If you enjoy Asian cuisine, there’s something on the menu for you at Chez Thuy. How can there
not be? The menu at the 15-year-old Boulder eatery boasts roughly 150 items. Many are
traditional Vietnamese dishes, like curried stews or lettuce wraps. The menu is accented with
Chinese and Thai offerings, too, including Sesame Chicken, Pad Thai and the recently added
green curry dishes. But rather than rely solely on tradition, owner Thuy Le likes coming up with
her own authentic recipes and trying them out on hungry customers, as well. One of the busy
restaurant’s most-popular requests is Le’s Spicy Beef and Tomato dish. According to manager
Michael Reeves, Thuy Le’s son, customer’s appreciate the fast service at Chez Thuy, as well. And
if there’s something you don’t see on the menu, ask for it. “We recently added a Kung Pao to our
menu because we get so many request for it,” Reeves says. Chances are, though, you’ll find just
what you’re looking for and more when you nestle into your seat in Chez Thuy’s dining room.
