Zazou CULN 138 Introduction to Dining Room Service RESTAURANT REVIEW ASSESSMENT The reviews are worth 25%

of your final mark. They will be graded based on the following criteria: The Basics (3 points): 1. The reviewer remained neutral and objective in their descriptions of the food, service and ambiance 2. The reviewer tasted a sufficient number of dishes to fairly assess the establishment 3. All particulars of the restaurant were indicated, including: a. Address b. Phone Number c. Average cost per person 4. Spelling and grammar were accurate All the criteria was met 3 Food Knowledge (7 points): 1. The review was food-focused, including: a. Detailed description of dishes b. Description of presentation of dishes c. Personal impressions of presentation and flavours d. Cooking methods e. Originality f. Portion sizes g. Quality of ingredients h. Value for dollar All of the criteria were touched on some more than others. The descriptions and the presentation were excellent. All the other points could have used more detail. The personal impressions were your strongest part and hence made the presentation more interesting. I would have liked to hear more about what you thought about the food.

The Restaurant (5 points): 1. The following aspects of the restaurant were mentioned, if necessary: a. Service b. Ambiance c. Hygiene (eg washrooms clean, tables clean and neatly set, glasses/cutlery polished) d. Other relevant factors (eg wheelchair accessibility, parking, coat check, waiting lounge, ease/difficulty of making a reservation, etc.) 2. The review showed an educated understanding (where applicable) of: a. The style of restaurant and style of food being served b. The history of the restaurant

c. The identity of the chef d. The identity of any other important figures, eg Sommelier, Owner, General Manager e. The wine and/or cocktail/beer lists and their relevance to the style and price points of the food being served f. Uniforms of the staff g. 9 elements? Touched on all of these subjects, Even though you had some major criticism for your waiter I would of liked however to hear more. You mentioned some of the course material especially the 9 elements. Great job 5 The Classroom (5 points): 1. Presentation of the groups assignment. a. Use of media. Powerpoint, video, photographs (slide show) b. Presentation clear and audible for all the class c. Any others props used. ie. Menus d. Co-ordination of all members of the group Good presentation and you brought some props. Good slides and the presenters were loud and clear enough for all to hear. One suggestion is to have an end to your presentation so I suggest a summary slide. Maybe one that asks would you go back?

Bonus marks (5 points): At the discretion of the professor for exemplary presentations Touched on most of the required elements. A very good project. I would have liked a little more detail especially regarding the service such as how long you waited. I really liked your attempt to try wine and go with the suggestion of the waiter even though he failed miserably.
