Its better to have a few good
knives than a block full of poor
ones. Chef Susan Jessup,
Cordon Bleu graduate and
co-owner of 42 Fine Foods in
Ottawa, says building a good
knife collection is an invest-
ment you can make over time.
Here are the essential knives
Jessup says evey man needs.
1. Chef's knife
This is your go-to kitchen knife.
Buy one with an 8-inch blade
thats wide and relatively thick
except for the cutting edge
so it can handle the workhorse
knife jobs in your kitchen.
Perfect for slicing a roast or
cutting up hard vegetables.
A quality chefs knife starts
around $50.
2. Serrated knife
Its important to have a serrat-
ed knife because cutting bread
will dull your smooth blades.
Theyre also great for tender
vogotablos and ruits witn hrm
skin, like tomatoes. If you love
large rustic loaves of bread, go
with a 10-inch blade for about
$50. If youre mostly eating
baguettes or oval loaves, an
8-inon blado is hno and starts
at $30.
3. Paring knife
The smaller version of your
chefs knife perfect for peeling
fruit and vegetables or slicing
smaller items such as scal-
lions, ginger or garlic. A good
paring knife will set you back
$12 to $15.
4. Knife sharpener
Dull knives will bruise fruit and
vegetables, crush fresh bread
and slide off food surfaces, so
store knives in a knife block or
on a wall-mounted magnetic
strip. Sharpen knives you use
daily once a month others
may only need it once a year.
You can use a honing steel,
an electric home sharpening
machine or take them to a
professional sharpener.

playlist will help create the perfect am-
biance for that dinner party youve been
meaning to throw for months. Manthropol-
ogy has curated some music that wont
take (too much) attention away from your
delicious food and conversation.

Outdoor Dining
Think of Havana, load up on mint leaves,
juicy limes and white rum, and get mud-
dling. Andres Gonzalez, owner of Mambo
Lounge in Toronto, says the key to a good
Mojito is fresh ingredients.
Ingredients:
1 sprig fresh mint, including stem
2 tsp fresh lime juice
2 tsp white granulated sugar. Add to taste.
1 oz white rum
cup sparkling water
Method:
Pour sugar into a tall glass and cover with
lime juice. Add mint and muddle. Fill your
glass with ice cubes. Pour rum over mint-
lime mixture. Add sparkling water. Gonza-
lez says dont skimp here, cheap sparkling
water has high salt content and ruins the
havour o tno mint. Stir witn a long oooktail
spoon. Garnish with a lime wedge and a
mint leaf.

You can learn a thing or two
about a man by looking at
his pad. Not looking like the
aftermath of a hurricane is a
good start. Heres a couple
quick, green tricks to keep
your home crisp.
Substitute lemon juice for
chemical-based cleaners.
Mix water and lemon juice
to polish anything from
windows to brass hxturos.
Instead of stove top
cleaners, pour boiling water
(sparingly) onto caked on
food splatter. It will loosen
stains which can be wiped
off.
Use white vinegar to wipe
off mold and mildew.

A bar stocked with premium liquor also needs bartending tools.
Christine Edwards, a bartender at The Keg Steakhouse and Bar,
says they dont need to be expensive since many kitchen items
can do double duty. For example, Christine crushes ice cubes in
a kitchen towel against the counter instead of using an ice crush-
er. She says its a great ice-breaker at a party.

1. CocktaiI shaker
A cocktail shaker is the most practical drink mixer. Stainless steel
shakers help chill drinks quickly. Christine prefers the Boston
snakor, wnion nas a noavy glass tumblor tnat hts ovor tno top o

2. Jigger
A jigger is used to measure alcohol it looks like a large shot
glass with a range of printed measurements.
3. Corkscrew
Buying a corkscrew with a bottle opener attached is the most
convenient option.
4. Muddler
The muddler smushes and/or slightly crushes ingredients togeth-
er. This tool is used to mix non-liquid ingredients like spices, fruit
or herbs.
Bar Tools 101
Summer cooking is all about al fresco fresh and easy meals
that keep you out of the kitchen and on the patio. Pasta can be
a no-brainer. Heres a simple recipe that will impress any dinner
guest.
Time: 30 minutes
Ingredients:
2 chicken breasts, boneless, skinless
3 cups penne or rotini pasta
1 to 2 tbsp olive oil
2 to 3 garlic cloves, minced
2 to 3 scallions, sliced
1-inon piooo rosn gingor, poolod and hnoly onoppod
1 tbsp fresh lime or lemon juice
1 cup fresh cilantro, rinsed and roughly chopped
cup white wine
1 cups chicken stock
tsp driod onilli hakos (optional)
fresh grated parmesan cheese
fresh ground pepper
Method:
Put a pot of salted water on to boil.
Pound oniokon hat using a mallot until it's an inon tniok.
Heat olive oil in a frying pan on medium-high.
Saute your chicken. 2 to 3 minutes per side. Remove to a plate. If
it's not oookod tnrougn, it'll hnisn oooking in tno sauoo.
Turn heat down to medium, and add a little more oil if necessary.
Saute sliced scallions for 1 minute.
Add gingor, minood garlio and onili hakos, i using.
Pour in white wine. Let it reduce for 1 to 2 minutes.
The pot water should be boiling. Add your pasta and a bit of oil to
prevent sticking.
Squeeze your citrus into the sauce. Add your chicken stock.
Slice chicken into strips and return to sauce to simmer gently for
5 minutes, or until cooked through, adding more stock if needed.
Reserve some pasta water for the sauce if it reduced too much.
The starch will thicken the sauce.
Combine pasta with sauce and add cilantro. Place in a serving
dish and top with parmesan cheese and fresh ground pepper.
Serves 3-4.

sages and chipotle beef burgers for more
traditional people. On the other side, Id have

and a little bit of lemon, garlic and olive oil.

idea they have that I would hate anything
they could cook for me. Its the exact oppo-
site. Somebody could boil me a hot dog and

You've been butchering for over four
years. How fast can you butcher a cow?
(Laughing) It would take me a good four
hours, going slowly. My head meat cutter,
Bryton Bordage, is extremely skilled and can
butcher a half side of beef in 15 minutes.

Cleaning Tips
Sometimes you need a little
kick. Were going to give you
one to spice up your wings.
Ingredients:
1 lb cayenne peppers
1 cup white vinegar
salt to taste
Method:
Before you clean a pound of
peppers, put rubber gloves on.
Burning your hngors rom pop-
pers natural oil is not manly.
Wash, destem and mince the
peppers. Put them in a blender
and add the vinegar. Add salt
to tasto. Blond until liquohod.
The sauce might be a bit
pulpy. If you dont like pulp,
run the hot sauce through a
strainer.
Variations:
Lime Hot Sauce: juice a lime
and blend.
Garlic Hot Sauce: mince two
cloves of garlic and blend.
Wing Sauce: add equal parts
butter and coat your wings for
a spicy game day snack.

to fridge in under an hour.
Frosn poultry, hsn, pork and
ground beef should be cooked
or frozen within two days of
purchase. Beef roasts and
steaks can keep in the fridge
or up to hvo days.

Move over, eggs. Bacon is sizzling with a new best friend beer. Weve devised
a foolproof recipe for harmonizing beer and bacon into a crispy and succulent
snack for any party, picnic or self-indulgent moment.

Ingredients
STEP 1
Preheat the oven to 350 degrees.
STEP 2
Mix the brown sugar and beer in a medium-sized bowl to make the marinade. Soak
bacon in the marinade. If you want extra succulent bacon, let it soak in the marinade for
24 hours before cooking.
STEP 3
Put a cooling rack on top of a baking sheet. Drape bacon strips over the cooling rack.
When the oven is hot, put the bacon in and let cook for 12 minutes.
STEP 4
After 12 minutes, take your bacon out, and brush the marinade on both sides of the
bacon, and let cook for another 10 minutes. Take out and let cool for 1 hour.

here is no better time for a summer barbecue than a warm
July night with a few of your favourite friends. A juicy,
marinated steak sizzling on the grill takes center stage in
this delicious summer meal, cobs of sweet corn singeing at its side.
A tosseo green salao raoiates all tLe havours ol summertime; citrus,
berries and crunchy greens. Summer entertaining couldnt be eas-
ier. We broke it into three steps to make selecting the right steak,
sides, and drinks easy. Light some candles, throw a few bottles of
ice-cold ale and chilled wine into a cooler and take to the deck. Its
time to dine outdoors.

The Complete Meal
T
o serve a group, the rule of thumb is to buy half a pound of raw meat per person, says Bryton Bordage,
head meat cutter at Highland Drive Storehouse in Halifax. It may seem excessive, but cuts of meat get
smaller once tLey`re cooLeo. SoaLing meat in a marinaoe aoos bolo havour ano can tenoerize tougLer
cuts of steak. Storehouse owner Jessi Gillis says you can marinate steak for as little as six hours, but soaking it for
two to three days is ideal. See our Q&A with Jessi Gillis on page 13.
The rib eye is cut from the rib section
so the marbling of fat makes it tender
ano havourlul. 1Le marbling also
means rib eye can be cooked to medi-
um well and still be tender. Rib eye can
also be slow roasted.
1.Choose a steak
1Le hanL steaL is a long cut lrom tLe
underbelly. This cut can be tough
marinating will help to tenderize the
meat. Grill it on a high heat until
medium rare and serve sliced diagonal-
ly against the grain. This cut is also a
common choice for stir frys.

The top sirloin is cut from the hip
section. Cook it on grill set to medium
temperature or lower if the heat is too
high the meat can become tough. Top
sirloin can also be sliced while its raw
and added to kabob or fajita recipes.

2.Soak & rub
1Lis vet rub ooesn`t crust but aoos a tangy burst ol havour
to any cut of beef going on the grill. Mix all ingredients and
slather on steak before its cooked.
Ingredients
1 tbsp lemon juice
1 tbsp Dijon mustard
1 tbsp olive oil
2 tsp honey
1 garlic clove, minced
1 tsp salt
1 tsp dried oregano
1 tsp dried or fresh thyme
tsp ground black pepper
Serves 4.
Rosemary Marinade
Herbed Wet Rub
This marinade combines common kitchen ingredients for a
splasL ol simple summer havour. Combine all ingreoients in
an airtight, non-metallic container and let your steak soak.
Ingredients
cup soy sauce
cup olive oil
cup honey
3 tbsp balsamic vinegar
4 garlic cloves, minced
3 tbsp fresh rosemary, chopped
2 tsp fresh thyme, chopped
1 tsp ground black pepper
1 tsp salt

This marinade gives meat a slight sweetness to compliment
tLe Leat ol tLe ginger, aooing subtle Asian-inspireo havour.
Ingredients
cup soy sauce
cup brown sugar
lime, juiced
cup fresh cilantro, chopped
4 garlic cloves, minced
2 inch piece fresh ginger, grated
2 tsp ground black pepper
1 tsp hot sauce (optional)
1 tbsp sesame oil (optional)
Serves 4.
A dry rub will add a light crust to steak once its grilled.
The easiest tried-and-true dry rub is just salt and pepper, but
this recipe will add a sweet and smoky spice to your steak.
Combine all ingredients and massage into the meat before
throwing it on the barbecue.

1 tsp chipotle chili powder
1 tsp salt
tsp brown sugar
tsp cocoa powder
tsp cumin
tsp dried coriander
tsp allspice
tsp dried or fresh thyme
tsp ground black pepper

Soak the corn in a bowl big enough to
submerge them. Let the cobs soak for
30 minutes.
Peel back the husks and leave them
attached at the bottom of the cob. Pull
oh tLe corn silL ano pull tLe LusLs
back up.
Put the corn on the cooler part of the
barbecue and close the lid. After 15 to
20 minutes, taLe tLe cobs oh tLe grill.
Fresh fruit adds depth to a simple salad.
Combine all ingredients and dress your
favourite greens. Add sliced strawber-
ries and mandarins.

Dressing ingredients
cup light olive oil
1 oz lime juice
1 tsp Dijon mustard
tsp ginger
1 tsp orange juice
1 tsp sugar
salt and pepper to taste
No meal is complete without a drink.
If wine is the top choice we suggest a
red. Go with a pinot noir from Cali-
fornia or British Columbia. Both will
compliment tLe sesame havour in tLe
Asian steak marinade.
For white wine, try a gewurztraminer
or riesling.
Or serve a classic summer drink beer.
A pilsner or wheat beer are your best
bets.

3 Menus from 3 Maritime Cooks

lways the guest and never the host? Getting together and hosting friends
for a night of drinks, dinner and a good laugh, doesnt need to be intim-
idating. These three maritime chefs share plenty of ideas that will make
hosting easy and enticing. Sean Gallagher, Philip Smith and Collin Stone cook for
crowds everyday. Heres a helping of their wisdom, topped with a few secret tips
and a sprinkling of little details that will get any man throwing an impressive
gathering.

The Menu:
Gourmet Burgers with a Twist

hilip Smith moulds fresh ground
beef around small mounds of
cheese. A good blue cheese like
Stilton aoos a burst ol havour to your
homemade burgers. Simply roll it and
build your burger around it. Philip says
its easy to dress-up your barbecue and
reoehne your comlort zone.
Philip has been a chef for over 20
years; more than seven at The Old Tri-
angle Pub. He says being organized
is key.
He veers away from traditional burg-
er sauces and uses little bowls of garlic
mayo made with fresh garlic instead.
His chipotle mayo is smoky and spicy
with a Southern kick. He also makes
a cranberry mayo for a sweet and tart
topping.
Philips piece de resistance is his
Vodka BBQ Sauce which is tangy and
havourlul on burgers ano robust on
ribs and chicken. See page 69 for his
recipe.
FLilip tLinly slices oiherent Linos ol
local sweet potatoes, blue potatoes and
red-skinned potatoes and roasts them
in the oven. Serve with a fresh salad.
IinisL oh vitL Homemaoe Strav-
berry Shortcake. He marinates the
strawberries for a couple of hours in
sugar and a little vanilla. Spoon the
fruit mixture over some biscuits and
add a dollop of fresh whipped cream.

ean Gallagher puts muscle into kneading his pasta
oougL. He mounos a Leap ol hour onto Lis vorL
surface, makes a deep well in the centre and cracks in
the eggs. Hes not averse to getting his hands sticky as he
slovly vorLs tLe hour into tLe vLisLeo eggs to maLe a solt,
pliable ball. And then its time for kneading and working the
oougL until it`s ust rigLt. 1Lat`s tLe most oimcult part, Le
says, but its also super fun.
His pLilosopLy is simple: gooo ingreoients equals gooo
food. He says if you use high quality, whole foods, you cant
go wrong.
When the keen surfer is not catching a wave, hes sur-
rounded by fresh food and mouth-watering aromas at Local
Source, his catering company and neighbourhood shop.
Sean harvests local ingredients from across Nova Scotia. Hes
not a traditional chef, but came by his trade naturally while
putting Limsell tLrougL university vorLing as a hne-oining
waiter.
I loveo creating experiences lor people by pairing havours
from high quality food with great wines. When it comes
to summer entertaining, Sean loves the abundance of crisp
cucumbers, ripe berries and heirloom tomatoes. Good
vine-ripened tomatoes are going to taste like candy.
He says a simple Caprese salad using vine-ripened heir-
loom or cherry tomatoes is a colorful and fragrant dish to
LicL-oh a summer party. 1Le Ley is really nice balsamic vin-
egar and really nice olive oil. Arrange tomatoes on a platter
and top with fresh basil and cheese, like chevre. You can roll
the chevre into little balls and marinate, or Sean says simply
drizzle the balsamic and oil over the top.
People are always impressed with homemade pasta he
says with conviction. Making ravioli or bow tie pasta is super
easy seriously. Sean says to treat it liLe a oumpling ano hll it

Cut homemade pasta into thick, long strips and then pinch
them in the centre and allow to dry.
Sean`s rule lor Lomemaoe pasta is to use 100 grams ol hour
for every egg. The method can be found online. He says to
cracL a beer, hour tLe counter top ano Coogle tLe instruc-
tions. Seans topping of choice in the summertime is a simple
tomato sauce.
Seans Spiced Filo Baskets with Marinated Berries are a
must-try oessert lor any nev Lost. 1aLe hlo pastry, cut tLe
sheets into squares, and coat them with melted butter. Using a
mumn tin, pusL lour to six layers into inoivioual mumn cups
and sprinkle with cinnamon sugar. Bake in the oven.
Marinate some berries in maple syrup and chopped mint or
basil. I like to marinate them in vodka, maple syrup with a
little bit of cracked black pepper. When ready to serve des-
sert simply spoon some berries into spiceo hlo basLets ano top
with fresh whipped cream or mascarpone cheese.
Sean treats hosting as if its a cooking show. The trick, he
says, is mise en place. All the elements you need to make a meal
are prepared in advance. For instance, have the table nicely set
in advance and plan out what cocktails and pre-dinner drinks
will be served. Have them ready to pour the minute guests
arrive. Hors doeuvres should be pre-prepared and nicely pre-
sented so guests can simply help themselves. Sean suggests
spreadable cheese like chevre, crisp crostini and olives. Its the
little details that really make guests feel special.
Chilled jugs of water infused with cucumber, berries, mint
or lime are a simple way to wow guests- and keep them hy-
drated.

He says a grilled pork loin dressed with
a fresh blueberry and apple chutney
makes an impressive main course.
Collin makes his chutney with oxford
and valley apples to strike the right
balance of sweet and sour. It looks

Pair it with a light side dish like
a mesclun mixed salad with a light
oil-based vinaigrette and raspberries or
peaches, depending on the time of year.

Dont overthink it, he says. Have
a simple dessert ready to go in the
refrigerator. After the main course,
you look like a superstar when you
pipe some whipped cream on top of a
mousse. Boom you put a strawberry
on top of it, a little chocolate sauce, a

Spicy, savoury, salty. Its like a Bloody
Mary, except more delicious. Unlike
Bloody Marys, Caesars use Clamato
juice a salivating blend of tomato and
clam juices. Our Spicy Caesar has every-
thing you need to kick-start the day fruit,
legumes and a shot of vodka.
Ingredients:
6 oz Clamato juice
1 oz vodka
celery salt
1 tsp horseradish
4 dashes Worcestershire sauce
4 dashes Tabasco sauce. Add to taste
lime wedge

Method:
Run the lime wedge around the rim of the
glass. Pour celery salt on a plate, and rim
the glass with the salt. Throw in ice cubes,
and pour vodka and Clamato Juice into
the glass. Add Worcestershire sauce,
Tabasco sauce, horseradish and garnish
with the lime wedge and a spicy bean. Stir
and enjoy.

What's a good home workout for someone with no equipment?
One of the easiest routines is eight rounds of a simple exercise, 20 seconds
on, 10 seconds off. It takes four minutes to do each exercise, and you can
cycle through push-ups, planks, squats, lunges, jumping jacks or sit-ups. Just

Protein shakes post-workout- worth it?
Theres a 30-minute post-workout window when your body absorbs nutrients
better than usual. Exercise breaks down muscle so you need to build it back
up the importance isnt the protein shake itself, but getting nutrients right
after you work out. Its hard to eat a full meal at the gym, so protein shakes
can be an easy way to get those nutrients in within the half-hour time frame.
Is it okay to hit on someone at the gym?
Is it appropriate to hit on someone on the street? I think its the same. If some-
ones working out hard, listening to music, its totally inappropriate to stop
them. If they talk to you, then sure its the same as any public place.

Ditching the city centre for a breath of
fresh air may seem simple, but you gotta
know someone who knows someone to
experience the wild side of Nova Scotia,
says John Glynn-Morris. He wants to
change that. A mastermind behind Recre-
ation Nova Scotias Outdoor Network, his
mission is to make information about prime
outdoor areas available to those outside
the circle of hardcore outdoor enthusiasts.
To start, heres his top-three list of hiking
trails near Halifax:
The BIuff TraiI tops the list for a few
reasons. First of all, its Timberlea location
means Halifax Metro Transit can take
you there in no time the cost of getting
there is pocket change. Its also one of
Glynn-Morris favourites because it has
four stacked loops, meaning you could
stroll for two hours, make it a full-day or
overnight trip. In 2008, Explore Magazine
named it one of the eight best urban
escapes in the country.

The Duncan's Cove TraiI is a less-
er-known coastal trail less than half an
hour from downtown Halifax. Its a there-
and-back trek that takes three hours round
trip. This ocean-side trail makes for a
breathtaking view and is also popular for
some World War I monuments along the
way a wilderness and history experience
all in one.

The Crowbar Lake TraiI is a well-es-
tablished trail system about 45 minutes
northeast of Halifax. Like the Bluff Trail, it
offers various options, ranging from 1.6
km to 20 km, depending on your level of
ambition. The three major lakes these trails
visit are great places to stop for lunch or to
cast a line.

Place the drywall inside the hole.

until the spackling has turned white. This
usually takes 30 minutes.
STEP 5
Once dry, sand the wall until its smooth.

ts not about winning the top prize at com-
petitions though the free booze is nice and
its not just about paying 25 bucks for more
than a hundred bottles of beer. To Anthony Lord,
home brewing means crafting each bottle or pint
with his own two hands.
The back porch of his Halifax home is rigged
with two shining 40L pots on roaring propane
burners. Clear plastic pipes run between them,
connecting through a giant steaming cooler
hlleo vitL grain. 1Lis is tLe evolution ol AntLo-
nys setup. He used to buy beer-making kits and
brev in pots on Lis LitcLen stove, but, Le says
with a laugh, you can only do that for so long
before your girlfriend kicks you out. Now he
works from scratch instead of kits, which means
he sources his ingredients through local Halifax
breweries like Propeller, and Noble Grape: Urban
Winery.
It also means he can make bigger batches at a
time. Big enough that he got sick of bottling his
brews it takes a full afternoon, while making
the beer itself is only a four-hour process. Antho-
ny investeo in a lev Legs. A small lreezer in Lis
kitchen holds three of his own beers, on tap.
Anthony is an ultimate craftsman type: a new-
ly-graouateo LalLousie Lniversity engineer, Le
built a voooen garage in Lis yaro ano hlleo it up
with power tools for wood and metal work. He
hxes up olo motorcycles as a sioe proect ano is
renovating Lis Louse into a rustic style Lome vitL
barnboaro trim. 1LougL Le revels in tLe cralt
itsell, even AntLony got into breving because ol
tLe savings.
Between the equipment on his porch and the
keg setup, Anthony racked up about $600 in
start-up costs more than he actually needed to
get starteo. but alter tLe initial investment, ingre-
dients for his monthly 40L batch costs about the
same as a 12-pacL ol KeitL`s at tLe Mova Scotia
liquor store or about 30 cents a pint.
For Halifax master brewer Greg Nash, it started
tLe same vay. Initially I got into it liLe every-
booy else ooes, trying to save some money, Le
says. But that changed in a hurry. Now that hes
more experienced, making beer is about rolling
up Lis sleeves ano getting creative. Ior me it`s all
about the craft, he says. When you go to a brew
shop and buy a kit to make beer, you get it home,
open it up, hno tLe instructions ano tLrov tLem
in tLe garbage. He got tLat aovice lrom vLat Le

ers, but reading books and making beer from scratch is how
his beer career was born.
Gregs hobby-turned-obsession landed him at the Amer-
ican brevers Cuilo in Lavis, Calilornia. Creg graouateo as
a master brever in `9 tLen hev bacL east to taLe over: He
helped Pumphouse Brewery open in New Brunswick, took
over tLe Leao brever position at Carrison breving Co.,
moonlighted at Propeller Brewery, worked part-time at Hart
& 1Listle Castropub & brevery ano hnally starteo Lis cur-
rent full-time gig at Rockbottom Brewpub. He sits proudly
in front of a sampler kit of the six original handcrafted brews
that Rockbottom has on tap, among them a basic wheat
beer for the people who come in looking for a Keiths, a
cLocolaty smoLeo blacL ScLvarzbier lager, ano a horal IFA
with a citrus punch.
Anthony is a big fan of Rockbottoms brews, but says he
isn`t planning to get quite so creative. Creg`s Russian Impe-
rial Stout, lor example, is a 10.7 percent alcoLol, pitcL-bacL
pint that sits like a meal in your stomach. Anthony clones
beers Le alreaoy enoys, liLe tLe Mexican Cerveza recipe
hes following now that will be a Corona-like summer beer.
Cnce tLe batcL Las hovn tLrougL tLe clear tubes into
the second pot, Anthony adds a handful of hops. The steam
taLes on an overvLelming eartLy smell ano AntLony stirs
the now-greenish liquid with a giant spoon. The liquid,
called wort until its fermented, will boil for an hour and
then the trick is to keep things clean.
Greg, in his shining, sterilized brewpub, explains how any
bacteria, even bacteria in tLe air, can cLange tLe havour
prohle ol tLe beer. Ano usually not lor tLe better. It`s
especially a problem lor people vLo oon`t vant to invest
in equipment like Anthony did, and tend to start brewing
in their kitchen, a bacteria hot-spot in any home. On the
brigLt sioe, Le says unliLe some looo preserves, no natural
bacteria can survive in beer tLat`ll Larm tLe Luman booy,
because ol tLe pH levels ano alcoLol content, ano tLanL
God for that.
Anthony has only botched a couple of batches badly
enough that theyre undrinkable. It has to be pretty bad
for me to pour it down the sink. He once dumped out an
attempt to clone Becks beer, but not because of bacteria.
beer is sensitive to temperature ouring tLe lermentation pro-
cess and while his batch was stored outside the temperature
spiLeo ten oegrees overnigLt. VLen Lis beer ooesn`t come
out as planneo, Le usually orinLs it Limsell ano serves better
batches to friends and guests.
Two of the beers he has on tap in his kitchen are Belgian
Blonde Ale. He made the same recipe twice to see which
turneo out better to enter into tLe Carrison Home brev-oh,
an annual Halifax competition with an all-you-can drink
gala, omcial beer uoges ano loaos ol local brevs. Vinners
are inviteo to cralt a batcL ol tLeir ovn beer in tLe Carrison
brevery. AntLony`s never placeo in tLe semi-hnal uoging
round, but, he says its not really about that. The com-
petitions lorce Lim to get creative ano try nev recipes, ano
even il you lose, Le laugLs, at tLe eno you still Lave a vLole
bunch of beer to drink.

A simple shoe shine takes your look to the
next level. And its not complicated. Dimitri
Christeas, a cobbler in Halifax, showed
us what every essential shoe kit needs to
make home shoe shining part of your rou-
tine. See our Q&A with Dimitri on page 49.
Shoe poIish
Polish freshens your shoes, but doesnt
clean them. Before you polish, wipe down
your shoes with a damp cloth. Always use
a polish that matches the colour of your
shoes. You can buy shoe polish in lots of
colours, but youll likely only need black
and brown.
Round brush
The round brush is used to apply the
polish to the shoe. Dip the bristles into the
polish and rub it on your shoe. A tooth-
brush also works for this.
Wide brush
This brush does the actual polishing.
Once youve applied the polish with the
round brush, use the wide brush to evenly
spread the polish.
Laces
Good quality shoes can last a while if
properly cared for. Your laces on the other
hand, will not. Replace laces when they
start to fray to keep shoes looking their
best.

Its four oclock on a Friday.
Youre still at work and, oh, that
girl from the bar is coming over
for dinner. The kitchen is still a
mess, you havent picked up
groceries all week, and are in
no way prepared for the night.
But fret not: heres a quick,
easy meal to impress your
date.
For starters, you better have
some fusilli and a jar of tomato
sauce in the cupboard. Throw
a pot of water on the stove.
Chop up a clove of garlic, an
onion, and get them grilling on
the frying pan. That was liter-
ally the hardest part. Cook the
pasta and warm up the sauce
with a couple spinach leaves.
If youve got mushrooms, chop
them up and throw them in. Let
the sauce warm for a couple
minutes, allowing the spinach
to wilt and the mushrooms to
soften. Mix the pasta and the
sauce it on a nice plate. Throw
some grated cheese on, and
add some fresh basil or pars-
ley to green it up.

How often shouId someone shine their shoes?
About once a week.
Even in summer?
You can wear a nice suit all dry cleaned, but if your shoes are dirty it ruins it. The suit
might not be that great, but if your shoes are clean and shiny well, then youre looking
good. Shoes always play a role. You can get a sense of someone. Like if you go to a
bank and theres a guy whose whoes are shiny and clean, then hes probably clean cut
and fussy about how his apartment looks.

At least two years. Theyll still look good if youre polishing them up. Sometimes new
laces look nice because those can get worn out. It looks fresher when you throw a new
pair of laces in.

ick and Jesse loved music. After a party,
theyd to go back to Nicks room and
listen to The Kooks until she fell asleep,
curled up in his bed. It was a perfect friendship, un-
complicated by sex. The only problem Nick wanted
more. He wanted out of the friend zone.
The friend zone that terrible place where one per-
son in a friendship wants sex or romance and the other
is happy just being friends. In modern dating, its not
uncommon. But unrequited love has always been part
of the game. Even Romeo fell hard for the unrespon-
sive Rosaline before he met Juliet. Getting stuck in
the friend zone is a little newer. It keeps one person
hanging on, desperately hoping things will advance
to the next step. Its sexual purgatory. It gets worse
when the friendship is a benefriends situation, where
two people are having sex that is supposed to be at
least in the mind of one of the friends no strings
attached.
Halifax psychologist and couples counsellor Dr.
David Mensink thinks, in many ways, dating hasnt
fundamentally changed.
Its the same basic hu-
man system, he says.
People are still attracted to
other people in the exact
same way theyve always
been. In clinical terms,
he says, it comes down to
neurotransmitters, brain
chemicals that help us to
feel good when were with
certain people. These exist
in any dating situation, from a dinner and a movie a
deux to a group hang out at a pub. But Dr. Mensink
points out two recent big changes: the co-equality of
men and women and the increase in benefriend sit-
uations. In 2008, Project Innovation Inc. published
a stuoy calleo Farticipants in 'lrienos vitL benehts`
relationships. More than half the men and women
interviewed said they had a past or current benefriend.
So vLy oo ve hno ourselves in situations vLere a
relationship isnt going anywhere and both people
Lnov it? Lr. MensinL says it`s partly because hguring
out the relationship status is more complicated than it
used to be. Some people see friendship as a stepping
stone to sex or a romantic relationship. Scott Nord-
lund was one. I thought the best way to get to her
was to be friends and it would morph, he says.
Turns out, men are much more likely to enter the
lrieno zone vitL oiherent expectations tLan vomen.
A study published in the 2012 Journal of Social and
Fersonal RelationsLips calleo beneht or buroen: at-
traction in a cross-sex friendship found men were
four times more likely than women to want to date
platonic friends of the opposite sex. Men were also
more likely to assume their opposite-sex friend found
them sexually appealing.
The line between friendships and relationships
is murky, Dr. Mensink says, Theres a lot of sliding
back and forth. People use the term there for me,
when they talk about why someone is a good friend,
but in a romantic relationship, says Dr. Mensink,
you expect more.
One-on-one situations are complicated enough,
but when someone tries to satisfy their relationship
needs with two people one for friendship and one
for sex it gets messy.
Thats what happened with Nick. He wasnt hap-
py in the friend zone, but didnt talk to Jesse about
it at hrst, Loping tLeir lrienosLip voulo eventually
become something more.
Then Jesse started sleeping
with Nicks roommate,
Anthony. It was a purely
physical attraction, Jesse
says, Looking back on it,
I know it hurt Nick, but
at the time, I didnt realize
how much. Nick, Jesse
and Anthony continued
their games for months
until Nick made a play. He
told Jesse he wanted more. Our friendship meant so
much to me that I didnt want anything to change.
When Jesse told him she didnt see him romantically,
their friendship ended.
Trying to get from the friend zone to the end zone
isn`t impossible, but it`s oehnitely a Hail Mary: be pre-
pared to hear, I just want to be friends.

started the skincare company in January 2013.
Were not making skin care in our grandmothers bath-
tubs, the CEO Eric says, This is a legit company.
A legit company with a sense of humour.
Eric is obsessed with making viral ads. We wanted some
high quality commercials to establish our brand, he says. So
they created I Jerk.

Eric was fed up.


I was unhappy with my current work situation, he says. I
wanted to create a new business.
So Eric called up his friends Justin, Elan and Julian and
tLey starteo Rebel`s Rehnery. Lric vanteo tLe company
name to have two words. He still has a list of the potential
names, including The Sneaky Barber. I dont know if there
is a literary term for it, but I liked the way two words juxta-
pose one another, says Eric.
Cnce tLe guys lanoeo on Rebel`s Rehnery, Le Lnev it vas
tLe one. It ht vitL our brano, Le says. A brano tLat`s all
about men.
Its for men who work hard, play harder and may need
rehning on occasion, Le says. Ve vanteo it to rehect a
lifestyle, the owners and how we are living.
Eric and Justin, the director of sales, have been friends for
nearly 25 years. The two guys grew up together in Dun-
oas, Cntario. Ve vere trying to hno a marLet ve liLeo,
explains Justin.
[ustin tLougLt tLe sLincare inoustry vas olo ano stuhy. He
wanted to make it cool. Eric agreed. I was getting interested
in skin care. I just didnt like any mens products, says Eric.
I decided to create my own because none of them were
cool and they were loaded with synthetic ingredients that
did more harm than good.
Skin care is a growing industry. Between 2010 and 2011,
the mens skin care market grew by 11 per cent seven in
10 men are now buying skin care products.
Since January, the guys have been selling their creams
and cleansers online and in stores around Toronto. And
tLeir prooucts Lave been hying oh pLysical ano virtual
shelves.
Everyone seems to love them, laughs Eric . Weve only
been testing in a couple of stores but people are picking up our
products o the shelf and buying them without a lick of knowl-
edge about who we are.
Men still prefer to buy their skin care online so thats a
bonus for us, adds Eric.
Bob Blunden an associate professor with the Rowe School of
Business says the guys online strategy is smart. Its almost like
pornography, he says. Its in the privacy of your own home. It
makes it easy.
But not everything has come easy for the rebels. In 2010,
Julians step-father died of prostate cancer. We wanted to
give back. We wanted to promote mens health. We wanted
to oonate to a cause tLat ahects men specihcally, says Lric.
The guys donate part of their revenue to Prostate Cancer
Canada, a cancer research foundation.
Even if this doesnt become the next big thing, at least
Im going to be raising some money for a good cause, says
Eric.
But altruism aside, the goal is to become to the next big
thing in mens skin care. We want to be the one of the most
trusted mens personal care brands. Period. says Eric.

risk of people not digging what youre doing. Were a rebel
brand to the core and thats what were going for.
Never for one second assume that men are not as vain as
women, says Eric laughing. My uncle said to me the other
day the one thing he wishes he had done was start [taking
care of his skin] earlier.
[This is] more preventive maintenance as opposed to, Oh
shit Im wrinkly and Im 55 and I feel like I will do anything
to catch up.
So start early.

1. Get the right cut.
When buying a suit look for words like slim or European cut, says
Jeanie Kimber of Style Me! Wardrobe Consulting in Halifax.
Avoid pleated pants and boxy suits. You want the suit to show off
your physique, not hide it.
If youre slender, go for an even slimmer, Mad Men-style narrow lapel
and skinny pant. Then pair it with a skinny tie for a cool, retro look.
2. This is an investment.
If you want a nice suit, youre going to have to shell out. Jeanie says
the minimum you should spend on a suit is $400. For an all-purpose,
year-round suit, look for three-season wool, which is appropriate for
most Canadian woatnor and your air oonditionod ohoo on tnoso not
July days.
3. Don`t be boring.
My advice to young men dont get black, says Jeanie. Look for
charcoal grey or navy blue suits. They look formal, but not funeral,
she says. Then have fun pairing colourful shirts and ties, especially
in summer months.
4. Mix and match.
You dont always have to wear the suit together, says Jeanie.
Pair the suit jacket with a T-shirt and dark wash jeans and youve got
a groat dato outht.

4 TIPS FOR BUYING A SUIT
So you want to smoke a pipe?
Chris McFadden, pipe enthusiast and Sieverts
Limited tobacco shop employee, suggests doing your
nomowork hrst.
Start with an inexpensive pipe to see if this is really
what you want to do, he says. McFadden says corn
cob pipes are a good place to start. They cost around
$10. It may not look as elegant as some of the other
pipes, but its an inexpensive pipe that smoke really,
really well, he says. And theyre really good in terms
o tno tobaooo havour tnat you got."
If thats not your style, try a briar pipe. Briar is a very
solid wood and what most pipes are made of. Medico
pipes start at around $40, or if you want to splurge
and support a Canadian company, try a Brigham pipe.
They cost about $50.
All pipes look different so go look at them and see
which one looks and feels the best to you.
Be aware that while most pipes come pretreated,
but others dont. Pretreated pipes help prevent the lit
tobacco from making holes in the pipe bowl.
Once you get your pipe and youre ready to try it out
start here:
1. Fill your pipe with tobacco.
2. Do a charring light. Light the tobacco by moving
your lighter in a circular motion around the bowl. The
tobacco will probably puff up a bit and char, warns
McFadden.
3. Using a pipe tool, tap the tobacco down slightly and
then light it again. Again, do a circular motion around
the bowl, being careful not to burn the top, says
McFadden.
4. You might just give a very light tap to move the
burning embers down to the next layer of tobacco,
says McFadden. Now youre ready to smoke.

An exclusive male tradition from Northern
Spain has arrived in Halifax. Txoko, pro-
nounced so-ko, is a society of men who
meet for cooking and conversation no girls

Local Source Market owner and self-
taught chef Sean Gallagher has started his
own Txoko, but with a competitive edge. The
group of men gather every other week, each
host trying to outdo the last with themed

In Seans culinary circle, elaborate meals

Heres some delicious summer salads, perfect for entertaining.
Try them with the steak marinade and rub recipes on page 20.
Panzanella Bread
Salad
Goes with Herbed Rub
Ingredients
5-6 fresh tomatoes, cubed
1 Italian rustic bread loaf,
cubed
cup chopped basil
cup grated parmesan
cheese
3 cloves of garlic, crushed
cup olive oil
cup balsamic vinegar
teaspoon sugar
salt and pepper to taste

Toss the bread in half the olive
oil and vinegar.
Toast bread cubes in the oven
at 350 degrees for 15 to 25
minutes.
You want bread to become
crusty on the outside, but not
dry out completely all the way
through.
Mix the remaining olive oil and
balsamic vinegar with the gar-
lic, sugar, salt and pepper.
Toss the toasted bread, toma-
toes, parmesan cheese and
dressing together.
Serve immediately.

Dressing
1 tbsp lemon juice
2 tbsp mayonnaise
1 to 2 cloves garlic, crushed
1 tsp worcestershire sauce
1 tbsp Dijon mustard
cup buttermilk
olive oil

bacon, sliced
romaine lettuce, sliced
Combine the dressing ingredients then toss with
the salad.

Philip Smiths Vodka BBQ Sauce
1 cup vodka
1 Spanish onion, large
2 cups ketchup
1 cup brown sugar
cup garlic powder
1 cup white vinegar
2 tbsp mustard
1 cup molasses
Saut onions in small amount of oil. Add
vodka and simmer on medium heat for 10
minutes. Add all ingredients and cook on
low heat for 30 minutes. Stir occasionally.

Acting vas alvays my eno goal. As I got oloer I realizeo tLat I neeo
a sioe perception as an actor, because not hnancially is it so unstable,
but mentally it is so unstable. You are at tLe grasp ol every single
person but yoursell. So I voulo recommeno to anyone vLo`s pursing
a career in tLe arts to Lave anotLer meoium to express tLemselves in

She slied into the seat beside him smeing of
strawbeies and sunscrn. Her wet hair tied into
a subtle tourban with her favourite silk scarf, she
leaned in for a quick ki and put her ft up on the
dash. They had the wkend ahead of them and the
city behind them and tiny sandwiches in a cler in
the trunk. But the wind was fierce that day and,
