Om Swastiastu... In this issue were discussing some of our favorite places to party on the island! Whether its the kind of party that has us dancing all night with our hands in the air or a dinner party where we sit at elegantly decorated tables enjoying great food and conversation, we love them all. As we researched our favorite places, we noticed a trend in terms of location. Not only are many places in this issue located in Seminyak, but they also happen to be on Petitenget Street. We suppose this shouldnt come as a surprise, as Petitenget has quickly emerged as one of the best places to nd delicious cocktails, exquisite dinners or pumping parties that are fun without being too messy. In DINE & DELIGHTS, were excited to share with you our fantastic dining experience at Mejekawi, the newest concept offered at icon KUDETA. We also have an article on Huu, which has been instrumental to Balis party scene for almost 12 years now. Youll also nd an interview with Martin East, a renowned DJ and music producer who is now Bali-based and acts as music guru for Rock Bar. JOGED BUMBUNG

THE TANTALIZING DANCE OF CONTROVERSY

oged Bumbung is a Balihbalihan dance, which is a dance that is performed not for religious ceremonies but for entertainment purposes

the performers invite members of the audience to dance with them, and it is this interaction that is one of the reasons why Joged Bumbung has become so popular. However, this interaction does not always sit well with the Balinese public, due to its tendency to veer towards the erotic.

BEHIND THE CONTROVERSY


An artist by the name of I Gusti Made Labda invented Joged Bumbung around 1946 in the Buleleng Regency of Bali. The pumping music comes from a set of bamboo instruments called granting, and the dancers movements are meant

to represent romance and comedy tinged with sensuality. If a Joged Bumbung dancer comes to you and hands you her shawl, it means you are being chosen to be a pengibing (the one who joins her to dance on the stage). It is considered rude to reject this invitation to dance, so you must take up the dancers offer and enjoy your moment with her. For Joged Bumbung dancers, there are specic movements that must be mastered. However, when it comes to audience members who are chosen by the performers to dance along with them, there are no rules at all. The pengibing must simply move to the rhythm and enjoy their interaction with the dancers on stage. This audience participation and the freedom of the participants is perhaps how around 1999 the dance evolved to become more suggestive. Many consider the movements displayed during the dances these days to be quite vulgar, which has stirred up a good deal of controversy. However, despite the differing opinions and points of view, Joged Bumbung still has a place in the hearts of many Balinese.

BRINGING TAKSU TO JOGED BUMBUNG


For Balinese dancers, talent and training are two crucial things in achieving taksu in dancing. Taksu is a condition in which a dancer is able to bring facial expression, specic motions and rhythmic understanding into harmony. Taksu

is what brings soul to a dance. Like most Balinese dancers, Joged Bumbung dancers realize that what they do on stage is not simply to present a series of motions accompanied by music. Their job is to achieve taksu, to enable the audience to be drawn into the meaning of the dance. Before the show begins the dancers perform a ritual prayer on stage and in the temple where the dance will be held. Only after all praying rituals have been completed is the show allowed to commence. The show begins with a musical introduction and then the dancers come on stage to present their solo performances. After that they start the interaction with the audience. Back when the island of Bali was agriculturally focused, dancing was the only form of entertainment enjoyed by the people of the island. So dance played an important role in social interaction, and it not only entertained people but was also performed as a part of the Balinese Hindu religious ceremonies. For someone who was born in Bali, it was a great source of pride to be a dancer who was able to achieve taksu. By Bayu Rahanatha

Having been around since 2001, Huu is no stranger to Seminyak and has watched the area evolve into a party central over the years. Some might even go as far to say that Huu has been a major contributor to this burgeoning party scene. And heres a fun fact: the name Huu actually comes from an atoll off the island of Sumbawa, known by surfers for some of the best waves

in the world. Perhaps this hotspot was named after the magical atoll in hopes that they could create the kind of party magic that leaves you nostalgic for Bali once youve gone back to your hometown.

While people are free to throw back as many drinks as they desire, Huu bars location, along with the entry fee and the grown-up drink prices, usually deter teenage travelers from

If youre in Bali be sure not to miss it! The bar action usually doesnt pick up until quite late, but if you dont mind getting there early with your group, Huu usually

has free entrance for weekend partygoers who arrive before 11 p.m. This will allow you to get some drinks in before the place gets packed and the bartenders become harder to reach. Another option is to come around dinner time and try BABAS, the latest dining option at Huu. The cuisine is a mix of Malay, Thai, Indian, and Peranakan. up, a lovely Coral Trout Ceviche with Sambal Matah and Fried Tempe that didnt take much effort at all to nish, as it was gone after two delicious bites. Following this course was one of Mejekawis hidden plates. The charming Chef Ben Cross himself served up the surprise course of Cured Wagyu Beef on Sour Dough Cracker. The succulent beef had been cured in coffee, salt and sugar for three weeks and dried for another month. It was then sliced and placed on top of the scrumptious bite-sized cracker with exquisite pickled palm hearts. A subtle chocolaty avor in the beef worked together beautifully with the savory crackers and palm hearts, a simply gorgeous combination all around.

HEAVENLY FEAST
Experiencing Mejekawis sublime fare rst hand was quite the treat. Not long after I had sat myself comfortably on the plush chair facing Balis ethereal sunset, the friendly staff swiftly delivered a Lock Down cocktail a fresh vodka-based chilled drink with tamarind juice concocted specially for Mejekawi. Then my seven-course culinary journey commenced. First to come out of the kitchen was the Smoked Yogurt Spheres with Cured Salmon, which was paired with a shot of avocado juice, vodka, yogurt and wasabi an intriguing start to the journey. Next

Moving on to the next course was the well-loved Indonesian dish Sop Buntut. To add a contemporary spin to this oxtail soup, the chefs make it with a dashi broth, tomato raisin and charred onion. The dashi gives the soup the lightness that traditional sop buntut does not usually afford, and the grilled boneless oxtail meat practically melts in your mouth. This dish was the perfect marriage between Indonesian and Japanese avors, perfectly presented in a little bowl. It became even more special when paired with spectacular sake. Moving on to a bigger course, a well-portioned Jimbaran Style Grilled Fish came to the table. It was a stunning ode to the islands most famous seafood spot, with the fresh

grilled sh accompanied by juicy prawns, soft parsnip puree, dabudabu sambal and a rice crisp. Then came the main event, a choice between Babi Guling (suckling pig), Slow Roasted Lamb or Duck. I went with the lamb. I was eager to push my knife through the small block of eight-hour braised lamb shoulder. It was so soft that it made the knife seem almost unnecessary. The rendang juice, smoked potato puree and urap salad were a perfect compliment to the dish. I do believe that this was the point that I reached my gastronomic nirvana! Closing the culinary journey, the rst sweet course was the Choco Bubbles. Consisting of chilled chocolate and caramel cream with crunchy cocoa nibs, it was absolute perfection. Next came the second hidden plate of the

night. The Steamed Baba, a rumsoaked brioche with milk meringue decorated with silver leaves in a small pool of ginger milk and palm sugar, was the sweetest little surprise. The last dessert for the night was the pinch-sized Flying Saucer. The mini mangosteen sorbet sandwich made with Toblerone and walnut crisp really passed with ying colors. I recommend enjoying your courses with the drink pairing option, as the bars concoctions really bring out the excellent avors are not one for alcoholic drinks, Mejekawi also offers an array of non-alcoholic pairings that will make your experience no less blissful. Now if you feel more like James Dean than James Bond, we recommend this unique and rather cheeky cocktail. The presentation of the Black Stripe at Mama San Kitchen & Bar is inspired by the 1920s American prohibition era. Served in a glass ask covered in brown paper, it will surely make you feel like a rebel without a cause. Made with Mama Sans homemade ginger beer mixed with rum, the gingery avor followed by the mild sweetness and punch from the rum will have you feeling warm and red up for the rest of the evening. Then I ended up back in LA, and thats when the i idea of living in Bali hap happened. So I got in talks again ag with my friend who is the GM, and nally Bali & Beyond (BB): First and foremost, who is Martin East? Martin East (ME): Well, Martin is my real name, East is a residual of my lm and television career which kind of rolled into my music career. Martin East is also a music producer, DJ, lover of music and lover of Bali. BB: When was the rst time you came to Bali? ME: My rst time here was in 2009. During that time I came to Rock Bar, where I knew the GM from working with him in LA (where Ive also lived for 13 years) so I came to check it out, and I went Yep! This looks pretty good to me, and if I can work here everyday Id be a happy man. BB: So thats the beginning of your involvement at Rock Bar? ME: Well, no, not straight away. At that time I was on a world tour. BB: With all that said, wheres your favorite place to party? ME: It really depends. For standalone events I like KUDETA, but for more underground and less commercial events I go to Maria Magdalena. BB: And what did you think about Balis party scene when you came back here? ME: It can almost break down into a number of different scenes. You got places like Legian and Kuta, where the prices are low and you drink as much as you can. And then you go to Seminyak and you have places like KUDETA, Potato Head, and others with more of an upscale atmosphere. So, its hard to not say that Bali is going to become Asias party central. moved in March 2010.

BB: As a music producer and DJ, how has Bali inuenced your music? ME: Coming here, I have embraced a different aspect of playing music. A lot of the time Im playing for the guests during sunset sessions, I sort of just let it happen. The way I play is to follow the mood of the sunset. In a way Im creating a soundtrack, or scoring, for the great physical visual that is already available. BB: Of all the places youve played in the world, what makes Bali different? ME: What I like about Bali is that no one ever came up to me and told me what to play or said Youre not being different enough, which for me being different is where its at. BB: So, whats next for Martin East? ME: Im releasing a new single and working on another album. But Id love to nd a local music talent here in Bali and help them grow as a musician. I decided to try out the Debussy Facial Rejuvenation by Thermodermie because it promised a soft lifting effect. Consisting of four parts, the 1.5-hour session starts with a drainage process to detoxify the skin and lift impurities, and then continues with a red light treatment to boost collagen production. Next is the use of infrared for oxygenation and toning elastic bers, and last is the use of ultrasound to rejuvenate the cells and a micro-massage to hydrate. This was unlike any facial I had ever experienced the sensations ranged from a light tickling to some more peculiar sensations. For example, at one point it felt as if a miniature rake was being pulled across my cheeks (but this was not at all painful). After I was able to get over the initial peculiarity, I found the treatment quite relaxing and actually dozed off for a bit before the micro-massage.

Accommodation in Canggu is still dominated by small guesthouses and villas due to the many surfers who ock to the area to surf Canggus challenging waves, but Lv8 Resort Hotel, a new player in town, is aiming to offer something different. Listing 124 rooms (consisting mostly of suites), a tness center,

a spa, a beauty salon, a lap pool, a restaurant and a beach club as some of the things offered at their sprawling property, we knew we had to check this place out for ourselves

bathroom connected to the nonmaster bedroom. It was particularly large and featured uffy towels and a fantastic rain shower. Staying at Lv8 feels a bit like staying at a home away from home, especially if you are accustomed to apartment living. We found it difcult to drag ourselves off of the L-shaped sofa in the living room, but once we ventured downstairs we found that their restaurant Eight offered some delicious international fair. The staff was cheerful and in our opinion their duck entre (served two ways), quail entre and desserts stole the show.

HIGHLIGHTS
For us, the highlights of Lv8 included the amount of space in our suite and the lightning speed Internet. We feel as though we might have lucked out because it was honestly the fastest Internet we have experienced on the island thus far (and weve stayed at a good number of places). One can only assume that the other suites and penthouses have the same kind of Internet capability. Lv8 could be a great option for families who would appreciate the feeling of staying at a spacious apartment rather than being

cramped in a tiny hotel room, for professionals staying in Bali who need ample facilities to work remotely, or for travelers who appreciate being in a quiet location that is not too far removed from Seminyak and like having a nice gym and beach club at their ngertips. By Regina Indraswari

However, as they say, When in Rome do as the Romans do! The local party crowd also craves hot and lling food after a night out, but here in Bali the favorite happens to be porridge. Dont knock it till you try it! Laota in Tuban is open 24 hours and their bubur really does hit the spot (I can personally attest to this). Order some cakue (sliced fried dough) and stir it in, or just munch away at the cakue sans porridge. Theres also the option of ordering something else off the menu its a Chinese restaurant so youll nd everything from black pepper prawn to beef and broccoli. A more western option is burgers. In Seminyak theres a little place called Pit Stop that is open until the wee hours. It has limited outdoor street-side seating, but you can get your ll of potato wedges and burgers there. Another advantage is the location if youve been party-hopping on Petitenget Street, it will be just a stones throw away. And if all else fails, you can just follow the glow of the golden arches. You know what Im talking about! Bali attracts people from all over the world and as time goes on more and more restaurants and cafs pop up serving treats from around the world. For instance, Ive overheard travelers remark in awe about the many options for Mexican food we have here, and how they can hardly nd a decent place serving Mexican in their hometown. In Seminyak and Canggu there seems to be a new something being built every other day. I dont doubt the possibility of there being many more options for late night dining in the near future. Whether its a new caf that stays open late, a New York-style food cart, or Balis rst gourmet food truck, you never know what kinds of new options might appear between now and the next time youre on the island. But Ill bet youll nd something you like! In the meantime, happy hunting for your midnight munchies. By Mutia Adisoma

On the way, Made acted more like a tour guide than a driver, pointing out many points of interest while explaining the Bali way of life. His manner was professional and his English, perfect. When we arrived at the bale we were greeted with warm smiles and outtted with brand-new safety equipment. Then we started a 20minute trek through the rice paddies and into the nearby jungle. The trek was quite tough towards the end, but it was at that time when we started to hear the roar of the Ayung River. We then ventured down a steep slope surrounded by towering trees before arriving at our take off point. At the edge of the river we were given a thorough safety brieng by the staff what we should and should not do in certain situations. These guys really knew their stuff and we felt like we were in safe

hands. Then it was time for the fun part. The river started off calm, which gave us the chance to take in the beauty of the surroundings and get comfortable with the raft. Our guide was great. Pointing out some truly amazing features of the Ayung River, he had a subtle sense of humor and that certain charm that seems to be embedded in every Balinese person. The river can get quite rough in places so youll need to hold on tight. It gets a little scary at one or two points but this is part of the adrenaline rush that the dynamic

movement of the Ayung River has to offer. We spent two hours laughing and screaming whilst being enthralled by the scenery of the winding river and the landscape that unfolds during the journey. The trip down the river lasts for about two hours, including three short breaks along the way to stop and rest or wander around the riverbed for a bit. And at the end of trip we all got to jump into the river. We were all soaking wet at this point anyway, so we thought, Well, why not? Back at the Toekad Rafting ofce, the staff

greeted us with big towels to dry off. After a quick shower at their facility they provided us with a magnicent Balinese buffet. We feasted for the next hour and could not stop talking about the experience. If you decide to try this out, wear afraid to get wet, be open to any curveballs that nature might throw at you and allow the river and the experts at Toekad Rafting to take you on a journey that will leave you with unforgettable memories of Ubud and Bali. Rising to just 60 meters above sea level, the islands name comes from the word terowongan, meaning tunnel, and traces its roots to a cave expanded by the Japanese during their Second World War occupation. The permanent inhabitants on all three islands can trace their origins to Sulawesi shermen who settled there in the early 1900s. On arrival, your boat will pull up onto an impossibly white sandy beach where waters of every shade of blue and green caress the sand. Beach porters snap into gear, gathering the disembarking passengers luggage and toting it up to the top of the beach. Once done,

they shift their attention to smaller crafts that pull up every few minutes, carrying everything from bricks to crates of Bintang. These whippet thin men and women heft the heavy loads onto their heads and then carry them up the beach to where a battalion of horse drawn carts await. The shores of Gili T are dotted with a proliferation of beachside bars and bungalows catering to every taste and budget. Music of the islands unofcial ambassador, Bob Marley, oats from each beach bar whose stools overow with sun kissed (and often sunburned) tourists sipping happily on a Bintang or some other hedonistic concoction. Bronzed bodies lay drowsily on beanbags, lulled into a tranquil state

of wellbeing by the tropical sun and perhaps the cocktails they sip. The main street of each of these islands has a certain unique charm. Tropical signs hang from the doors of bars, restaurants and bungalows, asking you ever so nicely to cmon in! It will take a few minutes for the newly arrived visitor to notice the lack of trafc sounds, as no motorized transport plies these little byways. The raucous sound of cars and trucks is replaced by the gentle clip-clop of ponys hooves. There are only three ways to get around on the islands; on foot, by bicycle or via cidomo the romantic pony-drawn carts that trundle along the narrow streets and lanes. In a way Gili T is developing its

own unique blend of island life, a mix perhaps of Zanzibar, Jamaica or even Lamu. If you are fortunate to fall into the 18 - 35 age bracket and have chosen Gili T as a destination, hang on for the ride! This is denitely party central. Once the sun goes down and the afternoon naps have all been taken, hundreds of freshly showered backpackers head to the Tir Na Nog Bar, which maintains that you are on the worlds smallest island with an Irish Pub! For those who are unfamiliar with this term, it means tossing a stick of dynamite over the side of a boat and waiting for it to explode; within minutes scores of stunned sh will oat to the surface. After years of destruction the reefs are slowly coming back to their original condition.

Aside from the party scene, many travelers come to discover the world under the waves. The waters around the Gili Islands offer some of the best snorkeling and diving in the Java Sea. Turtle life is abundant here, as is the proliferation of tropical sh a veritable smorgasbord for those

Accommodation can be as basic or as luxurious as you want, depending on how much you are willing to pay. Bungalows mingle cheek by jowl offering a variety of standards from 2 to 5-star, and prices range from as little as 350,000 rupiah to 2.5 million rupiah per night. Gili Meno and Gili Air, the quiet

islands, have sensational tropical hideaways far from the madding crowd, where given the setting, romance can only blossom. Family bungalows are also popular and can cater to up to four family members per bungalow. As for food and drink, there are enough options for decent restaurants. Out of the restaurants I sampled, I thought all the food

was great. Not fabulous, but great. Skallywags (on Gili Air and Gili Trawangan) is a nice choice for breakfast. Most bars scatter beanbags on the beach so that you can sit back and watch the light show as the sun sinks behind Mount Agung. And for the budget traveler or even the well-heeled, the night food market on Gili T is a must. For such a small destination these tiny islands offer a huge experience, but like anything, if you dont go you will never know. Fast boats and Sanur, with return tickets costing from 1 to 2 million rupiah. Check with your travel agent or go online to nd a suitable company.

In 2007 the Dragony night club underwent renovations and the restaurant section has since been replaced with multiple bars. The sleek new interior features illuminated wood blocks and oriental elements. It feels much more spacious since the restaurant has been taken out, however there is hardly any dance oor. Booking a table in advance is strongly recommended; otherwise you might not have much room to dance. This upscale club is known as the place where socialites and the crme de la crme of Jakarta come to gather. Celebrities, models and actresses are not a rare sight at this club. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For Bali Belly, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace uids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
