IFB was one of the sponsors of the new year evening programme concuded on 31st Dec 2012. In addition to being the sponsor for that evening they came out with a proposal of conducting a cookery demonstration classes for the benefit of our woman folks and a cookery contest with attractive gifts for the winner-up and runner-up. Accordingly, we have arranged 4 demo classes on 7th, 14th, 21st and 28th of April 2013. A good number of ladies participated in the cookery demonstration. IFB too arranged thier chef to show case cooking methodology using Micro Wave oven. Some of the dishes prepared in the demo classes are: Fruit Biscuits Baked Veg Chicken Lollypop Thai veg Curry Apple Kesari Chinese Pulav

The cookery contest was scheduled on 5th May 2013 This was an individual participation and everyone was given the choice of choosing their own dish. The criteria was to have an healthy ingredient and cooking methodology was to have a combination of modes available in the micro wave oven. The winner of this cookery competition was Ms. Aparna Udayasurian (M No 1680) and the runner was Ms. Anuta Mukherjee (M No 1837). With the winner given a prize of Micro wave oven and the runner a rice cooker, the 5 weeks run programme came to a conclusion with happy a note. S.P.Chandrasekar Catering Committee

recipe SPINACH CUCUMBER & KIWI SALAD WITH CHICK PEA PANCAKES
Serves 4 Ingredients 100gms tender spinach leaves 3 nos kiwi fruit 1no cucumber peeled julienne 2 spring onions chopped 15 ml olive oil 15 ml white wine vinegar 15 ml apple juice 15gms thyme 15gms parsley chopped Salt and freshly ground black pepper For pancake cup chickpea flour 1 egg 1pinch baking powder 1pinch salt 1tsp of olive oil 1 tsp basil 1/4cup butter milk Method: For pancake, mix together chickpea flour, whole egg, baking powder and salt to make a batter. Saut chopped onion and basil in olive oil, fold in to the batter add the buttermilk mix well but lightly and leave the batter to rest for 15minutes. Pour the batter into a warm non stick pan and cook well on the both sides cut into roundels with help of a cookie cutter. For salad, rinse the spinach thoroughly pat dry and arrange on the serving platter. Peel and halve the kiwi fruit and slice thinly. Arrange the cucumber, kiwi slices and pancakes attractively on the spinach. Whisk together the remaining ingredients, drizzle over and chill for 30 minutes to allow the flavour to develop.

Classic Ratatouille lasagna


Ingredients Durum wheat (or) Refined flour 100 gms Egg 1 Spring vegetables 150 gms Tomato puree 50 ml Fresh basil leaves a sprig Parmesan cheese 20 ml Cheese sauce 50 ml Salt and pepper to taste

Method Knead the flour and egg to make pasta dough, allow the dough to settle for 30 minutes. Sheet the pasta dough in the machine or by rolling, cut into round shape with cutter and blanch it. Cook the spring vegetables in a saucepan over slow flame by adding tomato puree. Finish the mixture with salt, pepper, toned basil leaves and grated parmesan cheese. Layer the mixture in pre cut pasta, top up with cheese sauce and sprinkle the remaining cheese on top and gratinate it.

Wild mushroom Tortalloni


Ingredients Durum wheat (or) Refined flour 100 gms Egg 1 Portobello mushroom 100 gms Porcini mushroom 30 gms Butter 10 gms Chopped onion 10 gms Chopped thyme a few White wine 10 ml Grated parmesan cheese 10 gms Salt and pepper Method Knead the flour and egg to make pasta dough, allow the dough for resting for at least 30 minutes. Sheet the pasta dough in the machine or by rolling, cut into round shape with cutter. Toss the chopped onion in butter; add sliced mushrooms and thyme leaves. Add salt and cook further, deglaze it with white wine, chill down the mixture and add grated parmesan to it. Stuff the mushroom mixture in pre cut pasta sheet and fold in to Tortalloni shape. Reheat the remaining mixture and make a round base. Blanch the stuffed pasta in salted water and toss it with butter and arrange on the mushroom base.

Spinach and ricotta cannelloni


Ingredients Durum wheat (or) Refined flour 100 gms Egg 1 Spinach puree 25 ml Blanched shredded spinach 100 gms Butter 15 gms Minced garlic 5 gms Nutmeg powder a pinch Salt and pepper to taste Ricotta cheese 35 gms Grated parmesan cheese 10 gms Chopped onion 10 gms Fresh basil leaves a sprig Fresh roasted Tomato puree 40 gms Cheese sauce 25 ml Grated mozzarella cheese 10 gms Olive Oil 10 ml

Method Knead the flour with egg and spinach puree; allow the dough to settle for 30 minutes. Sheet the spinach flavoured pasta dough in the machine or by rolling, cut the pasta in rectangular shape. Blanch the pasta in salted water and keep it aside, sprinkle some olive oil to prevent sticking. Saut the garlic in butter, add blanched spinach, season with salt and pepper, sprinkle nutmeg powder for flavouring. Transfer the spinach mixture in mixing bowl, add ricotta and parmesan. Add chopped onion, chopped garlic and roasted fresh tomato puree. Add seasoning and finish it with toned fresh basil leaves. Stuff the spinach mixture in the pasta and roll in to cylindrical shape. Make the tomato sauce as a base and arrange the stuffed pasta. Pour cheese sauce on top and sprinkle grated mozzarella cheese on top and gratinate it.

anali means Home of Manu, derived from the legend when the renowned sage made this picturesque city his abode after the great deluge. Manali is synonymous with streams and bird song, scenic alpine landscape, and the splendour of snow capped mountains. Now, it is choc-a-bloc with souvenir shops and scores of hotels. The sleepy hamlets of Old Manali and Vashisht are less crowded and have a laid-back charm. Once a traditional summer holiday resort, Manali is now an year round destination, both for summer holidays as well as winter sports. Manali is also a great outdoors destination with a gamut of breathtaking adventure sports and outdoor activities like trekking, white water rafting, skiing for the adventure and outdoor enthusiast. Where It is located at the northern end of the Kulu Valley, at the confluence of the Beas and Manalsu rivers, 6726 ft above sea level, 274 km north of Shimla and 565 km north of Delhi. How to get there Nearest airport is Bhuntar (50km/2hrs). Road: There are overnight luxury buses from Delhi, Chandigarh and Shimla. Must see, must do The pretty, little hamlet of Vashisht is located on the left bank of the Beas on the northern side of the valley, famous for its hot springs, temples and stone houses. Nearby is the pyramidal stone temple dedicated to Vashita Muni, the spiritual guru of Rama. Hadimba Devi Temple, a 450-year old Dhoongri Temple dedicated to the Goddess Hadimba, the wife of Bhima the Pandava of Mahabharata fame stands tall among the stately deodars in a clearing of the dense forest. As one climbs the grassy path, the fluid notes of the whistling thrush wafts across the forest. The ancient temple with its three level roofs looks like a pagoda and its lintel and door frame are of intricately carved wood. The inscription proclaims that the temple was built by Maharaja Bahadur Singh in 1553. Tibetan Monastery Located in the heart of the town, the monastery has several images of Lord Buddha, impressive tanka paintings and a charming handicraft centre. Rohtang Pass Thius pass is renowned for centuries as the gateway to the trading routes leading to Lahaul, Ladakh and the remote countries of Central Asia. Its worth the 51-km drive from Manali to the pass, 13,060 ft above

sea level for its stunning views of the mountain ranges, peaks, steep cliffs, huge glaciers and deep ravines. Snow Point If you want to see and touch snow for the first time, head to Snow Point, the closest point to Manali with ample snow. You can build your snowman, hurl snowballs at your companions, and amble around in snow shoes. Shopping You can pick up dry fruits, handicrafts, carpets, shawls, locally made cheese, jams, pickle, delicate Himachali jewellery, Tibetan crafts, thangkas and an array of Chinese goods. Vitamin D is produced by your skin in response to exposure to ultraviolet radiation from natural sunlight. The healing rays of natural sunlight (that generate vitamin D in your skin) cannot penetrate glass. So you dont generate vitamin D when sitting in your car or home. It is nearly impossible to get adequate amounts of vitamin D from your diet. Sunlight exposure is the only reliable way to generate vitamin D in your own body. A person would have to drink ten tall glasses of vitamin D fortified milk each day just to get minimum levels of vitamin D into their diet. The further you live from the equator, the longer exposure you need to the sun in order to generate vitamin D. Canada, the UK and most U.S. states are far from the equator. People with dark skin pigmentation may need 20 - 30 times as much exposure to sunlight as fair-skinned people to generate the sam e amount of vitamin D. Thats why prostate cancer is epidemic among black men -- its a simple, but widespread, sunlight deficiency. Sufficient levels of vitamin D are crucial for calcium absorption in your intestines. Without sufficient vitamin D, your body cannot absorb calcium, rendering calcium supplements useless.

Chronic vitamin D deficiency cannot be reversed overnight: it takes months of vitamin D supplementation and sunlight exposure to rebuild the bodys bones and nervous system. Even weak sunscreens (SPF=8) block your bodys ability to generate vitamin D by 95%. This is how sunscreen products actually cause disease -- by creating a critical vitamin deficiency in the body. It is impossible to generate too much vitamin D in your body from sunlight exposure: your body will self-regulate and only generate what it needs. If it hurts to press firmly on your sternum, you may be suffering from chronic vitamin D deficiency right now. Vitamin D is activated in your body by your kidneys and liver before it can be used. Having kidney disease or liver damage can greatly impair your bodys ability to activate circulating vitamin D. The sunscreen industry doesnt want you to know that your body actually needs sunlight exposure because that realization would mean lower sales of sunscreen products. Seek the heart of gold beneath that craggy surface. Mandiras father, a former police official, was the strictest disciplinarian. He worked hard to provide a comfortable life to his family and relentlessly pushed his children to higher achievements. As a thirty year old bank manager and mother of two, Mandira still remembers her humiliation and sorrow when her father pulled her up in front of the entire joint family for not getting a First Division in her school board exams. Some fathers are naturally more nurturing. They consider parenting as an opportunity to help their children to realize their full potential. They can easily be in tune with their children emotionally, and be the growing childs friend and companion. Jayas father played a great deal with her as she grew up. She loved the way he would read to her from picture books, acting out the parts with dramatic intensity. He persuaded Jayas mother to allow her to play in the mud as a tot, and experiment with clothes and makeup as she grew up. As wonderful as such a parent may sound, they can also be over emotional and embarrassing at times. Jaya would never forget her college farewell day. Jayas father actually turned up in person to the party, to her eternal embarrassment. He did leave in peace, but when her classmate, Raghu, came to escort her home at a late hour, his grilling angered her deeply. As the years went by, Jaya realized that her father actually offered her a great deal of support and encouragement in life, and rarely made her feel stupid or inadequate. Clearly a bit of over wrought emotion was worth putting up with since he was generally so considerate and understanding. The rational robot can have a human heart. Some fathers are taciturn and highly logical by nature. They may seem emotionally distant, but they tend to treat their children as serious equals and encourage independent thinking. Cynthias father was a brilliant man, and constantly encouraged her to sharpen her mind with quizzes, puzzles and debates. As a child, she felt resentful that she could never outwit him in an argument. She sometimes felt that he was an arrogant robot who didnt really care for her, but was bringing her up as some sort of showpiece. When Cynthia grew up to be a successful lawyer, she realized that her father had taught her to think logically and clearly because he loved her and wished to invest in her personal growth. Her father wanted her to follow his footsteps and become a journalist. But when the time came, he overcame his initial blocks and encouraged her to choose for herself because he loved her. Cynthia realized the benefit of her upbringing, for her thinking and arguing skills were unbeatable. Fathers are only human.
