Heading to the Tasting Room


Do not be intimidated for any reason. That is rule number one (and there are very few real rules after that). For the most part, going wine tasting is about the easiest thing in the world, especially here in California where wineries and tasting rooms abound. You can find wineries specializing in red wines of all types, those that are famous for their white wines and others who pour sparkling wine. It is a matter of doing a little research and planning your day. Most tasting rooms open around 10 a.m. and close between 4:30 and 6 p.m. Before you start off pack a few essentials: Water (plenty of water) and something to snack on crackers or a baguette. Many wineries have picnic areas and there are plenty of delis and bakeries that can make up a lunch for you, or make your own. Which brings us to eating and drinking, the kind that doesnt directly involve wine. Be sure to nibble during the day and make sure you make time for lunch. Two tips: drink at least twice as much water as you do wine, and remember that you dont have to drink everything poured into your glass. There is a reason tasting bars have dump buckets and a pitcher of water to wash out your glass. That said, here are some tips that have proven to be helpful and are designed to help make the sensory adventure of wine tasting all the more enjoyable. Dont be afraid to ask questions. Time and time again I have heard knowledgeable winery workers say that there is no such thing as a stupid question, and they mean that. You can drink what you want, in the order you want. If you only like reds, say so; if you dont like sweet wines, speak up. But the idea of starting with whites, then going on to reds and then sweet wines is a good guide. Zinfandel is red. I am sure you know that but it never hurts to remind everyone. If there is a particular wine you want to try and it is not on the list, ask. There might be a bottle around that was opened for a trade tasting or by the winemaker. Most tasting rooms are happy to pour a little if you show enthusiasm. If you plan to take wine home with you, either in the car or on a plane, buy a cardboard box with Styrofoam wine inserts. Fill it during the day and this keeps wine from rolling around in the trunk. Check out the smaller wineries. It is a revelation. Take notes on the wines you most enjoyed. Take advantage of tours when the winery offers them, but keep in mind that they take anywhere from 20 minutes to well over an hour, so one a day is plenty. Buy wines that you can only find at the winery. These often include smaller (375 ml) bottles of limited production Ports or dessert wines. Dont buy a wine you can get at a supermarket back home. Youll pay more, and besides, whats the point? Look for tasting rooms in towns. Many of these are cooperative tasting rooms, where in one place you might find wines from a dozen or more small-to-medium premium producers. They are scattered throughout the area and more are opening all the time. Dont give too much thought to ratings and vintages. Its like art: if you like it, its a good wine. It is as simple as that. Remember that you dont have to do the driving. It takes no more than a phone call to rent anything from a Town Car or restored classic convertible to stretch limos and a 20-passenger bus. All have drivers that will stow your wine for you and the local companies know the area. As to taking that wine home, ten people sharing one of those impossibly long limousines is fine and fun, but if you all plan to buy a couple of cases the trunk which is no bigger than a normal luxury cars is going to fill up fast and youre going to find yourself filling the interior floor with boxes and using cases of Cabernet as footrest. Tell the transportation company what you have in mind and listen to their advice. They know the territory and the people and personalities. Know your limits. If you get close to it let others taste and you can listen. It beats ending the day in a blur, and if need be calling a taxi is cheaper than the alternative. And if at a seated tasting, dont be afraid to leave a gratuity. Its more than worth the five or ten dollars to get wisdom and wine and a great time. BY CHARLES NEAVE

One of the questions most asked when it comes to wine is how much of this does it take to make that, and so on. We wont pretend that its simple, but here are some industry statistics that will give a pretty good answer to that query. As with anything agricultural, of course, they are all based on countless variables when it comes to acre yields, but this is a good starting point. The rest of the information varies little if at all.

A case of wine includes:


a dozen 750 ml bottles (or 24 half bottles) or 307.2 ounces total, which comes from almost 30 pounds of grapes.

A single bottle contains:


750 ml of wine which is 25.6 ounces made from about 2.4 pounds of grapes (39 oz.) and is enough for four or maybe five glasses.

An acre of vineyard land can give the grower:


four-five tons of grapes (though it is also less, depending on a variety of farming and winemaking practices, and on the varietal and the vineyard One standard oak barrel of wine holds: location) which will give you 797 gallons of juice 295 bottles of wine (or 59 gallons) made from 740 pounds of grapes (or thirteen-and-a-half barrels) which is pretty close which works out to almost but not precisely 24+ cases of wine. to four thousand bottles of wine.

How does wine get so many flavors and aromas?


Each type of grape, also referred to as a grape variety from Chardonnay to Zinfandel gets its primary flavors as it grows on the vine; it creates a default flavor profile based on the grapes genetic composition. This primary flavor profile forms the grapes true varietal character. For example, you may have noticed flavors and aromas similar to melon and tropical fruit in virtually every Chardonnay; blackcurrant and cassis in Cabernet Sauvignon; red and black cherry in Pinot Noir. Although there are always variations in degree, these characteristics are fairly typical of wines made from these grapes regardless of where the wine is made or who makes it. True varietal character develops as the grapevine, like all plants, converts sunlight energy to chemical activity in the natural process of photosynthesis. Yeast, a microscopic organism living on grape skins, gets to work releasing true varietal character and creating even more flavors once thousands of grapes have been picked from vines, cracked open, and transferred to a tank or bin. As sugar in the grapes is converted into alcohol by yeast, sweet fresh juice evolves into dry, potent wine. Later, even more wine flavors and aromas emerge during the wines aging period when chemical compounds interact with each other and microscopic amounts of air. Generally, fragrance developed during aging is referred to as wine bouquet, while aroma derives directly from fermentation. Wines aged in oak barrels get additional contributions of aroma and flavor from wood, variable due to differences in both the geographic origin of the tree (most often, America or France) and the degree to which the wood is toasted (heated by exposure to an open flame). Toasted oak can add hints of coconut, vanilla, mocha, coffee, toasted bread, or clove, among other aspects, while injecting sweetness to the wines bouquet. Brand new barrels filled with wine for the first time add these qualities with significantly greater impact than older barrels. Old, aroma-less barrels, referred to as neutral, are used to hold wine during aging without adding new flavors. While primary flavors and aromas originate from grapes, specifically, its the grape skin that gives color to wine.

Dario Sattui knows how to give a wine country experience unlike any other. Castello di Amorosa, opened in 2007 after fifteen years of planning and construction, is true to the Sattui form. The 107 rooms of the 13th-century-styled castle contain ramparts, hand-painted frescoes, a torture chamber and labyrinthine cellars amidst their 136,000 square feet, making the Castello a winery like no other anywhere in the United States. Theres even a chapel, too, and all this takes place inside a structure of imported European brick, wood and iron, as well as more than 8,000 tons of Napa stone. As is to be expected, given the Sattui philosphy of wine, there are lots of options at least a dozen and a half at last count. These various offerings can be tasted as part of the General Admission and Tasting or the Reserve Tasting, and wine and chocolate pairing is always an option, too, as is non-alcoholic bottled grape juice for non-imbibers. Grapeseed oil and grapeseed flour are available for purchase. These are healthy, antioxidant-rich products that are produced from the seeds of Castellos wine grapes. Touring options abound and definitely help to heighten the experience. Reservations are likely required, so plan ahead accordingly as you choose from a Tour and Tasting, Tour and Reserve Tasting, Young Adult Tour, Wine and Cheese Pairing, Royal Food and Wine Pairings in the Royal Apartment or Hiking Vineyard Tour. Each takes about two hours, including the wine tasting, and each include barrel tasting in the Grand Barrel Room. For those seeking the ultimate experience, the Blending Seminar is for you! If there ever was a benign cult, it would be that centered around Napa Valleys Frank Family Vineyards. Mention their Chardonnay, Sangiovese, Zinfandel, any of their Cabernets or other wines to someone who loves the grape and their eyes will brighten showing their desire for a taste. Yes, their wine is that good, and a visit to their northern-valley tasting room becomes almost a pilgrimage. The tasting room in the impeccably restored Craftsman house has been rated among the top in the nation. And, while praise for the winery, the wines and the tasting room may be completely up-to-the minute, its history goes back more than 125 years. In 1884, it was known as Larkmead Winery; today, it is considered to be a prime example of California Wine Country architecture, listed on the National Register of Historical Places. The grounds are expansive, with a beautiful lawn, picnic tables, majestic oaks and trimmed hedges that complement the winery and tasting room. Inside the tasting rooms, the business of winemaking is balanced with good humor and as much information as you want. Or simply enjoy the tastes. That is perfectly fine with them. As tasting room manager, Aaron Feaver says, I want visitors memories of the winery to be as much about their experience here as the wines they taste. These wines are pretty spectacular, as you will discover on your first visit but assuredly not your last. By Charles Neave

The oldest family-owned winery in the Napa Valley, Nichelini was established in the Chiles Valley District by Italian-Swiss pioneer winemaker Anton Nichelini in 1890. Anton planted many of the sites still in use by the current generations of this family enterprise. Not only is this one of the longest continuous winemaking families in the United States, but the scenic drive to Chiles Valley will take you back, mile by mile, to a simpler time. With the exception of the road, much of what surrounds looks as it did one hundred years ago during the first heyday of winemaking in the North Coast. Upon arrival, visitors are greeted by a snapshot of Napa winemaking circa 1900, including a gigantic Roman-style wine press which was used commercially until 1955. The vineyards are nearby and range in age from two-decades to nearly ten decades thats what comes of caretaking the same set of rows generation after generation. Inside the 1895 seven-bedroom farmhouse, the bottom floor is now a tasting room, and outside are picnic tables and a bocce court. No reservations are required for groups of up to a dozen, and the winery does offer tours of the facility and barrel chai. Another benefit of being in the wine business as a family for so long is the ability to make wines which speak from the winemakers passion rather than for large commercial distribution. The tasting room is generally the only place to taste and purchase these fifty- to one hundred-case lots, and not many other locations anywhere, let alone in Napa, can give you access to heritage bottlings of old world reds like Petite Sirah and Primitivo. Whats most impressive, though, is the guiding philosophy the family will share with you while you are there, tasting the wines and enjoying the locale: We encourage you to step back in time and let us take care of you. WHAT TO TASTE The family is justifiably proud of all of their releases, but if pressed and asked when unaccompanied by other family members, universal praise was heaped upon the white Old Vine Muscadelle de Bordelais, made from Sauvignon Vert vines planted in 1946, and the Old Vine Zinfandel, made from vines planted in 1929 by Anton Nichelini himself. PLAN AHEAD Many of the winerys bottlings are made in such small quantities that only club members gain access to them. The same goes for barrel tastings, wine-and-food events and vineyard tours. Consider joining the wine club when you visit to have total access to winery life. LITTLE KNOWN FACT Anton Nichelini was the first Swiss settler in Chiles Valley, establishing his homestead in 1884. Their most unique wine is the Moscato which is fermented dry (i.e. almost no residual sugar), making it one of the few Moscatos that is not a dessert wine. This wine is the ideal pairing for oysters! Taste the history from Mario and Mary Trinchero, the familys winemaking heritage. Trinchero Napa Valley focuses on small lot estate grown wines specializing in single-vineyard Cabernets. The Trinchero family descendants designed and built a new winery, tasting room and luxurious hospitality center in 2007 with views of the Howell and Spring Mountains on the twenty-two acre site. The site has wine education programs and a Tuscan-style culinary center, which features indoor and outdoor kitchens, culinary gardens and a wine cellar. The new fermentation center design reflects New Yorks Grand Central Station and the barrel room has 1,400 French oak barrels. The familys history is displayed throughout the hospitality center and tasting room. There is a lot of history behind this winery. John Ballentine emigrated in 1910 from County Tyrone, Ireland to the Bay Area. His son Van grew up in the Napa Valley helping to plant vineyards, prune vines and make wine. The history of this winery also involves the Pocai family from Italy. Over time, their winemaking, their families and their fortunes intertwined. Even the devastating San Francisco earthquake of 1906 played a part. Luck was also a major player, especially when it came to the acquisition of some of the best vineyard land in the entire Napa Valley. Luck can never be an underestimated component when it comes to successful winemaking, a fact that continues to this day. When you enter the tasting room at this working winery, youll find a long, stylish room with chocolate-hued walls, an L-shaped bar and lots of stone and wood. Windows on the north look out on vineyards, the floor is slate, the lighting modern, and youre likely to find yourself talking to the owners and their always-friendly staff. Words hardly do justice to St. Clement Vineyards and Tasting Room. Set high above the Napa Valley floor in an 1870s Victorian house, St. Clement is at once regal and inviting. St. Clement Vineyards was a private residence until 1976 when it became a winery dedicated to producing world-class wines. The home itself was built in 1878 and is a remarkable piece of California Victorian architecture. Think period-appropriate paint, decor and details like carved arrows in the eaves to ward off evil spirits! More than half of Napas 33 different soil series and 100 different soil variations are represented in St. Clement wines. For more than 130 years, Beringer Vineyards has reflected the rewards of hard labor, agricultural pride and determined viticultural stewardship. One winery I cant stop talking about is HALL St. Helena. Unveiled late last year, the reimagined winery and Visitors Center combines both the old and the new; a sophisticated tasting room, a historic Napa Valley building dating back to 1885, a modern art collection both inside and out and, of course, exquisite wines. The first thing youll notice about HALL is its huge sparkling new rabbit sculpture on Highway 29. Bunny Foo-Foo is one of the incredible works of famed artist Lawrence Argent, who also did a similar installation at the Sacramento Airport. Modern, one-of-a kind sculptures are infused throughout the buildings and in the gardens. On the lower floor of the main building is a state of the art winemaking facility, and was in fact the first LEED Gold Certified Winery in the State of California. If you look up above the fermentation vats, youll see red glass sculptures and large pinwheels that appear to float from the ceiling. Inside their sophisticated glass-walled tasting room youll be greeted with a splash of Sauvignon Blanc, their welcome wine followed by awared-winning Cabernets (HALL has more than 30 wines rated 90+). The winery produces 12 different Cabernets each from small lot vineyards, and each with remarkably different qualities. Ca Momi brings a taste of Italy to the eclectic mix at the Oxbow. Its a full-service restaurant, Enoteca (wine bar) and retail shop, all rolled into one, where patrons have a choice of services. The Drink Serving as the winery tasting bar, Ca Momi Enoteca provides a place to sit and savor. Known for its Rosso di Napa a complex red blend Ca Momi also makes Cabernet Sauvignon, Chardonnay, Pinot Noir, and a selection of other wines in small lots, as well as serving wine from other local boutique Italian-varietal producers. The Food Ca Momi is one of only a few Italian restaurants in the country to be certified by Verace Pizza Napoletana (VPN), meaning it specializes in truly authentic pizza Napoletana created with the same genuine technique found on the streets of Naples, Italy. An essential part of the arduous process requires that pizzas be cooked for 90 seconds in a wood-burning oven at 900 degrees. The finished pie has a raised edge crust soft, elastic and easily foldable not crispy. Bill Cadman, the owner of Tulocay Winery, is a treasure of information about wine. He is also a witty, humorous and thoroughly entertaining gentleman. Well, the gentleman part might be a bit of a stretch. Bill is old-time Napa, with not an ounce of pretentiousness about him. Nowhere else can you sit down with someone as knowledgeable or as approachable as Bill Cadman. He simply does not have a snobbish bone in his body. His irreverent, light-hearted take on the business of winemaking, however, belies his superior skills. This is seriously good wine. He doesnt even maintain a pour list. Hell just ask what you like and open bottles accordingly. In 1972, Bill brazenly bought an old chicken farm and began pestering the local wineries for a job. He started his career by operating the crushers at Charles Krug. From there he went on to enjoy a long history in the industry, working for the likes of Robert Mondavi, Joe Heitz and other giants of the winemaking world. In 1975, after consuming copious amounts of wine one evening, he made the presumptuous decision to open a winery himself. My friends looked at the old chicken coops and declared them perfect for a winery. In my altered state, I agreed! What ensued was the creation of a refreshingly relaxed wine country experience and a Pinot Noir that would launch his career. He has been enjoying the heck out of life ever since. By Ronda Giangreco

Follow the aroma of wine and wood-oven-fired pizzas to Napas buzzing hub, Oxbow Public Market, where Ca Momi resides. Its a place to kick back riverside, while biting into the perfection of traditional Napoletana pizza pie and other Italian-inspired bites, and sipping Ca Momi wines. Ca Momi is owned and operated by three spirited Italians, who wanted to make wine in Napa Valley, while capturing the essence of their Italian heritage. Ca Momi brings a taste of Italy to the eclectic mix at the Oxbow. Its a full-service restaurant, Enoteca (wine bar) and retail shop, all rolled into one, where patrons have a choice of services. The Drink Serving as the winery tasting bar, Ca Momi Enoteca provides a place to sit and savor. Known for its Rosso di Napa a complex red blend Ca Momi also makes Cabernet Sauvignon, Chardonnay, Pinot Noir, and a selection of other wines in small lots, as well as serving wine from other local boutique Italian-varietal producers. The Enoteca has several award-winning beers on tap or by the bottle. A variety of Italian sodas and refreshing sparkling waters are available, too. The Food Ca Momi is one of only a few Italian restaurants in the country to be certified by Verace Pizza Napoletana (VPN), meaning it specializes in truly authentic pizza Napoletana created with the same genuine technique found on the streets of Naples, Italy. An essential part of the arduous process requires that pizzas be cooked for 90 seconds in a wood-burning oven at 900 degrees. The finished pie has a raised edge crust soft, elastic and easily foldable not crispy. The sit-down restaurant also serves traditional Italian plates: Tagliatelle alle fave, pecorino e menta (pasta with fava pesto, mint leaves and pecorino romano) or Crespelle ai funghi (a thin pancake filled with Wine Forest mushrooms, parmigiano reggiano and mascarpone) and Italian pastries that would have inspired da Vinci to sculpt a cream puff By Denise Olliffe from marble.

GOOD TO KNOW Ca Momi means House of Momi, the namesake of their villa and vineyards in Veneto, Italy. Folks can grab small bites at the Ca Momi Enoteca bar, serving an assortment of antipasti, imported and local artisan meats and cheeses, piadine and more.
