We want to invite you to develop a business that will allow for proper production, preservation, storage, distribution and production of derivatives for the raw (unpasteurized) milk market in Colombia. An average of 17.2 millions of liters of milk are produced daily in Colombia. The dairy industry processes 41% , and the raw milk (milk that has not been pasteurized) informal market sells the remaining 59%. It is estimated that 28% of milk production in Latin America is not industrially processed. Considering potential health risks generated by inappropriate manufacturing practices in milking and livestock, the Colombian Government issued a decree that designates requirements for commercializing of raw milk for direct human consumption, including health conditions for production, storage, and distribution guidelines. There are approximately 619,000 people linked to informal milk chain in Colombia, and 4,000 people involved in the municipalities of Cuenca Lechera del Cauca. For these people to accomplish the current regulation and to participate in the raw milk market with safe products, it is necessary to incorporate innovations that ensure safe conditions in production, cold storage and distribution.
