Sauternes is the intense spicy flavor of Roquefort cheese. Just as with pairing dry table wines with meals, the pairing of dessert wines should take into consideration the intensity, weight and texture of the accompanying food. Light dessert dishes work best with light, crispy white wines. Heavier, richer desserts deserve fuller bodied sweet wines, usually red, as with Vintage Port, but sometimes a full-bodied white wine also works, as in the case of Sauternes. Some lightweight sweet white wines include Moscato and Late Harvest Riesling. Prices for these wines can start as low as $10 a bottle. The more intensely flavored versions will be sold in halfbottles and run slightly higher in price. Sauternes is extremely expensive, especially from older vintages. This wine is handcrafted with only the best quality grapes available, and only in years that yield grapes that meet the highest standards of the fine winemakers of Bordeaux.

Nestled between the Atlas Peak Mountains and the Napa Valley floor in this pocket called the Silverado Bench sits William Hill Estate Winery. They are on the quieter side of Napa and offer panoramic views, sophisticated wine and a relaxing wine tasting experience. The winding drive in places you on top of the Silverado Bench and this is where your journey begins. This contemporary winery has something for everyone and they are combining premium Napa wines with an interactive, fun and educational tour using The William Hill Estate Vineyard Experience Mobile App. The free app is available for download from the Apple App Store and they encourage guests to download the app to their personal mobile device prior to coming to the winery. One of the great things about wine country is being able to visit a variety of wineries and see their unique winemaking approach. The beauty of this interactive app is that it allows you to spend more time on what interests you most while touring at your leisure. Visitors to Napa Valley can now get an unprecedented look at what goes into crafting an exceptional wine. William Hill Estate has created one of the industrys first downloadable tours, giving wine connoisseurs behind-the-scenes access to its vineyard. This Vineyard Experience App creates an interactive journey beginning in the William Hill Estate Tasting Room where you can enjoy a sip of the winerys acclaimed Napa Valley Chardonnay. From there, the tour heads deep into the vineyard for a first-hand look at the estates red Bordeaux varietals, where you can touch the soil and explore the grapevines up close. Learn about the history and viticulture of William Hill and the remarkable growing conditions that make the Silverado Bench unique. The Vineyard Experience App also allows you to peruse a map of the estate, take photos in the vineyard and visit William Hill Estates online store. Personally, the feature I like best is the ability to seamlessly snap and share pictures of your experience on Facebook and Twitter. The tour culminates with a tasting of some of William Hill Estates best wines. Even if you dont have a smartphone, you will still be able to experience the tour on one of their available iPod Touch devices. William Hill Estate is an appointment-only tasting room. The property is bright, clean and modern and they currently offer two different wine flights; Taste the Napa Valley and Taste the Silverado Bench. Their Napa Valley wines embody the unique terroir of Southern Napa from the most prestigious vineyards in Carneros and other acclaimed Napa

appellations. The result is a collection of expressive wines that deliver layer upon layer of exquisite fruit on the palate. Among their best wines, the bottlings in the Bench Blend Collection illustrate the lush, expressive fruit characteristics of Napa Valley. These wines are soft, elegant and beautifully integrated. Winemaker Ralf Holdenried melds grapes from hand selected vineyard blocks that deliver intense flavor characteristics. They are a testament to the extraordinary vineyards of southern Napa. Let their wonderful and knowledgeable staff guide you through their wines and winemaking philosophy in a fun setting. They have a lovely outdoor patio and garden area where most tastings occur when the weather permits. They are dog friendly and even encourage guests to pack a picnic to enjoy a fun filled afternoon on their estate. Grab a seat under a pergola shaded by climbing vines or overlooking the rolling vineyards and savor your time in wine country! So, if you are looking for an unforgettable Napa Valley wine tasting experience that is just off the beaten path, then head over to William Hill Estate Winery. Tours and tastings are available daily by appointment from 10 a.m. to 5 p.m. and can be made by calling (707) 265-3024 or email at tastingroom@williamhillestate.com. Because of their fabulous location, William Hill Estate Winery hosts some really amazing evening events. Join them for Dreamy Evening Under the Stars on Saturday, August 17th from 6 to 10 p.m. Enjoy a family-style dinner with a bounty of sea and farm fresh food while sipping on William Hill Estate wines. After dinner, retire to the lawn to enjoy entertainment under the beautiful night sky. Reservations are necessary and can be made by calling 1-888-9099463 or WineClub@WilliamHillEstate.com. Cost of the dinner is $150, $110 for wine club members. Their last Sunset on the Silverado Bench event of the season is on Friday, August 23rd. Bring your friends or family, a picnic dinner and purchase your favorite bottle of William Hill Estate wine to watch the sunset as it passes over the beautiful Napa Valley. From 5:30 p.m. until dusk. This is a free event but reservations are necessary and can be made by calling 1-888-909-9463 or WineClub@WilliamHillEstate.com.

WCTW: Whats your favorite local restaurant and what draws you there? oC: I love the Ravenette. The menu is hand-written every day and they use only fresh local ingredients. There is always a vegetarian option and the space is intimate and welcoming. The kitchen is open so you get a good view of the food preparation and the service is friendly yet professional. WCTW: What other places do you like to hang out? oC: Bravas has done a fabulous job with their back patio and the atmosphere is casual yet refined. I am a dedicated fan of Willis Wine Bar in Santa Rosa for their extensive list of BTG wines and availability of small pours. I also just had an exceptionally good experience at the new Kendall-Jackson restaurant Par Take. A fun concept and great opportunity to explore the depth of the KJ portfolio. Rosso in Santa Rosa is fantastic as well, I really appreciate the niche they have carved for themselves and they give the kids a ball of dough with which to play then bake it for them very endearing and appreciated. WCTW: Whats your favorite place to picnic? oC: I am a tremendous fan of the trails around Lake Sonoma; the Half a Canoe trail offers spectacular views, a challenging hike, great animal watching and beautiful vegetation. WCTW: Who is your favorite artist or style of art? oC: Traditionally speaking I adore Maxfield Parrish. There is an ethereal quality to his work in sort of a fairytale/mythological vibe. On a more quirky note I am completely enamored of the collage artist Hope Krolls work; very edgy but thought-provoking. WCTW: Whats your favorite extracurricular activity? oC: Hiking or maybe biking; just being outdoors and active. Ondine Chattan has been with Geyser Peak for 14 years during which time she has honed and refined the style of their wines, introduced innovative production techniques, and enthusiastically promoted the Alexander Valley and their broad portfolio of award-winning wines. Thanks for Giving Us Vintners Holidays
Thanksgiving isnt the only great holiday in November. For food and wine lovers, November means its time for a different fall festival that embodies Americas natural bounty to an even greater extent. Its called Vintners Holidays at Yosemite National Park. Celebrating 32 years in 2013, Vintners Holidays brings authentic vintners not sales reps together with Yosemites guests, and the result is a top-shelf festival of good times and great wines. Whats even more special about the event is that all the action takes place inside the legendary Four-Diamond Ahwahnee hotel in the heart of Yosemite Valley. The idea for Vintners Holidays was inspired by Californias plentiful vineyards and the winemakers who tend to them with self-sacrificing devotion. Guests choose from six sessions that run from November 11 to December 6 and are treated to an intimate welcome reception with the sessions vintners, a series of wine-tasting seminars and a divine five-course gala dinner. Executive Chef Percy Whatley and the Ahwahnee Culinary Team design the custom gala menu to pair perfectly with the sessions featured wines. So not only is the atmosphere stunning, but the flavors are equally world class. With Yosemites fall colors as a backdrop, each year this event attracts more than 20 talented winemakers who are crafting some of Californias finest wines. Youll find iconic labels such as Silver Oak and Rombauer sprinkled throughout the sessions. Another fine example, the first session of 2013 (November 1112) features Frank Ostini and Gray Hartley of Hitching Post Wine, who are local celebrities on the Central Coast. Their exposure exploded since the release of the movie Sideways, and their variety of excellent Pinots make them a hot ticket. Session two (November 1314) will be hosted by Evan Goldstein, who

happens to be one of only 129 Master Sommeliers in the entire world. Evan penned the famous wine book Perfect Pairings: A Master Sommeliers Practical Advice for Partnering Wine with Food. This book is noted for its easy-reading tone, its usefulness for all skill levels, and its transcendental ability to make fine wine and expert pairing concepts more accessible to the beginning, wine-curious consumer. The third and fourth sessions (November 1719, November 20 21) feature Dan Berger as moderator. Dan is widely regarded as one of the best wine writers in the business and has authored two books: Beyond the Grapes: An Inside Look at Napa Valley and Beyond the Grapes: An Inside Look at Sonoma County. Session five (December 13) features industry legend Margrit Mondavi of Robert Mondavi Winery. The final session of Vintners Holidays 2013 (December 45) features Andy Beckstoffer, who single-handedly changed the wine business and was inducted into the Vintners Hall of Fame in 2010. In all, the Vintners Holidays experience is a lavish yet tasteful adventure. Youll get closer to people that share similar passions. Youll get closer to the finest wines that North America can produce. Plus, youll get closer to a wilderness that captivates the imaginations of all who visit. It depends on which way youre looking when you turn off Highway 29 in Rutherford. Straight down the drive is the stucco and stone 50-foot French Provincial-looking tower with its large antique stained glass window in the tasting room. It is also the same tower you see on every label of their Peju Province estate wine. Sitting on top of the weathered copper roof is one indication that what you are entering is a charming mix of fantasy and reality. It is a unicorn weathervane. Look to either side and vineyards stretch out into the distance. After you park you are confronted with fountains, a calm reflecting pool and a profusion of carefully designed and tended plantings. This should come as no surprise when it comes to founder Tony Peju. From the time he came into the world at the family home on the Caspian Sea, then later in France, England and Southern California, agriculture, in all of its various forms, has been central to his life. When he and his wife founded Peju in 1982, his decision to buy this particular 30-acre parcel came down to one thing: location. A mantra heard everywhere in wine country. Today, Peju Province remains a small, family owned and operated winery that stresses organic and sustainable farming practices. Our estate-grown fruit develops into wines that exhibit a graceful pairing of power and elegance, is a phrase you often hear. If you want a real winery experience then the Peju Annual Grape Stomp on Saturday August 24, from 10 a.m. to 2 p.m. is the place to be. Gather your friends for a day you will be talking about for years to come. Youll enjoy a welcome taste of wine and a continental breakfast when you get there and then its off to Stomping Man for the grape stomp and BBQ in a vineyard location with a glass of Peju Provence at hand. All of this for just $75. If you want elegance, make plans to attend the Peju 30th Anniversary Harvest Celebration under the Stars on Saturday, September 21, from 6 p.m. until the music stops at 10:30 p.m. The Peju family invites you to share in this intimate celebration, which they promise will be filled with special selections from the cellar, a bountiful meal prepared by Chef Emily Buller in the Peju Kitchen and dancing to live music under the stars. Black and Red Wine Country cocktail attire is recommended and the tariff is $215 per person. Stomp grapes or tap your feet to music, the choice is yours. Just be sure to mark your calendar and get your stomping boots, or your dancing shoes, ready for action. Peju Province is located at 8466 St Helena Hwy, Rutherford 94573. They are online at www.peju.com; their phone number is 1-800-4467358. The beautiful and friendly tasting room with its wide variety of tasting options and an extensive list of both red and white wines is open daily 10 a.m. to 6 p.m. Note that some special tastings require reservations. They are also on Facebook and Twitter.

WCTW: Describe the perfect day in wine country. TJ: Light breakfast at Sweetie Pies in Downtown
Napa; Pick up lunch at Genovas Deli; Round Pond Winery and Olive Oil Mill; Rutherford Hill Winery for wine tasting and picnic lunch overlooking the valley; cave tour at Schramsberg Winery; Robert Biale Vineyards wrap the day up with some of the best Zin in the industry! WCTW: Whats your favorite overall varietal and where do you like to go to taste it? TJ: Living in the Napa Valley, there is only one logical choice here: Cabernet Sauvignon! Silver Oak Cellars,: the original cult winery, 100% American oak, great stuff! WCTW: What winery do you think has the best over-the-top experience to offer visitors? TJ: Palmaz Winery: This experience will be a memory for life must do. WCTW: Where would you take friends to learn about/taste organic wines? TJ: Frogs Leap Winery is the true pioneer in this category. WCTW: Who is your favorite new winery or hot spot wine bar/tasting room? TJ: Odette Estate Winery in the Stags Leap District. Its all three; a winery, a wine bar and a tasting room great staff, fair pricing and excellent wines: Odette, Plumpjack and Cade are all available here. Also, its less than ten minutes from downtown Napa. WCTW: Tell us the best wineries to bring pets. TJ: With more than 100 wineries posting dogfriendly signs in the Napa Valley, most dogs would be in heaven on any visit to the Napa Valley. However, Rombauer Vineyards would top this list. Long history of dog lovers there!
WCTW: Describe the perfect day in wine country. TW: Begin at Downtown Bakery in Healdsburg
for breakfast, their sticky buns and croissants are a must. A nice walk around town afterward is always refreshing. I would then head into Russian River Valley to explore some Pinot Noir and Chardonnay. Copain on Eastside Road is a must-do for Pinot Noir and Syrah, then Iron Horse for bubbles. In downtown Sebastopol my new favorite watering hole is Claypool Cellars. The tasting room is set in an old train car in the middle of Gravenstein Station. Continue on to the coast to Bodega Head for the stunning cliff side view. After stopping at a local kite shop and taking it to play at Goat Rock, I would round the coastal experience with dinner at Rivers End Restaurant in Jenner right around sunset time. To end the evening, get a nightcap at the hip Spoonbar in downtown Healdsburg. WCTW: Whats the best wine country picnic spot? TW: Gustufson by Lake Sonoma is one of my absolute favorites. This hidden gem winery has breathtaking views and for the architectural enthusiast, the house has a Frank Lloyd Wright style to it. They also offer fantastic wines at a great price. On your way up stop at the Historic Dry Creek General Store for lunch provisions. Gustufson is worth the drive but best to start here first then work your way down the valley to other fun spots such as Bella, Preston, Lambert Bridge and Seghesio.

PRAGER WINERY AND PORT WORKS Tastings by appointment from 10:30 a.m. until 4:30 p.m. daily 1281 Lewelling Lane in St. Helena. (707) 963-7678 | www.pragerport.com.
When visiting Napa Valley, not many people think about Port Wine but whenever Im in St. Helena, my trip isnt complete without a visit to Prager Winery and Port Works. Located right off Highway 29, this family owned and operated winery has been hand-crafting various styles of Port since their first harvest in 1979. Founded by Jim and Imogene Prager, the winerys first vintage included Chardonnay, Zinfandel, Cabernet Sauvignon, and a Cabernet Port. Their children now handle all the winerys operations but Imogene still makes her caramelized walnuts as the perfect complement to their port wine. Their tasting room is quaint and it reminds me of being home sipping wine with my family and friends. Wine tastings are $20 for a flight of five premium ports and wines and they are currently offering two table wines and six different ports and you get to keep your glass! While they do produce some ports in an old world vintage style, they have taken a classic and made it modern and a little edgier. Their port wines can be enjoyed now and arent cloyingly sweet and over the top but still possess ample liveliness. Think charcuterie and chocolate and add a little port! Their flagship port is the Royal Escort and in special years a Royal Escort Vintage Port. This port is made with 100% Petite Sirah grapes from the Paladini Vineyard in St. Helena and happens to be my favorite port they produce. The Noble Companion 10 year old Tawny Port is made from the 2001 vintage of Cabernet Sauvignon and has a golden-orange hue with hints of light caramel, plum and a rich creamy texture with candied orange peel and walnut. For those who seek out the rare and unusual they produce two white ports; the Aria and Alyssa Golden Dry Port that will pair perfectly with summer seafood dishes. Prager Winery also produces a Petite Sirah wine that is made from the Paladini Vineyard grapes. This is a full bodied red that is beautifully balanced with a silky smooth finish and is a steal at $22. They also offer Chocolate Port Drizzle and Port filled boxed chocolates both made with their Prager Port by Anettes Chocolates in Napa. Or, try any of their three vinegars as they make a great marinade for flat iron steak or a lightly dressed salad. The Prager Winery and Port Works tasting room is open daily from 10:30 a.m. to 4:30 p.m. Usually, you will find a family member pouring in the tasting room and I always appreciate their conversation and education they happily provide. All port, wine and gift items are available exclusively in their tasting room or online at www.pragerport.com.

Three generations of the deLeuze family in ZD Wines cellar: Jill deLeuze Billeci, Brandon deLeuze, Rosa Lee deLeuze, Robert deLeuze and Brett deLeuze
Zd WiNeS
A Unique Vantage Point Into the Napa Valley
With a history built upon more than four decades of winemaking, ZD Wines is rightfully known as one of Californias premier Chardonnay producers. Back in 1969, ZD was founded by aerospace engineers Norman deLeuze and Gino Zepponi. Today, three generations of the deLeuze family and the growing ZD staff welcome guests daily who have traveled to the Rutherford winery from around the world for a taste of ZDs award-winning wines. Over the years, the winery has received particularly significant recognition for its Chardonnays, which have been produced since 1972. In 1983, President Ronald Reagan served 1981 ZD Chardonnay at a state dinner for the Summit of Industrial Nations. The official memo sent out afterward noted that the ZD Wines Chardonnay stole the show. Since then, ZD Chardonnay has continued to grace the tables of U.S. presidents and their guests. ZD Wines also garnered international recognition in 1985, when its 1982 Chardonnay won the Decanter Award for Best Chardonnay at the International Wine & Spirits Competition in London. Most recently, ZDs current release of 2011 Chardonnay earned Gold Medal/Best in Class at the San Diego International Wine Competition, Gold Medal at the Tasters Guild International Wine Judging and Gold Medal at the Dallas Morning News Wine Competition. The limited production 2011 Reserve Chardonnay sourced entirely from ZDs organic Carneros Estate vineyard has also received recognition from wine writers and competitions. California Grapevine Magazine awarded ZDs 2011 Reserve Chardonnay 91 points, and it also earned a Double Gold Medal at the Tasters Guild International Wine Judging. Both current release ZD Chardonnays are available for

sale at the winery and on ZDs website at zdwines.com. ZD Wines offers several tasting experiences and tours at the winery. Guests can explore the organic Rutherford Estate vineyard during the Eco Tour. From the Vineyard View Room, they can take in ZDs expansive landscape while indulging in expert pairings of cheese and award winning wines. The Library Selection Tour allows guests to discover vintage Chardonnay as it begins to show the essence of its varietal with wonderful tones of vanilla, pear and honey. Acidity continues to integrate into the wine more each year, balancing the lush palate with ripe apricot and sweet, toasty oak as the complexity of ZD Chardonnay continues to develop. While ZD Wines flagship wine is Chardonnay, it is also well known for world-class Pinot Noir and Cabernet Sauvignon, along with additional varietals through the Rosa Lees Whim limited releases. These small production offerings, selected annually by Normans wife and first generation ZD owner Rosa Lee deLeuze, have ranged from Barbera to Pinot Grigio to Malbec. This years Rosa Lee selection is 2012 ZD Semillon, a perfect summer white. There are only a handful of small, family-operated wineries in the Napa Valley, and ZD Wines is one of them. This winery offers guests an intimate vantage point into the Napa Valley experience with each and every visit.

The Hippest Tasting Room & Wine Bar in Sonoma County
BY SUE STrAIGHT, THE WINE WENCH
Open Sunday and Monday from 12-8 p.m. Tuesday and Wednesday 11 a.m.-8:30 p.m. Thursday, Friday and Saturday from 11 a.m.-10:30 p.m. 133 Fourth Street, Santa rosa CA (707) 578-1826 | www.cellarsofsonoma.com
Santa Rosas Railroad Square is now THE place to be for the 30-and-over-crowd (younger folks are welcome too, of course). This historic strip, located about an hour north of San Francisco, is shining much brighter these days, due in large part to Cellars of Sonoma, arguably the hippest tasting room (and wine bar by night) in Sonoma County. Im giving away my age here, but let me just say that if I lived in Santa Rosa, Cellars of Sonoma would be my hangout. There are many reasons why this is so lets start with the building, which was originally constructed in 1909. The lovingly restored vintage back bar (the oldest bar in Sonoma County), brick walls, hardwood floors and high ceilings practically ooze history. Take this vintage charm and mix in a splash of contemporary chic, using a modern tasting bar, leather barstools, comfy leather furniture and a big screen TV and voila! Thats the vibe at Cellars of Sonoma. There is a lot of exciting stuff going on here live music from top local talent is featured Thursday Saturday, a live wine tasting broadcast where folks at home can taste along with the in-crowd at the bar happens every Tuesday night, the friendly, knowledgeable staff provides unbeatable concierge service and an amazing array of delicious, small production wines are poured daily. The wines of Cellars of Sonoma deserve their own paragraph, so here we go eight micro wineries (2000 case production maximum) share the space and their wines are offered in flight format. Flights may be pre-set or customized, according to your taste. Food and wine pairings are available by appointment and cost $25. Happy hour is from 4 to 7 p.m. daily house wines are $5 per glass and plates of cheese and chocolate (also $5) are offered to pair with the wines. Heres something really great you can bring in food from the fabulous restaurants of Railroad Square to enjoy with your wines! On a busy Friday or Saturday night, when youd normally end up waiting for a table, you can place your order, then relax and savor your meal with a fabulous bottle (or glass, or flight) of wine.

Yorkville Highlands Hosts Eleventh Annual Highlands Wine Festival at Meyer Family Cellars, August 10
Continuing a long-standing tradition, the Yorkville Highlands Wine Festival will again be hosted at Meyer Family Cellars, located near mile marker 34.2 just shy of Boonville on scenic Highway 128 from 1:00 pm until 5:00 pm on August 10, 2013. Anyone seeking an adventure filled with great food, wine and music whether a wine lover or a family just wanting to get away is invited to attend this fun-filled day in the picturesque Yorkville Highlands rolling hills. Highlights will include tasting over 60 local wines made and grown within the region, live music, sumptuous food including assorted paella dishes, a tempting silent auction, grape stomp and other wild and wacky games for all ages. There is also the traditional Highlands Fire Hose Signing where festival goers are encouraged to sign their name or write a special message on a 100 foot fire hose as a statement of gratitude to those who risk their lives battling the annual blazes in California. Proceeds go to support the local fire department. In addition to the delicious array of award-winning wines, many of the winemakers will be present to share their insight, tips and techniques for producing some of Californias most exciting wines. What wine festival would be complete without patrons being able to go home with incredibly good wines at incredibly good prices? The annual silent auction hosts some of the most extraordinary wines of the area as well as options to snag vacation retreats, beautifully turned one-of-a-kind wooden bowls, a personal tour in a private nature reserve with catered lunch, a flyover of the wine country and so much more over 75 items to win. With past sold out attendance, festival fans should order their tickets in advance. Tickets are $45; $30 for designated drivers as well as children 13 to 18 and children 12 and under are admitted for free. For information or tickets, visit www.yorkvillehighlands.org. or www.facebook.com/YorkvilleHighlands or call (707) 895-2341. Proceeds benefit the local communities in which the Highlands reside. Located in southern Mendocino County just two hours north of San Francisco, the wineries and vineyards of the Yorkville Highlands produce wines as varied and intriguing as its landscape. Today, 12% of the appellations grapes produced are for white wines with the dominant varietals being Sauvignon Blanc and Chardonnay. Eighty eight percent of the grapes are for red wines with the dominant varietals being Cabernet Sauvignon, Syrah, Pinot Noir, Merlot and Zinfandel.
