Debone the chicken and cut into cubes. Make a batter with flour and 2/3rd of corn flour. Add chicken and coat well Deep fry the chicken cubes till it gets crisp and remove it. Heat oil in wok, add crushed ginger and garlic and sliced onions. Add tomato sauce, stock and seasonings to it. Add corn flour blended with little cold water. Cook the gravy till it gets thick. Add fried chicken cubes and remove Serve hot with chopped spring onion.

METHOD 1. cook the rice by boiling method and drain it. 2. Heat oil in wok, saut finely chopped ginger and garlic, and finely diced vegetables and stir fry it. 3. Add rice and seasoning and cook it for 5 min. 4. Garnish with chopped spring onions. 5. Serve hot.

RATE 1. Wash and boil the walnuts. 2. Clean and remove the seeds from dates. 3. Mix the walnut and dates with orange, lime rind and make a small balls. 4. Prepare wanton sheet with flour, salt and sugar and make a soft dough. 5. Roll the dough into rectangular shape and cut it into square. 6. Place the ball on wonton sheets and fold and make boat shape. 7. Deep fry in oil till it becomes golden brown in color. 8. Garnish with powdered sugar on top 9. Serve.

METHOD 1. Make a batter with corn flour and flour, egg milk and salt. 2. Heat a small oiled pan. Swirl one length of the batter over the base and cook for 2-3 min. repeat with remaining batter. 3. Spread out the skin and spoon one eight of the filling along the centre of each. 4. Roll the pan cake with filling and then saut in batter till turns golden brown in colour.
