TYPE OF LAYOUT: Its type of layout is Functional because transformed resource (customers) is moving and transformed resource is fixed.

OBSERVATIONS 1- Less customer flow for (chips, biscuits) etc. 2- Less water bottles purchase by customers. 3- Insufficient staff in whole bakery. 4- Most who purchase pizza also purchase cold drinks. 5- Sweeper was working during customer flow which was creating bad impression. 6- Insufficient staff to carry water bottles towards customers vehicles due to which they have to wait. 7- Dairy products (milk, chocolates) etc also purchased by many customers. 8- Customer flow on bakery item side. 9- Delivery staff was taking more time to pack products. 10- Too much bottles were placed in the mid of bakery. 11- Less purchase of breakfast items. 12- Customer flow of purchasing bakery items was mostly in evening. BOTTLENECKS: 1-No direct flow of customer from one counter to another. 2- One cash counter for dealing customer in whole bakery. 3- There was long waiting time related to pizza delivery. 3- More water bottles were placed in the mid of bakery and they have covered more space and were creating problem for direct movement of customers. SUGGESTIONS: They should change place of water bottles or minimize the space occupied by water bottles so that customers can move easily from one side to other side. And there should be minimum two cash counters to tackle with customers and also for

their convenience so that when they purchase items from any counter they can easily pay the bills for that and they should also increase the numbers of salesmen at the pizza counter to make and to deliver the pizza quickly. VOLUME AND VARIETY OPERATION: Doce bakers have low volume and high variety operations. Because they deal with bakery items daily use items and also with pizza making and delivery etc.
