This is also why Bishul, cooking, and Hotzoa, transferring, are permitted on Yom Tov. Nevertheless, there are still a few rules which apply to Borer on Yom Tov. Firstly, the selection must be done in the easiest manner possible as there is a Mitzvah to enjoy Yom Tov. Secondly, selection may not be done with a special utensil. Thirdly, large scale selection is prohibited.
