Dear Members, family and friends, I hope this months issue of Fresh Air finds you all fit and well. Winter is almost over and the solid base of fitness you have built over the winter months will pay dividends as Spring rolls around. In business and in life, times change and peoples goals, visions and aspirations change. A few months ago Mark Cohen, my brother and business partner of 15 years and I, decided it was time to part ways within the Step into Life group of companies. I announced this to the Step into Life Franchise group at our annual conference on the Gold Coast on Friday July 29th. Mark and I have parted our business interests on good terms and I wish him every success for the future and I appreciate the contribution he made to Step into Life during his involvement. I am very excited and passionate about Step into Life, the company I founded and I am looking forward to leading the company into the future. We have some very exciting items on the agenda to add to Step into Life group outdoor personal training and you will be hearing from me soon about these exciting additions, one of which includes a long awaited nutrition / weight loss program! Stay tuned! I would like to extend a very warm welcome to our new Franchise owners (please see the Franchise directory) and also to the new Franchisees who have taken over existing Franchise locations. Directors desk continued: At the Radisson resort on the Gold Coast and I know they are going to be excellent Step into Life entertrainers. It makes me very proud to see people make the decision to become a Step into Life member and improve the fitness and health and make a real lifestyle change. It is the ultimate compliment for these same members to enjoy the Step into Life family and concept so much that they take the time to assess the Step into Life franchise opportunity and then become Step into Life franchisees. Scuba Diving, Adventure touring on my motorbike, Melbourne Rebels, Arsenal FC (but that might change after there last effort) What is your favourite session and what results have you seen since starting SIL? As stupid as it sounds I like the cardio sessions. I feel alot fitter and am able to do a lot more.

Healthy Fast Foods
Most of us have good intentions when it comes to our health. Wed like to eat well and exercise regularly but often the realities of modern day living make this difficult. Fast food whilst convenient can often blow the calorie budget, adding unwanted saturated fat, salt and sugar to your diet. However, the good news is that many fast food outlets have now responded to the demand for healthy foods giving us the ability to look after our bodies plus get some food fast. Here are a few tips to keep in mind when selecting a meal at a fast food outlet: Meals made to order such as sandwiches and salads give you the ability to request certain items are included or left off. Request to have your dressing on the side, say no to butter or mayonnaise instead ask for a spread of avocado and for multigrain bread Always select grilled, steamed or baked as opposed to deep-fried. An unhealthy, high fat fish and chips meal can be quickly turned around by requesting your fish is grilled and then include rice and salad instead of chips Stay away from cream and coconut milk based sauces. These are especially high in saturated fats. Tomato-based sauces or broths are good alternatives. Be aware that drinks such as soft drinks, fruit juice and alcohol can add significant calories to your meal very quickly. Smoothies and milkshakes often contain the same amount of calories as a meal! Water is always a good choice. Portion sizes at take away outlets and restaurants are often far greater than you would consume at home. Consider sharing or request for a small or entre size. Exploring the world through food can be a lot of fun; here are a few tips to help keep you healthy at my top three cuisine picks: Japanese Sushi is a great choice. Go for rolls containing a good source of fresh protein e.g. salmon or tuna and veggies. Brown rice sushi is a great option. Avoid rolls with loads of mayonnaise. Chinese Broths, steamed dumplings with lean meat and veggies, stir-fries with steamed rice and fresh salads are great choices. Italian Go for tomato or olive oil based-sauces rather than cream-based. Request half the amount of cheese and extra veggies if ordering a pizza. Bulk your meal up with a garden salad (dressing on the side).

4 pieces skinless salmon fillet, about 125g (4 oz) each 2 tablespoons soy sauce 1 tablespoon dry sherry 2 tablespoons soft brown sugar 2 garlic cloves, crushed 1 teaspoon grated fresh root ginger 1 tablespoon sesame oil 2 tablespoons water 2 tablespoons sesame seeds 2 spring onions, chopped 250g (8 oz) dried rice noodles, cooked according to packet instructions 3 tablespoons chopped coriander leaves Place the salmon on a foil-lined grill pan. Mix together the soy sauce, sherry, sugar, ginger, half of the oil and the water. Brush half the marinade over the salmon and set aside for 10 minutes. Cook the salmon under a preheated hot grill for 5-6 minutes, turning it halfway through the cooking time and brushing with a little more of the marinade. Meanwhile, heat the remaining oil in a saucepan, add the sesame seeds and spring onions and fry for 1 minute. Add the noodles and any remaining marinade to the saucepan and heat through. Stir in the coriander. Serve the salmon on a bed of noodles.
