JULY 2014
For the most part, going wine tasting is about the easiest thing in
the world, especially here in California where wineries and tasting
rooms abound. You can find wineries specializing in red wines of all
types, those that are famous for their white wines and others who
pour sparkling wine. It is a matter of doing a little research and
planning your day. Most tasting rooms open around 10 a.m. and
close between 4:30 and 6 p.m. Here are some tips that have proven
to be helpful and are designed to help make the sensory adventure of
wine tasting all the more enjoyable.
Before you start off pack a few essentials: Water (plenty of water)
and something to snack on crackers or a baguette. Many wineries
have picnic areas and there are plenty of delis and bakeries that can
make up a lunch for you, or make your own. Which brings us to
eating and drinking, the kind that doesnt directly involve wine.
Be sure to nibble during the day and make sure you make time for
lunch. Two tips: drink at least twice as much water as you do wine,
and remember that you dont have to drink everything poured into
your glass. There is a reason tasting bars have dump buckets and a
pitcher of water to wash out your glass.
Dont be afraid to ask questions. Time and time again I have heard
knowledgeable winery workers say that there is no such thing as a
stupid question, and they mean that.
You can drink what you want, in the order you want. If you only like
reds, say so; if you dont like sweet wines, speak up. But the idea of
starting with whites, then going on to reds and then sweet wines is a
good guide. Zinfandel is red. I am sure you know that but it never
hurts to remind everyone.
If there is a particular wine you want to try and it is not on the list,
ask. There might be a bottle around that was opened for a trade
tasting or by the winemaker. Most tasting rooms are happy to pour a
little if you show enthusiasm.
Take notes on the wines you most enjoyed.
Take advantage of tours when the winery offers them, but keep in
mind that they take anywhere from 20 minutes to well over an hour,
so one a day is plenty.
Buy wines that you can only find at the winery. These often include
smaller (375 ml) bottles of limited production Ports or dessert wines.
Dont buy a wine you can get at a supermarket back home. Youll pay
more, and besides, whats the point?
Look for tasting rooms in towns. Many of these are cooperative
tasting rooms, where in one place you might find wines from a dozen
or more small-to-medium premium producers. They are scattered
throughout the area and more are opening all the time.
Dont give too much thought to ratings and vintages. Its like art: if
you like it, its a good wine. It is as simple as that.
Remember that you dont have to do the driving. It takes no more
than a phone call hire a transportation company to do the driving.

luscious wines and lasting memories

Whats in a Name?
Sustainable, Organic & Biodynamic Defined
Its a question which bedevils even longtime wine and wine
trade insiders: what really is the difference between the terms
sustainable, organic and biodynamic? And do the distinctions
matter at all? Whats really being asked, in my opinion, is how
much is marketing magic and how much is winegrowing truth,
how much is it everyone drinking from the same grapeaid, and
how much is it a reflection of the realities of commercial wine
production? Its a mixture of all of the above, of course!
Everyone, perhaps, by now understands what organic means in
terms of not using chemicals or ecologically disruptive practices,
but in the context of wine, it gets a lot trickier, especially for small
wineries, which is why there are way more wines labeled Made
with Organic Grapes than straight up organic wines. It is
considerably easier to get certification showing that the organicness of the grapes, derived through the grower, is preserved
through the winemaking than to get a winery or wine certified as
wholly organic. It is not impossible, but it is costly and leaves little
room for error in the cellar. Among a number of technical issues,
there is an absolute limit on sulfite usage, which knocks out most
commercial wines because of the larger batch process in which
they are produced and the necessity to have preservation of the
wines in the cellar, once bottled, and while on store shelves and
wine racks.
Going this one better, biodynamic, as Nigel Tufnel would have
said, puts organic on eleven. Based on the writings of Rudolf
Steiner, proponents of this agricultural philosophy argue for
integrative methods akin to organic practices but also root those
strategies within a system of nature-based energy wherein the goal
is to recharge the land ecologically and spiritually; and there is a
certification agency, Demeter, whose imprenteur producers must
receive in order for the labels to legally proclaim the wines
biodynamic. While a number of very high-end producers in the
Josh Stein has been in the Napa wine business for more than a decade, and, in
addition to being owner/winemaker of the Stein Family Wine Group, which
produces a nationally and internationally distributed portfolio of wine brands and
donates a percentage of its sales to the children of wineworkers in the form of
college scholarships and support funds, he regularly consults for wineries and
organizations throughout the North Bay and Coast via their subsidiaries, Discrete
Wine Support Services and SF-Integrated Vineyard Management Services.

CHAMISAL VINEYARDS
Introduces New Upgraded Tasting Experiences
16
In 1973 Chamisal Vineyards became the first winery to plant vines in Edna Valley,
embarking on what is now a long history of producing wines that are bold, intriguing
and complex. The 85-acre estates close proximity to the Pacific Ocean and resulting cool
climate are ideal for growing wonderfully distinctive Pinot Noirs and Chardonnays the
varietals for which Chamisal is best known yet the site is also home to Syrah, Grenache
and Pinot Gris. Each variety is planted with multiple clones; as a result, Winemaker
Fintan du Fresne has 24 completely different parcels from which to blend his wines.
Fintans winemaking philosophy embraces a sense of purity and simplicity, and
Chamisals wines always allow the natural characteristics of its remarkable vineyard site to
shine through.
Naturally, the ideal way to experience the wines is to visit the winery itself. Known for
warm, friendly hospitality, the Chamisal tasting room is housed in a lovely, modern barn
that opens up onto a beautiful back patio overlooking the stunning Estate vineyard.
Chamisal recently updated its beautiful grounds to complement its new distinct tasting
opportunities. They now offer guests multiple ways to immerse themselves in the beauty
and tranquility of Edna Valley, as well as options for enjoying a glass or a bottle of wine
on site.
Putting customers first and making them feel like family is our mission, says Andrea
de Palo, Director of Consumer Sales. The intimate tasting opportunities as well as the
JULY 2014
reserve and tailored wine experiences are something our guests and
wine club members appreciate.
Chamisal Vineyards offers two tasting experiences to the general
public: the Classic Flight ($15), which includes four wines from the
winerys line of premium Pinot Noirs and Chardonnays, and the
Estate Flight ($25), a hosted tasting that includes at least four wines
from Chamisals rotating list of Estate Pinot Noir, Chardonnay, and
Rhone-style wines as well as small lot wines when available.
While both tastings are available in the winerys friendly,
comfortable tasting room, the Classic Flight can also be enjoyed on
Chamisals front patio, a garden space which offers beautiful views of
the Santa Lucia Mountains. Likewise, the Estate Flight can be
experienced on the winerys back patio, which affords a breathtaking
vista of the Estate Vineyards soft rolling hills which stretch toward
the Pacific Ocean. Both tastings are complimentary for wine club
members, and tasting fees are waived with wine purchase.
Chamisal also has a dedicated picnic space in a tranquil setting
with stunning views of the Estate Vineyard and Santa Lucia
Mountains. Here guests can enjoy Chamisal wines by the glass or
bottle.
Weve really tried to think of all the different ways our guests
spend their time here and how they like to enjoy our wines, and then
we created spaces and tasting experiences to accommodate all of
them, says Andrea, whose staff is proud of the fact that they
welcome repeat visitors again and again. We think we have the right
experience for each guest.

Style
Chamisal Vineyards offers an upscale and elevated experience while embracing the rustic
beauty of the property and Edna Valley. The tasting room staff helps guests discover this
beautiful gem through warm, personal service.
Events
In additional to numerous Wine Club parties, Chamisal hosts public events throughout the
year including LobsterFest in August (which sells out every year and requires an RSVP six
months in advance!), a Spring Release party in February and numerous winemaker dinners.

The Santa Rita Hills wine area of Santa Barbara, a short distance from the Pacific Ocean, has
become the single prime region for Pinot Noir and Chardonnay due to its ideal cool-climate
weather. But that distance is much shorter than Santa Barbara County to the West Texas
Panhandle, where Foley Family Estates owner William Foley originally hails from.
William Foley II grew up with cattle ranching in his blood, not winegrowing, but as the
successful Chairman of the Fidelity Investments Board of Directors, Foley wanted to create a
legacy for his family in the wine world. He first purchased a winery in Santa Ynez, part of Santa
Barbara wine country, and renamed it Lincourt Winery in honor of his two daughters, Lindsay
and Courtney. After the success of that venture he created Foley Estates Vineyard and Winery
located on nearly 500 acres in the prestigious Santa Rita Hills of Santa Barbara. It is here where
Foley Estates produces classic and highly regarded Chardonnay and Pinot Noir, though they do
produce Syrah as well available only at the tasting room. The Foley wines show the best
expression of the Foley vineyards as possible sophisticated, luxurious wines reflecting their own
vineyard sites.
For example the Foley Santa Rita Hills Courtneys Chardonnay spent 17 months in oak
showing Foleys commitment to age worthy wines with a classy oak influenced profile. Similarly
Foleys Santa Rita Hills Lindsays Pinot Noir also spent 17 months in 40 percent new oak barrels
a successful attempt at a grand wine. The Foley Santa Rita Hills Chardonnay Bar Lazy S Ranch
and Santa Rita Hills Pinot Noir Bar Lazy S Ranch are just under 400 cases of both of these wines,
an exclusive glimpse of world-class wines that few can match along the California Central Coast.
If you have a passion for Pinot Noir, Foley has created a line of wines reflecting individual
clones, all of which provide unique flavor profiles. The recently released 2011 line up includes
JULY 2014
Continued
the Foley T Anchor Ranch Pinot Noir which is all about the
Pommard clone in this wine. Their JA Ranch Pinot Noir embraces
clones 113 and 115, while the Bar Lazy S Ranch Pinot Noir uses
clone 2A. And the 2011 Barrel Select Pinot Noir is the 100 percent
Massal clone. Each clone brings a different aspect of fruit, floral and
perfume notes, structure and ageability, not to mention the
uniqueness of being able to experience a wide swath of Pinot Noir
clones at a single winery.
When you visit the elegantly appointed, but unobtrusive, Foley
Estates tasting room you will innately understand, even before
sampling the wines, the commitment to excellence that Foley has
cultivated as evidenced by surrounding grounds and facility, as there
is a beautiful attention to detail. There are three tasting options
including the standard $10 public tasting which includes five wines.
There is also a reserve tasting flight of six high-end wines for $20, or
you can upgrade to the Wine and Cheese Pairing tasting offered
Monday through Friday for $40 where six Foley wines are paired
with six different artisanal cheeses but reservations are needed for
both the private tastings. There are also tables in the front of the
tasting room, and a larger area in the back for picnic opportunities.
Check the website for Live Acoustic Music, Wine & More every
Saturday from 12:00 to 3:00 p.m., through the end of August.

the Santa Rita Hills are capable of producing.www.Foleywines.com.

TALLEY VINEYARDS
Private Tastings in Historic El Rincon Adobe
BY CATHY NEUSHAL
20
There have always been a number of reasons that a visit to Talley Vineyards is
memorable. People mention the great wines, the tasting room with a terrific view of the
Rincon Valley and the winery tours. Soon, however, there will be a unique offering.
Guests will have a chance to sign up for private tastings in the historic El Rincon Adobe
located on the vineyard.
Small groups, of four to six people, will be able to try a selection of Talleys high-end
wines in El Rincon Adobe. There will be a wine expert on hand to lead discussions and
answer any questions. Patrons who participate in this private tasting will also be offered a
vineyard and winery tour as part of the experience.
El Rincon Adobe is the perfect place for this type of tasting. It plays an important role
in the history of the vineyard and the surrounding area. In addition, it is the first thing
people see when they visit the vineyard, and is featured on the Talley label.
The adobe was built in the 1860s by Ramon Branch and is constructed of sun-dried
mud bricks made from soil collected in the area. While the adobe fell into disrepair over
the years, it was refurbished in 1988 and became Talleys tasting room for many years.
When a new tasting room was opened in 2002, the adobe stopped being used for this
purpose. This will soon change.
Another way to try a selection of Talley wines is by visiting the tasting room. With
spectacular views of the Rincon Vineyard, this experience is designed to be inspiring.
Visitors can sit indoors or retire to one of the three outdoor areas.
Talleys tasting room offers two flights. The Core Flight, which features five core wines,
including the Talley Estate Pinot Noir and the Talley Estate Chardonnay, or the Distinctive
Menu, which changes frequently and offers repeat visitors a chance to try something
different each time they visit the vineyard.
Afterwards, people can take a little bit of Talley Vineyards home with them. They can
buy a bottle of Talley wine, such as the estate grown Chardonnay or Pinot Noir, or take
home a refillable growler with the featured red or white wine.

WINEMAKER PROFILE:
KARL ANTINK
White Winemaker J. Lohr Vineyards & Wines
24
In 1972, Jerry Lohr acquired his first land in the Arroyo Seco region of Monterey
County. With the hands-on devotion of an artisan farmer, he planted 280 acres of
varietal grapes, diligently tended his first vineyard, and let the maritime fog, winds and
cobblestone-laden soils work their magic. Jerrys uncanny ability to match promising
new vineyard sites to their ideal grape variety came to fruition in 1974, when he
released his first bottlings of J. Lohr wine, beginning the winerys reputation for crafting
award-winning wines of exceptional flavor and quality. In the decades since, J. Lohr
has brought the exciting wines of Monterey County to a global audience, showcasing
the crisp, vibrant allure that can be achieved in our cool, coastal white wines.
Today, the J. Lohr white wine program is guided by Karl Antink, a master of
Monterey County whites, who has spent nearly a decade refining the winerys approach
to Chardonnay, Riesling and Sauvignon Blanc. Its a testament to J. Lohrs desire to
make exceptional wines that it has a winemaker specifically dedicated to its whites.
Working primarily with just a handful of grape varieties allows me to have a
remarkable level of focus, says Karl. I get to know the nuances of these wines far
more intimately that if I were also juggling all of the red varieties.
Karls thoughtful approach extends to every aspect of the J. Lohr white wine
program. People are often amazed to learn that our Chardonnay program is 100%
barrel fermented, and that we individually stir each barrel regularly, says Karl. There
arent many wineries of our size with this level of attention to detail, but we believe that
using traditional small cooperage and stirring the lees brings a level of complexity,
flavor and mouthfeel to our Chardonnays that you just cant get otherwise.
A California native, Karls road to becoming a winemaker grew from an interest in
home beer brewing. In 1993, after graduating from the U.C. Davis Master Brewers
Extension Program, Karl decided to combine his passion for the art of fermentation

In the summer of 1994, after seventeen years of making wine for others,
Stephen Ross Dooley launched his label Stephen Ross. After moving production
a few times, he found a home for his own winery and tasting room in San Luis
Obispo in summer, 2008. Celebrating the 20th Stephen Ross Vintage this year,
Dooley maintains his love of Pinot Noir and Chardonnay but has also spread his
wings, so to speak.
A U.C. Davis graduate with winemaking experience at Louis Martini Winery
in the Napa Valley and Edna Valley Vineyards, Stephen Dooley also served
winemaking stints in both South Africa and Australia. But it is the Central Coast
where Dooley is most at home. Dooley developed an estate vineyard, Stone
Corral Vineyard, planted exclusively to Pinot Noir in partnership with two other
wineries in the Edna Valley. Since he focuses on growing and producing Pinot
Noir, roughly half of his production is Pinot Noir, bottled under five different
premier vineyard designations or appellations. We just released our 2011 Pinot
Noir, Chorro Creek Vineyard and 2010 Stephen Ross Pinot Noir, Stone Corral
Vineyard. Of course Chardonnay is also in the mix and he plans to release his
2012 Stephen Ross Chardonnay from Edna Valley, and his 2012 Stephen Ross
Pinot Noir, Santa Lucia Highlands (Monterey County) by the end of
the year. But there is a highly anticipated new arrival - the
release of their first vintage of Grenache from Spanish Springs
Vineyard in early 2014.
I am thrilled with the yields and quality of fruit from the
2013 vintage as well as the extremely cooperative weather,
he effuses. Im also really excited about Flying Cloud,
another project of ours. Right now we only have
Cabernet Sauvignon available for sale under that label,
but were working on possibly adding other varieties or
blends. We are currently selling our 2011 vintage, an
easy drinking, fruit forward, medium body Cabernet
with soft tannins that retails for $20. For Dooley,
Cabernet Sauvignon invokes fond memories of his
first decade of producing wine in the Napa Valley at
Louis M. Martini winery in the early 1980s.
Stylistically, this wine made from grapes in Paso
Robles, is hearty and balanced with pleasing aromas
and flavors characteristic of the variety, with a sense of
place. The name Flying Cloud pays tribute to the Eden
Prairie airport in Dooleys home state of Minnesota. But
there are other wines to try as well, like Stephen Ross
Zinfandel, Pinot Gris and Albario. After all, every great
winery needs a great portfolio. And at under 5,000 cases,
they sell quickly. You dont need to have a winery and
tasting room smack in the middle of a vineyard to find
phenomenal wine. The Stephen Ross tasting room
and winery are in a light industrial area, all very
incognito which adds to the allure. Bottle prices range
from $19 to $52 and tasting fees are just $10. So fly on
in and see whats new.
