Thanksgiving isnt the only great holiday in November. For food and wine lovers, November means its time for a different fall festival that embodies Americas natural bounty to an even greater extent. Its called Vintners Holidays at Yosemite National Park. Celebrating 32 years in 2013, Vintners Holidays brings authentic vintners not sales reps together with Yosemites guests, and the result is a top-shelf festival of good times and great wines. Whats even more special about the event is that all the action takes place inside the legendary Four-Diamond Ahwahnee hotel in the heart of Yosemite Valley. The idea for Vintners Holidays was inspired by Californias plentiful vineyards and the winemakers who tend to them with self-sacrificing devotion. Guests choose from six sessions that run from November 11 to December 6 and are treated to an intimate welcome reception with the sessions vintners, a series of wine-tasting seminars and a divine five-course gala dinner. Executive Chef Percy Whatley and the Ahwahnee Culinary Team design the custom gala menu to pair perfectly with the sessions featured wines. So not only is the atmosphere stunning, but the flavors are equally world class. With Yosemites fall colors as a backdrop, each year this event attracts more than 20 talented winemakers who are crafting some of Californias finest wines. Youll find iconic labels such as Silver Oak and Rombauer sprinkled throughout the sessions. Another fine example, the first session of 2013 (November 1112) features Frank Ostini and Gray Hartley of Hitching Post Wine, who are local celebrities on the Central Coast. This is what I imagine Stags Leap District to be like about 30 years ago. An unpretentious, slightly askew winery sign along the road. A dirt and gravel driveway leading through the vineyard. A cozy tasting room just a bit larger than a breadbox. And a few people genuinely happy you found them and quite proud to show you their wares. Welcome to Baldacci Family Vineyards, started in 1997 when Tom and Brenda Baldacci purchased this sweet 17-acre parcel with ample hills and vales to provide the ideal setting to grow great Cabernet Sauvignon. In 2000, the Baldaccis added a 7,000-squarefoot wine production cave in the hillside behind the tasting room. The estate vineyard now produces classic Stags Leap District Cabernet Sauvignon silky-textured with ripe black fruit flavors and refined tannins, ready to enjoy now or ageworthy up to 10 years. The highly acclaimed wines at Baldacci are the handiwork of renowned winemaker Rolando Herrera, who got his start down the trail at Stags Leap Cellars. Herrera went on to make wine at Chateau Potelle, Vine Cliff and Paul Hobbs before returning to the Stags Leap District to work with the Baldaccis. Herrera also makes his own wine under his own label, Mi Sueo, and has a vineyard management company that manages the Baldaccis 20-acre Carneros vineyard (planted to Pinot Noir, Chardonnay, Syrah, Gewrztraminer and Merlot). Baldacci produces two Stags Leap District Cabernets in all. Their flagship wine is the Brendas Vineyard Cabernet Sauvignon, which is tough to get your hands on at just 180 cases produced annually. Brendas Vineyard represents the best of the best the best seven barrels from the best vineyard block on the estate. The Black Label Estate Cabernet Sauvignon is the Baldaccis ambassador wine, representing the best fruit from different blocks of the estate vineyard. The Baldaccis Carneros vineyard came on line in 2008, and now the tasting room offers a few wines from the Carneros estate: including the 2010 Elizabeth Pinot Noir (named after Toms mother), the 2011 Sorelle Chardonnay (named after Toms sisters), the 2009 Allwin Syrah (named for Toms grandmother) and the 2009 IV Sons Fraternity Red Blend which uses the Merlot and the Syrah from the Cuttings Wharf property and blends that with the Cabernet Sauvignon from the Estate in the Stags Leap District. The IV Sons wine is named after the Baldaccis four boys it really is all in the family! Baldaccis winery permit requires that visitors have a prior appointment. Pan Seared Beef Tenderloin with Shallot & Fig Sauce Paired with Monticello Vineyards 2010 Estate Grown Cabernet Franc
I love Cabernet Franc and while this varietal is usually used in blending Bordeaux style wines, Monticello Vineyards Winemaker Chris Corley has crafted this grape into a wellbalanced expression of Cabernet Franc at its finest. The newly released Monticello Vineyards 2010 Estate Grown Cabernet Franc has been perfectly paired with this beef tenderloin recipe. Beef tenderloin is a prime example that good, simple ingredients can make the best meals and since this recipe doesnt require much prep time prior to cooking, it leaves more time to enjoy the wine and your guests. The rich, full-bodied wine strikes the mid-palate with vibrant tannins that pleasantly frame its structure and rounds out that hint of sweetness from the shallot and fig sauce. The wine reveals an intriguing dark note of blackberry fruits mixed with smoky undertones on the palate resulting in a lasting, memorable finish. This dish was a breeze to make and pairing it with the Cabernet Franc will make your Sunday dinner a true culinary feast! PAN SEARED BEEF TENDERLOIN WITH A CARAMELIZED SHALLOT & FIG SAUCE
2 tablespoons sugar 3 tablespoons butter 8 medium shallots, peeled 1 cup veal stock, or canned beef broth 2 cups Cabernet Sauvignon wine 2 allspice berries head of fennel, shaved 1 tablespoon chopped fresh thyme teaspoon whole black peppercorns 4 fresh figs In an oven-proof saucepan or heavy gauge saut pan, melt the sugar to a golden caramel. Stir in 2 tablespoons of the butter. Add shallots and coat them with the mixture. Add the veal stock and bring to a boil. Place the pan in a 350 oven for approximately 1 hour, or until the shallots have become soft. Remove from oven and return to high heat. Reduce the juice to a syrup. Cool and slice shallots, then set aside. In another pan reduce the wine with the spices and herbs. Reduce to about 2/3 cup. Strain out herbs and spices. Add the caramelized shallots and syrup to the strained wine reduction. Set aside. Salt and pepper the trimmed beef, then sprinkle with the thyme. Heat a large cast iron skillet over medium high heat. Add the cooking oil and heat close to smoking. Add the meat and butter. Brown the meat on all sides, and cook to the desired serving temperature. Remove and let rest five minutes. Place the sauce back on the stove and add the fresh figs. Bring to a simmer. Remove from heat and stir in the remaining tablespoon of butter. Distribute sauce between 4 plates. Slice the beef loin and place directly on the sauce. Serve and enjoy. This may be served with grilled polenta.

WCTW: What is your favorite varietal? NB: For a long time now, my favorite varietal has
been Pinot Noir, and I suspect this is not likely to change! Pinot is a wine that is, with a few exceptions, very food friendly. Whats even better is its so available here in Sonoma and we have the ideal climate to grow this somewhat complex varietal, whether it be nearby in the Carneros or further away in the Sonoma Coast and the Russian River areas. Both have the cool marine climate that this grape requires as its skin is too thin for our hot valley sun. The cooler the site, the longer the growing season which gives this grape a better chance to attain overall structure and mature tannins. I love the Pinot Places, as I call them, in the Carneros: Saintsbury, Acacia, Etude and Adastra where you can enjoy a genuinely personal experience with tasting room staff just 10-15 minutes away from MacArthur Place. The scenery and views provide a gorgeous backdrop for a wine tasting experience. North of us on Highway 12 in Glen Ellen, there is a new tasting room, Talisman, that has the most amazing single-vineyard Pinots! Try the side-byside tasting there and youll be hooked. I dont know which I liked better, the seductive nose or the elegant flavors on each! From the bright ruby hue to the earthy minerality to the silky mouthfeel the hallmark of a well-crafted Pinot Noir I cant think of a better way to end the day in wine country than with a glass of this alluring varietal.

Stanley and Helen Cheng, proprietors of Napa Valleys Hestan Vineyards, have announced the opening of their highlyanticipated tasting room in downtown Yountville. The newly constructed, sleekly modern space, located at 6548 Washington Street, is a striking addition to Yountvilles vibrant downtown wine, food and gallery scene. Open daily from 10 a.m. to 6 p.m., the new, 2400 sq. ft. tasting room houses the winerys limited production Hestan, Meyer and Stephanie wines as well as gourmet cookware lines from owner Stanley Chengs global cookware company. Hestan Vineyards was founded in 1996 when owners Stanley and Helen purchased a 127-acre cattle ranch on the eastern slopes of Napa Valley, with the goal of growing and making wines to rival their favorite Bordeaux bottlings. Today, 56-acres are planted to all five of the principle red Bordeaux varietals: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. With the help of renowned winemakers Thomas Rivers Brown, Jeff Gaffner and Mark Herold, the Chengs have built a portfolio that includes their flagship Hestan Cabernet Sauvignon ($100/bottle) and Chardonnay ($50/bottle); Meyer Cabernet Sauvignon ($50/bottle); and Stephanie Proprietary Red ($60/bottle), Cabernet Sauvignon ($50/bottle) and Merlot ($40/bottle). For all of Napa Valleys world-renown as a wine-tasting destination, did you know that the valley also has one of only three Old Faithful geysers in the world? Located at the north end of the valley in Calistoga, Old Faithful makes for a fun and fascinating afternoon stop between wineries. About every 30 minutes, visitors to the geysers are treated to a firstrate show an eruption of steam and extremely hot water spraying 60 to 100 feet in the air. Old Faithful is surrounded by palm trees and thick bamboo, making for a relaxing and partially shaded setting. There are picnic tables with umbrellas and a covered seating area, all with excellent views of the geyser. The gift shop is stocked with snacks such as ice cream bars, chips and a variety of drinks, or if you want to make it a lunch stop, bring in a picnic lunch from town and a bottle of wine from one of the nearby wineries! Dont miss some of the other interesting features at Old Faithful. Check out the wishing wells that were once used as hot mineral therapy pools. Theres also an informative exhibit area on geyser eruptions and earthquake predictions, as well as a brief history of the town of Calistoga. And best of all, theres a petting zoo.

This exclusive event features a 55-mile bike ride with George Hincapie, considered the premier grand tour rider of his generation, and Bob Roll, the renowned American commentator covering all of cyclings grand tours. Im looking forward to being part of this unique event, especially because it benefits such a great cause, says Hincapie. It will be awesome riding in Napa Valley with a small group of cycling enthusiasts. For me, it isnt just another bike ride, it is a total Napa Valley experience. Limited to only thirty people, participants will enjoy an intimate and exclusive Napa Valley cycling, wine tasting and gourmet dining adventure tour. Each of the thirty riders will also be able to share part of their experience with a guest at the incredible welcome dinner with the Legends. The gourmet welcome dinner for riders and their guests is at Vineyard 29 on Thursday evening, where star Chef Gustavo Rios, of Michelin Star-winning Solbar will present a meal that is truly Legendary. Pine Ridge Winery in Napa is the lunch rest stop where executive chef Janet Sheehan will present an amazing luncheon to fuel the riders for the final leg of their journey through Napa Valley to Velo Vinon the tasting room of the Clif Family Winery in St. Helena. Here Gary Ericksons crew will welcome the peloton and their families for a final session of story-telling and jersey signing by George and Bob all of which will be enjoyed with more great food and fine wine from Clif Family Vineyards. And Velo Vino has a special dessert food and wine pairing planned as the Grand Finale. I always love riding in Napa Valley, and frankly, the Legendary Tour is the best cycling event I have ever experienced. The Orange County Fairs Commercial Wine Competition is the largest and most comprehensive judging of California wines in the world. We are pleased by blackberry, fig, cinnamon, dark bakers chocolate and licorice aromas and rewarded with flavors of red cherry, boysenberry, raspberry and distinct vanilla on the palate, says David Fulton Winerys Stephanie Trotter Zacharia. With soft tannins, this is a round, velvety, silky wine that can be enjoyed for many years to come. We have one vineyard and make just one wine here at David Fulton Winery. Our total production is less than 300 cases a year. (The Valleys largest winery produces nine million cases a year!) We hand-sort our grapes three times before fermentation and have a three year aging program before release. Stephanie continues. The David Fulton Winery 2009 Petite Sirah is grown in the historic St. Helena, estate vineyards planted in 1860. David Fulton also built the towns first stone wine cellar next to the vineyard. He invented the celebrated One-Horse-Plow which reduced spacing between rows from 14' to 8' thereby revolutionizing plantings in the Napa Valley. The current winery was built on the footprint of the original reusing some of the same materials, looking much like it did in the early years. The vineyard and winerys current owners are David Fultons greatgrandson, Fulton Mather and his wife, Dink. David Fulton Winery & Vineyards is located at 825 Fulton Lane, just four blocks east of Hwy 29, in Napa Valleys historic St. Helena. Visitors are encouraged to visit the winery although tours and tasting are by appointment only. You should note that the winery doesnt have commercial signage, so youll have to look for the address (825 Fulton Lane). From May through November, The Wine Carriage is a fun, intimate excursion through select vineyards of the Alexander Valley in Sonoma County. Owner and well-informed tour guide Bret LeRolland, is coachman of a shade-top carriage pulled by mighty draft horses meandering between rows of vines and up and down scenic countryside while guests pluck grapes right from their seats. This is no ordinary tour its an off-road, insiders trek (and the only horse-drawn carriage tour in wine country). The outings begin at 11 a.m., starting with a visit to Alexander Valley Vineyards where guests are taken to the underground, arched wine cavern filled with the aroma of aging wine in oak barrels, and treated to samples straight from the cask. Then, guests board the carriage for a crosscountry excursion to Hanna Winery, which boasts commanding views of the entire valley. After a wine tasting at Hanna, a decadent gourmet lunch is served outside in the shade of a majestic oak. Fresh baguettes, herbed meats, local artisan anad imported cheeses, mixed organic olives and organic strawberries are served topped off by winefilled chocolate truffles for dessert. Wine can be purchased by the bottle or glass at the winery, to enjoy with lunch. After lunch, guests are taken on an adventurous, scenic journey across the valley to a final tasting at the award-winning Soda Rock Winery.

Founded in 2007 by Diane and Ken Wilson of the Wilson wine dynasty, Matrix is a small winery located on Westside Road in the Russian River Valley. Their tasting menu features multiple Pinot Noirs as you might expect, but they also produce several Bordeaux varietals and blends. The Mayo Family Winery Reserve Room in Sonoma Valley has released its summer foood and wine tasting menu, highlighting summer fare and ingredients. The Mayo Family Winery Reserve Rooms seven-course food-and-wine-pairing experience, now in its eighth year, is overseen by Chef Clayton Lewis and gives visitors to the famed wine valley a unique, sit-down food and wine pairing experience that goes far beyond the normal winery tasting room. The Mayo Family Reserve Room is now open seven days per week through December as it launches its annual expanded hours service. Historians can trace the viticulture activity in the Livermore Valley back to 1832. We can trace our family winemaking back to the early 19th century as well to a small village outside of Genoa, Italy. A family photo hangs in our Tasting Room of Nonna Rosa Garr with a glass of wine in her hand and her son-in-law, Gino Molinaro, holding the jug of family wine. The picture was taken in Glen Ellen at our familys summer cabin in the early 1930s. My dad, (Bob Molinaro, Garr Winery owner) tells the story of
his dad and uncles getting together every year to make their wine for the family. The truck would bring red grapes from Napa to San Francisco, where the families lived. The grapes would be crushed and fermented and the wine would be made. My uncles learned from their uncles who brought their knowledge and experience from the Old Country to the New World. Our heritage and family traditions are the backbone of Garr, welcoming everyone who visits as family to enjoy the experience of Old Italy. Stop by for a visit, youll be glad you did.
