Cooking the food with the Heart Green combi oven means to convey heat making it to penetrate into the food, while minimizing weight and important nutrients loss with minimum energy and raw materials costs, as well as with less effort. The best results are obtained with the application of different technical solutions Heart Green is equipped with, some of these are really exclusive and unique, such as the patented Fast Dry system or the combination of hot air and steam with automatic humidity control Autoclima, the high precision core temperature sensor available with 3 different types of probes (multipoint for the certainty of perfect cooking of any kind of food, needle probe (1mm diameter) for small pieces or vacuum cooking and multiprobe for simultaneous cooking of different sized pieces).The adjustable ventilation system with automatic power reduction reduces energy consumption and waste while ensuring perfect even cooking also thanks to the new shape of the cooking cavity and to the bi-directional fan.

The special aluminium perforated food trays, along with dedicated programs, allow baking of any type of bread, from soft olive oil one to that with hard and crispy crust (Puglia type), always achieving amazing results.

Excellent results are obtained with the square mesh grill in food-grade aluminium for cooking pre-fried foods like potatoes. Large amounts in a short period of time, no expense for frying oil and its disposal.

Steaming allows to cook with higher quality results any kind of food that otherwise should be cooked in boiling water. Multilevel

With the Multilevel cooking system it is possible to simultaneously cook different foods requiring different cooking times and the oven is designed to alert with an audible and visual alarm when a tray is ready. Downtimes are therefore avoided, as well as unnecessary consumption and partial loads.

The regeneration of plated meals, that require short times, can be achieved through the opportunity to program the time for each individual plate, with the certainty of great result.

Just in time

Reheating and finishing with the Lainox Cooking System

Using an LCS banqueting system means organizing the kitchen work while responding with great exibility to the need to serve several courses that are the same and at an exact time, with maximum quality. To prepare the courses ahead of time (deferred preparation) using the Cook & Chill technique means signicantly improving the nal result. Reheating in oven with a capacity of 100 31 mm plates

Finishing and serving

Lainox has designed and created a wide range of Banqueting & Catering accessories, including removable plated meal racks, trolleys for transporting them and special thermal covers. The plated meal racks are designed to hold up to 100 plates that are 31 cm in diameter, maintaining the correct distance between them so the heat can be evenly distributed to obtain perfect reheating. The special thermal covers for each rack maintain the temperature of the meals for several minutes, thus ensuring enough time to move them to their location. The removable racks were designed to also be used inside Lainox holding cabinets, blast chillers and regenerating cabinets, thus providing the user with an integrated system of perfectly compatible tools that make work easier and quicker, without the need to move individual trays by hand.

In the Extras section, a series of temperature hold programs can be used for various types of dishes with preset values in order to ensure maximum quality due to continuous temperature control with core probe and the Autoclima function. Door with double heatreecting glass

Pollogrill cooking system


With the automatic skewered chicken cooking program, perfect outer browning is achieved along with proper internal doneness, maintaining and enhancing the flavour. Thanks to Autoclima , the chicken remains moist even a few hours after cooking. With the Pollogrill kit, the cooking grease is automatically recovered and deposited in the special tank for disposal. Automatic washing at the end of the cooking cycle ensure an appliance that is always efficient, with minimum operating costs. Thanks to the ease and speed in positioning the chickens, there is a 50% time savings in preparation time in comparison to traditional systems.
