Harvest Season
As grapes on the vine become engorged with sweetness and the long summer days begin to wane, harvest season is in full swing at Bianchi Winery. Winemaker Tom Lane has been busy choosing the most exceptional grapes for this years vintage, including Zinfandel from Bianchis own Zen Ranch, and both Merlot and Petite Sirah from Plummer Vineyards. Harvest commenced early this year, and while the fruit sugar developed fast, the color and flavor of the skins and seeds are continuing to mature to their maximum flavor potential. Cold weather near bud break produced smaller yet intenselyflavored Cabernet grapes, while exceptionally hot weather near bloom resulted in a Zinfandel crop of perfect proportions. Join Bianchi as we celebrate the 2008 crush with a number of special events during Harvest Festival, including a stellar Winemakers Dinner, as well as a Wine & Cheese Pairing Evening under the stars. Tasting Notes

TreVino 2004 Paso Robles Mellow merlot, the finesse of Cabernet Franc, and our carefully-crafted Cabernet Sauvignon join hands in Bianchis TreVino. One of our newest blends, the wine boasts flavors of plum, dark berries, and spicy French oak. Try TreVino with lambchops accompanied by an unctuous gruyere potato gratin. Syranot 2005 Paso Robles Syranot (pronounced seer-an-oh) is Bianchis complex mlange of powerful Paso Robles Syrah (77%) and cool-mesoclimate Pinot Noir (23%). Syranot flavors run rampant with Syrahs deep cherrywood flavor and hints of tar, while moderated by Pinot Noirs cinnamon-berry and the vanilla of French Oak. Sip our Syranot with braised pork belly with caramelized onions and creamy Parmesan polenta.
Thyme-Glazed Sea Scallops with Parsley Drizzle
Compliments of Chef Chris New, Ad Hoc restaurant, Napa

1 bunch parsley, stems removed and leaves chopped 1 cup vegetable stock 1/2 ounce butter Kosher salt and ground white pepper 1 tablespoon olive oil 12 large sea scallops, rinsed, patted dry, and foot removed Salt and freshly ground black pepper 4 sprigs thyme, stems removed 1/4 ounce butter Place the parsley and vegetable stock in a blender and puree until smooth. Strain through a fine mesh strainer. Place liquid in a small saucepot and bring to a near boil. Whisk in the butter and season with salt and pepper. Set aside. In a large skillet placed over medium-high heat, warm olive oil. Season scallops with salt and pepper and add them to skillet. Add thyme and butter to the pan, and saute scallops on both sides, basting with the butter sauce, for about 5 minutes or until done. Place scallops in the center of a plate and drizzle with parsley sauce. Serve immediately. Pair with Bianchis Pinot Grigio 2007

Cabernet Sauvignon 2005 Paso Robles, Signature Selection Three distinct clones conjoined in the barrel to create our Cabernet Sauvignon 2005, resulting in the marriage of mixed berry jam, vanilla and rich coffee in the mouth. A backbone of oak and healthy tannins provide structure with a hint of smoke. Drink our Cab with seared flank steak, buttery Yukon Gold mashed potatoes, and haricots vertes.

Chardonnay 2006 Edna Valley, Signature Selection Late-summer peach cobbler and vanilla embody our Chardonnay 2006, with heady aromas of kiwi, pineapple, and citrus on the nose. Partial malolactic fermentation in oak gives the wine a supple creaminess, while 37% stainless steel fermentation provides a mild crispness. Enjoy slightly chilled with spicy crab cakes over crisp greens, a chunky potato chowder, Caesar salad, or juicy grilled chicken. Cont. on next page

Sauvignon Blanc 2007 Monterey County, Signature Selection Grapes from the cool reaches of southern Monterey County were harvested for our refreshing Sauvignon Blanc, resulting in crisp citrus, gooseberry, and minerality in the mouth, along with a smooth finish. Enjoy this wine with sushi or crisp greens topped with intense goat cheese. Pinot Grigio 2007 Santa Barbara, Signature Selection Bianchis exceptionally refreshing Pinot Grigio 2007 is crisp and clean with vibrant flavors of kiwi, litchi, and citrus. Gentle whole-cluster pressing and cool stainless fermentation helped retain the wines naturally high acidity level. This versatile wine pairs deliciously with spicy dishes as well as grilled poultry or seafood.

Ever since the Franciscan monks planted their first mission vineyards in the 1770s, wine has been an integral part of Californias history. Today California produces more than 90% of all the wine in the U.S. and is the fourth largest wine producer in the world. For the fourth consecutive year, Governor Arnold Schwarzenegger has deemed September California Wine Month. The celebration acknowledges California as one of the most prolific and successful wine-producing regions in the world. Bianchi is proud to be a part of this $20 billion industry, which includes 2,700 wineries and 4,600 grape-growers. WINE 101
Q: How many grapes does it take to make one bottle of wine? A: Depending on the grape variety, it takes approximately six to eight clusters, or approximately 600 to 800 wine grapes (2.4 lbs) to make one bottle of wine. One barrel of wine contains 740 lbs of grapes, equivalent to 59 gallons or 24.6 cases of wine.

HOO are these curious birds??


When Office Manager Liz Robosciotti discovered these two orphaned barn owls on the Bianchi Winery property early one morning, she quickly called her friends at Pacific Wildlife Care, a local organization dedicated to rescuing wild animals in need. PWC Volunteer Donna Skemp was happy to take the birds under her wing and raised them in her backyard sanctuary until they were old enough to be released into the wild. Refosco was named after Donnas favorite Bianchi wine, while Hissy got his namesake as a result of his spunky personality.
