Chimay Belgium Cinq Cents AKA Chimay White


Golden, slightly hazy appearance, fine head. Characteristic aroma of fresh hops & yeast. Fruity notes of muscat & raisins. No acidity, but an afterbitterness which melts in the mouth. Top-fermented unpasteurized Trappist beer. A classic. 8%

Urthel Hop-it Belgium/Netherlands


Inspired by fine American craft beer traditions but containing top European aromatic hop varieties and brewed at the Trappist Koningshoeven (La Trappe) for Urthel founder Hildegard van Ostaden, this nicely balanced, dry-finishing beer is surprisingly easy-drinking for its strength. 9.5%

Dupont Avec Les Bon Voeux


The strongest of Duponts farmhouse ales, but the alcohol is subtle. A touch of honey sweetness, grassiness, a bit of hop bitterness, some of the distinctive Dupont yeasty funk & a nearly perfect amount of spritz. 9.5%

Hazy pale gold & unfiltered. Appealing aroma offers pronounced lemon/citrus fruitiness w/fresh bread grain note and spicy & resinous hop appeal. On the palate: chewy grain, tart fruit & spicy hops; bittersweet finish dominated by hops & fruit. Dry finish; superbly quenching. 6.5%

Since 83, Dupont has produced this beer especially for a Gallo-Roman site, the Archeosite dAubechies, near the brewery. A Cervoise beer spiced w/a gruit (an old-fashioned herb mixture for bittering & flavoring beer, popular before hops.) Highly, if delicately, spiced. Sweet woodruff & bog myrtle are but 2 of about a dozen spices used. Discover what beer tasted like when Belgium was ruled by the Roman Empire! 8%

65% Grenache, 20% Syrah, 10% Cinsault, 5% Viognier. From Provence whose western border is the Rhone. Elegant aromas of cherries and figs and herbs de Provence with flavors of black tea, forest, white pepper and black fruit. 13.9%

2012 Chardonnay Rickshaw


From Sonoma. 2012 was a nearly perfect growing season. Long & slow ripening of the grapes well into September. The pristine juice produced wine of great richness, while maintaining its racy acidity. Rich notes of creme brulee, topped w/ripe tropical fruits. Richshaw donates a percentage of its profits in Chicago to making fresh produce available to underserved neighborhoods. 13.5%

York Creek 2003 Cabernet Sauvignon Estate


Napa. 80% Cabernet Sauvignon, 12% Merlot, 5% Cabernet Franc & 3% Petit Verdot. Winery owned by craft beer pioneer Fritz Maytag shows that he knows wine as well as beer. Being an unfiltered wine of some age, there is some sediment. Though harmlessand called a gift of the gods and a sign of a good wineyou should be gentle handling the bottle and pouring. 750ML $30.
