Kiwi

History of the Kiwi


The kiwi fruit was first found growing in China, where it was known by the n ame "Yang Tao". At the beginning of the 20th century, missionaries brought the fruit to the island of New Zealand, where it received it's name "kiwi" after the small flightless bird native to the island. Today, many of the world's kiwis are still grown in New Zealand, as well as in southern Europe, Asia, South America and the United States.

Kiwi Nutrition
Kiwifruit is rich in vitamin C, having ten times more than the equal weight of a lemon. Two fruits have almost twice the vitamin C of an orange and more potassium than a comparable serving of bananas. High in fiber, it also offers vitamin A, Vitamin E, calcium and iron. Credit goes to all those little black seeds, as they act much like grains, providing lots of nutrition.

Fun Fact
In China, the fruit was known as yang-tao, which means strawberry peach. Europeans changed the name to Chinese Gooseberry to describe the flavor and color of the pulp. New Zealand farmers changed the name of the fruit to kiwifruit in 1962 in honor of the kiwi, the national bird of New Zealand. In 1974 kiwifruit became the official trade name.

Recipe For Kiwi Popsicles


Ingredients:
12 - 16 Kiwi Fruit, well ripened 2. 2 cups of apple juice

Makes 8 popsicles

Directions:
1. Peel all kiwi fruit. Thinly slice kiwi fruit allowing one slice per iceblock. 2. Place one slice of kiwifruit into each popsicle m old. Blitz the remaining kiwi fruit in a food processor (remembering to blitz just long enough to puree the green flesh but not the little black seeds).

3. Add the apple (or you could just use water) and stir to combine. 4. Fill each of your iceblock molds to the recommended fill level and place into the freezer.
