Dragon Fire Chicken

Ingredients:
Dragon Fire Chicken

8 oz. Diced Chicken Breast 2 oz. Green Asparagus 1 oz. Diced Maui Onion 1 oz. Diced Red Pepper 1 tsp. Ginger Garlic Paste 3 oz. Hoisin & Black Bean Glaze 2 tbsp. Soy Oil 2 oz. Mirin Salt & Pepper to taste

Dragon Fire Chicken Sauce

1 oz. Hoisin Sauce 1 oz. Black Bean Sauce 2 tbsp. Honey 1 tbsp. Yuzu

Procedure:

Add 1 tbsp. Soy Oil to a wok or large saute pan Add Chicken and cook until brown 3-5 minutes Pour in remaining 1 tbsp. Oil and lower the temperature to medium Add in remaining ingredients saute until tender, about 4 minutes Deglaze pan with Mirin and add in Ginger Garlic Paste Reduce until desired thickness

Firecracker Prawns

Ingredients:
Firecracker Prawns

1/2 lb Prawns 2 oz. diced Maui Onion 1/2 Minced Serrano Chili 2 oz. Diced Red Pepper 1/2 dozen Sugar Snap Pea 1 tsp. Minced Ginger 1 tbs. Soy Oil

Firecracker Prawns Sauce

1 tsp. Red Miso Paste 1 tsp. Oyster Sauce 1 tsp. Dark Mushroom Soy 1/3 cup Dry Sherry 1 tbs. Sambal

Procedure:

Using a wok or laurge saute pan carmelize the Onions and Ginger over medium heat Add in Serrano Chili, Red Peppers and Snap Peas and saute for 4 minutes or until soft Stire in Red Miso Paste and deglaze with Dry Sherry Add in Prawns, Oyster Sauce, Dark Mushroom Soy & Sambal Reduce for 3 minutes over medium heat For thicker sauce stir in 1 tsp. Cornstarch & Water

7-Spice Chicken Salad

Ingredients:
7-Spice Chicken Salad

4 oz.Diced Marinated Chicken 1 oz. Napa Cabbage 1 oz. Romaine Lettuce 1 oz. Carrot - Julienned 1 oz. Red Pepper 4 Orange Segments 1 tsp. Candied Peanuts 1 oz. Ponzu Sauce 1 tsp. Sesame Oil Salt & Pepper to taste

Ponzu Sauce

2 tbsp. Lite Soy Sauce 1 tsp. Yuzu 1 tsp. Mirin Red Chili Flake to taste

Chicken Marinade

4 oz. Diced Chicken Breast 1 tsp. 7-Spice 1 tsp. Madras Yellow Curry Powder 1/2 tsp. Allspice 1/2 Olive Oil

Procedure:

Prepare Ponzu Sauce - mix all ingredients and set aside Prepare Chicken Marinade - mix all ingredients together and pour over chicken Marinate for 1-2 hours or more Clean off excessive moisture and cook chicken over medium-high heat 4-6 min. Cool chicken and combine with remaining ingredients in a mixing bowl Season with Salt & Pepper to taste
