot (which many Chateaux add sometimes small amounts of Petic Verdot, Malbech or Carmenere) is one of the classic themes still fascinating in the wine industry. The Castello di Roncade in the last twenty years has had a tradition of a very high level. Before the Barons Cian Bassetti one could not fully say that in Italy there were wines that had a note of excellence such as those found and produced in Bordeaux. With the Villa Giustinian we are able to rediscover an amazing study of elegance and style in ne balance. It is the complete extraneousness of excess, experienced in detail by the muscularity, ne structure and robustness of the wine. An overabundance of fruit and the color characterize also other areas of viticulture in Italy. It is when one who is willing to turn the simple act of sipping and nursing ones glass of good wine into and amazing explosion of taste.

VINES::

Classic bordelese with 20% of Cabernet Frank grapes, 40% Cabernet sauvignon grapes, 25% Merlot, 10% Malbek grapes and 5% of Verdot from the Tesson area. Pressing of the grapes with a rapid alcoholic fermentation with at least twelve days of ageing in barrels. Malolactic fermentation before the ageing in wood.

In oak drums and french barrels of Alleir and Never wood for at least two years or three years. Other wise it can be aged in bottles or a few months.

RED WINE

Novello pantierino

description

On the sixth of November of every year we commence the marketing of our vino novello. This method of vinication was started by a group french wine makers in 1934. During one of their many experimentations they were searching a way to conserve grape bunches at low temperatures with carbon dioxide. After two months they realized that the bunches had become gaseous and zzy, giving it a decidedly new and particular taste. The grapes were clearly more adapt to wine making than to be sold directly. So was born a new wine of unique and pleasant taste. In the last ten year, that which was called la moda del novello was quickly spread around the world and here in Italy. It is sufcient to just wait only a few weeks after harvesting the grapes and the novello wine is ready after the carbon dioxide soaking. For this type of wine the Castello Roncade uses a Merlot grape. Today the vinication of the novello is done by lling a large cistern and hermetically sealing it. One then waits seven to twenty days at a temperature around 30 degrees and subjected to carbon dioxide. The portion of the grape that is found at the bottom of the cistern is pressed down upon by the remaining grapes above them. This makes them release a must into the mixture. This then results in the a fermentation process that is begun by the enzymes already present in the grapes. The fermentations leads to produce alcohol and carbon dioxide. The gas causes a rapid change in the environment present within the cistern resulting in a metabolic change of the grapes. This type of internal change at the cellular level is called autofermentation. The autofermentation allows the skin/peel of the grape to change and halt the coloration of the pulp. The grapes release a lower level of acids from the original fruit. One then obtains a new component to the fragrance that resemble strawberries, raspberries and blueberries. This mixture is then pressed with care giving off a high amount of carbonic acid that after a few days will result in the end of the transformation of the sugars with in the alcohol. The end result is a wine particularly rich in color. The tone of the color is reminiscent of a purple/ crimson. In regards to its taste, what is dominant is a sense of freshness. To take advantage and enjoy the wine and taste this freshness one should consume it within the next spring after harvest. The novello goes well with light dishes and brings of the taste of meats or fresh cheeses.

The Pinot grigio has been for many years one of the in wines of Italian wines. A success that has allowed not the production in Veneto but also in the Friuli and Alto Adige regions. This white wine is dry and typically of a pale yellow with a velvety and harmonic taste. The fragrance becomes more intense with time. It is best as an aperitif, this wine is well suited to seafood salads and rst dishes with a sh or sea food base. It is also well suited to other white meats, sh or soufe.

Chardonnay doc piave

From Borgogna the Chardonnay has a world wide reputation having given fame to the worlds best know white wines. The Chardonnay has adapted well to the Veneto region. The Roncade territories have allowed it to express a high level of quality, especially in the wood aged version of the wine Barone Claudio. It has a yellow color that has a fruity fragrance and savory taste. It is best served with light appetizers and rst dishes that have an egg base or with sh. This wine is also suited as an aperitif.

Intense hay yellow. Fruity, that brings out a ripe apple and banana sent with hints of honey acacia and bread crust. Dry, long lasting, with a generous feeling of harmony and character. 12.5% level of alcohol Sugar residue of 0.3 gr/lt Total acidity of 5.6 PH of 3.38 Guyot, and the cordone speronato system with 5000 hectares of Chardonnay grapes. Fermentation process is done partly in new barrels and in cement vats.

BARONESSA ILARIA

description

The Sauvignon originates from the Gironda area of France. The vines have today had a world wide popularization. In Italy the Sauvignon has been mainly harvested in the Veneto and Friuli Venezia Giulia regions. The wine has a beautiful straw yellow with slight pale green highlights. The fragrance is aromatic and inebriating then staying pleasantly delicate. It is dry and elegant which makes it a velvety and warm to the palate. The Sauvignon Baronessa Ilaria can be an agreeable and pleasant glass off wine in between meals. It goes exceptionally well with prosciutto ham and vegetables it is also suited for main dishes witha base of sh or light sauces.

Pale yellow often deep. Intense clear smell of ripe fruit, pineapple, peach, green peppers, elderberry and sage. Delicate pressing of the grapes kept at a cool 5 degrees C for approximately 12 hours. A cold cleaning of the must at 7 to 9 degrees C and then a decantation. Finally an alcoholic fermentation reached with a controlled temperature of 15 to 17 degrees C Kept in its own fermentation for a few months in cement vats.

PATRIARCA

description

The Patriarca is an excellent sparkling rose. This wine is made by using pinot nero grapes in white. The Pinot nero makes up, all over the world, one of the most noble and at the same time one of the most difcult to under take. It makes a very complex tasting. It originates from the french region of Borgogna where it is the base of many of the regions most famous wines. The vinication process in white that is to say with out contact to the grape peel/ skin. This makes it a neutral wine. This obtains the best base for the production of a sparkling wine, which adds the body, complexity and a notable longevity. In France it is used ast the base in making their most famous sparkling wine, Champagne.
