MALDIVES
I never expected this bout of post-holiday blues to
hit me so bad. After returning from the Maldives,
we spent our weekend in a daze. Everywhere I
looked, things were shrouded in an imaginary
shade of blue.
That, I suppose, is the magic of Maldives. Gili
Lankanfushis No News No Shoes policy fueled
the mood to abandon all earthly concerns and
soak in the waves of temporal freedom. This issue,
we explore the grand Private Reserve, a rustic
and luxurious five-unit overwater bungalow.
Get ready to be blown away. We were utterly
spoiled by our personal Mr Fridays, who made
sure every need was met, whether it was a Thai-
inspired feast by our personal chef or pressing
the shutter as we went wild on the water slide.
I still dream of snorkeling alongside the sea
turtles and schools of whimsical fish, and being
a part of the mesmerising marine life. As we
attempted to locate the Milky Way and drifted off
to sleep under the stars, we learnt again the idea
of perspective, place and time.

Chapel of Dreams
Theres always a reason for celebration. At Gili
Lankanfushi, guests are invited to hold the
wedding of their dreams in the overwater chapel
the only one in Maldives. Located in the middle
of the lagoon, the chapel is a stunning presence

Enter our fragrant and enchanting green
garden, nestled in the heart of the island. This
is where the kitchen gets its daily fresh supply
of herbs, salad leaves and other ingredients
for its impressive array of culinary oferings.
More than hundred varieties of herbs, spices
and leaves such as rosemary, lollo rosa, rocket,
watercress and oregano are grown with organic
practices on this cosy plot of land. There is even
a room dedicated to mushroom cultivation. Our
friendly gardeners will be happy to take you on
a guided walk and tasting session.

Fancy an adventure in the Maldivian sea? The coral atolls, which boast some of the most splendid
sea life on earth, is an ideal playground for fshing enthusiasts. Sea Ray is the worlds largest

apping up the breeze as the pontoon chugs along, we
are blown away by the sight ahead. Upgrading our
accommodation to a night at the exclusive Private Reserve,
the largest overwater villa in the Maldives, was probably one of
the best (and fastest) decisions we agreed upon. Our pristine
paradise for the day was a gigantic 1,400-square-metres space,
which slowly unfolds before us against a backdrop of multi
hues of blue. Shallow lagoon waters sparkle with a sharp light
turquoise, interrupted by patches of dark green corals we steer
to avoid. At the drop-of, an abrupt navy blue stretches far out,
greeting the skys baby blue hue at an imaginary horizon. There
is nary a cloud in sight. Distance sure has its way of heightening
anticipation. The Private Reserve is, in one word, spectacular.
Secluded 500 meters from the resort main island and 300 metres
from the nearest villa, it is only accessible by boat. And like a
grand old dame on a throne, the property is designed in a rustic-
chic style according to traditional Maldivian and Sri Lankan
inspiration and sure oozes stature.
At the parking bay, we are greeted by two live-in Mr Fridays
assigned to care for us during our stay. The door to the property
swings open into a welcome room fanked by glass foor panels
with schools of fsh swimming beneath and a commanding 50-
inch fat screen television. Well, not that the plan is to turn it on.
We are ushered into our suites to prepare for a private
snorkeling session with the resident marine biologist, Vaidas
Kirsys. Each suite is a diferent ballgame altogether, with its own
living area and sundeck. I sigh gently as my eyes catch an over-
water net hammock suspended right above the inviting waters
against the endless blue and laugh out loud, imagining the
envious eyeballs from the folks at home.
Gili Lankanfushis open-air private bathroom suites have set
a new standard for personal time. In addition to a separate glass-
walled shower enclosure and his-and-her sinks, each bathroom
boasts a Jacuzzi tub big enough for two built over coral gardens,
steps down into the sea for a bath in total privacy and a luggage-
dressing room where even Madonna can doll herself up in
comfort. This is luxury at its inimitable best. The master bedroom
is stuf made of dreams. The grand plan tonight is to sleep with
the ceiling-to-foor windows open and wake up to an unmatched
panoramic view from our bed, although we eventually do succumb
to huddling under the sheets in full air-conditioned glory.
The girls go gaga, whipping out their cameras as we are being
led into the reserve. Lo and beholdA breathtaking central open
living area housing a dining table, enough day beds for an MTV-
style party and sundecks overlooking a sea garden and natural
coral pool that would put The Wolf of Wall Streets elaborate
to wedding proposals, although the reserve sleeps up to six. Talk
about disconnecting from the world in style.

and steam room, an air-conditioned gymnasium and fully-
functioning kitchen and we are blown away. A fve-metre long
water slide for everyones inner child is sweet icing on the cake.

For a nation of 1,192 coral islands grouped in 26 atolls,
Maldives is one of the worlds most dispersed countries. It is hard
to make sense of this astounding magnitude, but all one has to do
is wade into the waters to appreciate its rich marine ecosystems
and parade of stunning coral reefs, fsh and sea turtles. Education
allows our guests to enjoy the environment without damaging it
and understand why we operate in a certain way, shares Vaidas.
He busies himself guiding guests on snorkeling trips, advising
the resort on environmental projects and surveying the islands
lagoon and marine life.
Spotting a low tide, we take a short walk to the bed of bountiful
corals in front of the Private Reserve and are rewarded with
a stunning sight of the propertys scale. The resident Maakana
(a type of wild bird), poses patiently by the water hammock
as we snap away. A family of six Boxfsh amuses us by darting
around in the water. We move to the house reef, a stretch between
One Palm Island and Three Palm teeming with gentle reef
sharks and rays dashing through the water. Beneath the surface,
I fnd it hard to contain my excitement as the schools of adorable
Picasso Triggerfsh, families of Damselfsh and the alien-looking
Schooling Needlefsh enchant us. We even spot a sluggish octopus
and shy Olive Ridley turtle peering out from the seabed.
Gleefully basking in the suns rays, we continue our aquatic
adventure on the reserves water slide. It is undeniably the purest,
most underrated fun any adult can have. We giggle ourselves
silly, snacking on a seafood platter and sparkling champagne
thoughtfully arranged by Mr Friday, who is a welcome sight as we
are famished from all the fun. We laze on the day beds indulging
in aimless conversation, as executive sous chef Stefan Goehcke
arrives in style with an assistant to prepare our private banquet.
Meanwhile, we are treated to sundowners and tapas. Chef Stefan
shares more behind the travel-inspired Thai fve-course menu
he would be whipping up this evening: We like to keep things
light and fuid, he said. Its not about just creating new ideas, but
evolving how we cook for the guests.
Beautifully presented, the starter canaps are a medley
of rich Asian favours followed by shared plates of salads and
mouthwatering mains, as well as a platter of desert and fruits.
Belly-heavy, we trot upstairs like dazed kids in a candy store and
sink onto a snug mattress for a movie screening, complete with
bowls flled to the brim with fresh popcorn. The next morning,
we awake to the grand fnale of our Private Reserve experience.
Clutching a hot cup of freshly brewed cofee, we sit by the sundeck
in our pyjamas and wait blurry-eyed. The Maldives re-introduces
us to the tune of the tides and appreciation of natural light. If city
living had numbed our sensitivity to the environment, this is a
powerful reminder to reconnect with the earth and every sense of
being. Above us the sky blazes a shy pink as the sun forms a ruby-
red yolk and rises from the infnite blue.

ishing is the lifeblood of Maldives and is inseparable from
the country and its people. Blessed with an abundance of
aquatic life and fsh, local fshermen rely on a line-and-pole
method to fsh sustainably for popular species like tuna, grouper
and dolphin fsh. On a sunny afternoon, we are treated to the
experience of picking fresh herbs from Gili Lankanfushis garden
and preparing a raw marinated tuna salad.

INGREDIENTS:
500g Tuna fillet
50ml Soy sauce
1 piece Lime (zests)
1 piece Egg yolk
20ml Water
1 pinch Salt
50g Wasabi leaves
80g Grape seed oil
60g Parmesan cheese
60g Garden herbs (beach lettuce/
rocket leaves with blossom/coriander leaves
with blossom/water cress/chives/chervil)
Wasabi tobiko
Salmon roe
White and black sesame seeds
METHOD:
1) Slice the fresh tuna fillet like a fine sashimi
and marinate with soy sauce and lime zests.
2) Grate the Parmesan cheese on a baking paper.
3) Melt the cheese for 25 seconds in a microwave oven.
4) Remove the baking paper from the microwave oven
and form the melted Parmesan into tuile (thin wafer).
5) Blend the wasabi leaves together with water,
add in egg yolk, lime juice and a pinch of salt in a kitchen
blender and emulsify the mix with the grape seed oil
to make a smooth mayonnaise.
6) Dress the marinated tuna slices into a round
shape on the center of the plate and decorate with
the Parmesan tuile, garden herbs, salmon roe,
wasabi tobiko and sesame seeds.

Celebrity chef Rasmus Kofoed brings to Gili Lankanfushi a menu with
unique elements of Danish cuisine and Maldivian organic produce.
O
ver a weekend in March, guests at Gili Lankanfushi were
treated to a gastronomic experience designed by award-
winning celebrity chef Rasmus Kofoed. The Danish
chef is co-owner of Geranium, a two-star Michelin restaurant in
Copenhagen that was ranked 45
th
Best Restaurant in the world in
2013 by Fine Dining Lovers. He also emerged tops in the Olympics
of cooking, the prestigious Bocuse dOr in 2011 and was the captain
of the Danish culinary team for seven years. Drawing infuence
from his work at Geranium, a lucid, light and dynamic kitchen
with a mission to create meals that involve all the senses, Chef
Rasmus worked with the freshest of Maldivian organic produce to
create a six-course dinner menu for a full house of 30 diners. The
idea was to bring my thoughts about the Nordic gastronomy and
incorporate in this island, and combine the Maldivian ingredients
with my thoughts from the cold country where I come from,
shared the charming Chef. The whole island inspires me.
During his time on the island, Chef Rasmus spent a lot of
time walking around, feeling and collecting textures like the
sand, water and even random blocks of charcoal he found at
a freplace. Part of this was channelled into the presentation of
his dishes, to share the beauty in local ingredients and awaken
diners sensitivities to a place and time. He raves about one of the
most beautiful fsh stocks ever, a tuna fsh put to boil for three
hours which yielded a full-bodied clean consomm and how he
discovered chilled Indian ocean water increased the taste of fsh
fllets before baking them in the oven. These experiences afect
me a lot, said the Chef, who has cooked for celebrities and royalty
around the world. It is important for me not to just come and
spend time in the kitchen, but to experience that part of the world
and get inspiration from that when I go home.

ucked away on another side of Lankanfushi Island, it
is a humbling eye-opener visiting the host village and
getting a tour of the operations backbone of the resort.
Sustainability is a big word, but ideals are often materialised by
tiny eforts and orderly systems in place. Gili Lankanfushi is one
of the frst few resorts in the Maldives to produce its own drinking
water. While purchasing water from Male is a common practice,
both guests and hosts working on the island drink water
packaged in eco-friendly glass bottles. It reduces the damage to
our environment, says Sidney Viegas, the resorts assistant chief
engineer. We dont have the issue of disposing plastic bottles, so
that minimises the total volume of waste the resort generates.
Seawater is pumped into a tank with a capacity of 15,000 litres
and passed through a maze of systems and membranes, which
separates freshwater from salt and sediments. The resulting water
is then made potable by a set of flters, which adds natural minerals
and kills germs through UV exposure, before it gets piped around
the resort. At the bottling plant, a clean air-conditioned hut manned
by two workers, some 400 bottles of drinking water are produced
a day. Sparkling water, which is made by adding pressured carbon
dioxide and chilled, is also popular with guests.

hispering gently, Asti the therapist asked me to breathe, as my eyelids grew heavier
staring into piece of sea beneath me. I took three deep breaths and started to lose myself
in the aroma of warm mist of sweet orange, basil, lemon and rosemary oil rubbed on
her left palm, as she skillfully swept long strokes down the contours of my back with her right arm.
Yes, I was absolutely blown away by the beauty of the Maldives, but it was the signature massage at
Meera Spa that elevated this experience to a whole new level. Meera, which means ocean in Sanskrit
language, ofers a range of therapies and massages to comfort aching bodies and burdened minds.
Its Masters in Residence Programme hosts renowned practitioners like Mr Sommai Pokhamnerd,
who guided me in a gentle class of Tai Chi, with specialised healing skills to ofer.
My spa session kicked of with a foot wash where the therapist gently washed the sand of my
feet with a concoction of tea tree oil and sea salt. Never underestimate the efect of walking into a
room with nothing but the sea in front of you and glass foor panels strategically built under massage
tables. With utmost sensitivity, Asti hit the sore spots bursting with accumulated fatigue and the ills
of modern living. It did not take long for me to slump into a foaty state of being as baby fsh swam in
and out of my vision. The Spa also ofers other choices like excellent Bamboo Massage for reducing
stress with the use of multi-sized bamboo rods and warmed aromatic oils, the Tibetan Singing
Bowl Massage for those seeking balance as well as an exclusive Ocean Therapy which harnesses the
goodness of Voya Organics, a range of hand-harvested seaweed products, in baths and wraps that
promote skin regeneration.

ne can be forgiven for bad table manners when dining
under the stars on Palm Beach. Fixated by the shifting
clouds hurried along by the evening breeze, my friends
and I caught ourselves in between bites speechless at the beauty
above us. So there we were, the four of us on Palm Beach,
surrounded by whimsical cones of candlelight as our personal
chef toiled over a makeshift kitchen grill to present us with a four-
course dinner. This is the resorts way of utterly pampering its
guests as various faces of the island are presented beautifully in
tandem with sensitive culinary options.
Executive Chef John Bakker, who oversees the culinary team,
believes in being true to ones roots and experiences. Working
together with executive sous chef Stefan Goehcke, the duo
conceptualised a menu infuenced by both their Canadian and
European backgrounds. We want to take elements of classic
dishes from home that are refective of the environment here and
create a menu with the earthiness of the garden and its fantastic
produce, said Chef Bakker. The stage is set for the team to deliver:
One Palm Island, the ultimate deserted island retreat with its
signature lone-standing palm tree, oozes romance in the sunsets
glow. There is also Horizon, a table dug into perfect soft sand ideal
for sunset viewing, as well as 360, an elevated dining setup in
the organic garden, to create the perfect intimate setting. By the
Sea, set on the quiet east-facing beach, will whisk one away with
an impressive array of Japanese food, while the Jungle Cinema
ofers an alternate movie and dining experience under the stars.
To top it of, indulge in a wine and chocolate tasting session in the

Q: Tell us about Mr Friday Q: What is your idea of good service?

Q: How does your job impact you?
Mr Friday is a concept modeled after one of the
main characters of the Robinson Crusoe novel,
a local assistant who is competent and loyal.
Guests are assigned their personal Mr Friday,
a butler who will care for them from the time
they arrive till they depart the resort. There
are currently around 15 Mr/Ms Fridays who go
the distance to deliver outstanding service to
make sure everything goes smoothly and the
guests are happy.
Service begins with quickly understanding how
the guest wants to be served and then adapting
how we go about it. Good service means making
things work and going the extra mile, so that
both the guest and Mr Friday are satisfed.
It is a tough job with heavy responsibility. As
we grow, our personal lives also have to grow.
One of the biggest challenges is to balance our
energy between our personal commitments and
channeling proper services to the guests. It
is not easy, but I do think our team has built
a reputation for being one of the best in the
Maldives. The challenge is in the communication
and how we handle requests from discerning
guests with very high standards. Some requests
weve received include serving lunch to guests in
the middle of the lagoon on their hammocks at
a specifc time. Another guest asked if the tide
could be changed because she didnt like seeing
exposed corals. I thought really hard about it and
solved it by moving her to a villa where the sea
levels didnt change much and she would always
be greeted by a sea view. Sometimes we have to
second-guess guests who are not specifc about
sharing information about their requests like
where they want to go and what they want to eat.
When such things happen, I feel bad if I cant
meet the demands.
I started out in 2010 shadowing the senior Mr
Fridays to understand how they work. Initially, I
was sitting in the of ce handling administrative
work, but opportunities came around to follow
guests on boat excursions, do the shore rounds
and assist in check-ins. Through this, Ive learnt
the style of the work and basic principles of butlers
at Gili Lankanfushi. We also constantly improve
ourselves, sometimes through training courses.

very interesting and sometimes I feel I can take
care of anybody in the world, at any moment, by
delivering exceptional service and understanding
their feelings.
I feel very privileged to serve guests who come
from diferent backgrounds and parts of the
world. I have looked after people from politicians,
business tycoons to popstars. There are so many
stories I can share, but its very encouraging
when I have guests who return because they
want me to care for them. They can travel to
any other luxury resort in the world, but having
experienced Mr Fridays care, they choose to
come back and praise us on Tripadvisor. It makes
me feel very great and thankful. It is one of the
best feelings when guests let me know I put them

Someone who understands the guests feelings
from the time he see the guests face; someone
who can observe the moments and get a sense
of the guests heartbeats. He can work very close
to the guest and understand his pulse. I think
it is also very important to go along with ones
feelings, yet maintain a balance not too intrusive
and too close to the guests.
