Slow-cooked Caribbean Chicken

(serves 4) Defrost chicken, prep ingredients, preheat oven. 4 pieces of chicken thigh. Remove skin, slash Rub Reggae Reggae Sauce in. Brown in frying pan. Remove from frying pan Fry two large onions + 2 cloves of garlic in same pan until slightly browned and soft Add can of coconut milk + chicken stock + salt & pepper to pan Bring pan to boil Mix chicken with coconut milk mix Add can of kidney beans Cook in oven for about an hour or so like a one-pot thing Serve with rice and peas

Manly Tomato Risotto


Finely chopped onion + garlic Fry in large saucepan until slightly browned and soft Add risotto rice (100g per person) Add 2 cans of chopped tomatoes + some cherry tomatoes Season with beef or vegetable stock, pepper, basil Use a can of lager for liquid, then water, until the rice is cooked Serve with crispy bacon

Sausage-stuffed Cabbage Leaves


Serves 2 Boil 4 large green cabbage leaves for about 2 minutes each. Remove from water, dry Fry 2 finely chopped smallish leeks in butter in a saucepan until softened Remove from heat Mash leek in with lb of sausage meat with 4tsps of tomato puree and sage Divide sausage mixture between the cabbage leaves, roll up, place in saucepan/s, cover in passata, boil gently for around 20, then a bit faster to thicken the sauce Serve with tagliatelle

Indonesian-style Fried Rice with Mackerel


Serves 4 Pre-cook 4 portions of rice Lightly beat 2 eggs Fry the egg mixture for about 1 minute in wok Flip mixture over and cook until the other side is set Remove egg and rip into ribbons Mix 2 tsps curry powder with 4 tsps soy sauce Tip rice into wok and coat in the curry/soy mixture Add chopped spring onion and peas Stir-fry until really hot Toss through omelette ribbons and ripped bits of mackerel Divide between 4 bowls and garnish with half-moons of cucumber

Beef Stew
Serves 4 get 1.3kg/3lb of stewing beef cut into lumps chop 2 medium onions into medium-large pieces and 2 cloves of garlic into small pieces brown beef, onion and garlic in a frying pan chop 2 medium carrots into smallish pieces put beef, onion, garlic, carrots, ~6 sprigs of fresh thyme, 1 cup red wine, 2 cups beef stock, 2 tsps of tomato puree and salt and pepper into casserole dish cover and cook at ~150C for ~ 3 hours, or slow-cook, until meat is falling off bone serve with mashed potato and green beans

Fish Pie
Serves 4 Pre-cook potato for the topping Pre-heat oven to 180C Fry an onion and a glove of garlic until softened Mash the potato mix in 250g crme frache, 1 can of kidney beans, 100g kippers, 100g prawns and 150g of some white fish, a splash of chilli powder, chopped fresh parsley, salt and pepper to taste put the fish mixture in a dish, cover with the mash, and put in oven for ~20 minutes until fish mix cooked through and top starting to brown grill for ~5 minutes until the top is golden brown serve on some green salad

Fruity Caribbean Chicken


Chicken: Slash the chicken and leave to marinade in reggae reggae sauce Fry on both sides until browned Roast for 10-12 minutes then put to one side Butternut squash: Cut butternut squash and melon into medium-sized cubes Fry chopped spring onions, fresh thyme and some green chilli until just softened Add the butternut squash, put lid on pan and continue frying for 7 minutes Add melon cubes and lime juice, maybe coriander, maybe some black pepper, a bit of fresh mint, and maybe a bit of sugar and continue until cooked and slightly sticky Apple salad: Fry some apple slices with a bit of salt Add to green leaves Cover in white wine vinegar

Chow Mein
Cut appropriate meat (beef, chicken, pork etc) into strips. Fry in olive oil in wok Whilst frying meat cook egg noodles in boiling water until soft When meat almost cooked add bits of appropriate veg that need most cooking (carrot, cabbage, broccoli) and stirfry Add beanstalks and continue frying Add a bit of seaseme oil, lots of dark soy sauce, a little bit of ginger, some chili/cayenne pepper to taste until seems wettish and continue frying Add noodles and mix it all together until hot, moist and fully cooked

Pork chops in cider


Serves 4 Part fry 4 pork chops (or sausages), 4 small red onions, 2 sliced cooking apples Part boil cabbage Shred cabbage Put everything in a pot, add salt, pepper, sweet/medium cider, cider vinegar and mix together Cover pot and put in oven for about an hourish Serve with mashed potato + veg

Mac & Cheese


Serves 4 Soak 200g macaroni in unheated boiling water Meanwhile fry 1 chopped onion When soft add 50g butter When melted add 50g flour When mixed in add pint of milk and pint of vegetable stock, and salt & pepper Drain mac, mix it with additional ingredients, cover in the sauce and stick in oven until cooked Serve with baked cherry tomatoes

One-pot Sausages
Brown sausages by frying Empty into pot Brown chopped onion and green pepper by frying Empty into pot with sausages Mix in chopped tomatoes, salt, pepper, mixed herbs and lots of balsamic vinegar Stick in oven until cooked Serve with mashed potato, etc

Sticky Chicken Thighs


Make up a marinade: 3ish parts lemon juice, to 1ish part runny honey, with a dollop of grainy mustard, some chopped garlic, and salt and pepper. Marinade chicken thighs in roasting tin with the bone and skin still on. Save some of the marinade for later Roast the chicken, turning halfway through until golden brown and sticky Chop some pitted green olives, mix with some left-over marinade and fresh parsley, & sprinkle over the cooked chicken Serve with rice and peas

Potato dauphinoise
Cut potato into thin strips Put in gratin dish or similar Chop garlic, cover potato in garlic Add salt and black pepper, especially pepper Mix in the garlic and seasoning Cover in double cream Stick in oven until cooked Possibly put some cheese on the top

Ratatouille
Chop aubergine, courgette, and red or yellow pepper into chunks Fry in lots of oil, until softened, then set aside Chop and fry onion and garlic until softened Add the set aside veg Add chopped tomato Add basil, black pepper and red wine vinegar Serve with cheese, & potato dauphinoise (see recipe for that), or whatever

Fish and Chips


Serves 6ish probably Stick frozen chips in oven to cook Mix 1 whipped egg white, 50g self-raising flour, 50g cornflour and some beer to make the batter Get some white fish, coat in flour, cover in batter, fry in very hot oil until golden Take out pan and stick in oven with chips until everything is cooked Serve with peas, etc

Salmon Pasta Bake


Pre-cook some pasta with some salt Mix canned salmon, torn mozzarella, passatta, the pasta, basil and seasoning Spinkle top with bedcrumbs and cheese, like cheddar or whatever Stick in oven Serve with green leaves, garlic bread, etc

Chicken Fajitas
Cut red pepper, green pepper, red onion and chicken into strips Add a tiny bit of finely chopped chilli Mix in some 2 pt paprika to 1 pt cumin, with some lime juice Fry in hot oil until cooked Serve with salsa (see salsa recipe), and tortillas, + preferably some sour cream, some cheese, some guacamole

Salsa
Mix chopped tomatoes, lots of finely chopped chilli, chopped fresh coriander, lime juice, and a splash of lemon juice

Chicken Paprika
Cut up a large onion and 4ish cloves of garlic, mix, and put to one side Cut chicken into chunks and put to one side Fry the onion mixture until soft Cover onion mixture in 2tsps paprika, 1tsp chili powder, 1 tsp flour Add chicken stock with just a little water Add chicken chunks Cut 2 red peppers into strips and add Add parsley Chop tomatoes and add Add 250ml sour cream Serve with rice

Meaty Chilli
Chop onion and garlic Fry in large non-stick saucepan until soft Add minced beef, with beef stock cube Drain off some excess fat Add chopped tomatoes, chopped peppers and kidney beans Add chillis/chilli powder, oregano, cumin, (+ possibly tomato puree) Serve with rice/tortilla chips, coleslaw, (+possibly cheese)

Veggy Chilli
Chop onion and garlic Fry in large non-stick saucepan until soft Add 2 cans chopped tomatoes, chopped peppers, 1 drained can of kidney beans, 1 drained can of black beans, 1 can of backed beans Add chillis/chilli powder, oregano, cumin, (+ possibly tomato puree) Serve with rice/tortilla chips, coleslaw, (+possibly cheese)

Kung Pao Chicken


Make marinade of soy sauce, sesame oil, chilli powder (+ possibly a dash of white wine, white wine vinegar, ginger) Cut chicken breast into chunks and marinade it in the marinade Fry peanuts and set aside Stir-fry the chicken with chopped green peppers with rest of marinade (+possibly some garlic) Add the peanuts and chopped spring onion Serve with rice

Pork Goulash
Chop onion and garlic finely Fry in oil Add paprika, so that it is absorbed into the oil put paprikary onion mix in casserole dish Chop pork into chunks Fry pork in more oil, also adding paprika as before Add pork to onion Pre-heat oven Chop mushrooms, chilies, and peppers. Add to mix Add chopped tomatoes and a mug of pork/beef stock Add yet more paprika. This is a seriously paprika-heavy meal. Keep adding paprika until you think youve put enough in, then put that much in again. Stick in oven until cooked thicken the sauce with cornflour Serve with noodles

Thai Green Curry


Chop onion Fry onion with green curry paste and bashed lemongrass Add chopped chicken and lime zest Add coconut milk, chopped pepper, lime juice, light soy sauce, & chopped coriander Bubble for a while Serve with rice

Lemon Cupcakes
Use electric whisk to beat together 50g butter, 50g caster sugar & lemons worth of zest until very light and fluffy Add an egg and beat in Fold in 50g self-raising flour Bake in oven at 160/180 until cooked. Use prong thing to check. Should be about 15 minutes-ish Take cakes out of oven Use electric whisk to beat 30g of butter, gradually add 88g icing sugar, lemons worth of zest and 1tsp lemon juice, and beat in until smooth paste Spread the icing mixture on the cakes Nom nom nom

Shakshuka
Chop onion and red/green pepper, cook in saucepan Add cumin, chili or cayenne pepper, thyme, coriander, parsley, bay leaves, salt, pepper, and chopped tomatoes Leave to cook, adding water if necessary to get the consistency of passata Clear space in mixture and crack egg into the space Put lid on pan and leave for about 10 minutes on low heat

Salmon
Grill breadcrumbs until golden Mix breadcrumbs with finely chopped tomato, coriander, basil, and grated parmesan Heap onto salmon Oven at 180 for 15 minutes Serve with potato and veg
