What is MicroElements?
A diverse blend of vitamins, minerals, polypeptides, and amino acids that have been identifed as essential precursors required
to build yeast biomass, with 100% organic nitrogen, all compressed into a convenient tablet form. Gusmer Enterprises has been
formulating fermentation nutrients for many years and has developed MicroElements Brewing Nutrients based on the latest
fermentation research and with the highest quality, bioavailable ingredients for maximum assimilation by the yeast.
A Unique & Notable Nutrient
Unlike traditional yeast nutrient products, which contain a high percentage of inexpensive diammonium phosphate (DAP) and
yeast hulls, MicroElements Brewing Nutrients do not contain DAP. Instead, our research team has found that our proprietary
blend of pure vitamins, minerals, and yeast extract gives superior fermentation performance. Breweries enlisted in product
testing noted better yeast focculation, increased yeast viability, higher RDFs, increased rates of fermentation, and positive
sensory evaluation.
Technical Information
In keeping with good sanitation practices, the easy to use tablet form allows for accurate dosing and virtually no dust, thus
eliminating the risk for airborne contamination in the brewery. All ingredients in MicroElements Brewing Nutrients Tablets
comply fully with the Adjunct Reference Manual published by the Beer Institute and adhere to the TTB standards. The product is
non-GMO, non-BSE certifed and formulated in the USA and under GMP conditions.
Application
MicroElements Brewing Nutrients Tablets are designed for use at the kettle or fermentation vessel in all types of brewing,
especially high gravity brewing, or in yeast propagation regimes. Its a complete fermentation nutrient supplement. Add during
the last 10-15 minutes of boil for the tablet(s) to fully dissolve prior to knockout.

Enzymes
Enzymes are some of the most important and complex proteins found in nature and are vital to all biological systems. Brewing
could not exist without the enzymatic actions activated from grains during the malting process. Understanding these natural
enzymatic systems allows brewers to apply them to the betterment of the art of brewing.
Novozymes, the worlds largest manufacturer of enzymes to the food industry, developed the frst commercial enzyme for
beverage processing over 35 years ago. Together, Novozymes and Gusmer have since dedicated many years of research
and application development to the continued advancement of enzyme preparations for use in brewing. Today, enzymes are
used by commercial brewers to increase extract and attenuation, control diacetyl, improve fltration, and more. They are a
fundamental tool for consistent production of high quality beer.
Novozymes produces brewing enzymes through natural fermentation processes, which are purifed and standardized on these
key activities. These enzymes can be applied throughout the brewing process to increase process effciencies, brew to brew
consistency, and overall quality. They can also allow for the creation of unique and alternative-style beers.
Enzymes in brewing:
Enzymes are a protein molecule with a characteristic sequence of amino
acids that folds into itself to produce a distinct 3-D structure. The
complexity of the structure creates very specific activities for each enzyme.
Brewers grain contains inactive enzymes that through the malting process
become active and available to react with specific substrates in the grain.
Some of the critical enzymatic activities developed during malting that are
essential for brewing are amylases, proteases, lipases, and cellulases.

Cask Ale
Cask Ale Preparation
Preparing beer for cask packaging is a key part of the overall
process for producing quality and consistent beer that will always
delight your customers.
After fermentation is complete and the temperature reduced to
between 6C and 8C (43F - 46F), and brink yeast has been
recovered, the residual ale yeast will naturally flocculate within the
fermenter and can be drawn off, or else a portion of beer can be
run through a centrifuge and a residual yeast count of around
1x10

cells obtained by bypassing some of the flow.
The green beer is then moved to racking tanks and is stored at
this stage for typically no more than 24 hours. As the green beer
is transferred, auxiliary finings are added. These are typically silicates or alginates and these bind and fine out
residual protein from the beer and protect the beer from producing a haze. The fermentable residue can also be
controlled by the addition of priming sugar, usually sucrose.
Beer is then run to the packaging line where each cask has a small quantity of isinglass finings added.
Upon delivery to the retail outlet the casks are stillaged on their bellies, the keystone tapped and a soft spile is
inserted in the hole in the bung. Secondary fermentation takes place in the cask producing natural carbonation of
the beer and the degree of fermentation can be judged by the level of gas escape through the soft spile.
Once the level of carbon dioxide production slows then the soft spile is replaced with a hard one which ensures that
the entrained carbonation in the beer remains in solution and provides a perfectly conditioned beer.
Once the beer has stopped working, the isinglass plays its part in the process. This removes the residual yeast as
isinglass has a net positive electrostatic charge while the yeast is predominantly negative and this facilitates the
rapid and complete settling of the yeast into the belly of the cask.
The keystone lies just above the cask belly, and as beautifully conditioned and sparkling clear beer is drawn off, the
sediment remains undisturbed in the cask. Once the cask is below half full, it is gently stooped forward so that all
but the last few pints can be dispensed. It is important to replace the hard peg between sessions to maintain
condition.

and Antifoam
AB Vickers is the premier name in antifoam, and both kettle and cellar finings. Their roots are in the United
Kingdom where the importance of finings both in the brewhouse and cask are well understood. Gusmer Enterprises
is proud to offer these finings in North America.
Cryofine (CRY 151)
Cryofine is purified isinglass in a convenient powder form. It is added to beer at the end of fermentation to speed
maturation and improve filtration by removing yeasts and protein particles. For the purposes of rapid dissolving,
enhanced performance, and long shelf life, the isinglass in Cryofine has been pre-hydrolyzed and freeze-dried.
Cryofine also contributes to the actions of both silica gels and PVPP.

Breakbright Super Tablets (BST 311)
Breakbright Super Tablets are an extremely convenient way to promote a bright and flocculent kettle break.
Breakbright Super Tablets consist of kappa carrageenan derived from the red seaweed Eucheuma cottonnii. Simply
drop these tablets into the kettle 10 minutes before the end of boil and experience brilliantly clear wort at knockout.
Beer will benefit from this product from wort cooling through filtration.

Foamsol S (FCS 130)
Foamsol S silicone antifoam is an inert polymer which is highly effective in foam
suppression in both the kettle and fermenter. Foamsol S preserves foam positive
proteins which contribute to the head retention quality of beer. One of the most
important benefits of Foamsol S is the increased iso--acid utilization from hops.
The effect of controlling foam in the fermenter will retain iso--acid and allow a
reduction of up to 15% of the kettle hops. Other benefits include increased kettle
and fermenter utilization, as well as eliminating the loss of product from foam
during fermentation.

Silica Gels
Customers will judge your beer on a number of different parameters: aroma, flavor, head retention, and clarity.
These last two are not mutually exclusive. You can have one and not the other. Chill haze is caused by the com-
plexing of proteins and polyphenols which are insoluble at cold serving and storage temperatures. PQs
BRITESORB Silica Gels remove only the proteins that cause haze. These highly selective adsorbents leave the
larger proteins that contribute to the brilliant, long lasting foamy head that you have worked so hard to achieve.
BRITESORB A100
For chillproofing lighter style beers, BRITESORB A100 is the most effective choice you can make. The surface of
BRITESORB A100 is engineered with moderately sized pore openings that block the entry of larger foam-enhancing
proteins. At the same time, the large surface area inside the pores ensures the adsorption of virtually all proteins
that cause chill haze. Because BRITESORB A100 is a hydrogel, it is non-dusting and has a minimal content of fine
particles. As a result, you should expect higher filtration rates and longer filter runs. Available in 50 lb bags.
Dose Rate: Beers up to 65% malt ratio: 40-50 g/hl; 1.4 - 1.8 oz/10 bbls
Beers greater than 65% malt ratio: up to 80 g/hl; 2.8 oz/10 bbls
BRITESORB D300
For chillproofing a wide range of higher malt ratio beers, BRITESORB D300 cant be equaled. This silica xerogel
uses the same adsorption principles as BRITESORB A100. In addition, the surface structure is activated by a pat-
ented process that increases chillproofing effectiveness. Filtration is also improved because, unlike other xerogels,
BRITESORB D300 is manufactured to a larger particle size that wont slow flow rates. Available in 40 lb bags.
Dose Rate: Beers up to 70% malt ratio: 25-40 g/hl; 0.9 - 1.4 oz/10 bbls
Beers greater than 70% malt ratio: up to 60 g/hl; 2.1 oz/10 bbls
Preparation of BRITESORB
BRITESORB should be slurried with deaerated water at 10 percent of total slurry weight (100 grams per liter). The
slurry should be continuously agitated during mixing and dosing to keep it in suspension. Carbon dioxide should be
bubbled through the slurry to minimize oxygen pick-up.

The BRITESORB slurry is proportioned into the beer on its way to final filtration. In order to provide a minimum
contact of 10 minutes, a buffer tank is recommended. The BRITESORB manufacturing process optimizes particle
size for compatibility with your current filter aid usage.
Batch Method
Add BRITESORB slurry to beer while filling the finishing tank. Slurry should be proportioned into the beer through-
out the entire filling operation. Once the adsorption process is complete, particles settle and are easily removed dur-
ing tank cleaning. Inadvertent over-dosing or contact time of several days causes no negative effects in the beer.

Even after filtration, beer, no matter how clear, contains
dissolved phenolic compounds and proteins derived
from the raw materials. After a relatively short time,
these compounds form complexes which later cause
turbidity.
Haze in beer is caused mainly by polyphenol-protein
complexes. Divergan F PVPP (polyvinylpolypyrrolidone)
selectively adsorbs the polyphenols that cause turbidity.
Removing the excess polyphenols responsible for this
problem considerably improves the colloidal stability of
beer. There is evidence that this also improves the
stability of the taste, as the flavonoid polyphenols, in
particular, are prone to polymerize to products of higher
molecular weight that have a bitter flavor.
Usage
The preferred method of introducing Divergan F is to
meter it continuously into the beer stream with a
metering pump. Divergan F can also be added together
with the filtration agent. Provision must be made for a
contact time of at least 3 minutes. In calculating the
contact time, the sludge capacity of the filter must also
be taken into account.
For breweries without continuous metering capabilities
beer can be treated in the tank in a batch method. This
is best done the day prior to filtration. Mix enough
Divergan F with deaerated water to treat the amount of
beer in the tank. Depressurize the tank and introduce
the Divergan F to the beer through the spray ball. Flush
the spray ball line with a small amount of deaerated
water to make sure all of the slurry is added and so not
to clog the line. Repressurize and bung the tank. Allow
the Divergan F to sediment out to the bottom. Filter beer
as you would normally.
In some breweries, silica gel is added together with the
PVPP to the same supply tank. This gives a highly
efficient combination of filtration and stabilization effects
that also saves on capital investment, as no further
equipment is required.
Dosage
The optimum rate depends on many factors; contact
your Gusmer Representative for a recommendation.
Stability, raw materials, cellar equipment, degree of
clarification prior to filtration, and the type and quantity of
other stabilizing auxiliaries used are all considered when
determining dosage. General recommendations are
found in the table below.

Divergan F is available in 1 kg or 5 kg packs, as well
as 20 kg drums.
A Reusable Form of Divergan PVPP
Divergan RS is intended for reuse and is a highly
economical option due to recycling of the PVPP. The
recycling process does require special filtration and
regeneration equipment. Consult your Gusmer
Representative for further regeneration options.

Caramel in the Brewing Process
A valuable brewing ingredient for more than a century, caramel contributes to the character of
beer on every continent. Caramel provides color, favor, and consistency in beer. It also has
applications in a variety of related products, including cider and non-alcoholic malted beverages.
What is Caramel?
Caramel results from the controlled heat treatment of carbohydrates, typically glucose syrup.
The glucose and food-grade catalysts are used to facilitate the browning process and provide
stability. The fnished beer caramel, a long polymer chain, is a positively-charged colloidal
solution and thus stable in beer, which is also positively charged (because of proteins). Caramel
is inert, physically stable when stored properly, and bacteriastatic if not totally sterile.
Why Use Caramel?
Caramel is a great way to adjust beer color throughout any part of the brewing process.
Caramel allows you to adjust color in the kettle and as late as fnal fltration or serving tank.
With caramel you can darken your beer without adding the astringent favors associated with
dark malt.
Dosage
Dosage will vary by style. Traditional ales contain 0.02% or more of caramel coloring to add color and some favor character. Certain
dark beers, including some Stouts and Bocks, might require higher caramel dosage. Lagers require more minimal caramel amounts
for color consistency (typically 0.01%) than other types. Adjusting a lager type beer to a Bock beer color would require an addition of
0.05-0.075%.

Whether its pressure leaf flters or candle flters, the basis for all good flter cakes is a sound
pre-coat, and Gusmer has been manufacturing the flter pre-coat materials that are used
in beer fltration for decades. Gusmers Cellu-Flo flter aids are widely used throughout the
industry as a pre-coat material, because of their ability to form a fbrous matrix on the flter
screens that provides a proper site for flter cake formation. This fbrous matrix also serves
to protect the flter screens, virtually eliminates bleed through, adds cake stability, and allows
for a quick and clean cake release at the end of the flter cycle.
Cellu-Flo flter aids are available in many different fber length distributions and formulations, including both cotton
and wood pulp formulations, uncharged and charge modifed formulations, and fber blended products.
Recently introduced is the Cellu-Flo FB series, which is a fber/perlite blended pre-coat and bodyfeed material
especially designed for quick pre-coat cycles on rotary vacuum flters, plate flters, pressure leaf flters, and candle
flters. Cellu-Flo FB is available in three different formulations for coarse and polish fltrations.

regular cleaning, maintenance, and inspections should
be conducted on flter presses. There are a number of
common problems that can be resolved with regular
inspection, maintenance, and training.

Operation

Typically, a flter press consists of a series of plates
equipped with inlet and outlet ports. Depending on the
type of press, the ports may be internally or externally
ported. When the press is closed and tightened through
manual or hydraulic means, the plates, gasketed ports,
and sheets are closed to form a tight seal for feed and
fltrate passage. The unfltered product passes through
the inlet ports of the plate to the depth flter sheet. The
depth flter sheet separates the undesired contaminant
and allows the cleaned product to fow to the outlet
plate. The outlet plate distributes the cleaned product to
the discharge or outlet port.

Membrane Filters for Microbiological Stabilization
Applying membrane filtration to your beer helps ensure the complete removal of
particles and microoganisms. The unique design of the Vitipore II and Vitipore II Plus
cartridge filters provides a membrane filtration solution with superior microbial retention
performance to ensure safety and preserve product flavor and appearance. The PVDF
membrane has the lowest color and protein binding of any common cartridge
membrane to leave more in your beer. All Vitipore II membrane filters are 100%
integrity tested during manufacturing.
Filtration
All EMD Millipore filter cartridges are available in 10, 20, 30, and 40 inch lengths and Code 7, Code 0, and Code 5

Filtration
Installation:
Assure that the housing, pressure gauges, valves,
gaskets, and o-rings are in good working order (housing
o-rings should be replaced on a regular basis).
Carefully remove the cartridge from the packaging
material and inspect. Use caution when opening the
filter bag scissors are recommended. Each filter
cartridge is stamped with the grade and comes with
a quality certificate in the box. Verify that the correct
filter is being installed for the intended application.
Wet the o-rings with water and install into the
housing, being careful not to roll the o-rings upon
installation.
Run ambient temperature water* through cartridges
under a little back pressure to fully wet out the filter.
Sterilization & Cleaning:
The prefilters and sterile filters should not be sterilized
in-line with the bottling equipment. Bypass the filter
housings and sterilize separately. EMD Millipore
recommends the use of hot water* (180F) for 30
minutes for sterilization of filters and filter housings
(time period starts when the housing outlet comes to
temperature). Once the proper temperature is
reached, take care to use only a low hot water flow
and low differential pressure, such that it maintains
the housing temperature.
Each hot water cycle should always be preceded and
followed by an ambient water* rinse cycle.
If hot water is not available, the filters are compatible
with a wide range of sanitation chemicals. Please
consult your Gusmer representative for specific
information.
Ensure that filter housings remain fully vented during
cleaning and sterilization.
Filters can be flushed with warm water* in a forward
direction after use to remove any soluble residue on
the media. The flow rate should be roughly equal to
that of the process flow during operation.
Some filters can be back flushed. Please consult your
Gusmer representative for specific information.
Avoid pressure shocks and water hammer
especially during cleaning/sanitation with hot fluids.
Operation:
Differential pressure (inlet minus outlet P) should be
monitored regularly. Differential pressure increases as
the filters plug, eventually leading to a loss of flow
through the filter. Differential pressure increases
exponentially. It may take many weeks to reach 80%
plugged, but only a few hours for the final plugging to
occur.
A common practice is to terminate the filtration and
clean or change the cartridge(s) when the differential
pressure reaches 30 psi.
Operate the process at the lowest, consistent flow
rate to have a positive effect on filter performance. A
higher face velocity leads to faster plugging.
Avoid pressure shocks and water hammer on the line.
* Use fltered, softened water for wetting, cleaning, and sterilization to avoid fouling the cartridges.

Integrity Testing:
Integrity testing is only conducted on final membrane
cartridges and is conducted per the recommended
specifications of the manufacturer for the specific
membrane used. Integrity testing is conducted after
the sanitation cycle, both prior to and after the bottling
run. There are a few different methods for integrity
testing, of which the bubble point and pressure hold
methods are the most common. The bubble point
method is recommended for housings with three or
less cartridges and the pressure hold method is
recommended for housings with greater than three
cartridges. Please consult your Gusmer
representative for detailed information on integrity
testing methods and specifications.
Every EMD Millipore sterile membrane filter cartridge
is 100% integrity tested by EMD Millipore prior to
packaging. Damage caused to cartridges by shipping,
installation, process improprieties, or housing and
valve issues are usually manifested as a gross
integrity test failure.
Cartridge Storage:
Intermediate storage (overnight or over a weekend)
can be done in the filter housing. Flush the filters with
warm water, sterilize the housing, and pressurize with
5 psi of nitrogen. The nitrogen keeps the housing
under a positive pressure.
Long term storage is best done outside of the filter
housings. Four inch PVC piping capped at both ends
is frequently used to store the individual cartridges in
a solution of 350 ppm sulfur dioxide that has been
adjusted to a pH of 3.5 with citric acid. This solution
should be tested every month and replaced as
necessary. Remove o-rings from the cartridges prior
to storage in the sulfur dioxide solution and store the
o-rings in a clean and dry place (sulfur dioxide
solution will make the o-rings swell).
Reinstall the o-rings, rinse, sterilize, and integrity test
stored cartridges prior to resuming bottling filtration.
Total Cost of Filtration:
An efficient brewery must operate on a Total Cost of
Filtration basis. This method of operating recognizes
that superior filter performance will yield better
process economics over time.
A Total Cost of Filtration approach also recognizes
that factors influenced by filter performance are often
more costly than the filters themselves. These factors
include:

High throughput EZ-Pak

system
The EZ-Pak system is the perfect solution for upscale,
fast-paced processing. This cost-effective system uses pre-
sterilized, ready-to-use EZ-Pak membranes on a patented
support system. Simply press the
dispensers lever to unpack and
dispense one sterile membrane.
The dispenser uncovers and
maintains the membrane in
the horizontal position until the
operator retrieves it with forceps
for loading onto the manifold. Cover with a disposable Microfl
funnel, pour the sample, and begin the fltration. EZ-Pak
membranes are available in various pore sizes and colors so
there is an EZ-Pak membrane for every application. Using

The MicropreSure Sanitary
Sampling Valve, originally
designed for the pharmaceutical
market, offers the highest level of
cleanliness, safety, and ease of use for in-line sampling.
Its unique design features a double internal o-ring and plug
seal. There is zero product hold-up in the valve interior
once closed and an internal drain port offers complete
cleanability and no dead-leg. The valve is completely
sterilized upon contact with the rest of the process line.
MicropreSure Monitors are designed to ft on the outlet of
the Sanitary Sampling Valve and offer a fully integral,
pre-sterilized and self-contained membrane unit for
fltration right on the line. Filter the sample, re-cap the
outlet, add media (Millipores 2-ml ampoules ft the monitor
inlets), and incubate.
Swab Test Kits
Sterile swab test kits are
used for the microbiological
monitoring of surfaces and
process operation including
equipment sanitation and
changeovers. Kits are easy
to use, allowing the brewer to
sample, incubate, and count
the colonies. Simply swab the
surface and place back into the sterile buffer. Shake and
pour the buffer liquid into the sampler container or a sterile
membrane device, flter, and incubate. This simple system
monitors the many surfaces that can contaminate your
beer, such as bungholes on barrels, fller heads, cappers,
and so forth. It is so simple that it can be introduced in the
standard QC routine in any brewery.

Setups

Microfl V offers a disposable solution to older stoppered
manifolds or small lab fltration setups that do not include
a manifold. Microfl V 100 ml funnels contain a preloaded
integral membrane and come in a pre-sterilized package.
The Microfl V outlet fts a number 8 stopper. Millipore
also carries a full-line of all manifold types, re-useable
glassware including fltering fasks and flter holders,
vacuum pumps, and other accessories no matter what the

Millifex Plus automatic fltration units offer the fastest,
most reliable lab fltration apparatus available to the

Measurement principle:
The beer sample (10 ml) is sucked into the measuring cells by means of a pump. Alcoholic content, extract, and density are
measured by using thermal measuring effects. Derived constituents such as original wort, apparent extract, and osmotic
pressure also will be determined.
Calibration:
The device may be calibrated by using a corresponding reference beer. You can store 18 different sets of calibration data
(for example Pilsner, strong beer, non-alcoholic beer). You can also change from one product to another without having to
undertake a new calibration. Reference beer calibrations can be conducted at our Analytical Laboratory in Napa, CA. See

Brewery Hose
The inner lining of a food or beverage hose must
also be resistant to conventional cleaning agents and
disinfectants. Chemical resistance tables are a big help
in this respect because they include basic cleaning
agents like water, steam, and sodium hydroxide solutions,
plus various chemical combination preparations, with
information on the maximum duration of exposure,
working temperature, and concentration.
Ruling out hygiene risks
The inner lining should also be extruded instead of being
made using the winding process. A wound liner could
come apart at its winding seams after being subjected to
mechanical pressure or excessive heat, and thus turn into
an acute food safety weakness.
Clamp bands and tightening straps are a further hygiene
risk. This is due to the fact that the hose nipple can
become separated from the hose if the line becomes
severely bent at the hose end, forming a so-called dead
space in which the medium can collect. In turn, this results
in dirt cavities, which may not be possible to adequately
rinse and disinfect.
Clamp or segment fttings present a better alternative, for
this reason they are used, above all, in the pharmaceutical
and chemical industries. They are also available in certain
nominal widths for the stainless steel types required in the
food industry. Pressed fttings, however, are felt to provide
a much higher level of hygiene. In the case of good ftting
systems such as Pagufx 3000, the pressed sleeve
is longer than the hose nipple. This prevents any dead
space from forming should the hose be bent. Pressed
and clamp fttings provide maximum reliability, moreover,
because the hose/ftting connection is stronger than the

Although the durability of the hose material cannot be
seen at frst glance, as a rule it quickly becomes obvious
when the hose is put into service that material which
may have seemed to be expensive at the beginning
turned out to be a better deal thanks to its service life,
reliability, and safety. Therefore when selecting a hose
and ftting system, one should take into account not only
the purchase price but also the possible follow-up costs
resulting from replacement and disposal of material that
experiences premature fatigue, in accordance with the
total cost of ownership process. And burst hoses can also
result in unexpected costs due to production disruptions
and even personal injuries.
Suitable for use in the beverage
industry?
Not all hoses are the same, and that holds true in
particular for beverage hoses. Many of the types of
rubber, fllers, plasticizers and other anti-aging agents
offered on the market are unsuitable for use in the food
and beverage industry. Some of them do not conform to
the XXI recommendations of the German Federal Institute
for Risk Assessment or the internationally recognized
directives of the Food and Drug Administration (FDA),
quality control reports or certifcates of conformity issued
by renowned institutes provide the necessary certainty
that the hose line materials are indeed suitable for
transporting alcoholic and non-alcoholic beverages. The
inner lining of a food hose must be smooth, homogenous,
and nonporous so that it does not transfer odor or taste to
the food being processed.
Dont cut corners in the wrong places
Beverage hose lines take on a wide range of jobs in breweries and the beverage industry, and, in some cases, work under
extremely tough conditions. But the importance of these hose lines as production equipment is frequently underestimated.
Indeed, extreme care must be taken when choosing a hose to satisfy hygiene requirements and ensure operational reliability.

beverage hoses must be selected carefully to ensure a high level of hygiene, a long period of service, and minimum need for

The Zahm SS-60 Volume Meter was developed to determine
average CO

levels of gas in tank stored beverages. This
instrument uses the same pressure temperature methodology that is

release mechanism eliminates bleeding off of the sample and the
