Is it sulfites in wine that give me headaches?


Sulfites are the reason for mandatory label warnings on wine bottles because a small percentage of the US population, less than one percent, suffer an allergic reaction to sulfites, such as sneezing or coughing. About ten percent of these sufferers have a more serious reaction, such as shortness of breath. However, people who get headaches from wine should not automatically blame the sulfites. In the majority of cases the cause is probably something else, such as histamines in the wine. Some people take an antihistamine in advance of drinking wine in order to prevent getting a reaction from the histamines in the wine. Needless to say, the causes of allergic reactions of any kind are difficult to pin down without a doctors assistance and if you suffer any ailment as a result of drinking wine, you should consult with a doctor. If you have a wine allergy you can try narrowing down the cause by first sampling wines made from organically grown grapes, such as Bonterra made by Fetzer, or Sanford from Santa Barbara County, among many others. These wines are made from grapes that are grown without the use of synthetic chemicals, like pesticides, herbicides and fungicides. If no relief comes from drinking wine from organically grown grapes, the next step is to try a 100% organic wine, which contains a minimal amount of sulfites that occur naturally in production, and has no sulfites added. These wines are commonly found in natural food grocery stores. To be sure, every wine, organic or not, contains some sulfites because sulfites are produced naturally in the process of winemaking. If the total sulfite content is 10 parts per million or higher, however, the government requires a warning label. Winemakers add more sulfites because they help to preserve the quality of the wine for longterm shelf life. Therefore, wines that contain no added sulfites should be consumed while the wine is young.

Reverse Winemaker Dinners at Il Cortile Ristorante


Paso Robles Establishment Crafts Menus Around Special Bottles of Wine
Il Cortile Ristorante will once again welcome top local wineries to their restaurant, offering guests a unique take on food and wine pairing this winter season. Each Wednesday in January and February, the downtown Paso Robles fine dining establishment will hold Reverse Winemaker Dinners, in which Chef Santos MacDonal crafts seasonal three-course menus to complement a handful of very special local wines. Unlike a traditional winemaker dinner, where the winemaker selects wines to pair with a meal, we wanted the food to come to the wine, so to speak, said Owner, Carole MacDonal. We are fortunate to live in a region that boasts such wonderful wines and talented winemakers. This is our way of honoring their craft. The Reverse Winemaker Dinners will be held on Wednesday evenings, and each Wednesday will feature a different local winery. Once guests select a varietal from the featured producers handful of wines, Chef Santos will then reverse it and create a three-course meal to complement the flavors and textures of the wine chosen. This unique evening is offered at $40 per person, plus the cost of wine which will vary depending on the varietal chosen. Il Cortile is located in downtown Paso Robles at 608 12th Street. The restaurant serves dinner seven days a week in its warm, contemporary dining room as well as additional outdoor seating inside its sheltered courtyard. Il Cortile offers off-site catering and hosts special events featuring local wineries, as well as participates in a number of local charities. Cork and Its Friends in the Enclosure Business


It seems like at least one in every three conversations I have with people in the wine trade, whatever the ostensible reason for the chat was, ends up discussing cork and its alternatives. With more than four billion bottles domestically purchased last year, youd think this would be a settled issue, but, alas, the inverse is true: the more wine we make and sell, the more options of bottle enclosures we have, not less, and some packaging solutions dont even involve bottles or enclosures as we normally think of them at all! Rather than all or nothing, the discussion is now more about matching use to enclosure type for best effect. Cork for an enclosure rose naturally enough given its the bark of different species of oak trees, and oak is one of the traditional woods for barrel staves, so it makes sense to get the most out of whats already being used. What is not so well known is that it takes almost three decades of growth and several bark harvests, separated by seven years or more, before the first true harvesting of premium cork-level material is possible since they are vertically, not horizontally, drilled from the bark. Cork is one hundred percent natural, but its long lag time growing to that thickness makes it less than ideal in todays global, accelerated wine world. Thus have evolved a number of alternatives to the pure, grade one cork, which, not incidentally, can run most of a dollar each for the best quality even when purchasing large volumes. The simplest of these other options involve different forms of the same natural cork but in combination with various stabilizers to allow smaller pieces of cork to be formed into the standard wine cork shape. Known as technical or agglomerated corks, these provide an affordable solution which gives most of the same oxygen transmission and enclosure performance at a much more affordable cost. It also allows earlier harvesting of bark and the use of more of it without waste, always of import in agriculture. A middle ground between these two comes by way of the sparklng wine producer, whose corks require a special shape and performance because of the extra pressure from bottle fermentation; their most common cork uses two disks of natural cork on the stalk of the mushroom with agglomerated technical cork making up the cap of the remainder. The still wines twin top does the same thing, but with a disk on both ends and technical cork sandwiched between. Maintaining the shape but substituting alternate materials entirely are a vast range of wholely artificial extruded corks made of various food grade plastics and silicons. Moving away from a wine cork shape altogether takes us to the twist top, more formally known as the Stelvin enclosure; a liner can be employed to precisely control the oxygen transmission rate, but

there is no head-turning thunk of the pulled cork. There is also the Zork, which combines artificial materials with an unwrapping process, and glass stoppers, which work best as a cork stopper replacement except for one thing: the O-ring necessary to mate the glass stopper with the glass bottle is the crucial element in how effective the stopper is. As you can see, while the common wisdom is that once the grapes are in and the aging in barrel is done all the problems are over, the reality is that until the wine is in consumers mouths, there are decisions to make and potential problems to avoid every step along the way. No enclosure solves all the problems or works for all uses, and so producers have to consider individually the best way to make the experience of optimally enjoying a wine. Keep that in mind the next time you reach for your opener and enjoy!

Margarita Adventures Launches Epic 1,800-Foot Zipline Over Pinot Noir Vines in Paso Robles Wine Country
Indeed, the new 1,800-foot Pinot Express zipline at Margarita Adventures begins atop a mountainside forest at 125 feet above ground, then sends guests swooping low right over Pinot Noir vines at the historic Santa Margarita Ranch in the Paso Robles wine country on Californias Central Coast. Theres nothing else like it in the zipline world, said Proprietor Karl Wittstrom. It feels like you can almost touch the tops of the vines on your way down. The Pinot Express joins four previous ziplines as part of Margarita Adventures acclaimed zipline canopy tours. The Pinot Express is now the highest, longest and fastest zipline on the tours. The cost of the tours ($99) remains the same. Margarita Adventures five ziplines now combine for a total of more than 4,500 linear feet. Each zipline offers a unique ride. The 1,300-foot Renegade soars over a valley with breathtaking 360degree views. The Woodlander glides along the top of native blue and white oaks. The Hilltopper begins with a running start and concludes on a hilltop vista, while the Archway sends guests through a natural archway of companion oaks. And now the Pinot Express punctuates the experience with an unforgettable thrill ride and an unparalleled perspective on the wine country. To reach the Pinot Express, guests take a quarter-mile trail walk, the equivalent of a very light hike. Guests who are unable to walk this distance may opt to remain with the tour van. Margarita Adventures 2.5-hour zipline canopy tours also include a guided tour of Santa Margarita Ranch, which was first planted to vines by Franciscan missionaries in the late 1700s. The tours touch on the ranchs sustainable ranching and winegrowing practices, as well as its diverse wildlife and remarkable geology, which includes fields of ancient oyster fossils. Tours conclude with an optional tasting at the affiliated Ancient Peaks Winery, which specializes in artisan wines grown on the ranchs estate Margarita Vineyard. Paso Robles CAB Collective Revved Up and Ready for 2014 CABs of Distinction
After the success of the inaugural CABs of Distinction event (launched last year to celebrate and promote Cabernet Sauvignon and red Bordeaux varietals produced in Paso Robles) and the increased momentum from Paso Robles being named Wine Region of the Year by Wine Enthusiast Magazine, the Paso Robles CAB Collective (PRCC) has geared up for even more exciting events in 2014. Set for April 22 through 26, CABs of Distinction events will take place in locations across the Paso Robles AVA with enhanced sommelier, media, trade and consumer experiences. The key event of the weekend will be the CABs of Distinction Gala, held at River Oaks Hot Springs in Paso Robles on Saturday, April 26. This top-tier event will include tastings of PRCC member wines paired with artisanal cheese and charcuterie chosen by Fromager Zina Miakinkova. Decadent catered lunches will be provided by Paso Robles finest restaurants and caterers and will be served in the CAB Bistro; chocolate tastings, live music, a barrelmaking demonstration and glass etching will also be included. Luxury VIP tickets are available to attend an exclusive panel discussion, enjoy a multi-course gourmet lunch provided by Thomas Hill Organics and continuous access to the VIP Lounge where desserts and drinks will be available throughout the day. Sweeping the 2011 Vintage
Neatly tucked into the southern side of Paso Robles lauded Highway 46 West sits a converted historic schoolhouse-turned-tasting room, home to a 2011 vintage to remember. Though resident family owned and operated Peachy Canyon Winery has been producing award-winning wines since the late eighties when they were put on the map by Wine Spectator with a Top 100 wine this most recent crop of wines has been especially illustrious: six 90+ point small lot Zinfandels, plus a recent Double Gold for their Ms Behave Malbec at the San Francisco Chronicle Wine Competition. What makes these wines special? It may have something to do with the Beckett clans dedication to creating by hand. Despite being the largest family owned winery on the westside of Paso, Peachy Canyon still practices artisanal winemaking methods ... Grapes are picked by hand and sorted by hand. Premium wines are punched down by hand and gently basket pressed. Its the biggest small operation around. The winerys commitment to the local terroir is both environmentally sustainable (they are SIP Sustainability In Practice Certified) and a positive influence on the vino. Multiple estate vineyards on some of the best dirt in Paso mean that Peachys wines boast a variety of personalities. From elegant and restrained to big and fruit-forward, the 2011 Zinfandel vintage exhibits the range of microclimates available for Zin production in Paso Robles. Famed wine critic Stephen Tanzer went so far as to say, I suspect fans of extroverted Rhone wines will enjoy this, describing vineyard designate Mustard Creek Zinfandel, not something you normally hear describing a Paso Zin! The truth is that Paso Robles Zinfandel can be so much

more than a big berry bomb (though it is sometimes, unabashedly, that). Peachy Canyon loves to prove this point; each of their Zins features unique qualities highlighting the expressive nature of the Zinfandel grape. A reflection of Paso Robles unique and varied terroir, these wines provide an expansive look at the capabilities and quality of small lot and in many cases, single vineyard Zinfandel. Winemaker and winery son Josh Beckett noted that although the 2011 vintage was a challenging harvest due to weather, the quality of the grapes was markedly high. This was due in part to low yields resulting from an early frost, and a cooler growing season. A cooler spring and summer in 2011 gave us extended hang time, says Beckett. Peachys 2011 Malbec also obviously benefitted from excellent fruit, having just won Double Gold in the 2014 San Francisco Chronicle Wine Competition the largest wine competition in the U.S. At only 320 cases produced the Ms Behave Malbec is a very small production wine. Its dark, dense flavors and soft, integrated tannins are the result of hundreds of careful man hours from a surprisingly small winery team less than thirty, many wearing multiple hats, all dedicated to the cause evidence of a dogmatic commitment to quality. Despite 30 years of success in Paso Wine Country as a founding vintner, proprietor Doug Beckett still gets great joy from earning accolades, saying, It's always exciting when one receives great reviews and great scores. To have six of your Zinfandels fall into that category in the same vintage is truly a treat. He hadnt heard about the Malbec yet. For those who get the February blues, the perfect cure is a trip to wine country. During the month, the tasting rooms are not as busy as usual and it is a great time to chat with tasting room staff and try some new wines. The Robert Hall hospitality center was developed to welcome guests all year round. Regardless of the season there is always something in bloom and with the grounds all well maintained there is a special beauty in the winter. With the warm winter weather in Paso Robles, even February is ideal for a picnic lunch. The spacious tasting room is open daily, 10:00 a.m. to 5:00 p.m., with a large selection of wines. Tasters may select five wines from either the house list ($5) or the reserve list ($10). There is something for every palate from the dry whites, a Rhne-style Ros, dry reds and dessert wines. The majority of the fruit is sourced from the estate vineyards where 21 different grape varietals are grown. In addition to the current vintage offering, the reserve list features a selection of well aged wines from the library. Be sure to plan a little extra time when you visit the Robert Hall hospitality center this is much more than a wine tasting stop. The entire staff is trained to offer full tours of the underground cavern and this special tour is offered complimentary throughout the day with wine tasting. For visitors interested in learning a little more about the history of Robert Hall and how wine is made, the 30 minute tour provides a little education along with entertainment and perhaps even a taste of wine from the barrel.

For the month of February, the winery is featuring its 2010 Vintage Port as the wine of the month, offered at a 10% discount. The Port is made from 100% estate-grown Portuguese varietals and made in a traditional method. The grapes are all handpicked and crushed into small bins. The bins are fermented using natural, wild yeast and punched down by hand several time as day. Upon being fortified with unaged grape brandy, the fermentation stops and the juice is then pressed from the skins. The Port is aged in the carven in neutral oak barrels until winemaker Don Brady deems it ready for bottling. The 2010 vintage has delicious fruit flavors with a well balanced finish. Although clearly in the dessert category, this vintage Port has just 6% residual sugar so it does not leave a sugary coating on the mouth. Port pairs wonderfully with chocolate. The tasting room offers truffles and other assorted chocolate delights for sale in the extensive gift area. Valentines Day Weekend, Robert Halls tasting room will have the chocolate fountain flowing. Guests may dip strawberries and other treats into the fountain complimentary while tasting wine. Tasting fees are two for one on this special weekend. In celebration of Valentines Day, the winery will also host a dinner in the gorgeous Meritage room. The romantic Lobster Dinner, on February 14th, is just $85 a person. Villa San-Juliette Vineyard & Winery Gets Cozy


Trio of Red Wines is Perfect for Pairing with Comfort FoodPlus a White to Start the Meal
Just in time for chilly weather, Villa SanJuliette Vineyard & Winery has released a triple threat of red wines ideal for sipping alongside hearty dishes, as well as the perfect white wine to sip at the stove. Winemaker, Matt Ortman, put the finishing touches on VSJs 2012 Sauvignon Blanc, 2011 Cabernet Sauvignon, 2011 Zinfandel, and 2011 Petit Sirah. Each wine was crafted exclusively from fruit grown on the Villa San-Juliette estate in the Paso Robles AVA. The 2012 Villa San-Juliette Sauvignon Blanc is a wonderfully fragrant and juicy wine, the result of a two-month long fermentation at very cool temperatures, which serves to trap and protect the most delicate of components. Aromas of gooseberry and tangerine are underscored by defining notes of freshly cut grass. Lively acidity maintains the lush, mouthwatering flavors of grapefruit and melon. This wine is lean enough to sip alone, and juicy enough to pair with panroasted Brussels sprouts or classic Caesar salad with anchovies. (SRP $14, Reserve Club member price, $11.60) VSJs 2011 Cabernet Sauvignon opens with bold and lively aromatics, then follows with flavors of candied cherries, sarsaparilla and vanilla. The tannins are soft and supple making this an enjoyable wine now, with the potential to age for the next few years. Pair this wine with a pork crown roast, sharp aged cheddar cheese or porcini risotto. (SRP $20, Reserve Club, $16) With a remarkable following already, the 2011 Zinfandel is redolent with luscious raspberry and blueberry notes laced with classic Zinfandel nuances of white pepper and a chocolate richness. Mouth-filling flannel tannins throughout the mid-palate extend into a lingering finish. Nearly black in color, the 2011 Petite Sirah marries big California flavors with restrained elegance. Leading with exuberant blueberry aromas, the wine layers flavors of orange zest, violet, cedar and mocha before the acidity turns the flavors towards red fruits on the finish. The

Villa San-Juliette Vineyard & Winery recently completed Sustainability In Practice (SIP) certification with the Vineyard Team, a network of farmers that strives to promote sustainable vineyard practices and protect resources valuable to the land and the community. Launched by Nigel Lythgoe and Ken Warwick in 2006, Villa San-Juliette has made sustainability a focus since its inception, said Winemaker, Matt Ortman. VSJ is a long-time member of the Vineyard Team, Ortman recalled, so we were already following many best practices before pursuing SIP certification. When Ortman joined the VSJ team in January, 2013, gaining SIP certification became a priority. We completed the Vineyard Teams audit of our growing practices and winery operations, including testing our well pump for efficiency. We made some important changes in erosion control and integrated pest management specifically, installing more owl boxes and were SIP certified within a year of my hire date. Asked what inspires VSJs interest in adopting sustainable practices, Ortman cites Lythgoe and Warwicks foresight. Ken and Nigel came into this business committed to being good stewards of the land, which is part of what attracted me to the job in the first place. As a second-generation winemaker, I like working to ensure that a third generation could make wine here, too.

Venteux Vineyards is a dream realized by two families who share a passion for wine and hospitality. In 2000, the Stelzle family bought 12 acres of property in the renowned wine growing region of the Templeton Gap. This exceptional viticultural area is known for hot, dry days and cool damp nights. Vibrant describes Estrella Restaurant. The color palette of its surrounds reflects the rich cultures within the food. Tastes of Sante Fe, NM, Spain and Argentina are prepared to excite and intrigue in such a way that a first-time guest cant help but want to savor another one of their creations. And what a selection there is at Estrella. The Latin Rivera cuisine combines flavors to make for a distinctive and memorable meal. Among Chef Travis Borbas offerings, the Tapas menu includes Grilled Scallop Ceviche, in which a citrus marinade with red onions, oranges and mango commands the taste buds. Crispy Masa Cakes topped with servings of shredded chicken, chipotle-tomatillo sauce, sour cream and a spicy cabbage salad is fun to share. For lunch, a Cuban Sandwich of Mojo marinated pork loin and ham and the Braised Chicken and Chorizo Taquitos are especially popular as well as the new Southwest Green Chile Burger. For dinner, the Chile Relleno entre features roasted Anaheim chilies with a choice of fillings including roasted corn and crab, queso fresco or carnitas and two varieties of salsa. Most tasting rooms were built as winery operations not repurposed buildings. But for Bridlewood Winery in Santa Barbara wine country, part of the allure and history is that the property used to be a thoroughbred horse farm, hence the winery name. The Mission-style bell tower, long driveway, and lush grounds remind you that this once was a grand estate. There are still a few horses on the expansive grounds and one original track is still located behind the winery near a large pond an exclusive perk to picnic at for wine club members. And on weekends from 11:00 a.m. to 3:00 p.m. they offer a horse and carriage vineyard tour of the property for a mere $10. Bridlewoods tasting room reflects the wood, and earthy warm tones of an equestrian facility, complete with high volume ceilings and generous space at the tasting bar for you to roam around in. The wines too reflect what is best about this region of California, namely the expressive wines. The Central Coast is an extraordinary place that is home to some of the best grapes California has to offer, winemaker Mark Williams says. I hope that my wines can serve as an ambassador for this region. Since Williams collaborates with winegrowers from Monterey, San Luis Obispo and Santa Barbara Countys, he is able to represent the Central Coast as few other wineries can do showcases Bridlewoods ability to produces handcrafted wine from a broad palette of the Coast and scrupulous barrel flavors developed in the winery. My winemaking philosophy is to focus on the details, ensuring the highest quality in the bottle, Mark says. To me, one of the most rewarding parts of winemaking is spending time on each lot to experiment with different

Its a new year, and with it comes a new look for Edna Valley Vineyards wines. Edna Valleys wine bottles now feature a sleek, modern design. When you visit Edna Valley Vineyards tasting room, or browse for wines at your local market, youll get a glimpse of the new branding. Starting with the Sauvignon Blanc, Edna Valley will be releasing wines with the new labeling throughout the nation. Expect to see Cabernet, Merlot, Pinot Noir and Chardonnay wines with the updated look in your local market. Even though the look of the wines may have changed, visitors will still find their favorites available in the tasting room. The Wine Experience is held in a private room and led by a wine educator which changes seasonally and is offered most weekends. Opolo Vineyards and Winerys Spiced Cranberry Sauce
Cranberries are so versatile and not just for holiday meals and this recipe incorporates Opolo Vineyards 2012 Mountain Zinfandel to make a delicious cranberry sauce that is perfect any time. I halved the recipe as suggested so I wouldnt have too much sauce and also so I could enjoy a glass of Zinfandel while cooking! The cranberry sauce is easy to make and even finicky guests will love it. This dish needs an aggressively fruity, dark, rich wine and the 2012 Mountain Zinfandel is the perfect match. Jammy aromas of raspberry and plum are balanced by floral lavender and violet. A lush, round mouth of plum and cherry flavors lead to a finish that is long and satisfying. This wine is bold enough to accompany most grilled meats and spicy fare brilliantly or Opolo's cevapcici sandwiches. The cranberry sauce works well with most main dishes but can also be served chilled alongside a cheese platter or warm layered upon vanilla bean ice cream. Opolo Vineyards produces approachable and food-friendly wines that people love in a scenic mountain-top setting. Their wines are mostly estate grown and the intensely flavored Mountain Zinfandel is their most popular wine. Opolo Vineyards and Winerys Spiced Cranberry Sauce


Ingredients 3 cups Opolo Mountain Zinfandel 2 cups sugar 2 cups (packed) golden brown sugar 12 whole cloves 12 whole allspice 4 cinnamon sticks 2 3x1 inch strips orange peel 2 12 ounce bags fresh cranberries Preparation Combine all ingredients - except cranberries - in a medium saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Reduce heat and simmer until reduced to 3 1/2 cups, about 15 minutes. Strain syrup into large saucepan. Add cranberries to syrup and cook over medium heat until berries burst, about 6-8 minutes. Cool. Transfer sauce to medium bowl. Cover and refrigerate until cold. (Can be made 1 week ahead. Keep refrigerated.) Unless your family really loves cranberry sauce you might want to cut this recipe in half... the best part about doing that is that youll end up with half a bottle of Mountain Zinfandel left over to drink while you cook! For winemaker Chris Cameron, making wine at Broken Earth Winery is a dream job. Born in Australia, Camerons winemaking career spans more than 35 vintages in Australia, Italy, France, Turkey and now the United States. For the past five years he worked in Paso Robles at Summerwood Winery and Veris Winery, before joining Broken Earth Winery as their winemaker. Throughout his illustrious career Cameron has achieved international recognition for his wines by being awarded 70 major trophies and 600 medals both domestically and internationally including The Best Merlot Worldwide at the International Wine and Spirit Competition in London, and the Jimmy Watson Memorial Trophy, Australias most prestigious wine award. His work with Broken Earth Winery as already been recognized with two Gold Medals at the 2012 San Francisco Chronicle Competition. Cameron is passionate about making wine in Paso Robles, and is excited about the areas viticultural opportunities for being able to ripen both Bordeaux and Rhne varietals. The 2,500 acres of vineyards surrounding Broken Earth Winery were originally named Rancho Tierra Rejada, which is Spanish for land of worked earth. Broken Earth Winery is committed to sustainable farming ideals in order to continue to bolster the high-quality reputation of Paso Robles wines. Cameron works with the land and the varietals it produces to ensure that the wines he makes are balanced and structured, and reflect the style of the region. His approach to winemaking is minimalist intervention, as he feels that truly great wines are inherently dependent on the vineyard, and the real art of winemaking is the ability to translate whats on the vine into the bottle. Santa Barbaras Film Feast is a unique take on Restaurant Week. Coinciding with the 28th Annual Santa Barbara International Film Festival (SBIFF) January 30th February 9th, Film Feast participants (restaurants, wine tasting rooms and hotels) offer special tasting menus and hotel packages using the theme Made in Santa Barbara. Heading to the Tasting Room

Do not be intimidated for any reason. That is rule number one (and there are very few real rules after that). For the most part, going wine tasting is about the easiest thing in the world, especially here in California where wineries and tasting rooms abound. You can find wineries specializing in red wines of all types, those that are famous for their white wines and others who pour sparkling wine. It is a matter of doing a little research and planning your day. Most tasting rooms open around 10 a.m. and close between 4:30 and 6 p.m. Before you start off pack a few essentials: Water (plenty of water) and something to snack on crackers or a baguette. Many wineries have picnic areas and there are plenty of delis and bakeries that can make up a lunch for you, or make your own. Which brings us to eating and drinking, the kind that doesnt directly involve wine. Be sure to nibble during the day and make sure you make time for lunch. Two tips: drink at least twice as much water as you do wine, and remember that you dont have to drink everything poured into your glass. There is a reason tasting bars have dump buckets and a pitcher of water to wash out your glass. That said, here are some tips that have proven to be helpful and are designed to help make the sensory adventure of wine tasting all the more enjoyable. Dont be afraid to ask questions. Time and time again I have heard knowledgeable winery workers say that there is no such thing as a stupid question, and they mean that. You can drink what you want, in the order you want. If you only like reds, say so; if you dont like sweet wines, speak up. But the idea of starting with whites, then going on to reds and then sweet wines is a good guide. Zinfandel is red. I am sure you know that but it never hurts to remind everyone. If there is a particular wine you want to try and it is not on the list, ask. There might be a bottle around that was opened for a trade tasting or by the winemaker. Most tasting rooms are happy to pour a little if you show enthusiasm. If you plan to take wine home with you, either in the car or on a plane, buy a cardboard box with Styrofoam wine inserts. Fill it during the day and this keeps wine from rolling around in the trunk. Check out the smaller wineries. It is a revelation. Take notes on the wines you most enjoyed. Take advantage of tours when the winery offers them, but keep in mind that they take anywhere from 20 minutes to well over an hour, so one a day is plenty. Buy wines that you can only find at the winery. These often

include smaller (375 ml) bottles of limited production Ports or dessert wines. Dont buy a wine you can get at a supermarket back home. Youll pay more, and besides, whats the point? Look for tasting rooms in towns. Many of these are cooperative tasting rooms, where in one place you might find wines from a dozen or more small-to-medium premium producers. They are scattered throughout the area and more are opening all the time. Dont give too much thought to ratings and vintages. Its like art: if you like it, its a good wine. It is as simple as that. Remember that you dont have to do the driving. It takes no more than a phone call to rent anything from a Town Car or restored classic convertible to stretch limos and a 20-passenger bus. All have drivers that will stow your wine for you and the local companies know the area. As to taking that wine home, ten people sharing one of those impossibly long limousines is fine and fun, but if you all plan to buy a couple of cases the trunk which is no bigger than a normal luxury cars is going to fill up fast and youre going to find yourself filling the interior floor with boxes and using cases of Cabernet as footrest. Tell the transportation company what you have in mind and listen to their advice. They know the territory and the people and personalities. Know your limits. If you get close to it let others taste and you can listen. It beats ending the day in a blur, and if need be calling a taxi is cheaper than the alternative. And if at a seated tasting, dont be afraid to leave a gratuity. Its more than worth the five or ten dollars to get wisdom and wine and a great time.

Lions Peak Vineyards Wine is Art

Centrally located at 1659 Copenhagen Drive in Solvang is the Lions Peak Vineyards tasting room. Inside the thatched roof shop, one finds a multicultural array of art, pottery, ethnic wood carvings, painted glassware wine accessories and more. Artistically labeled bottles, however, reveal handcrafted, award-winning wines sourced from a 120-acre San Miguel vineyard estate located in North San Luis Obispo County. To date, winnings from four major California wine competitions boast a lions share of 24 medals. Im about to bottle 2010 reds, says winemaker Jennifer Soni, who earned the distinction of Certified Sommelier last May. Were

bringing back Merlot in the character of great Bordeaux varietals in the traditional Old World style. Our Bon Courage is outstanding. Weve blended 63 percent Merlot, 22 percent Cabernet Sauvignon and 15 percent Cabernet Franc, using French oak. One hundred cases will be released before fall. Wine Club members will receive first-come, first-served privileges. Other fans of Lions Peak may reserve wines also if they hurry. Lions Peaks 2010 Sister Lionness blends 42 percent Cabernet Sauvignon, 41 percent Merlot and 19 percent Cabernet Franc. This vintage and a new Zinfandel Port just might fly out the door, not unlike Jennifers BFF blend, but will soon return. An art and music lover, Jennifer enjoys focusing on gathering friends, near and far. Live classical guitar music is featured in the tasting room on alternate Saturdays and Sundays. A Wednesday gettogether is also in the works to enable a midweek respite with cheese, chocolate and community to enhance a glass. Wine is an art, says Jennifer. The Foxen Canyon Wine Trail A Road of Definition


Every wine region has that one specific place, an area that clearly defines the whole of the region in terms of how it best expresses and interprets the wine. In Santa Barbara County that wine region is Foxen Canyon. The Foxen Canyon Wine Trail is home to 15 tasting rooms along its languid path, all of which are flanked by row upon row of vineyards, which is one of the reasons people flock here, to get the full wine country experience. But unlike other wine trails, Foxen Canyon is still agriculture driven. You wont find any stores, gas stations, restaurants or shopping. What you will find are bucolic lazy roads which undulate into flat valleys and ascends to hilltops where the views of open land, roaming cattle, quail and turkey vultures, verdant vineyards, mature oak trees and blue skies beckon; a postcard to the past of what California used to be like. The beans and barley plantings of older times have been replaced by grapevines but there are still pockets of bell peppers and other row crops along this country road. The Foxen Canyon area seems unremarkable in terms of its diversity however this 30 mile long road shows various micoclimates and topography along the way, and there is a stunning array represented here. The multitude of wineries have planted a bevy of grapes including Grenache, Pinot Noir, Chardonnay, Syrah, Cabernet Sauvignon and Viognier. The south of the trail, closer to the tasting room hotbed of Los Olivos, is dominated by full bodied Rhone style wines where the inland climate is much warmer and where you will find Syrah, Grenache and Viognier and some of the first Santa Barbara plantings of Cabernet Sauvignon and Syrah in the early 1970s. In the northern part of the canyon, leading towards Santa Maria, the Burgundian styles are more readily available, where the cooler maritime influence creates a climate perfect for Pinot Noir and Chardonnay. And often you can see the clouds from the beach just 10 miles away. This is however, California, and that means a greater cornucopia of other varietals such as Sauvignon Blanc, Negrette, Sylvaner, Sangiovese and Cabernet Franc which can also be found on the tasting lists showcasing the assortment of grapes that thrive here. Most of the wineries have picnic areas; some large and open and some small and secluded you just need to take your pick. When visiting the trail its advisable to bring water with you and food as there are no restaurants and many of the wineries are spread out. By visiting this unique wine trail youll get in touch with the exceptional wines of Santa Barbara and at the same time, step back into historic California.

Zaca Mesa, a loose translation meaning peaceful table, has been a winery of firsts. They were the first winery to plant Syrah in Santa Barbara County in 1978, and the first Central Coast winery to appear in Wine Spectators Top 10 list. Their Syrah was served by President Clinton to French President Jacque Chirac at a White House State Dinner, and also served at President Reagans 80th birthday party at the Beverly Hilton. Thats a pretty impressive history. The focus is squarely on Syrah, but youll also find Chardonnay, Viognier and Roussanne as well as Mouvedre and Grenache. The rustic wood clad tasting room, shaded by old oak trees, is large enough so you dont feel cramped, but small enough to remain intimate. At Zaca Mesa youll get a tasting of seven wines for $10. The tasting flights change every couple of weeks based on availability of the wines so theres always something different and new to sample. You can relax at one of their many picnic tables or challenge your friends to a game of chess on their life-size chessboard. A quick walk on their hiking trail provides extraordinary sights of the Santa Ynez Valley and surrounding farms. Tours and large group tastings are

available, so call in advance for a reservation. Family owned for nearly three decades they are dedicated to the farming of their vineyards and the 2013 crop looks promising. They have been shoot-thinning and removing leaves around the fruitingzone for balanced yields and maximum exposure to the early-morning sun which should lead beautiful fruit once harvest begins in August. Rancho Sisquoc Winery is one of the oldest wineries in Santa Barbara County having started growing grapes in 1968 with Cabernet Sauvignon and Riesling. Today it is still a family owned winery and their 310 acres of vineyards overlooking the Sisquoc River are home to unique micro-climates which allow them to grow diverse varieties such as including, Malbec, Merlot, Syrah, Pinot Noir, Cabernet Franc, Sangiovese, Chardonnay, Sauvignon Blanc and the obscure German grape Sylvaner. The vineyards are warmer than vineyards in the lower Santa Maria Valley, but Rancho Sisquoc is cooler than the Santa Ynez Valley just 20 miles south due to what is known as the transverse range; coastal mountains which running west-east, not north-south, that bring cool winds and fog inland from the Pacific Ocean, tempering the vines. Winemaker Alec Franks abides by a simple philosophy for the 18,000 cases he makes; create high quality wines in limited quantities, and offer them at a reasonable price. Tasting fees are $10 for any six wines from their wine list and there are usually a dozen wines to choose from, and a stemless logo glass is included. Costa de Oro, a Spanish term meaning gold coast, reflects their moniker perfectly. They make wine from their 30-acre Gold Coast Vineyard planted mainly to Pinot Noir and Chardonnay, and these wines reflect the best the Central Coast has to offer; almost like gold in a glass. The Costa de Oro tasting room is comfortable and relaxed with its wood-toned colors, wood beams on the ceiling and wood floors. There are comfy chairs to relax in and theres plenty of sunlight cascading through the large windows. The views from the windows look directly out to the fertile cropland of Santa Maria and to the low rolling hills in the distance. In the tasting room there are wines that are either exclusive to the wine club or in very small quantities only available at the tasting room. Currently you can find three versions of Chardonnay, four iterations of Pinot Noir, Pinot Grigio, Cabernet Sauvignon and a fun summertime red blend of Tempranillo, Cabernet, Syrah and Petite Sirah. Tasting fees are $10, or you can purchase individual glasses of wine in addition to lots of gift items. Make certain you get a cheese plate to go with your wines, which are available from $5 to $12 containing a variety of cheeses. To make matters even better, Costa de Oro offers live music every Friday evening with their Wine Down Fridays. Each Friday from 5 to 8 p.m. youre likely to hear festive folk music, maybe blues, acoustic guitar solos or a little rock n roll from Grammy winning musicians. My wife and I are musicians and music is near and dear to us, says Gary Burk, the winemaker and owner. Music and wine are both universal languages, they speak to people on an emotional level, no translation necessary. The Friday Wine Downs feature wonderful food from Chef Rick, one of the best chefs in the area. For a mere $12 youll get foods like a club sandwich made with oak grilled chicken, avocado, and apple wood smoked bacon, and broccoli slaw with vinaigrette

and summer melons. And all these foods pair well with Garys wines, especially the Pinot Noirs. We are very excited about our Pinot Noirs, Gary says, and yes hes a little biased since he has a fondness for them over other wines. So get your groove on and check out the exceptional wines of Costa de Oro. LOMPOC WINE GHETTO


Like most passionate wine enthusiasts, a great epiphany led Joe Davis to his calling as a winemaker... While in college on an athletic scholarship, Davis, the son of a Monterey California fishing family, took a job in a wine shop. One Christmas, a good customer brought Joe a gift of a 1978 Clos de la Roche Grand Cru, Domaine Dujac. One sip and he was completely taken with the flavor and sheer deliciousness of the wine.To have winemaking as a life pursuit and to make wine like this, he thought, would be the most wonderful thing in the world. And so his quest began. Joe voraciously read everything he could find that was wine related and enrolled in UC Davis graduate program. In 1985, he met and went to work for Dan Lee of Morgan Winery. While primarily making award-winning Chardonnay, Davis never lost site of that fantastic Burgundy and in 1990, he presented a classic Pinot Noir production plan to Morgan Winery. His original plan included techniques Davis applies today to his Arcadian Winery Pinot Noir; whole cluster fruit is hand picked and is sorted early in the day to ensure chilled fruit. Obviously, not all vintages are the same, the recipe might change, but by using these methods consistently, I impart a common thread among my wines that translates into my style says Davis. He employed these procedures for all of his Pinot Noir vintages (1986-1994) at Morgan and then took this knowledge to a general managers position at Bernardus Winery. Finally, in 1996, on his own and ready to fulfill

his dream, he released Arcadian Winerys first vintage of Chardonnay to rave reviews. Joe realized another dream in late November 2011 when he opened his long-anticipated tasting room in the Lompoc Wine 1 Ghetto. Peter Scott Fraser started Scott Cellars in 2005 with a driving passion for making great wine. We produced Chardonnay, Pinot Noir, Syrah and a luxury blend. However, in 2007 the first Sangiovese was made. Now, only a short time later, it is the focus. We still make small lots of these wines, but Scott Cellars is taking Sangiovese to a new level in California, Santa Barbara specifically. Our small boutique winery is committed to creating world class Sangiovese with a distinctive New World style. More than that, we want to show the world that truly great Sangiovese can be made here in Santa Barbara. The special terrior here combined with the marine influence and valley orientation make for some of the most uniquely rich distinctive Sangiovese grapes anywhere. The Scott Cellars style is based on the place the wines are grown while I name the wines after the soils and or places the grapes are grown. In other words, the Scott Cellars style is all about the California climate and soil and what most naturally comes from it. I may be half Italian, but I am all about making wines based on this terroir and this climate, not some place a world away. I feel that we winemakers are only just starting to understand the true nature of Sangiovese and what it can be here in CA. In this place the climate naturally lends itself to wines that are rich and fruit forward with smooth supple tannins. That is the Scott Cellars style. Sangiovese may be associated almost exclusively with Italy, but we

have developed a style that reflects our sensibilities. We are creating our own traditions. The wines are concentrated yet supple, powerful yet elegant and designed to be consumed within 5 to 8 years. The tannins are velvety and the acid while balanced is lower than most Tuscan wines. They exhibit lush ripe fruit flavors in their youth and have utterly distinctive character unlike similar wines from anywhere else in the World. After 20 years of revolutionary viticultural experimentation, Stolpman Winery continues to lead the way in Syrah, Sangiovese, and Roussanne production. Their 100% estate grown wines are organically crafted on the limestone hills of Ballard Canyon in Santa Barbara County. The soils help create acidity and structure for these intense wines. To ensure optimal freshness, the grapes are picked in the cool of the night and gently pressed. The Stolpmans' focus is Syrah, the premier grape of their estate. Other wines offered include Grenache, Petite Sirah, Sauvignon Blanc, and Viognier. Robust and flavorful estate olive oil can be tasted and purchased as well. The Stolpman tasting room, a quaint red cottage, was originally a private residence built in the late 1800s. The building has undergone major revisions with two tasting bars to comfortably accommodate guests. They also a have a covered deck and a shady patio where guests are invited to relax and enjoy the service of the passionate and knowledgeable staff. If you're interested in checking out this year's crop, Vineyard Manager Ruben Solorzano planted a demonstration vineyard in the cottage's front yard. The interior tasting room utilizes warm woods, rich tones and colors, with a French cottage feel. Additionally, the interior was designed using recycled materials.

Stolpmans flagship tasting room in Los Olivos is open daily 11:00 a.m. to 5:00 p.m. at 2434 Alamo Pintado Ave., (805) 6880400. Cinque Stelle Winery A Rising Star


Cinque Stelle Winery and Boutique is a rising star on the Santa Ynez Valley winery scene, not only because their name means five stars in Italian. Owned and operated by the Crist family, each star represents a member of the family, and together they create smallproduction wines that reflect a shared passion and attention to quality from the farming to the winemaking process. The Crist family began their journey by purchasing a vineyard in Santa Ynez Valley (off Refugio Road) in 2007, where they grew and sold Albarino, Pinot Grigio, Tempranillo and Syrah to local wineries such as Brander, Longoria and Tensley. Then in 2009 winemaker Matthew Crist had the opportunity to be mentored by local winemakers, which led to the first vintage of Cinque Stelles estateproduced wine. The cooler microclimate and rocky terrain along with hand-farming the entire vineyard, enables the Crist family to produce high-quality fruit that creates varietal wines with unique flavor profiles. Make sure to check out their flagship wine, Albarino, which is a very rare Spanish varietal. When the Crist family decided to open their tasting room in August 2012, Natalie and Barb (daughter and mother) incorporated a lovely womens boutique that features clothing, fine gifts, jewelry and gourmet food items for pairing with their wines. Wine Bar Tasting


The most common tasting experience is a Wine Bar Tasting. You step up to the bar where typically a list of wines being poured is displayed. Expect to pay a tasting fee between $10-$40. Some tasting bars will offer you the option to taste a library or reserve wine. Sit Down Tasting


A Sit Down Tasting usually requires an appointment, and there may be a slightly higher fee than a wine bar fee. Seated in an elegant room, you are poured several wines by your winery host. Expect your host to describe the unique characteristics of each wine and how it was made.

Walk Around Tasting


A Walk Around Tasting is a combination of a tour and a tasting. Your host brings along several bottles of wine on your tour, and may take you to a garden area of the winery to pour the first round. Then you move to another place within the winery to sample the next wine. This experience continues until all the wines are tasted.

Barrel Tasting
Another popular tasting experience that can be part of a tour or a Walk Around is a Barrel Tasting. Your guide takes a wine thief, a special siphon placed into a hole in the top of a barrel to extract tasting samples of a maturing wine. The sample allows you to taste what the wine is like in the middle of developing its full potential.

Some wineries are so small that they need to know when you are coming so someone will be there to greet you. Others have sit-down tastings that start and end at specific times. Its always a good idea to schedule your appointments well in advance.
