Comments: Akee is the national fruit of Jamaica. It is a rather large, handsome, fast growing, evergreen tree that may be kept at a reasonable height through regular pruning. When fully mature the fruit opens revealing a crisp, cream colored, glossy aril that is somewhat nutty-flavored attached to large, black, shiny seeds. Comments: The name "allspice" is due to the fact that it's flavor resembles a combination of cinnamon, clove and nutmeg. It is often used in pumpkin pie. Culinary uses include as flavoring for sauces, pickles, sausages and soups. Extracted oil is used for flavoring and perfumery. The wood is used for canes, umbrella handles, and to add flavor to barbecue.

Comments: While there is no real potential for a commercial apple industry in Florida, dooryard growers in the central and northern part of the state can grow these select Florida friendly varieties with success. Like the peaches and plums, apples are deciduous trees. They require 200-400 chill hours, according to variety, to go completely dormant, and then the flowers emerge in the late part of the winter as the weather begins to warm. Comments: Araza is an extremely rare New World fruit that is not widely known even in Amazonia Brazil where it is native. The small multi-stemmed trees produce numerous round fruit that look like tennis balls hanging from its outstretched weeping branches. The fruit is quite sour but versatile due to its pleasant flavor, texture, color, and smell. They are commonly used to make tropical drinks & cocktails, popsicles, and ice cream. The bushy trees can be maintained at six feet or less, or trained as a standard with a single trunk. They take just 2-3 years to fruit.

Comments: The Bilimbi is a close relative to the Carambola, but they are always extremely sour. The fruit is commonly used in Indian cooking and it is added to curries in the Far East. Relish and chutney are common uses for the fresh fruit throughout Latin America. There are many medicinal uses for the leaves including the relief of coughing, inflammation, and fever. Comments: These three blackberry varieties are suitable for zones 8-10. The Brazo variety is an erect growing bush that does not require trellising. It has short canes, and it is well adapted to growing throughout Florida. The Arapaho and Navaho are not quite as prolific, but they are thorn less. Comments: The Barbados Cherry is a fast growing bushy tree that can be trained as a standard or shaped as a hedge. The fruit are sweet to sub-acid, and they are used extensively in juices throughout Latin America. The cherries are extremely high in Vitamin C, and just one has the equivalent Vitamin C content of 12 oranges combined. Comments: Bay Leaf is a culinary herb often used to flavor soups, stews, and braises and pts in Mediterranean Cuisine. The fresh leaves are very mild and do not develop their full flavor until several weeks after picking and drying. Bay leaves can also be crushed (or ground) before cooking. They are best grown in a pot or raised bed in acid soil such as Canadian Peat. The plants prefer a hot, humid climate and some shade. Black pepper is the dried unripe fruit of small one-seeded berrylike drupes about 50 to a catkin. They are usually picked when the first 'berry' begins to turn red. Before drying they may be used fresh green. When dried they become the black wrinkled peppercorns.

Comments: The Canistel is a large, open, evergreen tree that has dark green leaves up to twelve inches long clustered at the tips of the branches. The fruit has an orange to yellow thin skin, and the pulp is dry like a hard boiled egg yolk. They are commonly eaten fresh, used in cooking, pies, and they are excellent in ice cream. In milk shakes they taste like eggnog. Comments: The actual fruit is the nut, the "apple" is a swollen stem. Cashew "apple" is eaten fresh, candied, or stewed. They have a sweet & astringent taste, and are somewhat chewy. The nut itself is caustic until roasted, and they should be roasted outside because the fumes can be irritating. Comments: Cinnamon is an evergreen shrub or small tree with dark, leathery, aromatic leaves. In cultivation young trees are cut back twice a year and sucker shoots develop from the roots. These long slender shoots furnish the bark that is the commercial product. The leaves are used in tea. Cinnamon is a very popular culinary spice and it is also used in candy, gum, incense, toothpaste and perfumes. Comments: This beautiful tree has large dark green leaves that shade the fruit pods which grow directly from the trunk and branches. The flesh is eaten as a dessert, and the seeds are the raw material of commercial chocolate. Hot chocolate can be made by drying the seeds, roasting, grinding, and adding milk. Comments: Coffee plants have small white, fragrant, star-shaped flowers that are clustered in the leaf axils. They resemble gardenias to which they are related. The edible fruits are small fleshy berries changing in color from green to yellow to red. Two greenish-gray seeds are covered with a thin membrane and are enclosed in a dry husk-like parchment. Comments: This climbing cactus is one of the most beautiful and wide spread members of the Cactaceae family. The magnificent night blooming white flowers can be up to14 inches in diameter. Comments: With a history that dates back to 5,000 B.C. the edible fig is one of the most widely recognized and distributed fruits in the world. They were first introduced to the New World through Mexico in 1560 and then to California in 1769. It is one of the few fruits that can be grown in all fifty states, and there are a multitude of varieties suitable to each growing region. Comments: The muscadine grape is native to the southeastern United States and is found in the wild from Delaware to the Gulf of Mexico and westward to Missouri, Kansas, Oklahoma, and Texas. Many older varieties were selections from the wild, but the Georgia Agricultural Experiment Station and the U.S. Dept. of Agriculture have introduced a number of improved varieties that have become standard cultivars. The fruit have a smooth, leathery, green skin that has a slightly reddish hue when ripe. The pulp is creamy and moist and they are typically single seeded. Comments: The grumichama is a small, compact tree that can be grown as a standard or shaped as a hedge. The plants have beautiful glossy dark green leaves and rough corky textured bark. Fruit deep purple to black when ripe and they have a flavor very similar to that of jaboticaba. They are most often eaten fresh and used in jelly.

Comments: The jaboticaba forms a small bushy tree that has multiple ornate stems. The fruit are grape-like with a thick skin & melting pulp. They are eaten as fresh fruit, in jams and in wine. They can be frozen whole to enjoy throughout the year. Because the fruit occurs on the old growth it is best never to prune them. They are especially cold hardy plants, and they like a lot of water. Comments: Jakfruit trees are large by nature. They can be pruned annually to 12' x 12' producing as much as 200 Lbs. of fruit per year. It is the largest fruit that grows on a tree. The heaviest ever recorded weighed 275 lbs., but they are typically 10-35 lbs. Cooked green the fruit can be used as a vegetable. It can be boiled, fried, grilled, roasted, and prepared with sauces. Comments: Having the texture and flavor of an apple the jujube are often referred to as manzana or manzanita meaning apple or little apple. It is an important commercial fruit crop in Thailand, Vietnam, and India, and it is grown on smaller scales throughout Malaysia and Australia. Comments: The dwarf ambarella is a fast growing plant that will produce fruit in less than one year, and at a height of only two feet. Comments: The Vincent and Tomuri varieties both have low chilling requirements which make them suitable to USDA zones 8b-10 or from Miami to Jacksonville. A male plant must be present to pollinate a female to produce fruit, but just one male is necessary for every eight females within proximity. They can be grown in partial shade or full sun, and it is best to support the vines with a fence or trellis. The vines will fruit at just two to three years of age producing the true fruit of commerce. Kiwis are deciduous and will lose their leaves in the winter and then flush out with new leaves in March. Comments: The malay apple is a close relative to the wax jambu and the rose apple. Unlike the wax jambu the malay apple has a single marbled sized seed that separates easily from the pulp. The fruit are bell shaped and can be up to eight inches long. The taste can be described as a rose water flavored apple, and they are pleasant and cooling to eat. The trees fruit prolifically, and larger fruit size can be achieved by thinning the crop and watering heavily. The tree grows fast and large, and they typically have a Christmas tree shape.

It has the flavor and texture of sweet potato pudding and it is best served as a milkshake. It can be difficult to tell when the fruit is mature, because they do not have a color break like mangos and they will still be rock hard. The best way to tell if the fruit is ready to pick is to scratch the surface. If it is green underneath, then it needs more time. If the fruit is pink where scratched, then it is ready to pick. The outer skin is brown, leathery, and similar to that of mamey. The pulp surrounds one to two large seeds, and it must be cut free from both the seed and skin. It has the texture of cantaloupe, and are best eaten fresh out of hand.

Comments: Miracle fruit has a unique glyco protein that inhibits taste buds' perception of sour taste for half an hour up to a couple of hours. They can make lemons taste like lemon candy. The fruit can be used to enhance the flavor of grapefruit, strawberries, and lychees. The fruit also acts as an appetite stimulant for chemotherapy patients. The effects of the glyco protein masks the metallic taste that food tends to get after chemo treatment. Comments: With a history dating back more than 5,000 years olives have been and remain a fruit crop of incredible significance throughout the Mediterranean Basin. Most olive varieties require a significant amount of cold weather to produce fruit, but the varieties we offer are subtropical and have fruited as far south as Sarasota, FL. Comments: The Ross Sapote is a selection of canistel-like fruit introduced to Florida by Mr. William F. Whitman. It is unclear if it is simply a variety or a distinct species. Like the canistel the plant is evergreen, open and well adapted to subtropical climates. The fruit grows more in clusters and is smaller and rounder than the larger selections of canistel. It has an orange-yellow thin skin with a moist flesh that resembles a hard boiled egg yolk. They are commonly eaten fresh out of hand and in ice cream. The Sapodilla

Also known as nispero or chico sapote, this member of the Sapotaceae family is native to the Yucatan Peninsula of Mexico and Central America. Distribution of the fruit and trees began before Columbus discovered the New World, and now they can be found across the globe. Today the plants are cultivated almost exclusively for commercial fruit production, but the sticky sap called latex was also coveted by indigenous Americans. In fact, the sap is the original source of chewing gum or chicle in Spanish. Commercial fruit production is concentrated in Mexico, Southeast Asia, and on small scale in south Florida. Improved selections in recent years by Gary Zill and Dr. Richard Campbell have enhanced public opinion of both the tree and the fruit tremendously. The sapodilla fruit of the not so distant past were typically round, gritty, and born on very large trees. Now we have incredible cultivars that are oval or football shaped, that have the texture of a fine pear, and the tree size can be tailored to an individuals particular needs.

The flavor of sapodilla appeals to almost everyone, and it can best be described as a pear that has been soaked in brown sugar. They are best served fresh and chilled, and then they can be halved or cut into wedges. It can be difficult at first to tell when the fruit should be picked because they are still rock hard and there is no color break like with mangos. However, the fruit do have their own subtle indicators. By knowing the season that a particular variety ripens within, a grower can narrow the time frame down to an eight to ten week period. Over time a grower will become familiar with the size of a mature fruit, and this is one of the best ways to determine ripeness. Another sign is the outer texture of the fruit. Immature fruit are much rougher like sandpaper, but when the fruit is ready to pick it becomes smooth and even shiny in places. The fruit typically take four to five days to ripen once picked, and they are ready to eat when soft to the touch.

Commercial production of the fruit now spans six continents, and here in Florida is where most of the worlds commercial varieties were developed. The Tommy Atkin, Haden, Keitt, and Van Dyke remain the most popular commercial varieties, and they were all selected in Florida less than 100 years ago. Although Florida did enjoy a brief stint as a commercial mango producer, the fresh fruit market is now dominated by Mexico, Brazil, and Columbia. Ironically, the mango has never been more popular domestically, but the product has changed dramatically.

Growers in Miami, Houston, and Las Angeles are finding enormous satisfaction growing and harvesting one of the worlds finest fruits right in their own backyard. However, the needs of the dooryard grower are very different than those of a commercial producer. Dooryard growers generally prefer small trees that require minimal care and bear only the highest quality fruit. The criteria for commercial selections emphasize production, handling characteristics, and a red color.

Today they are grown on every continent except Antarctica, and they are famed as the "King of Fruits." Despite worldwide distribution they remain one of China's best kept secrets. The trees were first introduced to Florida in the 1930's, and the original grove is still in production in Avon Park. Today, commercial production is concentrated in an agricultural district southwest of Miami called the Redlands. Even though there is more than seven hundred and fifty acres of commercial production, the fruit is known to less than one percent of Americans. This is primarily due to the short period of time which the fresh fruit is available and its frustratingly short shelf life. In South Florida the lychee season is from late May to early July, and at this time they can be found in ethnic markets and gourmet restaurants throughout the country. To those entirely unfamiliar with the fruit they may appear bizarre and the name slightly unappealing. Often compared to eyeballs in appearance and mispronounced as a swamp dwelling bloodsucker, the delicious treasures don't always make good first impressions among Westerners. However, the flavor is

as exquisite as it is unique. The pulp is aromatic, sweet to sub-acid, separates easily from the seed and outer shell, and is unlike anything else on earth. They are as addictive as they are elusive, and the lychee can quickly become an expensive habit.

Dragon Fruit are native to Central and South America where they are known as pitaya or pitahaya. They are one of the most widely distributed members of the cactaceae family, and are now found on six continents. There are three species of dragon fruit in the genus Hylocereus and one species in the genus Selenicereus. Varieties of Hylocereus guatemalensis, Hylocereus polyrhizus, and Hylocereus undatus as well as hybrids of these three species are grown commercially worldwide. Selenicereus megalanthus is grown commercially on smaller scales in South America and is especially popular in Columbia. The dragon fruit flesh can be white, red, or magenta all to varying degrees dependant upon variety. The red fleshed varieties contain lycopene which is a natural antioxidant known to fight cancer, heart disease, and lower blood pressure. Despite the health

benefits and its spectacular appearance, the fruit has gone virtually unnoticed for centuries. Today it is the leading fruit export of Vietnam. It has even caught the attention of Snapple, Tropicana, and Sobe which are just a few of the major labels that have incorporated dragon fruit into their bottled fruit drinks. The sensation surrounding this fabulous fruit can be attributed to a legend created by ingenious Asian marketers.According to the legend the fruit was created thousands of years ago by fire breathing dragons. The jaina was treasured by all who were privileged enough to taste it, and it is believed that mans thirst for the jaina is what led to the destruction and eventual extinction of all of the dragons. The avocado is a rather unusual fruit that eats like a vegetable. In Florida's early days it was known as Alligator Pear, and it still is by many growers throughout the South. It is the only important edible fruit of the Laurel family, Lauraceae. Botanists have classified the avocado into three groups or races. They are the Guatemalan, Mexican, and West Indian. All three races are grown in both Florida and California, but it is the West Indian type that dominates the commercial scene in Florida and the Mexican that dominates in California. Avocadoes have two flowering types, A and B. It is a common misconception that avocadoes are either male or female plants. All avocadoes are self pollinating, and the male and female flowers occur on the same tree. The avocado is unusual in that the timing of the male and female phases differs from variety to variety. Each avocado flower is open for two days. The type A varieties open female in the morning of the first day and male the afternoon of the second. The B type varieties open female in the afternoon of the first day and male in the morning of the second day. It is absolutely unnecessary to have an A type and a B type present for pollination to occur. However some varieties do pollinate themselves better than others, and the varieties that have a low score for crop consistency, commercial planting, and home planting are among those varieties. Flower types are sometimes mixed in commercial groves to increase yield by an estimated 1-2%. That is an insignificant amount to a home gardener, but in a grove of several hundred acres it can impact the bottom line.

The name "allspice" refers to the flavor of the berries, which resemble a combination of cinnamon, nutmeg and cloves.

Cloves (Syzygium aromaticum)

loves (Syzygium aromaticum) are native to the Spice Islands of the East Indies and belong to the same family as allspice, the Myrtaceae. In fact, they belong to the same genus as the Australian brush cherry ( S. paniculatum), a commonly cultivated small tree or shrub in southern California. Also in this genus is the rose apple (S. jambos), a popular West Indian fruit that is native to southeast Asia. Unlike cinnamon and nutmeg, the clove spice comes from dried, unopened flower buds. Clove oil is extracted from the buds, stems and leaves, and is used in the perfume and soap industries and as a naturopathic, temporary remedy for tooth aches. Up to 80-95 percent of clove oil contains eugenol, a phenolic essential oil. Useful essential oils from the myrtle family may be phenolic or terpene derivatives, depending on the species.
