THE TRAINING REPORT ON PROCESSING AND QUALITY OF MILK AND MILK PRODUCT

CONDUCTED AT VERKA MILK PLANT (BATALA ROAD, AMRITSAR)

ACKNOWLWDGEMENT
Industrial training gives us opportunity to know about the processing and the quality control of the product. We are now aware about the responsibility towards our work and management. This report is about the internal experience which we get during the training of 6 months from (01-01-2014 to 30-06-2014). I am very thankful to the Prof. Vinita Aggarwal (Head of dept. Biotechnology, SSCMT, Amritsar) who gives us opportunity for industrial training in Verka Milk Plant Amritsar. I am also very thankful to G.M., Deputy Manager, Quality Control Manager and all the operators for helping me in understanding the technical things.

Intoduction
VERKA MILK PLANT AMRITSAR is situated in an area of 25 acres approx. This plant is situated in 8 km towards the cast of AMRITSAR, PATHANKOT HIGHWAY. It has very good site and location and well ventilated buildings. Milk Plant is a pioneer institutions of Punjab. Its foundation stone was first laid down in 20th August 1959 by S. PARTAP SINGH KAIRON Chief Minister of Punjab. First time production starts in VERKA MILK PLANT in 1962. The VERKA MILK PLANT has 100,000 litre milk capacity per day but utilizing only 55% of the capacity. VERKA MILK PLANT supplied the three lakh litre milk to the market in packets. The milk packets contain three types of milk i.e. Double toned milk, Standardized milk, Full cream milk. Various miscellaneous products made in VERKA MILK PLANT. Including this VERKA MILK PLANT, there are other eight milk plants in Punjab. These are as following: 1. Milk plant in Jalandhar 2. Milk plant in Ludhiana 3. Milk plant in Sangroor 4. Milk plant in Patiala 5. Milk plant in Bathinda 6. Milk plant in Chandigarh 7. Milk plant in Mohali 8. Milk plant in Muktsar

VERKA MILK PLANT supplied the ghee to various Gurudwaras which are under S.G.P.C. It supplies the 1000 metric tonne ghee to various Gurudwaras per year. The main Gurudwaras which collect ghee are: GOLDEN TEMPLE BABA BUDHA BIR SAHIB etc

The Milk Plant was registered on 28th February, 1979 under Punjab society act. The machinery in the Verka Milk Plant is a gift from the people of United States of America to the people of India. Plant is mainly divided into the three section: PROCUREMENT SECTION: This section deals with the purchasing and testing of milk records are made so that milk produced can be calculated. PRODUCTION DEPARTMENT: This department deals with the reception and processing of milk. QUALITY CONTROL LEVEL: In which quality of processed milk and of the each product manufactured from milk is checked by performing different tests.

MILK COLLECTION The milk collection is very vast process, in this process the collection of milk is done by MPCS (milk procurement cooperative societies). There are about 670-675 MPCS which collect the milk from villages. The raw milk comes from cooperative sector. There are seven chilling centers which situated about 40 km all around from VERKA MILK PLANT. The names of these chilling centres are: 1. 2. 3. 4. 5. 6. 7. These seven chilling centres collect the raw milk chilled at 5-8 degrees before supply the VERKA MILK PLANT. These chilling centres collect the milk from various villages dairies. The milkmen collect the milk from houses and put on the dairies. The dairies put the milk to chilling centres and these chilling centres supply the milk to the VERKA MILK PLANT by vans or trucks after chilling 5-8 degrees. The VERKA MILK PLANT collect milk according to the demand of costumers. It collect approx. 35000 litres milk daily from various chilling and directly from milkmen. The society present all over India collect the milk from producer in cans made of aluminum having capacities of 40 litres.

QUALITY CONTROL

EXPERIMENT NO. 1
TO CALCULATE THE MOISTURE CONTENT OF GIVEN SAMPLE. Apparatus:- Sample of ghee and paneer, moisture dish of Aluminum (7-8 cm in diameter and 2-2.5 cm deep), Dessicator and heating mantle. PROCEDURE FOR:a) GHEE:Weight of empty dish = X g Weight of ghee sample + dish = Y g Heat on mantle until fumes appears. Then cool the Sample containing dish in the dessicator to room Temperature and weigh it. Weight of dry matter + dish = Z g Loss in weight = (Y-Z) g Hence, Moisture content = weight loss/original weight X 100 = ____% b) PANEER:Weight of empty dish = X g Weight of paneer sample + dish = Y g Heat on mantle until appears brownish. Then cool The sample containing dish in the dessicator to room Temperature & weigh it. Weight of dry matter + dish = Z g Loss in weight = (Y-Z) g Hence, Moisture content = weight loss/original weight X 100 = ____%

EXPERIMENT NO. 2
TO CALCULATE THE %FAT AND % SOLIDS NOT FATS (SNF) IN THE GIVEN SAMPLE. (a) %FAT OF MILK BY BUTYROMETER METHOD Apparatus:- Sample of milk, butyrometer, tiltmeasure (BOD bottle with small slanting bottle mounted at the top), 10.75 ml pipette and centrifuge. Reagent:- Isoamyl alcohol
